Editor’s Letter

W

elcome to 2020—an exciting new decade where we look forward to all of the enriched experiences that come from life on The Monterey Peninsula. Carmel Realty will continue our focus, as a family owned, luxury boutique real estate Company while advancing our service through the use of new technologies and world class marketing expertise. The Monterey Peninsula real estate market was healthy in 2019, and we expect that to continue for a multitude of reasons. Demand for living amidst the stunning local geography—as was famously described by artist Francis McComas as “the greatest meeting of land and water in the world”—and for the incredible schools, cultural events, and lifestyle keep our real estate in high demand. People moving here tell us they value the quality of life, and we feel optimistic about the strength of our market that has limited inventory and seemingly a voluminous demand. Buyers from the San Francisco Bay Area, other regions of California, Texas, and other areas of the country, tend to make up many of our new residents, while approximately a third of our transactions are with local buyers. Surprisingly, there are very few buyers from out of the country. Our real estate market started out slow in Q1 due to macroeconomic conditions, political uncertainty, and some extreme weather. Discretionary buyers decided to wait for things to settle before reengaging and driving a very healthy second half of the year. 2019 brought the AT&T Pebble Beach Pro-Am and U.S. Open golf tournaments, the Concours d’Elegance luxury auto show, the Monterey Jazz Festival, and a plethora of other events unusual for a community of our size. We are excited about this year’s Pro-Am tournament in February, Pebble Beach Food and Wine in April, Concours d’Elegance in August, along with so many other

world-class events that set the caliber of our cultural community so high. In the following pages, we have features on Carmel and the Central Coast’s first Michelin Star restaurant, Aubergine, and chef, Justin Cogley, who together with David Fink’s Mirabel Hotel and Restaurant Group, host the world class Carmel GourmetFest. We also highlight some amazing local restaurants that happen to feature fantastic burgers, along with produce and seafood and fine wines from our local growers, fishermen and winemakers. We cover the breadth of the extraordinary schools available to families on the Peninsula and how fortunate we are to have such high quality options for our children to learn and develop their individual potential. Part of the appeal of this beautiful area is the great weather and the opportunity to spend so much time outdoors. Dave Howarth, a longtime resident and REALTOR® with Carmel Realty Company, shares his love for the golf course, where he finds the opportunity to relax in stunning scenery with family and friends and unplug from the frequent distractions of modern life. WORLD-CLASS CUISINE GourmetFest and Michelin-Star Dining at Aubergine

A

ubergine, the award-winning restaurant at L’Auberge Carmel, capped off 2019 with a Michelin star, the first establishment in Monterey County to receive the prestigious honor. Executive Chef Justin Cogley helms the kitchen at the Relais & Châteaux property and is also crucial in directing the hotel’s GourmetFest event, next scheduled for 2021. “Justin absolutely understands the balance of flavors and textures in food,” says Mirabel Hotel & Restaurant Group Founder/CEO David Fink. “He’s a great cook and is creative and passionate about product. Beyond that, he has this uncanny ability and drive and perseverance. He’s a worldclass athlete, who was a professional ice skater and is now a triathlete and long-distance runner, but he’s also a very gentle spirit.” Cogley has been instrumental in drawing world-class chefs for the four-day GourmetFest, started by Fink, which includes an opening night party, cooking demos, wine tastings, lunches, off-site activities like mushroom foraging, wine dinners, a rarities dinner and a closing event, all benefiting local nonprofits.

“When I first started, it was more of a 55 and older crowd…”

Past chefs have included Michael Mina of Mina Restaurant Group, David Kinch of Manresa, Charles Phan of The Slanted Door, Gary Danko of his eponymous restaurant, Cassidee Dabney from Blackberry Farm and Patricia Gamez from The Royal Blues Hotel, among many others. “We have 3 Michelin Star chefs who keep coming back,” says Cogley. “We are bringing talent to a small town who are very specific about the food they want to serve, and we source locally to the best of our availability. It’s a challenge to coordinate 12-15 chefs and all their dishes and needs. This is not a large operation. We give chefs ideas on what to prepare based on the wine we have. So much work goes into the simplest lunches. It’s not easy for chefs to replicate their cuisine thousands of miles away from their restaurants.” Wine partners have ranged from Bernardus Winery to Fink Family Estate Vineyards to Grand Marnier, Veuve Clicquot, Caraccioli Cellars, Champagne Tattinger, DRC (Domaine de la Romanée-Conti) Morgan Winery, Opus One and many more. Cogley travels the world to meet with world-class restauranteurs and chefs.

“I learned how to respect products and uphold standards from four years of 110-hour work weeks at Charlie Trotter’s in Chicago,” he says. He’s noticed many younger diners are traveling across the globe to find the best food and service available. “When I first started, it was more of a 55 and older crowd,” Cogley says. “Now, there are younger people targeting this festival and a diversification of travelers coming here just to eat dinner.” Apart from special events, the nightly Coastal California cuisine based tasting menu is complemented by a plethora of exquisite options from Aubergine’s 2,500-bottle wine cellar. “The food is based in local products, a lot from the ocean,” says Fink. “There’s also French cuisine integrated in from Justin’s time at Charlie Trotter’s along with a bit of an Asian influence from his time living in Asia. It’s really refreshing. There’s this incredibly wonderful intensity of flavors with a real lightness. You have 8-10 courses at Aubergine but never feel like you need to leave in a wheelbarrow.” Continued on page 18

Cogley was named “Best New Chef ” by Food & Wine magazine, and Aubergine has received multiple awards from Wine Spectator, Forbes Travel Guide and Travel + Leisure. “We let Justin have a lot of autonomy,” Fink says. “He’s always teaching himself. I’m extremely proud of who he is as a person and how he’s evolved as a chef.” Cogley, who spends mornings foraging for wild greens on local beaches, says the mystique and romance of Carmel is part of the draw for guests. “People love the architecture and story and artists of Carmel,” says Cogley. “There are serious ‘foodie’ goals to eat at Michelin star restaurants and put photos of your meal on Instagram. Some have been here almost 6 years, which is very rare in the business. We work really well together, and bounce ideas off each other.” A recent dinner at the 9-table Aubergine consisted of oyster, yuzu emulsion, cucumber gelée; artichoke tart, white anchovy, honeycomb, mint; uni, sweet soy, potato; tomato, lemon thyme, caviar; ayu, potato squash, Meyer lemon, trout roe; Shiro dashi, fava beans and shoots, lobster; morels, chicken jus, ramps; ribeye, kohlrabi, sunflower miso; strawberry cremeaux, pistachios, olive oil cake; and chocolate brownie with marshmallow fluff and cocoa nibs. At any seating there are, at most, 26 people dining together in Aubergine’s elegant space, who are welcome to eat as swiftly or linger as long as they desire. GourmetFest allows for some of the world’s best chefs to bring their expertise right to Carmel’s doorstep and with 20 events, is able to accommodate more diners. “The pairings with food and wine are unique, and guests leave with a different experience every year,” says Fink. ■

Howarth’s favorite pastime when he’s not touting the sunny Carmel Valley lifestyle is to play a round at the Ranch’s Pete Dye designed course. “I’ve been a member since 1996,” he says. “I’m an outdoor person and love being able to spend time with people on the golf course.”

Q: When did you learn how to play golf? A: I was 12 years old and my father took me with my three brothers to teach us on the Stanford Golf Course near where we lived. Although I enjoyed learning I was dedicated to competing in tennis and soccer, consequently I didn’t pick up a club between the ages of 18-30.

Q: What have you learned from Golf? A: Golf has taught me to slow down and not rush and to keep my concentration more than any other sport I’ve played. You are an individual playing against yourself and it makes for a very interesting game trying to hit something that’s stationary. It’s all up to you. Earlier in my sales career, I answered every phone call that came in, but now that’s changed, and I will turn off my phone when I play. I found the distractions really hurt my game.

Q: What do you enjoy about the course at Carmel Valley Ranch? A: There is a unique energy out at the Ranch. When I drive thru those gates, I feel so fortunate to live, work and play there. There’s amazing and plentiful wildlife, lavender, olive trees, pinot noir grapes, bees, goats and more. The course is bent grass from tee to green featuring a lot of different contours and requiring numerous rounds to develop proficiency. Some long hitters think it’s a short track, but it taught me to play with more accuracy. Although the ownership has changed hands over the years the current owners have invested significantly in the property such that it keeps getting better and better with improved amenities. Q: How do you approach your game? A: I’m more of a casual golfer. I play with people whose homes I have listed and sold (Buyers and Sellers, members and friends). I used to be more competitive, but now I try to relax and enjoy playing with a group of friends and with my wife. I never really took many lessons and I don’t even hold the club the way you’re supposed to. I certainly don’t have a classic swing that you’d want to emulate, but it gets the job done.

Q: How has golf been bonding for you? A: My three brothers and I still try to play golf together at least twice a year. Before my dad passed away, we would play as a fivesome. He was 85 the last time we all played, and he had a wonderful time. Alzheimer’s had gotten the better of him, so I would hand him a club and he would hit it just like when he was 70. My wife and I try to play at least 9 holes together on Sundays, sometimes with other couples. You meet some really nice people and learn a lot about them on the golf course.
