THE COMPANY “We are what we eat�, the philosopher Feuerbach used to say. Cascina San Cassiano has founded its mission on this aphorism. Cascina San Cassiano is based in Alba (Piedmont) in the hearth of the Langhe territory (UNESCO heritage), a territory of great food and wine tradition, where the Rossetto family has been processing since 1990 the fruits and vegetables of its farm propriety.
Fruits and vegetables growing in the Rossetto farm have been transformed into high quality fine foods. Passion is always the same, as it is the same the taste and the flavor that you find when you open one of our glasses. Glass reveals the transparency of our production, the same transparency of our behavior and of the energy that we invest to create our specialties. High techonology allows us to have a healthy and certificated production. In our range of 360 references we have sauces, meat ragout, truffled products, but also fruit in syrup, preserves and sweet spreads.
THE COMPANY Natural and traceability We select high quality first materials and process them within two days from incoming. Our ingredients are gluten free and certified, such as the hazelnuts Piemonte PGI (Protected Geographic Indication), GCDO wines, bell peppers from Carmagnola, Italian sundried tomatoes, PDO cheese, balsamic vinegar from Modena PGI. Our daily commitment is to offer genuine products that enhance the flavor of fresh ingredients, without preservatives, artificial colors or GMO. A concrete engagement to preserve the best of what nature offers. Cascina San Cassiano has a specific logistic process and an efficient tracking system designed to ensure the follow up of the product from the producer to the final consumer and thus meeting the needs of consumers who look for traditional but safe food.

Cascina San Cassiano Plus is a project to improve food quality. We are studying the use of special ingredients, the proper mix of the same or the replacement of some ingredients in order to produce food specialties that can be eaten by subjects with food-related issues, such as celiac, food intolerances, diabetes and hypertensive. The products Cascina San Cassiano Plus can however be consumed by all those who, despite having no particular health problems, still want to follow a healthy diet for their well-being.
THE COMPANY Security and sustainability
Our continuous strive for quality, reliability, innovation and added values has brought us to achieve important goals as regards the certifications we got from Bureau Veritas Italia S.p.A.: BRC and IFS. CCPB (for the certification and control of organic food products and ecological “non-food” items) has issued the certification for “organic production”.
Safeguard of environment has always been one of the aspects that influences the company’s policy of Cascina San Cassiano; the research for eco-friendly solutions often leads to significant results, from the point of view of environmental impact, as well as for energy saving and efficiency. The green system Cascina San Cassiano means that we use renewable energy to power our production line through the adoption of photovoltaic panels for the production of electricity. This means that the quantity of CO2 can be reduced up to 5 tons per week. Cascina San Cassiano does not generate polluting smoke and uses recyclable packaging. Our commitment for environmental protection includes also internal training courses on energy saving for our personnel; we teach how to behave eco-friendly not only at work, but also in everyday-life.

What does “organic production� mean? - The cultures are grow up excluding the use of chemical products such as fertilizers, insecticides, herbicides and antifungal used as fertilizer for the land for beating weeds, or other chemicals used to fight pests and plant diseases. - Fruits and vegetables from cycles cultivation extensive are excluded and therefore is guaranted crop rotation, with the use sector of organic substances. WHAT IS.............
Stevia Rebaudiana Bertoni, commonly called Stevia, is a perennial grass belonging to the family of “Asteraceae”, most probably originated in the Rio Monday Valley on the Paraguay heights. It grows in sandy soils near the water. The leaves are the main sweetening source of the whole plant because they contain steviol glycosides, a sweetening substance 300 times more powerful than white sugar. The most common monosaccharides, such as fructose and glucose, are present in Stevia leaves, but in low quantities.
This is the reason why Stevia leaves have a strong sweetening power but no calories.
MAIN CHARACTERISTICS: • No calories • It doesn’t cause plaque and tooth decay • Anti-hyperglycemic effect: Stevia products are sweet but with less calories, so they represent a good alternative for diabetics • Anti-hypertensive effect: clinical studies of patients with moderate hypertension show that a continuous and regular consumption of stevioside (750 mg/day) for one year reduces both systolic and diastolic blood pressure A preserve prepared with table sugar has an average of 200 kcal for 100 g (depending on the fruit quantity). Difrutta with Stevia Cascina San Cassiano have an average of less than 55 kcal for 100 g. This is incredibly low, considering that an apple has an average of 45 kcal for 100 g.

PRESERVES AND SPREADS WITH STEVIA Preserves made with fruit in pieces and sweeteners: erythritol and steviol glycosides. Vacuum cooking at a temperature below 70 °C (158 ° F), to avoid oxidation. Pasteurization temperature is not above 80 °C (176 ° F), to better maintain the nutritional quality of fruits. Sweet cream spreads without added sugar, with sweeteners erythritol and steviol glycosides. Both stevia and erythritol are calorie free sweeteners that do not change the glicemix index and can be indicated for people suffering from diabetes or for those who are on a diet but don’t want to sacrifice taste. Ingredients are accurately selected, mixed with patience and skill to obtain a soft and smooth spread. They are prepared with an artisanal method using simple and natural ingredients. The result is an extremely good, genuine and fine product. Without preservatives or artificial colourings. All preserves and spreads with Stevia are Gluten free.

Black mulberry extra preserve The cultivation of the mulberry tree, so common in the past, today is almost entirely forgotten. The black mulberry tree, native fron Asia Minor, contains a high amount of iron, about 185 mg per 100 grams of fruit; a very rare thing among the berries, and very few calories, about 43 to 100 grams. Its fruits, the black-purple anthocyanin rich sioned, precious antioxidants present in all black plants, purple and red, with vasoprotective action. In the bark of the root, used as a diuretic, purgative, hypoglycemic and anti-anemic, it contains the morusina, a flavornoid with analgesic ideal in cases in pain in the nerve endings (in the skin, subcutaneous tissue, muscles, joints, periosteum, vascular system). Try our preserve on bread, with yogurt or garnish your cake.
Strawberry “Mara de bois� variety extra preserve The Mara de bois variety, originally from Britain, is a small and fragrant fruit with aroma and taste very similar to the wild strawberry. The fruits are characterized by firm fresh and very tasty. The harvest takes place between May and October. This particular type of strawberry is much sought after and appreciated by pastry chefs especially for decorating cakes, cheesecake and bakery. Try our preserve on bread, with yogurt or garnish your cake.

Chesnat are very healthy and nutritions fruits. In the past, it has been an essential food for the population, which has earned the nickname of “poor man’s bread”. Thanks to the high content of carbohydrates , which make it an atupical fruit, the chestnut is able to replace the most valeuable cereals. It’s characterized by the high percentage of starch combined with a discreet content of fat, protein, mineral salts (especially potassium, phosphorus, sulfur, magnesium, calcium,iron) and vitamins (C, B1, B2 and PP). They are also easly digestible, making it, along with other features, a perfect food for athletes. The season of chestnut begins from mid September and lasts until the end of December. Chestnuts are gluten free. The marron chestnuts can be distinguished from the more elongated than the rounded shape of the chestnut. In addition, the brown possesses a film under the shell which does not penetrate into the fruit making it more easy to peel. The chestnuts can be used in many different ways: boiled, roasted, used in savory recipes with pork roasts and venison and many desert recipes such as “mundaj” - chocolate rolls with brown - e i “marron glacé”.

Commonly the term “truffle” means the only body that comes from the subsoil that is identified with the help of trained dogs and the harvest of the human hand. The truffle is an extremely valuable food, so very expensive. A penetrative perfume is the typical element of the truffle that is developed just from an accurate maturation. The purpose of the perfume, that attract the wild animals, is to spread its spores and perpetuate the speciest.
Tuber magnatum Pico Tuber Magnatum Pico white truffle (from the Latin magnatus= tycoon, wealthy man, that of the magnates, for his good qualities), commonly called White truffle, is the most precious species of truffle in absolute terms for the gastronomic point of view, and from the purely economic, because of the very high costs it can take. The white truffle is widespread in the area of Alba (CN), which takes place annualy the oldest White Truffle Fair. Not that far from Alba, at the Castle of Grinzane Cavour (CN), every year is held the World Auction of Alba white truffle.
Tuber Aestivum Know by the vulgar name of “Scorzone”, Tuber Aestivum (from the latin aestivum= growing during the summertime) stands out beacouse of a few features as the yellow/brown color of the inside part called “meat”, the black warty peridium and its typical period of maturation (from which derives the name). BRA CHEESE- Piedmont region of Italy The Bra is a PDO cheese. Made with at least 90% of cow’s milk, Bra cheese may contain supplement milk as sheep or goat milk. It takes its name from the piedmontese town of Bra (in the province of Cuneo), which in the past was the eldest cheese market in the Cuneo valleys.
CASTELMAGNO CHEESE - Piedmont region of Italy Castelmagno is an italian PDO cheese, product in the municipalities of Castelmagno, Pradleves and Monterosso Grana (Cuneo province). It’s a semi-hard cheese, blue-veined, mainly produced from cow’s milk from two consecutive milkings (something supplemented with goat or sheep milk percentages that never exceed 20%).
PARMIGIANO REGGIANO CHEESE - Emilia Romagna region of Italy Parmigiano Reggiano is a PDO hard cheese, made from raw caw’s milk with no additives or preservatives. The area of production of Parmigiano Reggiano includes the provinces of Parma, Reggio Emilia, Modena, Bologna and Mantova, between Po and Reno rivers. The best aging must not be less than 24 months, could be as high as 36 and 40 months and up to 90 months for the long curing. Parmigiano Reggiano is one of the most imitated Italian food in the world.
PECORINO - Regions of central Italy / Sicilia / Sardegna regions of Italy The term “Pecorino” refers to a cheese made from sheep’s milk. European community has recognized to Italy seven Protected Designations of Origin (PDO) thanks to the high quality of italian production: Roman Pecorino, Tuscan Pecorino, Sardinian Pecorino, Pecorino of Filiano, Pecorino of Crotone, Pecorino of Picinisco and Sicilian Pecorino. Characterized, in addiction to the sweet taste, also for the square-shaped with three or four tips and the width of not less than 1/3 of the height.
Pepper from Cuneo Also called “Pepper spinning top�, has a conical shape, stocky, can sometimes present sketches of three or four points. The pulp is very thick and crisp, tasty and sometimes slightly spicy. Featuring a think skin but easily detachable from the pulp, which combined with the firmness and texture of the same flesh, makes it particularly suitable to the baking and grilling.
