Finger Lickin' Kid Lovin' Lamb Ribs
Ingredients 1 1/2 cups w holemeal penne pasta 1/2 BBQ chicken (skin removed) 3 tbsp olive oil 1 tsp minced garlic (or 1 chopped clove) 1/2 red capsicum, diced 1/2 cup pitted black olives, halved 1/3 cup sun-dried tomatoes, sliced 200g canned cannellini beans, drained and rinsed 2 handfuls baby spinach 2 sprigs fresh herbs, such as rosemary or oregano 2 tbsp grated parmesan cracked black pepper
Method

Cook the pasta until al dente, according to packet instructions. Pull the meat from the chicken and shred into bite-sized pieces. Heat the garlic and 1 tbsp olive oil in a pan, then add the capsicum for 2-3 minutes, stirring regularly so it doesn't burn. Now add the olives, sun-dried tomatoes, cannellini beans and fresh herbs. Stir regularly for another 2 minutes, or until everything is cooked through and soft but not soggy. Drain the pasta and tip back into the empty pot. Now add the chicken, pan mixture and spinach, and combine w ell. You can do this over a gentle heat if you'd like to w arm the dish through again.

Divide betw een four plates, drizzle each w ith remaining olive oil and parmesan, then add pepper to taste. This dish is lovely hot or cold.
