2 x 100g skinless salmon fillets 60g mixed salad greens 1/4 cup raw w alnuts 1 orange, peeled and diced 1 cup sw eet potato in 1cm cubes 1/2 cup shelled edamame 1/2 cup cucumber, chopped 1/4 avocado, diced 10 mint leaves, finely chopped 1 spring onion 1 tsp olive oil lemon juice, to taste salt and pepper

Method Pre-heat the oven to 200째C and line tw o trays w ith baking paper. Brush the cubed sw eet potato w ith olive oil and place on one of the baking trays.

Meanw hile, cook the edamame. If you're using frozen beans, just microw ave in a container w ith a few tablespoons of w ater for about tw o minutes. Remove and immediately rinse w ith iced-cold w ater to stop the cooking process. Put the salad leaves in a big bow l, then throw in the edamame, avocado, orange, mint leaves, cucumber and roughly chopped w alnuts. W hen the sw eet potato and salmon are cooked, allow them to cool slightly, then flake the salmon w ith a fork. Now add both to the salad bow l. Gently toss everything, drizzle over desired amount of lemon juice, crack some salt and pepper over the top and toss again. Thinly slice the w hite and light-green parts of the spring onion and sprinkle over the top.
