Healthy Recipe: Chocolate Pudding with Macaroons Macaroon is a type of small sweet cake made of ground almonds. It can have the consistency of cookies or meringue. Most macaroons consist of egg whites, coconuts, nuts and almonds. This no bake healthy recipe only requires the use of a stove. Basically, you will be making a sort of custard thickened with cornstarch and enhanced with macaroon crumbs. To avoid sweltering use a heavy bottomed pan. When heating the mixture do so in low temperature. If cooking the mixture is done in high heat it will cause to curdle, form lumps, or become too sticky. Keep in stirring the mixture to achieve a smooth consistency that is similar to mayonnaise. To reach the bottom, corners, and sides of the saucepan and keep the pudding from sticking use a large rubber spatula. You can pass the liquid through a sieve or strainer to get rid of any lumps or grains formed during the process. Ingredients: 2 squares chocolate, grated, Âź cup sugar, 4 cups milk, boiled, 1 cup macaroon crumbs, 3 eggs, 4 tablespoon cornstarch, 1 teaspoon vegetable shortening, pinch of salt Preparation Instructions: 1. Boil the milk in a pan. Grate the chocolate in another pan with 1/2 cup boiling water and 4 tablespoons sugar. Add milk once it is well blended and stir well. 2. Add cornstarch to milk and mix well. Then add vegetable shortening and salt. 3. Beat the egg whites in a bowl. Then add macaroon crumbs and beaten whites to the milk and chocolate mixture. Pour into wet mold and set on ice for 1 hour. Avoid stirring it too much once you add the eggs and folded it into the milk and chocolate mixture. The eggs should be beaten separately until it is frothy and then folded in to the milk mixture. The pudding is poured in the mold and allowed to set on ice for an hour once the egg mixture and macaroons are added and evenly distributed throughout. If the pudding achieves the right consistency, you can serve it with whipped cream on top and garnish it with fresh fruits or chocolate shavings.
