Healthy Recipe: Grilled Kabobs with Steak and Vegetables Cubes of Sirloin Steak marinated in a mix of soy sauce, sesame seeds and beef rub and skewered alternately with slices of hot peppers, onions, and orange make a delicious meal for summer barbecues or backyard parties. Sirloin steaks are less expensive cuts of steak compared to tenderloin, T-bone, New York strip, porterhouse or fillet mignon but are quite tasty and great for making healthy dinner kabobs recipe. The steaks are sliced into cubes so they cook very quickly on high heat over the grill. To keep them juicy and tender avoid overcooking the kabobs. Choose sirloin steaks that are about an inch thick or more they can be cubed and stay meaty cooking recipes. The cubes should be uniform in size so that they cook evenly and the same time. Take care not to marinate the meat too long or it might turn mushy or tough when cooked. Sear the steak kabobs over direct heat in all sides move then to indirect heat to finish cooking. Other vegetables you can include in the kabobs are bell peppers, cherry, tomatoes, mushrooms, Italian squash, baby potatoes (boiled and cooked through before grilling), zucchini, and corn on the cob (husked and sliced into half an inch thick rounds). If you are using bamboo skewers instead of metal skewers, soak them in water for an hour to keep them from charring on the hot grill. Put assortments of cubes and vegetables on skewers. Lay on grill for 5 -7 minutes per side. At 145 degrees internal temperatures take off grill and serve! You can also prepare balsamic vinaigrette for basting the veggies. A basic mixture of olive oil, balsamic vinegar, salt and pepper already makes a tasty basting.
