Ingredients 1 1/2 cups pumpkin puree 1 cup unsweetened coconut butter softened 8 tbsp butter softened or use coconut oil for dairy free 1 tsp vanilla extract 2 tsp vanilla liquid stevia 1/2 cup sesame flour or use almond meal 1/4 cup coconut flour 2 tsp pumpkin pie spice pinch salt Optional: 1/2 cup sugar free chocolate chips optional coating: Sukrin Gold brown sugar substitute
Instructions 1. Blend the first 5 ingredients in a stand mixer until smooth. 2. Taste and adjust sweetener if needed. 3. Whisk the remaining ingredients together in a bowl. 4. Slowly pour the dry ingredients into the wet in the stnad mixer until combined. 5. If using chocolate chips, blend gently on low. 6. Using a cookie scoop, form 30 balls. 7. Roll in Sukrin brown sugar substitute if using. 8. Keep refrigerated until ready to serve.
