DONNA GRAY**
I love autumn in the GTA – that touch of crispness in the air just seems to heighten the senses somehow. Watching the sun sparkle on water that turns grey-blue as it gets cooler; trees ablaze as if painted by nature’s brushstrokes; the delicious anticipation of arriving home after a walk to a steaming cup of freshly brewed pumpkin-spice latte.
Our Fall 2024 Cayman Marshall South edition is all about taking time out to nurture your senses in every way. First, all waterside homes are very special, but our cover feature is truly different. From its private driving range atop the roof, to its beautiful multi-terraced landscaping descending gradually to the water’s edge, this house saves its greatest delight for after sunset – when the city skyline

sun destination. From its miles of pristine, unspoiled beach, to delicious local cuisine and close-up encounters with nature, life here seems to happen in slo-mo. Be forewarned: you may never want to come home.
Finally, we take a look at a common dilemma: a home that we love, but that no longer works for us. You have three choices. You can sell and buy a new home; tear down and rebuild anew; or renovate to get exactly what you need. We examine all three options, pro and con, and show how one homeowner made what was for her, a perfect choice.
That’s alongside all our great regular features, and some of the most beautiful listings you’ll find in the region. We hope you’ll savour these last lingering fall days relaxing in the garden or stretched out on a lounge chair on a sunny deck. And we look forward to running into you in town soon!

CITY THE SHIMMER OF
PRIVATE RESORT-STYLE LIVING BY THE LAKE
By Martha Uniacke Breen
This elegant lakeside home makes every day feel like a vacation in Muskoka or the Hamptons. And the beautiful view actually gets better after sunset.
Riparian homes (those with lake frontage, and the property-rights privileges that go with it) are a rare and coveted find in Mississauga; there are fewer than 100 of these special homes in the whole city. So when any one of them comes on the market, you know there will be great interest.
Well, according to Cayman Marshall sales representative Donna Gray, this lakeside stunner is among the best of the best.
“I’ve visited a lot of waterfront properties over the years,” she says. “But this has to be one of the most beautiful, and the most unique, I’ve ever seen. There are so many standout points about this incredible home that it’s hard to know where to start.”
Probably a good place to begin is the attractive, tree-lined cul-de-sac in the Lorne Park neighbourhood where the home is located. The house is set slightly higher than its neighbours on a little rise; the slightly elevated perspective gives it a becoming air of modesty, more like a country retreat than a grand 7,700-sq.ft. home.
And it’s a bungalow! It’s one of only three homes of its type and size in the city. One-storey living like this, especially on the water, is both a practical and an aesthetic luxury. “The bungalow style gives you stunning lakeside views from every room,” says Donna.
“Every waterside home in the city is very special, of course,” she continues. “But for most of them, you have that amazing view during the day, but at night, it’s pitch dark. But here, at night you can clearly see the entire Toronto skyline sparkling in the distance. It’s truly a breathtaking sight, and a rarity among homes like this one.”
The wide, welcoming mahogany front door opens into a bright sun-filled foyer, with a barrel-vaulted ceiling that soars to some 20 feet at its highest point. The minute you enter, your eye immediately goes to the lake, visible from no fewer than three vantage points.
Straight ahead of you, the great room’s octagonal walls, carved stone fireplace and coffered ceiling give it the feel of a room in a castle by the sea. Just off of it, there’s
a cozy little study panelled in rare African mahogany, where you can stretch out and watch TV, curl up with a book, or serve drinks from the built-in bar, all in complete comfort.
To your right is the kitchen wing. This is the true heart of the home, designed to function equally well for passionate cooks, and those who prefer to leave the cooking and catering to professionals. There’s also a fully equipped butler’s pantry for extra
storage and prep, and a charming breakfast nook, with its own bay window view overlooking the water.
Across the house, the principal bedroom wing features a private walkout to your own elevated deck, for morning coffee or a quiet time-out when the house is full of guests. The adjoining ensuite was designed for pampering: with a walk-in dressing area, well-appointed shower, and a deep soaker tub tucked in its own bay window. The bedroom wing features two more luxurious bedrooms, each with its own ensuite; a third lower-level bedroom suite features walk-in closet, three-piece bath and a walkout to the patio, for a total of four bedrooms altogether.
The private elevator takes you to the lower level, which is truly designed for entertaining (and enjoying life!) in style. At the foot of the stairs, greet guests with a drink from the elegant, fully appointed mahogany bar, complete with classic nailed-leather stools and a brass rail. You might choose a bottle for dinner from the temperature-controlled wine cellar, have a game of pool, settle in the home theatre for
a movie, or work out in the gym. Or you might opt to simply relax in the family room, with its granite fireplace, leathered upholstery and romantic coffered ceiling.
Walk out from here directly onto the landscaped terrace, where a delightful procession of graduated levels – each with its own character – unspools down the slope towards the water; this is truly the most resort-like part of the property. (No wonder; it was created by Partridge Fine Landscapes, known for their imaginative and breathtaking landscape designs.) A combination of native plantings set amongst natural stone boulders give it the feeling of a retreat in Muskoka or the Hamptons rather than the GTA. From spring till fall, you’ll want to spend every leisure hour out here.
A choice of seating areas allows you to enjoy the view and the breezes from a variety of vantage points. There’s the patio just off the house itself. A few steps away, you can warm yourself on cool nights by the wood-burning fireplace as you watch the sun set over the water. The descent continues past a trickling water feature with its own private waterfall; a stone-trimmed hot tub; and an outdoor barbecue for feeding a crowd.
A few steps above the water, the flagstone-lined pool offers another perch from which to savour lakeside living. But this is a riparian house, don’t forget, with 175 feet of frontage, all yours. One more short flight and you’re down at the waterside itself, where you can moor a Jet-ski, kayaks or floaties, or go for a dip in the lake.
With its stunning views, smartly designed layout and resort-style landscaping, this house is unforgettable enough. But amazingly, it has one more surprise to reveal. To discover it, you need to step into the elevator and take another short ride – this time up to the roof.
The elevator doors open onto a small vestibule, where a short ladder leads to a hatch in the ceiling. Open it up, and suddenly you’re high above the water,
where the view seems to go on for miles. There’s a built-in rooftop driving range for practicing your golf swing, but you may prefer to take a seat and just enjoy life for a little while.
In many ways, Donna notes, the house combines the best of city living – Port Credit’s sophisticated shopping and restaurants within walking distance, and one of the world’s great cities a short drive down the highway – with the best of a fivestar holiday retreat.
As Donna puts it, “In all my years of working as a realtor in this area, I’ve truly never seen a home quite like this one.”

Seasonal Design Trends: In Living COLOUR!
Whether you go for bright wallpaper or just a few animal print pillows, this season's decor is predicted to be more personal – and simply put, more fun – than it’s been for a while.
MARTHA
The wooded hills of Muskoka aren’t the only things that will be ablaze with colour this season: the design forecast for the colder months ahead calls for a fullscale return to colour for interiors as well. It’s all part of a welcome return to personal expression in our interiors – and a readiness to finally let go of safe white and grey and beige with everything.
But don’t panic if you’re not quite ready to give up low-key shades and neutrals just yet; they will always be there. Perhaps the biggest change is that after a few years of cool greys, the pendulum is swinging back towards warm tones: creamy whites, oatmeal, beige and tan, Simply White instead of Chantilly Lace. The swing from grey to beige seems to occur in design every few years, and often acts as harbinger to a return of colour across the spectrum.
bedroom as part of the overall design of a room. “We carry Phillip Jeffries Wallcoverings, who produce beautiful pieces. It’s like artwork for the wall,” says Roossien.
Robin Wood of The Cutter’s Edge in Huntsville observes that shades that have a connection to nature seem to be leading the colour parade: browns, tans, mossy greens, steel blue (rather than navy). It’s part of a larger trend strongly influenced by nature that includes plentiful potted indoor plants (both natural and lowmaintenance fakes), along with natural textures such as wood grain, veining and rough textures in stone and its various lookalikes, and the full range of natural fibres.
Light paint colours are still prominent in design, with a movement towards warmer, earthier tones. According to Tary Roossien of Cassis Design Studio, Benjamin Moore’s Dove Wing is a great option. “Wallpaper is becoming an important material and can personalize spaces, whether used to add interest to a smaller room like a powder room, or as an accent wall in the primary
More than we’ve seen for many years, individual personality and expression are king when it comes to how we live and decorate our homes. We want to infuse our spaces with elements and pieces that have meaning for us, whether it’s mixing favourite thrift store finds with investment pieces, adding family pieces that we’ve loved since childhood, or mixing periods and styles freely, simply because we want to.
The main rule is that there are no rule s.
“You really want to avoid the hotel-lobby, anonymous look,” says the design team at Elizabeth Interiors in Burlington. “People are really thinking about selfexpression in their homes. Maybe it’s the result of Covid, when we were all stuck at home, but personal expression and pieces that mean something to you are key. As designers, we want to know what’s near and dear to you and start with that.”
One of the most extreme expressions of the move towards both self-expression and exuberant colour and pattern is Maximalism, an almost theatrical trend where more is gleefully more: bright fabrics, busy patterns, ornate furnishings and finishes, every conceivable surface crowded with objects and interesting accessories. Another trend, sometimes called Dark Academia, features dark, moody interiors, inspired by Parisian coffee bars or Victorian smoking rooms.
But if that sounds just a little extreme for your tastes (at least at the cottage), there are plenty of ways to add colour and personality in subtler ways. As one of the Elizabeth Interiors designers suggests, try painting a single accent wall, or even the ceiling. Done in steel blue, lavender or even clear yellow, a painted ceiling makes a bold statement without being too in-yourface about it. Or update pieces you already own with bolder accents, like a cranberry sofa with a bold animal-print pillow – animal prints are all the rage in Europe this year – and place it in front of an accent wall in a rich jewel tone like jade or smokey sapphire.
Braden Vallery of Huntsville Design Centre suggests that starting with pieces you already own and love, or working with existing features like a great view, is another great way to add both colour and individual style. “I recently designed a lakehouse that had a great view of a cliff directly across the water,” she says. “We used the rust and pink granite of the cliff and the colours of the view to naturally inspire the design.”
Another Elizabeth Interiors designer shares, “Along with colour, we’re seeing a strong trend towards dealing with walls in a more complex way. Mouldings, mirror, and wallpaper are also big. It’s not only textures, but also finishes like limewash, Venetian plaster, and other treatments. All of these things elevate a plain wall.”
“As designers, we want to know what’s near and dear to you.”
The upcoming season offers more opportunity for personal expression than we’ve seen for some time.
In fabrics, “Textured fabrics: chenille, chunkier weaves and shapes like rounded pillows are big right now,” notes Vallery. “We’re seeing that in textures on hard materials as well; heavily patterned granite surrounding a fireplace, for example. We’ve also been doing a lot of ‘raw edges,’ such as live-edge wood tables, and also rough, unfinished edges on stone tables, for a very personalized look.”
“I’ve really been seeing wood grain coming back,” says Roossien, “in floors, furniture and to finish vertical surfaces like walls. It’s about the ‘authenticity’ of the wood.” In both traditional and modern settings, white-painted wood is giving way to mid-tone stains that add warmth and highlight the grain. Alternatively, wire brushing might bring out the natural grain even in a painted surface, or different cuts (such as plain-sawn or rift-sawn rather than quartersawn) or species of wood are then stained to highlight their unusual texture.
Interestingly, several of our design experts believe that some of last year’s biggest trendmakers in furniture design – notably, mid-century-modernstyle curves, bouclé and "that ’70s look” – may have had their day. As Robin Wood notes, “The ’70s look may be big in magazines, but I don’t think a full-on ’70s look
is relatable in many interiors. Instead, we’re seeing it in colours, and also in accents: pillows, accessories, artwork, rugs.”
Instead, Wood sees softer, lower-pile textures like linens and more classic tailored silhouettes as being more newsworthy right now. Additionally, reeded-wood surfaces on cabinetry and wall panels, which have been popular in recent years, are transitioning to more squared-off or subtly rounded edges.
That’s consistent with a trend Vallery is seeing in architecture and furniture design in general. “We’re seeing more organic lines in architecture, such as arched doorways, softer curves in furniture, and even organic, abstract designs in rugs.”
Whether you’re ready to take it to the max and fill your home with high-spirited colour and pattern, or prefer to start with a few bright pillows and maybe a colourful rug and then move on from there, the upcoming season offers more opportunity for personal expression than we’ve seen for some time.
“With fabric and décor, we’re seeing richer colours, richer textures and saturated tones,” says Tary Roossien. “I love that we’re seeing layers of colourful spaces again.”
The luxury of nature in
By Jennifer Bain
Mesmerized by the green glow of our LED kayaks, the sea turtles glided through the Caribbean Sea underneath us like seasoned solo performers. We watched their acrobatics through the bottom of the clear boats as they repeatedly surfaced and dove, circling us while giving each other plenty of space.
The green turtles of Anguilla stole my heart that night with Liquid Glow. Owner Lynn Morancie kept us away from the ballyhoo fish, which are attracted by light and have been known to jump in boats. So while I didn’t get to shriek at a skinny fish with an elongated beak flip-flopping in my kayak, I finished my paddle by watching an eagle ray gracefully glide through the water.
Everything moves in slow motion in Anguilla, a self-governing British Overseas Territory with barely 15,000 people, 33 beaches and a reputation for discretion and luxury.
Anguilla is just slightly off the beaten track. First you fly to St. Maarten and then island-hop in 20 minutes with Funtime Boat Charters, or half that time in a nine-passenger plane with Anguilla Air Services. The wee island – about 26 kilometres long and five kilometres wide – has just six traffic lights.
There is no finer base than the Malliouhana resort, which put this island on the luxury tourism map when the late British businessman Leon Roydon opened it in 1984. He was an avid diver and his antique scuba helmet collection is a focal point in the lobby.
Named for the Arawak word for eelshaped island, Malliouhana is on a bluff above azure waters and white sand beaches. Its 63 rooms and suites ooze low-key glamour. Flat-screen TVs are cleverly hidden in ornate mirrors. For turn-down service, bedtime treats include rum cake, guava cheese, lavender-scented aromatherapy bracelets, and infused H2O served alongside a lavender linen spray.
Minutes from Malliouhana is Cheddie’s Carving Studio, where Cheddie Richardson transforms driftwood into sculptures.
One of his pieces – dolphins carved in driftwood and mounted on polished limestone – was given to Queen Elizabeth II during a 1994 royal visit.
“Well, driftwood always has beauty for me,” the artist confided in his basement studio. “You pick up driftwood from the beach and you always can see something in it. I just use those twists and natural
“We try to take people off the beaten path.”
curves – animals, fish, birds, et cetera. Whatever its shape, I just try to create it in a simple form for you to see it better, like a cloud – like looking at clouds.”
I don’t remember seeing many clouds in Anguilla, especially when I did the Goat Cave hike with Quest Experiences and baked in the sun. We scrambled like goats over treacherous limestone and volcanic rock, then climbed down into a tiny sea cave for a swim.
“We’re a flat island, so there’s not much up-and-down climbing, but we do have sea rocks,” AXA Hike Life guide Jahdo Vanterpool admitted.
We didn’t see any goats, but did admire a bizarre-looking chiton. This edible, oval mollusc with eight overlapping dorsal shell plates clings to rocks, just like we did; only it was in the water and we were on cliffs above the ocean.
My forays into nature were interspersed with more leisurely pursuits, namely eating, shopping and sightseeing with Accelyn Connor of Premier Taxi, Tours, Bicycle Rentals & Adventures.
He made sure we pronounced ang-GWILL-a correctly, showed us Wallblake House (a plantation house built in 1787 by enslaved
men), and guided us through Albert’s Market Place. That supermarket boasts a statue of its late founder, Albert Lake (with his wife Octavia), who was the only Anguillian to have been honoured twice with a British Empire Award by Queen Elizabeth II for his contributions to the island.
“It’s nice to see what you can do beyond the beach.”
“Everybody comes to Anguilla for the exact same thing: beach, beach, beach,” said Huligar. “To a lot of people, sand is sand – it all looks the same.” He encases sand from different beaches in rings, bracelets and pendants, organizing the creations by which beach they came from, so people can see the spectrum of colours and textures.
Back at Malliouhana, Quest Experiences organized a rum tasting at Bar Soleil with Gloria Leveret of Glo’s Flavoured Rums. Sorrel (hibiscus), soursop and guava were all memorable.
Quest, run by Clemvio Hodge and his sister Gesel, curates more than a dozen experiences that showcase Anguilla’s culture and history. When people leave the island, Clemvio wants them to be able to say, “I’ve really been to Anguilla.”
Help on that front can also come from the Anguilla National Trust. Led by executive director Farah Mukhadi, a Canadian from Nova Scotia, the trust does important ecological work but also offers nature, heritage and walking tours.
She took me birding at the East End Pond Conservation Area and to look for Lesser Antillean iguanas and hawksbill turtles on one of the Prickly Pear islands. On uninhabited Sombrero Island, we saw brown boobies guarding their ground nests, while endangered Sombrero ground lizards ran fearlessly underfoot.
“We try to take people off the beaten path,” Mukhida explained after all those transcendent nature moments I’ve come to expect from Anguilla. “It’s nice to see what you can do beyond the beach.”
I popped into Aurora Anguilla Resort & Golf Club, which is owned by Best Buy founder Richard “Dick” Schulze, to eat at the island’s only steakhouse – D Richard’s. And while E’s Oven prepared my pumpkin soup and roasted chicken one day, I dashed across the road to Anguilla Sands & Salts to taste Josveek Huligar’s infused sea salts and artisan chocolates and admire his sand jewelry.

Love It Leave It
SHOULD YOU RENOVATE, MOVE, OR START FRESH?
Empty nesters and growing families face a similar question when it comes time to change their living situation: should you stay or should you go?
By Martha Uniacke Breen
moving from a high-demand neighbourhood, she adds, you may well realize some profit too.
But not so fast. There are drawbacks to consider too. The biggest problem is you can only choose from what’s on the market at the time you are looking to buy, and the tighter the inventory, the more competitive it can be. “People who are selling need to be ready,” she warns. “If you don’t have a property to move to, that can be scary.” The opposite poses risks too; if you buy before you sell your old house, there’s always the gamble that it may not sell quickly.
The second option is to knock down your old house and build a new one on the same lot. This can make sense if most of your property value is in the lot – a bungalow on a street where most homes are two storeys, for example, or where your existing home is dated or in poor condition.
Maybe you love your old neighbourhood and want to stay there; or the view is great and you want to make the most of it. Building anew lets you have your cake and eat it too:
a brand-new house with the design, quality and amenities you dream of, in the exact same location you’ve always loved.
But anyone who’s been through a newhouse build will tell you that, for all its joys, it’s a major project that will command most of your time and attention for as much as the next five years. Furthermore, some municipal areas have intricate bylaws that can turn a new-house dream into a nightmare. “If you are building on a waterfront lot, or in downtown Toronto or other cities, the zoning bylaws can be highly restrictive,” says Donna. “Make sure your builder knows exactly what they can and can’t do right at the start, or you could be in for a lot of headaches.” Not to mention extra expense!
Above all, be careful not to overbuild. Even with the best of the best in amenities and features, most new houses are not worth substantially more than similar houses of their type in the area. Unless your area is gentrifying rapidly and/or you plan to stay in your home for many years, you may not get your investment back when you sell.
The third option is to renovate. While renovating has some of the same pros and cons of building anew, in some cases it’s the Goldilocks choice. Most (note, most!) renovations (even major ones) cost less and take less time to complete than a full house build. You may save money by retaining existing features like a good foundation or brick outer walls. And, even if you only save a small section of the
original house, you might be able to use grandfathering exceptions to existing bylaws that were enacted after the house was built.
That’s what the designer/owner of this waterfront beauty in downtown Oakville chose to do. The location was great, but the house had some serious design flaws; notably, it had low eight-foot ceilings (partly due to lakeside height restrictions, but also the norm when the house was built in the late ’80s). Working with builder Aaron Smith of Granite Shore Homes, she decided to completely gut the interior, leaving the footprint intact and preserving the outer walls, and opened up the house to its greatest asset: a stunning full-on view of Lake Ontario, just a few steps beyond the foot of the property.
are no crown mouldings, which tend to visually bring a ceiling down. The upper edges of windows and doors are also raised just slightly higher than normal, a simple but effective visual bit of trompe l’oeil. And the entire main floor is breezy and bright, with few enclosing walls; everything is oriented towards the real star of the show, the lake.
The living room retains a quirk of 1980s architecture that works perfectly in the new layout: it’s actually one step down. To accentuate the feeling of height, the fireplace and seating are kept very low; the windowsills of the windows were lowered slightly as well. Throughout the main floor, broad window walls take up almost the entire side facing the lake; what you sense is the exhilarating view, not the ceilings.
Upstairs, it was all about practicality: for example, an extra room was turned into a conveniently placed laundry room, accessible not only from the bedrooms on either side, but also from the hall. Other moves help to raise the ceiling up here as well: cove ceilings in the principal bedroom, cozy vaulted eaves, and sun tubes in the hallway that fill it with light.
When you do your own renovation, you can control the quality level of the mechanicals and other elements.
“It’s really about quality,” says the homeowner. “When you do your own renovation, you can control the quality level of the mechanicals and other elements. With a house someone else renovated, you don’t know what you have. Here, I saved where I could and spent on the things that mattered.”
While the main-floor ceilings couldn’t be made any higher, she used a number of techniques to help visually raise them. “The trick was basically to keep all the elements low, to make the ceiling seem higher,” she explains.
Instead of pendant lighting, she had ceiling pots installed, with sconces in the living room for soft illumination; in the kitchen, a downdraft unit replaces a range hood. Window treatments hang directly from the point where the walls meet the ceiling, and there

DRESSING DIRECTIONS:
1) Combine all ingredients in a jar with tight fitting lid and shake until combined and creamy (or in a bowl, then whisk until emulsified), adding salt and pepper to taste.
2) Drizzle dressing over the salad and serve it on its own as a first course, or alongside any meat or poultry.
Breaded Chicken with Tarragon Sauce
CHICKEN INGREDIENTS:
• 4 skinless boneless chicken breasts
• 1/2 cup flour
• 2 eggs
• 1/4 cup milk
• 3 cups plain breadcrumbs
• 1 tsp dried oregano
• 1 tsp sweet paprika
• Salt & Pepper
• Lemon wedges for serving
• Vegetable oil for frying
SAUCE INGREDIENTS:
• 1 tbs butter
• 1 tbs olive oil
• 2 garlic cloves, peeled and chopped
• 200g mushrooms (any one of these or a mix of - cremini, oyster, portobello, shiitake, porcini)
• 1 cup heavy (whipping) cream
• 1/4 cup chicken stock
• 1/4 cup vermouth or white wine
• 2 tbs chopped tarragon
• Salt & Pepper
DIRECTIONS:
1) Prepare chicken cutlets by slicing each chicken breast in half lengthwise (you’ll end up with 8 cutlets). Between two pieces of plastic wrap, pound chicken breasts to about 1/2 inch thickness. Season both sides with salt and pepper.
2) Next prepare your breading station - you’ll need three shallow dishesfill first dish with flour, then add paprika and oregano. Mix to combine. Into second dish, crack the eggs and add milk. Whisk to combine. Into the third dish, add the breadcrumbs.
3) Working one at a time, place each cutlet into the flour and coat both sides, shaking off excess. Next, dip it into the egg, making sure it’s fully covered, letting the excess run off. Lastly, place the cutlet into the
breadcrumbs; coat both sides, gently pressing the breadcrumbs into the chicken. Place on a baking sheet and repeat with the remaining cutlets. Let them rest for about 10 minutes before frying.
4) In a large skillet, heat the oil (I use 1/2 cup). Test it if it’s ready by dropping a few breadcrumbs into it; if they sizzle straight away, the oil is ready. If they sizzle loudly and burn, then lower the heat.
5) Place cutlets into the oil, a couple at a time (depending on the size of the pan and cutlets); try to avoid overcrowding.
6) Fry until golden on both sides, 3 to 4 minutes per side, using tongs to carefully place cutlets into the pan.
7) Transfer the cutlets to a wire rack to drain. Repeat until all of the cutlets are done, adding a few tablespoons of oil if necessary.
8) To prepare tarragon sauce, start with heating the oil and butter. Add chopped garlic and mushrooms. Stir a few times, then add a bit of salt and pepper. When mushrooms release their moisture, stir them and let it evaporate until the mushrooms start to brown. At that point, add vermouth (or white wine); it will sizzle! Let it cook for a minute, scraping the bottom of the pan, then add the cream and chicken stock. Lower the heat to medium and simmer the sauce until it thickens; finally stir through chopped tarragon and remove from stove.
9) To serve, pair the chicken with your favourite sides (mine are mashed potatoes and spinach), then top with the sauce for an ultimate indulgence.
Puff Pastry Plum Galette
• 1 thawed sheet puff pastry dough
• 1 lb plums (I use golden ones, but Italian purple ones are also great)
• 3 to 4 tbs sugar (this depends on the ripeness and sweetness of the fruit)
• 2 tsp lemon juice
• 1 tsp lemon zest
size of the plums, half, quarter or slice them, removing the stone. Toss with lemon juice and zest, sugar, salt and cornstarch.
• Good pinch of salt
• 1 tbs cornstarch
• Sliced almonds (if using)
• 1 egg
DIRECTIONS:
1) Preheat oven to 400°F.
2) To prepare puff pastry: Cut the thawed dough into four 5X5 inch squares.
3) Place on a baking sheet lined with parchment paper. Using a sharp knife, score the dough all around 1 inch from the edge (do not cut all the way through).
5) Arrange the fruit into a mound in the centre of the square. There will be some juice in the bowl; spoon a small amount over the fruit (not too much so it doesn’t spread all over the edges). Sprinkle a few sliced almonds over the top.
6) In a small bowl, whisk the egg. Lightly brush the egg over the edges of the pastry, then sprinkle with sugar.
7) Bake for 20 to 25 minutes, or until the pastry is golden brown and plums are tender.
8) Let rest for a few minutes (the hardest part is waiting!).
9) Serve warm with vanilla ice cream and a dusting of powdered sugar.

TO PARADISE ON BVI!
A chance encounter on a sailing vacation led to the discovery of an exclusive new resort development that just may be like nothing you’ve ever seen before.
By Martha Uniacke Breen
Cayman Marshall sales representative
Steve Haddock happened to be on vacation in the British Virgin Islands recently when he stumbled across something that was unlike anything he’d ever seen in Canada – or anywhere else in the world really, as he tells the story.
“I was truly shocked that a place as sophisticated as this existed in the BVI”
“We were on a sailing trip with friends and staying at a yacht club near the BVI island of Virgin Gorda,” he recalls. “One day, we were laid up onshore because of high winds and decided to explore the island a bit. We turned a corner and came across this incredible vacation community.
“I was completely astonished at how beautiful it was,” he continues. “Here was this community of villas and homes featuring world-class architecture, stunning views and firstrate amenities and services for its residents. And the whole thing was designed with a strong sense of harmony with the environment of the British Virgin Islands, which is one of the world’s great unspoiled natural places.”
The amenities at this exclusive resort paradise, Steve notes, are also impressive. There’s a private marina where residents can purchase a private boat slip; local shops and restaurants; a well-equipped wellness centre with a wide range of options from tennis and pickleball courts to a fitness centre; a spa, a nature centre, medical centre, and even a kid’s club.
communities are notable for their unique beauty, attention to detail and emphasis on harmony with the land and its ecology. Many of these properties have received major recognition from international entities including the Urban Land Institute and others for their environmental excellence.
Impressed by Cayman’s expertise as a vacation property specialist in Muskoka and elsewhere, with value-added services such as our exclusive buyer qualifying services and premium-quality magazine, the developers decided to join forces with Cayman to offer selected properties in this exclusive BVI community to our clients.
“I was truly shocked that a place as sophisticated as this existed in the BVI; most properties here are more rustic,” Steve says. “But it still has that great casual lifestyle and friendliness you find in the BVI. There’s also a great golf cart and ATV road network that allows residents to travel around the island.”
Sensing an opportunity, Steve immediately got in touch with the director of sales for the development. He discovered that it’s the brainchild of an internationally renowned developer whose award-winning luxury
