Using special recipes from his "Babcia" (Polish for grandmother), Shane Leupold, his wife Lorie, and their son Ryan, have turned a rich family history into a thriving Meridian business.
F
rom a young age, Shane Leupold grew up knowing there was something special about his Babcia Sophie's soups. Each one started with an old, old broth recipe brought to America from Poland in 1910 by his great grandmother.

Over the past 20 years we have made over 2,000 gallons of soup and still use the original handwritten recipes for Sophie’s chicken, vegetable, and beef broths that are the bases for most of our soups. These coveted broth recipes originated from Sophie's mother whom we never had the pleasure to meet. She brought the recipes from Poland back in 1910, when she immigrated to the United States.

Nothing warms body and soul like a piping hot bowl of homemade soup. Our agents and staff happily answered our call for their go-to recipes when the weather gets cold.
THE BEST CHICKEN SOUP EVER 1 whole chicken (2-3 lb) 3 stalks celery with leaves, chopped 1 lb. baby carrots 2 onions, chopped 2 cubes beef bouillon, crumbled 1 packet chicken noodle soup mix 2 cans (14.5 oz.) cans chicken broth
1 pinch dried thyme 1 pinch poultry seasoning 1 pinch dried basil 5 black peppercorns 2 bay leaves 1 pinch dried parsley 1 pkg (8 oz.) pasta
DIRECTIONS: In large pot, cover chicken with water, add celery leaves, and bring to a boil. Reduce heat, simmer until chicken is cooked, 30-40 minutes. Remove chicken and place in a bowl until cool enough to handle. While chicken is cooling, strain the liquid, discarding celery tops. Pour liquid into large pot, and add celery, carrots, onion, bouillon, soup mix, & chicken broth & let simmer. Season with thyme, poultry seasoning, basil, peppercorns, bay leaves, & parsley. Bone chicken & cut meat into bite-sized pieces, return to pot. Cook until vegetable are tender & flavors are blended, up to 90 minutes. Stir in pasta & cook 10-15 minutes until noodles are al dente. CHORIZO & MUSSEL SOUP 8 c. water 3 dried pasilla peppers, deseeded 3 cloves garlic, minced 1/2 med. sweet yellow onion 1/2 lb. spicy Mexican chorizo
2 lbs. frozen mussels, thawed Cooked white rice Red onion, minced Jalapeno peppers, minced Crusty bread or corn tortillas for dipping
DIRECTIONS: In large soup pot, bring water to a boil. Remove 1 c. & pour over dried peppers; let soak 15 minutes. Simmer the sweet onion in the remaining water for about 30 minutes. Put peppers (with their water) in a blender with the garlic & puree; add to water/onion & continue simmering. Brown chorizo & add to pot 5 minutes before adding mussels. Add mussels, cooking until shells pop open, then lower heat, add salt & sprig of cilantro, & cook 10 minutes. Serve over a pressed ball of rice, top with onion & jalapeno. Enjoy with bread or rolled up tortilla.
CLAM CHOWDER 4 cans (6.5 oz.) chopped clams 4 lg. potatoes, peeled & diced 2 c. water 1/4 c. white wine 1/4 tsp. garlic powder Juice from clams (2 c.)
4 Tbsp. butter 4-6 Tbsp. flour 1 chicken bouillon cube 2 c. milk or half & half 1/4 tsp. white pepper Salt to taste
DIRECTIONS: Boil potatoes in 2 cups of water until tender. Melt butter in large sauce pan & gradually add the flour. Drain juice off clams & water off potatoes & add both liquids to the flour mixture. Cook over low heat until creamy. Add the clams & potatoes, stir in white wine. Add the garlic powder, bouillon, salt, & pepper. Simmer for 15 minutes. Add milk & heat, but do not boil. Serve. cbboise.com

EASY CHEESY SOUP 6 c. water 6 chicken bouillon cubes 2 cans (15-oz.) cream of chicken soup 1 c. milk
1 pkg. (16-oz.) frozen veggies 2 lb. bag frozen hashbrowns 1 lb. Velveeta cheese, cubed
DIRECTIONS: Boil water & dissolve bouillon cubes. Add veggies & hashbrowns. Cover & simmer for 20 minutes. Remove lid & simmer 10 more minutes until water is almost gone. Heat cream of chicken soup in separate pan & add cheese. Heat until melted. Add milk, stirring constantly to avoid burning. Mix together & serve.
MATZAH BALL SOUP 1 whole chicken (3-4 lb) 1-2 lbs. carrots, peeled & cut in half 1 bunch of celery, washed & cut in two 2-3 small turnips, peeled & quartered 2-3 small parsnips, peeled & cut in half
2-3 bunches of leeks, well washed 1 bunch fresh parsley 3 whole bay leaves 2-3 cubes chicken bouillon 1 pkg. Manischewitz matzo ball mix
DIRECTIONS: Place everything but the matzo ball mix in an 8-qt. stock pot & cover completely with water. Bring to a boil, then reduce to a simmer for 4-5 hours, or until the chicken comes off the bones when stirred. Keep pot covered or slightly cracked to reduce loss of liquid. Strain the broth, setting aside just the chicken meat & carrots. Prepare the matzo ball mix according to package directions, adding salt & pepper to taste. Bring the broth back to a boil, and drop balls in, reduce heat, cover, & cook per directions. To serve, ladle broth & 1-2 matzo balls into a bowl. Add chicken meat & carrots. MINESTRONE SOUP 1 lb. stew meat 2 c. water 1 c. chopped onion 3 Tbsp. dry red wine 2 Tbsp. barley 1 c. celery, chopped 1 c. carrots, cubed or sliced 1 c. green bell pepper, chopped 1 can (16-oz.) tomatoes 1 can (8-oz.) tomato sauce
2 cloves garlic, crushed 1 tsp. dried oregano, crumbled 3 small potatoes, diced into 1/2" cubes 1/2 tsp. each salt & pepper 1 c. frozen corn 1 c. frozen green beans 1 c. pasta shells 1 can kidney beans, drained 1 c. zucchini, cubed
DIRECTIONS: Boil stew meat in 2 c. water, skim off fat. In large pot, saute onion in wine, add beef, water, & remaining ingredients, except for the pasta, kidney beans, & zucchini. Simmer for 30 minutes. Bring to a boil, add pasta. Gently boil until pasta is tender, about 15 minutes. Add kidney beans & zucchini, & heat without boiling until warm. Sprinkle servings with 1 Tbsp. parmesan cheese.
POTATO SOUP 6-8 med. potatoes 1/4 c. butter 1/2 c. flour 6 c. milk
2 tsp. chicken bouillon 1/2 tsp. salt 1/4 tsp. pepper 1/2 lb. shredded cheddar cheese (optional)
DIRECTIONS: Peel, cube, boil, drain, & "mash" potatoes to desired consistency. In separate pan, melt butter, add flour, & cook, stirring constantly, about a minute. Add half the milk & on med. heat, bring to boil stirring constantly to avoid scorching. Turn off heat & add remaining ingredients.
PUMPKIN & SAUSAGE SOUP 1 lb. ground mild Italian sausage 1 small onion, diced 3 c. pureed pumpkin 1 tsp. dried thyme
1/2 c. brown sugar 7 c. chicken broth 1 c. heavy whipping cream
DIRECTIONS: In large pot, brown sausage & diced onions until cooked through. Drain fat. Add pureed pumpkin, thyme, & brown sugar, stir. Slowly whisk in chicken broth followed by the whipping cream. Bring to a light boil. Serve immediately. cbboise.com

SQUASH, SAUSAGE, & RICE SOUP 1 med. butternut squash 1 Tbsp. olive oil salt & pepper 6 c. chicken broth 11/4 c. chopped onion
1/2 c. wild rice 1/2 lb. Kielbasa sausage, cut into 1/4" pieces 1 c. frozen corn 3/4 c. half & half 1/2 Tbsp. parsley
DIRECTIONS: To prepare rice, heat 2 c. broth & 1/4 c. onion to simmer & stir in rice. Cover & cook about 1 hour, stirring occasionally. cool, & set aside. Cut squash & remove seeds. Brush with 1/2 the olive oil, season with salt & pepper, & put on baking sheet. Roast at 400° for 45-60 minutes. Remove, cool, & put in food processor with 1 c. broth, blend until smooth. Heat remaining oil & sausage, cook 3-4 minutes. Add onions & corn, season with salt & pepper, & saute 3 minutes. Skim off any fat, add remaining broth & squash, stir. Cover, & on med-low heat, simmer for 20 minutes. Season with salt, pepper, & chili powder. Stir in rice & cook 10 minutes. Add half & half & parsley, stir gently & serve.
BEEF TACO SOUP 1 lb. hamburger 2 cans tomatoes 11/2 c. water 1 pkg. taco seasoning
1/2 c. chopped onion 1 can kidney beans, undrained 2 (8-oz.) cans tomato sauce
DIRECTIONS: Brown hamburger & onion in large sauce pan. Drain grease. Add remaining ingredients, bring to a boil, then simmer for 30 minutes. Serve with grated cheese, sliced olives, sour cream, salsa, & taco chips.
CHICKEN TACO SOUP 1 can (32-oz.) chicken stock Cooked chicken, chopped Small bag frozen corn 1 can navy beans, drained 1 can black beans, drained
1 can sliced olives, drained 2 pkgs. taco seasoning 1 bottle salsa, any strength 1 carton sour cream Medium cheddar cheese, shredded
DIRECTIONS: Place all but sour cream & cheese in crock pot. Simmer on low 2-4 hours. Before serving, add carton of sour cream and cheddar cheese, stir. Top bowl with tortilla chips and more cheese. COLDWELL BANKER TOMLINSON GROUP

1 lg. can (28-oz.) crushed tomatoes 1 can (15-oz.) Italian stewed tomatoes 2 c. half & half
DIRECTIONS: In a 3-quart soup pot, melt the butter with the basil, garlic, & celery salt. Puree the Italian tomatoes in blender or food processor. Add the can of crushed tomatoes to the melted butter/herb mixture. Add the pureed tomatoes, & stir over medium heat. Slowly whisk in the half & half. Enjoy with sourdough or French bread.
TUSCAN BREAD SOUP (RIBOLLITA) 1/2 c. extra-virgin olive oil + some for bread 2 onions, chopped 2 carrots, chopped 6 oz. pancetta, chopped 4 cloves garlic, 2 minced & 2 whole 2 tsp. salt 2 tsp. freshly ground black pepper 2 Tbsp. tomato paste
2 cans (15-oz.) diced tomatoes 1 pkg. (5-6 oz.) fresh baby spinach 2 cans (15-oz.) cannelloni beans, drained 2 Tbsp. herbs de Provence 6 c. chicken stock 2 bay leaves 1 piece (6-oz.) Parmesan rind 6-8 ciabatta rolls, halved lengthwise
DIRECTIONS: Heat the oil in a large, heavy pot over med. heat. Add the onions, carrots, pancetta, minced garlic, salt, & pepper. Cook until the onion is golden brown & the pancetta is crisp, about 7 minutes. Add tomato paste & stir until blended. Add tomatoes & stir, scraping the bottom of the pan with a wooden spoon to release all the brown bits. Add the spinach, beans, herbs, stock, bay leaf, & Parmesan rind. Bring to a boil, reduce heat & simmer 30 minutes. Preheat oven to 350°. Drizzle the ciabatta halves with olive oil. Toast until golden brown, about 5 minutes. Remove from the oven & rub the top of the toasts with the whole garlic clove. Place the toasts in serving bowls & ladle the soup over the toasts. Sprinkle with Parmesan & serve immediately.
