t this time of year fruit is seasonal, bountiful and great value. So make the most of it. Picture a summer afternoon alfresco with tables full of mouthwatering fruit flans, puddings and cakes. Fresh fruit served with ice cream makes the perfect summer dessert Jenny’s apricot flan Jenny Littleton, Cornish farmer’s wife and Kelly’s supplier, shares one of her favourite recipes Preparation time: 15 minutes Cooking time: 45 minutes Butter for greasing 1 flan case 800g ripe apricots, quartered Juice of 1 lemon 50g caster sugar 3 eggs 125g flour 1tsp vanilla extract 300ml milk Icing sugar for dusting 1 Preheat the oven to 180 C, 160 C fan, 350 F, gas 4. Grease a shallow flan case. Place the prepared apricots evenly inside the flan case. 2 In a large bowl with an electric whisk, combine the other ingredients until you have a thick, batter-like consistency. Pour over the apricots and bake for 45 minutes until golden brown, fluffy and slightly risen. 3 Dust with icing sugar. Serve warm or cold with Kelly’s Clotted Cream Ice Cream.
