1881 Restaurant and Bar & Vintage Vino Wine Bar: A Toast to History in Downtown Kissimmee

Nestled in the heart of downtown Kissimmee, the newly opened 1881 Restaurant and Bar, in partnership with Vintage Vino, celebrates the rich history of this charming Florida town. Housed in a historic building that once served as Makinson Hardware, a vital trade hub since 1881, the establishment blends its storied past with a modern dining experience.

Originally founded by pioneer W.B. Makinson, Makinson Hardware was integral to Kissimmee’s development as a transportation hub, serving local farmers, fishermen, and ranchers. The hardware store remained a community cornerstone until it closed a few years ago when it was purchased by the Parsons family in order to restore it, making way for the revitalization of the space as 1881 Restaurant and Bar in 2023. The owners have preserved many original features, creating an inviting atmosphere adorned with repurposed hardware fixtures that honor the building’s legacy.

As part of its transformation, 1881Restaurant and Bar welcomed Vintage Vino, a local hotspot known for its high-quality wines, craft beers, and gourmet cheeses. This partnership allows guests to enjoy a delicious meal at 1881 and select the perfect wine to complement their dining experience, making it a prime destination for a night out in Kissimmee.

1881 Restaurant and Bar is more than just a dining venue; it serves as a community hub, hosting events such as wine tastings, live music, and art showcases. This month, the restaurant will unveil “The Cypress Room,” a private event space for up to 75 guests. With a large covered outdoor pavilion equipped with big screens, 1881 aims to be a popular spot for college and NFL football seasons, while also collaborating with local events like “Boo on Broadway” and seasonal festivals.

The Puzzle to Wills & Trusts

Q:At 50 years old, I’ve managed to build a life that mirrors the success of my friends and family owning a car, a house, have a solid bank account, insurance, and a 401K. Yet, I often find myself confused during conversations about asset protection. Specifically, I’m unsure about when or even if I should be setting up measures like a will or a trust to safeguard my family in the event of my death. Can you help solve the puzzle of my confusion about wills, trusts, and probate?

A:

Our lives are like intricate puzzles, made up of scattered pieces gathered over the years. Each piece represents crucial parts such as family, experiences, and achievements. As we journey through life, we painstakingly fit these pieces together, shaping a coherent picture of who we are and what we value. When our individual stories reach their end, the puzzle we’ve built shouldn’t vanish. It should stand as a lasting legacy, made of memories, values, and possessions, influencing future generations and fostering growth.

Estate planning, like puzzles, holds all these pieces together—homes, cars, bank accounts, investments, and more. Yet, many families struggle with this puzzle, lacking the will or trust to smoothly pass on these assets. Managing our wealth ensures this puzzle endures positively. By planning wisely, we ensure what we leave behind enriches lives, enabling others to build on our foundation. Our lives are interconnected pieces of a bigger puzzle, each contributing to a legacy that extends beyond our time. Yet, too often, people overlook this, focusing more on the present than preparing for the future’s uncertainties.

For those who pay little attention to heritage and inheritance, their life’s puzzle pieces too often end up in the family dump known as probate court. This leaves their families to sift through the rubble, relying on the court to manage the disarray and distribute the deceased’s belongings fairly. Each year, only about 32% of people in the US prepare a last will or trust, and nearly half of those

misplace or fail to follow their attorney’s instructions. As a result, 85% of Americans find themselves caught in the chaos of probate court, trying to piece together the puzzle of their loved one’s estate.

Managing our assets and wealth becomes crucial in ensuring the continuity of this puzzle. Through careful planning and stewardship, we ensure that the pieces we leave behind contribute positively to the ongoing narrative of life. Passing on resources and wisdom becomes a means to sustain and enrich the lives of those who come after us, allowing them to build upon the foundation laid by their predecessors. In essence, our lives are interconnected pieces of a larger puzzle, each contributing to a legacy that extends beyond our own time. Unfortunately, most people spend little time caring about all they have acquired in their life and focused more on the moment rather than the fact that their life could end abruptly at any moment and leaving those left behind in an emotional quandary and squabbles over who gets what now deceased.

You hold the puzzle of your family’s legacy in your hands. Don’t leave your family stranded in the probate court, also known as the family dump. Consult with one of our experienced attorneys at Jackson Law PA to complete your family puzzle by preparing a last will or revocable living trust.

Truly Haunted Spots in Central Florida & Beyond 15

Nothing phony, nothing fake: A tantalizing list of Florida’s genuine top haunts.

I believe it was July 5, the day after Independence Day, when I first spied the orange-black Halloween paraphernalia in the stores. The calendar may say it’s summer, but according to the aisles of Target and Walmart, it’s October 31. Summer vacation ends, school starts up again and before you know it, the family talk centers around making plans for Halloween.

Central Florida is a fabulous place for celebrations of all kinds, especially of the haunted variety. Walt Disney Resorts, SeaWorld, Universal Studios Orlando, all boast a wide variety of spooktacular shows, parades, celebrations that put other cities to shame. Of course, these locations aren’t really haunted. They’re fun and sometimes spine-tingling, but it’s all lights, smoke, mirrors and special effects.

It may surprise you to learn that there are quite a few real haunted spots in Central Florida and in the Sunshine State. If you’re the type who likes authenticity and is hankering for the real deal when it comes to your annual Halloween thrills, you’ve come to the right place.

If you want to get the inside scoop on local haunted locations, you need to go to an expert. I’m thrilled to be able to sit down with a real psychic medium to learn what’s truly haunted and what isn’t. Not just your everyday medium, Terri Rodabaugh comes from a family of gifted psychic intuitives and is a professional psychic medium featured on Hulu’s hit television show “Dance Moms.”

With Terri’s assistance, we are thrilled to present our official Central Florida Lifestyle Magazine official list of the top haunted locations in Central Florida and beyond. Terri will give us the inside scoop and will share her messages from spirit about each locale. We’ll rank each spot with A Big Bang for Your Buck, meaning definitely haunted and worth the trip, or A Bounteous Bust, meaning it’s a bunch of hype and skip the trip.

Central Florida’s Top Haunted Spots

Harry P. Leu Gardens

For those who have toured the mansion at Leu Gardens, it probably comes as no surprise that spirits roam the well-manicured lawns. Some visitors have reported sightings of apparitions, footsteps when the house is empty and mysterious figures hovering on the second-story porch. Many believe the figures to be the owner, Harry Leu and his wife, Mary Jane.

“I feel this place is definitely haunted,” says Terri, “and not just by the Leu family, but by the original owner that was murdered.”

After doing a little digging, I found that Terri is absolutely spot on. The Mizell family, Angeline and David W., staked their claim to the land that is now known as Leu Gardens in 1858. The land was settled by the Mizell family where they planted cotton and sugar cane. David Mizell is not only known for being the first owner of what we now call Leu Gardens, but he was the only sheriff of Orange County who died in the line of duty, as he was ambushed and murdered in 1870. Perhaps it is Sheriff Mizell and his wife Angeline that roams the property along with Harry and Mary Jane Leu.

The Mayfair Hotel, Sanford

The Mayfair Hotel located on East First Street in Sanford, was originally named the Hotel Forrest Lake after a beloved Sanford mayor. Built in 1926, it was a hot spot for dining, dancing and letting the good times roll. After all, it was the roaring twenties.

Through the years, the Mayfair building served as the Sanford Naval Academy, a school for boys and then headquarters for a religious mission. Celebrities like Arnold Palmer and the New York Giants baseball team have walked the halls.

Today there are rumors of other beings that roam the abandoned halls. Locals report sounds of a piano playing coming from the vacant hotel. Then there’s the shadowy figure that appears from time to time, along with a woman in white.

“This place actually feels like a time warp to me,” explains Terri. “Almost like the town is still thriving but in a different dimension. I’m not sure what would cause that, but I think you can feel it when you enter the town. It’s not an uneasiness, but an energy. It’s not harmful, just interesting.”

The Mayfair Hotel, Sanford: A Big Bang for Your Buck

Elijah Hand Building

This two-story building located at 17 West Pine Street has seen a lot of businesses come and go. Remember Déjà vu? Club Zen? The Blue Room and the Voyage Night Club? All businesses that once stood at 17 West Pine Street.

Originally built in the late 1800s and owned by a man named Elijah Hand, the building started off as a retail furniture store and, wait for it, a funeral business. That’s right. Elijah Hand was the first person in Orlando to introduce the process of embalming of bodies, allowing Orlando families time to bury their loved ones. In the old days, people who passed away had to be buried within two days due to decay.

By the way, Elijah’s son, Carey, took over the family business and is the owner of Carey Hand Funeral Home.

People who walk past the Elijah Hand building today claim they have an eerie feeling of someone watching them. Some have even experienced an object mysteriously hitting them on the head. Could it be Elijah Hand himself, making his presence known?

Terri agrees that something is haunting 17 West Pine Street. “I definitely feel a few presences there. I’m not sure I’d want to be there by myself at night. It feels a bit creepy. Someone needs to cross those poor souls over. They feel lost.”

The May-Stringer House

While Brooksville is an hour’s drive from Orlando, it’s worth the trip. The May-Stringer House is four stories with seven gables and a charming gingerbread trim. It’s a 14 room, “Painted Lady” Victorian home built in 1856. The volunteers who restored the house into a museum, claim to hear footsteps, voices and children’s laughter. It is rumored that the spirits are those of the original family that owned the home and that the cries of Jessie Mae, a child born in the home and who died at the age of 3, can still be heard. Terri agrees that the May-Stringer House is indeed haunted. “Yes! And it’s not just the spirit of Jessie Mae, but others that the doctor may have treated. Anytime there are huge renovations like that, the spirits can be unsettled. I feel like there’s more happening in the older part of the home than the newer additions.”

The May-Stringer House: A Big Bang for Your Buck

The Devil’s Chair in Cassadaga Cassadaga, Florida, established in 1875 and once called the “Psychic Center of the World,” is famous for its spiritual activity, quaint shops and the landmark Cassadaga Hotel. They say the hotel is haunted by a man named Arthur who used to stay in room 22. Arthur was an Irishman who was fond of libations and a good cigar. Many people have reported the smell of cigars and alcohol as well as tapping on their shoulders when walking close to room 22. According to experts of the paranormal, the Devil’s Chair located in the cemetery is downright spooky. Originally built as a “mourning chair” for visitors, local legend

claims that if you leave an unopened can of beer on the chair in the evening, it will be empty the next morning.

Is this the real deal? Terri says, “I didn’t feel anything paranormal while I was there, really. And for one who really doesn’t believe in the devil per se, I would say this is just an old wives’ tale. If someone is drinking the beer, it’s not the devil.”

The Devil’s Chair in Cassadaga: A Bounteous Bust

The Kress Building

The Kress building is not only lovely to behold with its decorative terra cotta and Art Deco design. It’s also well known for being one of Orlando’s most haunted spots. Now home to Kres Chophouse (no relation), the building boasts practically every kind of “haunting” you can name, from creepy footsteps, ghost sightings and spooky sounds. There are even claims that extraterrestrial activity once took place in The Kress Building.

“For some reason, when I look at this building,” warns Terri. “I feel like it’s a gateway to hell. Not sure I’d be wanting to spend much time there. Lots of energy emanating off that building and it doesn’t feel nice.”

The Kress Building: A Bounteous Bust and A Big Bang for Your Buck (While it is likely haunted, go at your own risk).

The Bradford-Ma Barker House

Located in Ocala stands the infamous Ma Barker house, home to the longest gun battle in FBI history.

One cold Florida winter, an old lady approached the owners of the house, asking if she could rent their home. She explained she wanted to spend some quality time with her sons. She didn’t mention her name, as Ma Barker and her boys, better known as the Barker Gang, were on the FBI’s Most Wanted list. Ma Barker was considered “Public Enemy No. 1” at the time of her death.

Two months later, the house was riddled with bullets and became the scene of the biggest FBI shootout in history, lasting four hours. Ma and her son Fred may have lost their lives in the infamous shootout, but experts insist their souls still inhabit the house.

Terri agrees with the experts. “Oh yeah, I’m sure you can hear gunfire here on a quiet night and maybe flashes of light and possibly smell gunpowder. But it’s mostly residual, which means it’s not really haunted (so not intelligent), and it’s on a loop of energy that cycles around.”

The Bradford-Ma Barker House: A Big Bang for Your Buck (Although the activity is residual energy and not an actual haunting, it’s worth the trip).

The Ghost Dog at Lake Eola

I’m just as surprised as you to read that there are reports of an actual ghost dog gallivanting along with the geese and swans around Lake Eola. The first thing that springs to mind would be a Scooby Doo like canine, but for those who have experienced the apparition, they claim it’s a small and friendly brown terrier that roams the eastern side of the lake. They say as quickly as the pup appears; he vanishes into thin air.

My initial instinct was to dismiss the story. But Terri says it “feels like the dog’s owner used to live around there and moved and now the dog can’t find them.” The poor pooch apparently is searching for its owner, but Terri ex-

plains, “I don’t think it’s unhappy, though. It likes to just hang around people, so it seems in good spirits, so to speak.”

The Ghost Dog at Lake Eola: A Big Bang for Your Buck

In the 1950s, long before Walt Disney World broke ground, there was a popular attraction in Lake Wales called Spook Hill. Families would drive to the hill on the weekends, where the driver (usually dad) would put the car in neutral. Miraculously, the car would roll uphill. It’s an interesting experience.

One of the advertisements for Spook Hill claimed, “See the spirits battle to the death.” That sounds pretty spooky to me. There are several legends surrounding the hill, such as a Florida pirate (Captain Sarsaparilla) is buried at the hill and pushes cars away. Another tale includes the spirit of a gigantic alligator that inhabits the area. Legend explains he is simply trying to protect his land.

Terri says, “Spook Hill feels like there’s science behind it instead of the paranormal.” She couldn’t be more correct. This famous hill in Lake Wales is an optical illusion caused by what is called the magnetic hill or “gravity hill.”

Spook Hill: A Bounteous Bust (However, it’s worth the visit, even though not haunted).

Orange County Regional History Center

It’s common knowledge that the Orange County Regional History Center used to be the Orlando courthouse. The most famous defendant was serial killer Ted Bundy, who was tried for the murder of Kimberly Leach in 1980.

There are claims that the building is haunted by the ghost of Ted Bundy with some experiencing oddities like levitating objects, laughs, screams and apparitions. The name “Ted Bundy” is even carved into a table where he reportedly sat during his trial.

“No, Ted Bundy’s spirit didn’t carve his name in the table,” explains Terri. “And I don’t think he haunts the courthouse. Why would he? He’d do better to haunt one of his places where he murdered someone. That would have more of a charge to it that this courthouse.”

In other words, while it may be haunted, it’s not Ted Bundy who’s doing the haunting.

Florida’s Top Haunted Spots

St. Augustine

It makes sense that the oldest city in the United States would be one of the most haunted. That oldest city is in our own backyard, which is why St. Augustine made our list. This is a town that is no stranger to hauntings, ghost sightings and general, all-around spookiness. Some of the highlights include the lighthouse, the old jail and even the famous Castillo de San Marcos.

Terri says the St. Augustine Lighthouse has a lot of activity. Approximately 150 years ago, the Pittee sisters, Mary and Eliza, were killed in a tragic accident. Some claim to hear the girls laughing and some have seen them floating around the bay.

“I do feel the girls there,” says Terri. “No one came to get them when they passed so they are still hanging around. I feel them showing up as three lit orbs as well. Glowing orbs. I also see a man with a long dark coat and hat that walks the property.”

Terri also picked up on energy at the old jail. “There is definitely a dark feeling there. Why wouldn’t there be? Deaths, hangings, and some were innocent people. I hear the innocent still claiming they were wronged.”

The St. Francis Inn Bed and Breakfast is an especially active location. “Lots of activity there. Running, screaming, all kinds of things I’m hearing. If you’re up for staying awake all night, this is the place to be. Definitely haunted.”

The Biltmore

If you’re craving a lavish-yet-creepy Florida hotel experience, look no further than The Biltmore. It has all the ingredients of a top haunted location. Once a World War II hospital? Check. Gangster activity? Check. Paranormal activity through the roof? Check.

Once a glamorous hotspot that hosted royalty, celebrities, sports stars, and even U.S. President Franklin Delano Roosevelt, it should come as no surprise that the Biltmore also hosted its share of gangsters, like Al Capone. In the 1920s, Thomas “Fatty” Walsh was killed on the 13th floor during a dispute about, what else, gambling. Since that time, many have experienced the elevator stopping suddenly on the 13th floor for no reason, messages on mirrors and shadows of military men roaming the halls.

“With so much history and so many different things this building housed, it’s no wonder that it might feel haunted,” Terri reports. “But I think it feels good. No evil here. Just a lot of old energy or memories that haven’t died out yet.”

The Biltmore: A Big Bang for Your Buck

The Arcadia Opera House

You know the song:

“They’re creepy and they’re kooky, Mysterious and spooky, They’re all together ooky,”

The ending to the verse could just as easily be, “The Arcadia Opera House.”

Built in 1906, this building looks like something out of a Stephen King novel. It was featured in a ghost hunter show on Bravo and is a regular haunt (pun intended) for paranormal enthusiasts.

As someone who has been to downtown Arcadia and has personally experienced the Arcadia Opera House, it’s even creepier than it sounds. It may be a long drive, but it’s worth it if you’re searching for the best Florida has to offer in the paranormal realm.

“I can imagine feeling watched in this place. I think the hairs on the back of your neck would definitely raise and you’d get some chills. Not only because of its past, but because it’s now an antique store and houses all kinds of energy that’s attached to the items inside. Wouldn’t mind spending the night in this place for the fun of it.”

The Arcadia Opera House: A Big Bang for Your Buck

Opening in March 1921, The Capitol Theater has a rich history of hauntings. In 1980, the theater manager was robbed and murdered in the balcony. For sensitive theater goers who find themselves sitting upstairs, a presence may be felt. There are two other spirits that reportedly haunt the theater, an old sea captain (it is Clearwater, after all) and a young girl who enjoys pranking visitors. As someone who has attended a concert at this theater a few months ago, I can attest to the balcony spirit.

“There does seem to be some activity. Not sure of the exact people there, but it does feel a bit active. There’s an energy about it that is undeniable.”

Apollo 1 Launch Complex 34, Cape Canaveral

Who can forget the tragic Apollo 1 craft catching fire on January 27, 1967, killing all three astronauts aboard?

Virgil “Gus” Grissom, Edward H. White II, and Roger B. Chaffee all lost their lives during a preflight test when a fire swept through their command module. Since then, visitors have reported hearing screams from the launch pad and feeling a sense of sadness.

Terri explains, “I feel an emptiness there. But wherever there has been a tragedy is ripe for residual hauntings (which is like a memory, but not actually intelligent). I can understand why people feel an energy there, but I do believe it’s just a reverence or sadness.”

Apollo 1 Launch Complex 34: A Big Bang for Your Buck (I’ve rated this as a legitimate haunting, but as Terri explained, this is residual energy, like a memory and not a ghost experience).

New Smyrna Beach Dazzles Foodies this October

Food enthusiasts will be delighted by New Smyrna Beach’s Inaugural Coastal Catch Month

I have an admission to make: When it comes to fine dining, I am spoiled rotten.

In fact, anyone who lives in Central Florida is pretty darned spoiled with our growing number of Michelin Star and James Beard Award Winning restaurants and eateries to choose from. As a food and travel writer, it’s challenging to find another Florida town that can top the City Beautiful when it comes to dining.

Imagine my surprise when I was on a recent media excursion in one of my favorite beach burbs, New Smyrna Beach. I spent a delightful evening at City Market Bistro and was blown away by Chef Scott’s menu. If you missed the story, I said, “Chef Scott has created an elegant menu, featuring fresh seafood, meats and produce in season, with an emphasis on regional producers. This delightful little bistro rivals many of the best Michelin rated restaurants, making it a must-dine.”

And City Market Bistro isn’t the only restaurant that made my list. Third Wave Café, SugarWorks Distillery and the bakery, Mon Délice are now on my can’t-miss NSB list. It comes as no surprise to learn that the New Smyrna Beach Area has become an incredible destination for culinary connoisseurs, with a wide array of locally owned and operated dining establishments, innovative experiences and exciting culinary events.

For those who enjoy sneaking in some quality staycations, Florida residents can enjoy deep discounts in the New Smyrna Beach Area. The charming coastal community offers a staycation with price reductions at some of the area’s best hotels, vacation rentals, attractions and activities. But hurry, because this new promotion extends through the end of 2024.

This October marks a significant milestone as the New Smyrna Beach area celebrates new and innovative culinary events and returning favorites.

Top 4 Ghostly Gourmet Chills and Thrills

Celebrate the season of fright with these devilishly delectable dining experiences.

I don’t know about you, but when I’m looking for a new restaurant, I prioritize high quality, impeccably prepared food, friendly, professional service, and if a scenic view is included, that will surely seal the deal. It is rare for me to ask whether the establishment is haunted.

But we’re circling the drain on the season of spook, and while the kiddies don masks of fright and fun, grownups can benefit from a bit of whimsy. And if you can add food to the mix, so much the better.

Believe it or not, Central Florida is overflowing with establishments that will add a bit of scary spice to your dining experience. Here are our top four places that are sure to thrill not just your palate, but your senses — your extrasensory senses.

Dining in the Dark

Remember those Halloween parties of our youth, when someone would blindfold you and put your hands in bowls of spaghetti or grapes with the skin removed? If that was your cup of tea, then Dining in the Dark is right up your alley.

Imagine entering a lovely banquet hall where you are blindfolded before you’re served the first course. That’s the Dining in the Dark experience presented by Meliá Orlando Celebration Hotel and its restaurant, The Wilson, who’ve partnered with Fever Originals to offer a special multisensory experience. If you prefer staying closer to Orlando, Dining in the Dark is also available at the Citrus Club.

Before the big day, I was given the choice of three menu options: the Red menu for meat, Blue menu for seafood and Green menu for vegan. I have to admit, while I found the blindfold claustrophobic at the beginning, it truly enhanced the flavors of the food. With my eyes wide shut, I could allow the food to take center stage.

Is it a spooky experience? Only if you have a thing against blindfolds. While this is not a ghostly experience, I highly recommend Dining in the Dark, as it certainly aligns with the spine-tingling Halloween vibe.

Ashley’s Tavern, Rockledge

This Tavern is so active, some have even named it the “Nation’s Most Haunted Tavern.” There are many stories and events that have occurred within these walls, including deaths by accident and murder. Legend has it that a spirit of a former employee loved the Tavern so much, he refuses to leave.

The handsome Tudor-style building was constructed in 1932 and originally named Jack’s Tavern. Built on the site of an old railroad depot that burned to the ground, it was a classy joint, reminiscent of those historic photos they used to show during the introduction of the television show “Cheers.” Tragically, an oncoming train on the tracks next to the restaurant killed a young woman.

While the Tavern has had many owners and several names throughout the years, it remains a popular spot. And the spirits are said to be playful, engaging in activities like hiding keys and other items. If you’re looking for a place with an otherworldly ambience, Ashley’s Tavern is a terrific spot.

The Lakeside Inn, Mount Dora

There’s a six-year-old girl named Amy who lives at the Lakeside Inn. While there’s nothing strange about that, what if I told you she’s been living there for the past 130 years?

According to the Mount Dora Buzz, it was in the late 1800s when Amy wanted to go fishing with her father on Lake Dora. He told her no and watched as she walked back home to be with her mother at the Inn. Little did he know Amy did not do as she was told, and followed him to the lake, never to be heard from again. But that’s not where the story ends.

If you go to the Inn today, there is a sepia photo dated 1884 that hangs next to the dining room. The photo is of a table setting and in the background is a child. According to legend, this is Amy. The clincher is the picture was taken weeks after her disappearance.

Those who work at the Inn today claim to see ghosts, smell cigars or strong floral perfume, even when no one is in the room. There are whispers, singing, and creaking noises of all varieties. Which is why The Lakeside Inn is a prime hotspot for some tantalizing ghost-host excitement.

The Enzian, Maitland

Most of us are familiar with The Enzian, a trendy art house movie theater located in Maitland. A popular establishment for those who enjoy indie, foreign and classic movies, The Enzian hosts the Florida Film Festival. It’s also known for being haunted.

Apparently, there is a ghost that appears on moonless nights, usually around 1 a.m. It’s nice to know that the spirits are punctual. Some have reported seeing a disembodied head hovering around the north corner of the building, just before it disappears in the kitchen. There have also been reports of screaming.

As a frequent Enzian moviegoer, I’ve never experienced ghostly sights and screams, but there’s no doubt the place has an other-worldly feel. Why not head off (that was my pun for the day) to The Enzian for a spooky movie this Halloween and experience some extra chills and thrills?

Recipes for Any Diet

Diet food doesn't need to be boring. These recipes from Orlando locals cover a variety of common diet types.

Smoked Salmon Avocado Toast

Courtesy of Gary Appelsies, YMCA of Central Florida

This protein-rich breakfast is perfect for an anti-inflammatory diet. The smoked salmon's omega-3 fatty acids and the avocado's healthy unsaturated fat can help fight inflammation. Additionally, red pepper flakes provide relief from digestive issues, pain and inflammation, and red onion contains antioxidant and anti-inflammatory properties.

Ingredients:

• 1/4 medium avocado

• Zest of 1/2 lemon, optional

• 1 teaspoon lemon juice, fresh squeezed

• Pinch of red pepper flakes, to taste

• 1 slice Sprouted Whole Grain Bread

• 1 clove garlic, cut in half

• 2 ounces smoked salmon

• 1/4 red onion thinly sliced

• 1/4 teaspoon sesame seeds, optional

Directions:

Scoop out the flesh of the avocado and place into a medium sized mixing bowl. Mash avocado with the back of a fork. Add lemon zest, lemon juice, chili flakes and set aside. Toast bread until lightly golden. While the bread is still hot, gently rub cut side of garlic onto the bread. Top toast with avocado mixture, smoked salmon and onion. Sprinkle with sesame seeds if using.

Mediterranean Fish

Courtesy of Christie Fogarty

The heart-healthy Mediterranean diet includes vegetables, fruits, whole grains, lean meats, fish and healthy fats. This tasty recipe covers all the bases for this particular diet.

Ingredients:

• 4 fish fillets (mahi mahi or salmon)

• 1 pound olive bar medley (black and green olives, red cherry peppers, roasted garlic, etc.)

• Salt and pepper, to taste

Keto Taco Shells

Courtesy of Soozie the Foodie

To reach a state of ketosis, where the body uses fat for fuel, individuals on the ketogenic diet eat moderate amounts of protein and items that are high in fat and low in carbs. You can load this taco shell with your favorite keto-friendly fillings, and you can even turn it into a burrito, if you prefer.

Ingredients:

• Two cups low-moisture cheese (such as mozzarella, gruyere, Swiss and Monterey Jack)

Directions:

Put cheese in a dry, cold pan. Slowly heat up the cheese over medium heat. Once the bottom starts to become golden, slide a spatula underneath to make sure it's not stuck. Continue to cook until you can slide it around on the pan (timing is different for each stove). Remove cheese from pan and place on paper towel. Form into a shell using spatula or edge of pan then freeze to help it hold its shape. Fill with desired fillings and enjoy.

Directions:

Season fish with salt and pepper. Heat a large pan over medium heat. Coat pan with oil from olive bar medley then gently place fish into the oil. Cook for 3-4 minutes then flip. Add all olive bar items into pan, cover and cook until olives are warm and fish is cooked through. Serve over farro and wilted spinach.

Inspiring Wellness in Central Florida’s Most Vulnerable Population

In our community, the needs of senior citizens often go unnoticed.

While many causes and services are dedicated to other vulnerable populations, like children or animals, organizations focused solely on seniors are less common. In Central Florida, one in seven seniors faces hunger, and many of them lack the mobility, money and support to routinely provide for themselves. Fortunately, Seniors First is addressing this issue through its nutritional programs and services, ensuring that our senior neighbors know where their next meal will come from.

Seniors First is driven by a mission to enhance the quality of life of seniors by maintaining their independence and dignity. Our programs are designed to support the mental, emotional and physical wellbeing of seniors throughout Central Florida. Services

such as Meals on Wheels, Neighborhood Lunch, In-Home Care and the Stepping Stone Medical Equipment Bank, among others, help seniors stay nourished, engaged with their community and able to live independently. Each service not only supports physical wellbeing but also offers vital companionship, as a visit from a volunteer may be the only social interaction a senior has that day.

Senior wellness extends beyond physical health; it encompasses emotional, social and environmental aspects as well. Annually Seniors First serves over 4,000 clients, provides more than 300,000 hours of service, and, thanks to dedicated volunteers, delivers nearly 350,000 meals.

The success of Seniors First relies heavily on the support of our community, our dedicated volunteers and

generous donors. Community engagement is essential to our mission, and we are excited for our 35th annual Seniors First Turkey Trot 5K around Lake Eola on November 28. We anticipate over 4,000 runners, joggers and walkers to join us in the Race to End Senior Hunger. Proceeds will benefit Meals on Wheels and other programs that support the wellbeing of seniors in our area. We look forward to another year of community involvement and fundraising. Register at TurkeyTrotOrlando.com.

Seniors First remains committed to making a meaningful impact in Central Florida, guided by our values of respect, transparency, service and integrity. With continued community support, we will keep working to enhance the wellbeing of our senior citizens every day.

How to Become More Mindful in

Your Everyday Life

Your guide to a more calm and focused mind through meditation and an awareness of your thoughts.

You may have heard of mindfulness. This approach to analyzing your thoughts is known to have benefits for your focus, happiness and creativity. If you're intrigued by how it works, the first step is to understand just what it is. With this knowledge, you can quickly get into a daily routine to start on your mindfulness journey.

Mindfulness Versus Meditation

Mindfulness and meditation are two distinctly different things. Mindfulness is simply the state of being present, with your thoughts focused on your current state, while meditation is a technique that allows the practice of mindfulness. By dedicating a small amount of time each day to meditation, you can learn the skills needed to be more mindful in life.

Meditation may feel awkward at first; however, 10 minutes a day is all you need to get started. Then add more time as you become

comfortable with your practice. It's crucial to acknowledge your attempts to remain in the present and make a conscious commitment to your routine. After time, this will become second nature and you will begin to feel more mindful throughout the day.

How to Reach Mindfulness Through Meditation

It can be tricky to stay fixed in the present. You will have the most success in training your mind if you start in a quiet, distractionfree environment where you won't be disturbed. Then, make yourself comfortable and find something in the present on which to focus.

Most of the time, particularly at the beginning, people concentrate on their breath to remain present. Keep in mind that it's perfectly natural for your mind to drift during your practice. When this happens, simply bring your thoughts back to the present.

In mindfulness, people often talk about a Teflon mind. You observe your thoughts as they slide through and away again (like how Teflon works on a non-stick pan). It's not about stopping these thoughts or dwelling on them but instead acknowledging them in a gentle way and allowing them to drift away as you remain focused on the present. In this way, you are preventing yourself from getting too wrapped up in the past or in the future.

In truth, there's nothing more to it than that. Mindfulness means to remain in the present moment, being gentle with yourself as you acknowledge your thoughts and allow your mind to process them on its own as they pass. With time and practice, you will be able to appreciate the benefits that mindfulness brings to your life, and you will notice that you're more calm, creative and focused.

Dark Chocolate & Your Diet

“Getting healthy” and “eating more chocolate” don’t often go hand-in-hand, but maybe it should.

With all the sugar and milk that’s in chocolate, along with the delicious, mouthwatering taste that comes with it, we don’t often think of it as much more than candy. What we do associate as healthy are fruits high in antioxidants, such as cranberries and blueberries. But it’s this high antioxidant level that puts cocoa right up there with the rest of the healthy fruits.

It all comes down to flavonoids, and dark chocolate has a lot of them. According to a study by Chemistry Central Journal, “the antioxidant capacity of cocoa powder was significantly greater than blueberry, cranberry and pomegranate powder.”

Let’s face it — a couple Ghirardelli Chocolate squares are likely a preferred snack over a bowl of fruit for most. Luckily, research has been coming out for several years now on possible benefits of this smooth, bittersweet confection.

Benefits include lowering cardiovascular issues and helping mediate

diabetes problems. In a study presented in Journal of the American Heart Association, it is suggested that polyphenols that are present in cocoa might reduce oxidative stress. Participants in the study also experienced higher levels of nitric oxide, which reduces blood pressure and improves blood flow, when they ate dark chocolate.

Next time you’re stressed, keep calm and reach for a small bar of dark chocolate. With better blood flow and reduced blood pressure, studies have shown a significant reduction in stress among subjects and a sharper focus during cognitive tests.

This increased blood flow has also shown to help with a better tolerance to the sun’s UV rays, according to several studies. According to research by Pub Med, flavonoids help increase skin density and skin hydration, which cause UV damage to decrease by 15% after 6 weeks.

And who needs to splurge or have a skip day in their diet plan when you’re eating chocolate every day?

However, caution should still be used when eating this tantalizing treat.

First, studies show that the benefits of cocoa can often get processed out when transformed into the candy bars we know and love. According to the Cleveland Clinic, most chocolates are highly processed and even some dark chocolates may not be in your best interest.

Look for dark chocolates with 70% or more cocoa levels that haven’t gone through Dutch processing, a treatment to neutralize its natural acidity.

Second, look out for those caramel-filled, salt-covered squares of heaven. Those extra ingredients may add flavor to the more bitter dark chocolates but it also adds calories.

Remember that when adding a couple squares of chocolate to your new health kick that you calculate those calories in. Just keep it in moderation and watch the benefits roll in.

The Magic Begins at Meliá Orlando Celebration

Discover this family friendly oasis of comfort, located next door to the magic kingdom of your dreams.

As a native Central Floridian, I have stayed in more than my share of theme park hotels. There were the International Drive hotels, the hotels on I-92 that were a bit too close to the movie “The Florida Project” for comfort, a variety of properties closer to the parks, and the resorts in Lake Buena Vista. I have experienced the wide range of hotels that have the official Walt Disney Resorts stamp of approval. But I had yet to stay in the Walt Disney inspired Celebration area, until this year.

Meliá Orlando Celebration is located where the magic begins, Celebration, Florida. Celebration is a charming community originally created by The Walt Disney Company, a stone’s throw from Disney’s welcome gate. It’s a family friendly oasis of comfort located next door to the magic kingdom of your dreams.

On their website, the Meliá Orlando Celebration describes their rooms as “spacious.” I think they’re being modest, as my room was bigger than my first apartment (which was not small, by the way).

The 360-infinity resort pool was hopping with fun and games for the entire family. Captain America actually rode in on his motorcycle while I was having lunch poolside and posed for pictures, giving away prizes for almost an hour.

As I explained earlier, I have stayed in every level, size, style room in Central Florida and I was surprised, even a bit shocked, at Meliá Orlando Celebration’s reasonable rates. With all of the amenities, it’s like staying on property without the on-property prices, not to mention double the space.

And as if all of this weren’t

enough, the Meliá is presenting two exciting themes for fall 2024.

Meliá Orlando Celebration Launches Exclusive Wellness Concierge Service

Meliá Orlando Celebration now boasts a total of 25 Stay Well by Delos™ Suites, more than doubling the number available for booking. In partnership with Delos, a global wellness leader, each Stay Well suite includes a welcome guided meditation from world-renowned wellness pioneer Dr. Deepak Chopra, moodenhancing aromatherapy, natural light stimulation for a gentle dawn and dusk, air purification systems, and a soundscape machine.

Bathrooms in each suite also feature a Vitamin C infuser that reduces chlorine to leave hair and skin feeling softer and smoother.

Wellness Suites are available in onebedroom, two-bedroom and family configurations, making the hotel an ideal choice for families, couples and groups. All Wellness Suites will continue to offer tea sets from Art of Tea, AdventHealth Wellness and Fitness Center access, bicycle rentals and access to on-site wellness programing (yoga, qigong and aqua fitness). Guests can also relax and enjoy live daily programming at the hotel’s signature 360-degree vanishing edge pool.

The property’s wellness upgrades also include the introduction of a Wellness Concierge which acts as a personal attendant, catering to all guest needs from pre-arrival to check-out. Prior to arrival, a Wellness Concierge can arrange special requests and manage bookings for a variety of services including coordi-

nating special events, restaurant reservations and activities in the local area. Nightly rates for Stay Well by Delos™ Suites start at $139.

Are You Drinking Water the Right Way?

In Ayurvedic medicine, how you consume water is just as important as doing it in the first place. Read on to find out why.

We all know the importance of drinking water: it regulates your body temperature, flushes waste and lubricates joints, among many other things. Since water makes up about 60% of the body, replenishing it properly is a must.

The general recommendation is to drink at least eight glasses of water each day; however, drinking water whenever you're thirsty is a good start. Active individuals or those who spend a lot of time outdoors likely need to drink more than the recommended amount to stay hydrated.

This information is all well-known, but there is something else to consider when you consume water. In Ayurvedic medicine, a holistic approach to health and wellness that works to find a balance between the mind, body and spirit, it's believed that the way in which you drink water is an important aspect of hydration.

So what does this mean?

Drink Room Temperature Water

It's believed that cold water will shut down the body's "digestive fire," a term that represents the stomach acid, digestive enzymes and bile in the GI tract that the body uses in the digestive process. Consuming water at room temperature, or even warm water depending on your preferences, can help the body digest properly while improving circulation and relaxing muscles, which could ease cramping and constipation. It's also thought that warm water is easier for the body to absorb.

Avoid Chugging Your Water

Another technique to help your body better absorb water and the nutrients that it contains is to take your time

with small sips. Ayurvedic teachings say to sip, swallow and breathe. If you notice that you're constantly running to the restroom as you work toward your daily water intake goals, take a look at how quickly you're drinking it and adjust your habits accordingly.

Sit Down to Sip

It may be easier to take your time when you take a seat. When you sit down with your water, your muscles and nervous system relax, which ultimately helps your organs work properly. The kidneys can better pace the body's filtration system, and the stomach receives the water gradually, allowing the entire body to be better replenished.

Know When to Drink

Drink a glass or two of water when you wake up in the morning to get your body going again. In addition to rehydrating after going a full eight hours without any fluids, you may also experience less bloating, more energy and a smaller appetite when you start your day with water.

Also, drink some water when you eat to aid in digestion, especially if you're having a fiber-heavy meal. The fiber in the food you're eating absorbs water as it moves through the digestive system, promoting regularity.

It's also a good habit to hydrate before, during and after exercise. Drink a glass of water at least 30 minutes before participating in moderate exercise and be sure to continue hydrating well after to replace the fluid you lost through sweating.

When it comes to hydration, pay attention to your body as you practice proper hydration techniques.

Breaking Ground:

Early Detection: A Game Changer

Early detection of breast cancer is crucial for successful treatment outcomes. Traditional methods such as mammograms have long been the gold standard, but recent advancements are enhancing the accuracy and accessibility of screening.

1. 3D Mammography

(Tomosynthesis):Unlike standard 2D mammograms, 3D mammography creates a layered image of the breast, allowing radiologists to examine breast tissue in greater detail. This technology has

shown to reduce false positives and increase the detection rate of invasive cancers, making it a vital tool in early diagnosis.

2. MRI and Ultrasound Innovations: Magnetic Resonance Imaging (MRI) and ultrasound are increasingly being used in conjunction with mammograms, particularly for women with dense breast tissue. Newer MRI techniques provide clearer images and can detect abnormalities that traditional methods might miss. Similarly, advancements in ultrasound technology have led to improved imaging techniques that enhance diagnostic capabilities.

3. Liquid Biopsies: One of the most groundbreaking developments in cancer detection is the advent of liquid biopsies. These tests analyze circulating tumor DNA (ctDNA) from a simple blood draw, offering a non-invasive method for detecting cancer at an early stage.

Researchers are optimistic that liquid biopsies will soon become a standard part of breast cancer screening protocols, allowing for earlier intervention and personalized treatment strategies.

Personalized Treatment Approaches

Once diagnosed, breast cancer treatment has evolved significantly, shifting towards more personalized approaches that consider the unique genetic makeup of each tumor.

1. Targeted Therapies: Advances in genetic testing have led to the development of targeted therapies that attack specific cancer cells while sparing healthy tissue. For example, HER2-positive breast cancers can be treated with drugs like trastuzumab (Herceptin), which specifically targets the HER2 protein. Newer medications, such as neratinib and tucatinib, are expanding options for patients with advanced HER2positive breast cancer.

for its aggressive nature. Drugs that harness the body’s immune system to fight cancer cells, such as pembrolizumab (Keytruda), have shown promise in clinical trials, offering hope for patients who previously had limited options.

3. Hormonal Therapies: For hormone receptor-positive breast cancers, advancements in hormonal therapies, such as aromatase inhibitors and selective estrogen receptor modulators (SERMs), are helping to reduce recurrence rates. Newer combinations of these therapies are being studied to enhance effectiveness and minimize side effects.

The Role of Technology in Treatment

The integration of technology into breast cancer treatment is also transforming patient care. Telemedicine has become a vital resource, especially in the wake of the COVID-19 pandemic, allowing patients to consult with specialists from the comfort of their homes. This accessibility is particularly beneficial for those in rural areas of Central Florida.

analyze mammogram images with remarkable accuracy, identifying potential tumors that may be overlooked by human eyes. Additionally, AI is being utilized in treatment planning, helping oncologists determine the most effective course of action based on a patient’s unique tumor characteristics.

Community Support and Awareness

In Central Florida, organizations such as the American Cancer Society and local health departments are dedicated to raising awareness about breast cancer and promoting regular screenings. Community events, educational workshops, and support groups are essential in fostering a culture of health and vigilance.

As advancements in detecting and treating breast cancer continue to evolve, it is crucial for individuals to stay informed and proactive about their health. Regular screenings, understanding personal risk factors, and engaging with healthcare providers can make a significant difference in outcomes.

The landscape of breast cancer detection and treatment is rapidly changing, with innovative technologies

support is vital in the fight against breast cancer. By embracing these advancements and prioritizing health, we can move closer to a future where breast cancer is detected earlier and treated more effectively, ultimately saving lives and improving the quality of life for patients and their families.

While the likelihood of having a stroke nearly doubles every 10 years after the age of 55, according to the American Stroke Association, it could happen to anyone — even children. The International Alliance for Pediatric Stroke considers older children with sickle cell anemia, congenital heart defects, immune disorders or problems with blood clotting, as well as previously healthy children who are found to have hidden disorders such as narrow blood vessels or a tendency to form blood clots easily, among those at risk.

HERE ARE SOME OTHER THINGS YOU SHOULD KNOW, STRAIGHT FROM THE ASA:

• Eighty percent of strokes can be prevented through healthy eating, exercise, regular checkups and smoking cessation.

• Each year, strokes occur more in women than in men. Pregnancy, a history of preeclampsia/eclampsia or gestational diabetes, oral contraceptive use (especially when combined with smoking) and post-menopausal hormone therapy can increase the risk for women.

• A transient ischemic attack, or mini stroke, is a tem porary blockage of blood flow to the brain that can produce milder forms of stroke-like symptoms, which typically last less than five minutes. These symptoms shouldn’t be ignored, as they are an indicator of a future stroke.

• In addition to F.A.S.T. (face drooping, arm weak ness, speech difficulty, time to call 9-1-1), keep in mind several other signs of a stroke. These include sudden numbness or weakness in the face, arm or leg, especially on one side of the body; sudden confusion, trouble speaking or understanding speech; sud den trouble seeing in one or both eyes; sudden trouble walking, dizziness, loss of balance or coordination; and sudden severe headache with no known cause.

EAT YOUR WAY TO A HEALTHY HEART

According to the American Heart Association, about 2,200 Americans die of cardiovascular disease each day, an average of one death every 40 seconds. But you have control over your heart health, and it begins with your diet. When worked into a balanced diet, these are just some of the foods that the AHA says can boost heart health.

BERRIES: Blueberries and strawberries have high levels of phytochemicals flavonoids, can lower the risk of heart attack in women

KALE: High in folic acid and fiber, can help lower blood pressure

OATS: Whole-grain source of dietary fiber, can lower your risk of heart disease, stroke and diabetes while raising HDL (good cholesterol) levels

SALMON: High in omega-3 fatty acids, can decrease the risk for abnormal heartbeats, reduce triglycerides and slow the growth of plaque in the arteries

Making the right food choices is important, but so is eating the proper amount. The National Institutes of Health defines a portion as how much food you choose to eat at one time and a serving size as the amount of food listed on a product’s Nutrition Facts label. Your portions are likely larger than the recommended serving size for most food items, so measure out what you need and store the

The AHA has outlined the following serving sizes for a healthy, bal-

• 1 slice of bread

• 1/2 cup rice of pasta (cooked)

• 1 small piece of fruit

• 1 wedge of melon

• 3/4 cup fruit juice

• 1 cup milk or yogurt

• 2 oz. cheese (about the size of a domino)

• 2-3 oz. meat, poultry or fish (about the size of a deck of cards)

Civic-Mindedness: Volunteering Your Time to the Community

In today’s political climate, we cannot overstate the importance of being civic-minded. Civicmindedness involves a deep sense of responsibility and active participation in the well-being of your community. It means going beyond your interests to consider the collective good. Consideration of the people around you fosters a stronger, more resilient, and vibrant community and creates a ripple effect that benefits all of society. At the heart of civic-mindedness is the commitment to volunteerism. Volunteering your time and skills to support charitable causes, whether helping at a food bank, participating in neighborhood cleanups, or mentoring others, directly impacts the quality of life in your community. These efforts address immediate needs and promote a culture of cooperation and empathy, laying the foundation for a supportive and connected community.

Being civic-minded also involves staying informed and engaged with local issues. Understanding the challenges and opportunities facing your community allows you to contribute effectively to discussions and solutions and empowers you to make a significant difference. This sense of

empowerment is a powerful motivator for active civic participation.

Civic organizations, like the Lake Nona Regional Chamber of Commerce, can provide a wealth of information about local issues and many opportunities for civic engagement. The chamber works to educate both its members and government officials about issues facing the community and the importance of public policies to address them. But the success of these efforts depends on the active participation of community members like you. By participating with the chamber, you ensure that your voice and the voices of your neighbors are heard. This active engagement leads to more democratic and representative governance, where policies and initiatives reflect the true needs and desires of the community.

In a broader sense, being civicminded strengthens the social fabric. Communities with high levels of civic engagement are better equipped to face challenges and crises. They exhibit greater social cohesion, where people look out for one another and collaborate to overcome obstacles, fostering a sense of unity and belonging. This resilience is crucial in times of adversity.

In conclusion, the importance of being civic-minded in your community extends beyond the immediate benefits of volunteerism and engagement. It cultivates a sense of shared responsibility and mutual support, creating a stronger, more connected, and resilient community that transcends political parties. By actively participating in the well-being of your community, you not only enhance the quality of life for yourself and your neighbors but also contribute to the broader goal of building a better society.

A Different Way to Think About Weight Loss

With these helpful tips, losing weight can be a healthy reality.

Another New Year, another resolution. And sadly, for most people they don’t work, especially when the resolution focuses on losing weight, which according to a recent survey, accounts for over 40 percent of all New Year’s resolutions. And the success rate of New Year’s resolutions? Only about 35 percent say they have made and successfully kept them.

Obesity is an important health issue, and possibly the most debilitating health problem in the U.S. In fact, with over 40% of all U.S. adults qualifying as obese, the U.S. is the most overweight country in the world. Obesity-related medical conditions include type-2 diabetes, high blood pressure, heart disease and some types of cancer. The medical costs of obesity in our country are estimated as high as $190.2 billion per year.

Fortunately, obesity is also preventable in most cases, but losing weight takes more than simply making a resolution. You have to think differently about food and exercise, as well as self-discipline and motivation.

That leads us to the first of three strategies to help you lose weight.

1. Don’t judge results based on appearance.

When you improve your diet and start exercising, your health improves steadily, even if your weight continues to fluctuate, and that’s something you can feel good about. For example, you might find that you are less likely to get winded when you walk up a flight of stairs or have to walk across a parking lot.

Also, when you go to the doctor, don’t just look at the number that comes up when you step on the scale. Compare your blood pressure, heart rate and lab results to the previous check-up, too. If you’ve improved your diet and you’re exercising, those numbers are almost certain to improve.

2. Make peace with the foods you know you should avoid.

If you’re completely honest with yourself, you know that banning all the foods you love won’t work. In fact, you’ve probably tried that already, right? You can only limit yourself to smoked turkey and alfalfa sprouts for so long before you fall off the wagon. Instead, allow yourself an occasional indulgence. Just make sure you don’t overdo it.

After all, when people follow an unhealthy diet, the problem is not the chocolate or the ice cream or the bacon cheeseburgers. It’s how much of these things you eat. It’s okay to have a slice of pepperoni pizza every now and then as long as you don’t have it every day or eat half the pizza in one sitting.

3. Understand how exercise and calories work

People sometimes think calories measure how fattening food is, but there’s more to it than that. Technically, a calorie is a measure of heat energy. When you see on a label that a certain food has 100 calories, it means that your body has to generate 100 calories of energy to keep it from eventually converting to body fat. So for example, if you eat a large fast-food double cheeseburger that has 770 calories, you might have to walk five or six miles to work it off.

If you start to understand and think about the relationship between exercise and food, you’ll find that you’re more motivated to go for a daily walk and better able to resist the temptation of high-calorie foods.

So this year, give these strategies a try and ditch the New Year’s Resolutions. Instead, think of it as a different way of understanding food and exercise, in a way that’s lasting and permanent.
