Melissa Davis A WOMAN OF CONTRASTS
S
ome people might look at HGTV star and well-known Toronto designer, Melissa Davis, and be puzzled by the seemingly contradictory aspects of her life: she considers herself both a farm girl and an urbanite; her design projects include intimate small homes and large-scale corporate projects; she is a creative artist, and at the same time, a math geek. This habit of being pulled in opposite directions started when she was young. “I was drawn to fine arts such as painting and drawing but also inclined towards math and the sciences,” Melissa explains. In fact, she wasn’t sure which direction her career would take until her aunt, a savvy and fashionable business woman, stepped in with

some sage advice. At the age of 15, her aunt suggested a career in interior design that would combine Melissa’s technical, structural, and organizational abilities with her creative vision. Melissa realizes that many people are surprised to learn that interior design is much more than picking out paint colours. You also need architectural, managerial, engineering, and budgeting skills, if you are working on a design show where 26 renovation projects are completed in eight short months add speed to that list of skills. Although it was rewarding to have free reign as a designer and a fast turnaround revealing quick results, Melissa admits the fast pace was wild and took a special set of skills.

“I think interior design is a romanticized industry especially with all the home and garden television programs, which I participate in,” Melissa explains. “I think the perception is that we shop for pretty things and spend most of our day curating and styling, but that’s only maybe about 10 percent of the job. We really are project managers and coordinators. A lot of my time is spent budgeting, coordinating trades, and assuring the permit documentation is correct.” Her aunt’s intuition that Melissa’s abilities on opposite ends of the spectrum would serve her well as a designer turned out to be spot on. Her winning combination of qualities propelled Melissa into an ultra-successful and diversified career in design. In addition to launching her own design firm, Melissa was head of the art department and series designer on the award-winning lifestyle TV series Income Property for eight consecutive seasons. Her work has also graced the pages of the country’s top decor and lifestyle magazines. Just as her contrasting skills have served Melissa well, she sees two new hot trends in design for 2016 that are polar opposites but can still work together. As clients are looking for energy efficiency, they're also interested in the technical and interactive trends. For example, light bulbs in bathroom fixtures can now come with built-in Bluetooth speakers, allowing homeowners to play songs from their iPhone through light bulbs. Melissa points out that even IKEA has come out with wireless charging ports that can be incorporated into cabinetry.

Despite the trend towards technology, homeowners don’t want to lose the sense of coziness. As a result, another hot trend takes a holistic approach to design as a way to help people escape their fast-paced lives. “People want things to be more natural,” Melissa says. “Material choices are trending towards natural stone, tactile fabric and finishes, wood that looks reclaimed or is reclaimed. It’s a throwback, a connectedness with nature.” Melissa has also noticed that her clients don’t want to look trendy anymore by choosing the hip, popular paint colour for the year. Instead, people are looking for colours, patterns, and materials that are classic and stand the test of time. Melissa agrees that’s a smart choice and practices that philosophy in her own home with a timeless Scandinavian-Danish contemporary look. “I like clean design without a lot of excess, but with warmth, texture, and use of natural materials,” she says. The recent change in the economy has made people proud to be frugal, efficient, and environmentally-friendly, which is only reinforcing the popularity of salvaged materials. “Kitchens and bathrooms,” Melissa answers immediately. “I don’t think that will ever change. Those rooms are emotional for people. They want those rooms to look clean, fresh, and new.” Paint is another fast, inexpensive fix. Melissa suggests homeowners consider bright, clean, white walls which gives them a blank palette. Also consider changing light fixtures. “Nothing screams out at you like a 1970s light fixture in the dining room that hits you at eye level,” she says. Accessories are another easy way to change the look of a house without spending a lot of money. In the end, sometimes opposites attract and that’s a good thing. So go ahead and add all the new technology along with natural stone and reclaimed wood. The two opposing design elements can work well together. After all, look how Melissa’s diverse abilities have only enhanced her life and career.

SEVEN STONES WINERY Seven Stones Winery is a magical place complete with legends, a compelling love story, beautiful classical music resounding off cave walls, and one man’s passion for great wine.
THE LOVE STORY
Fifteen years ago, owner George Hanson moved from Whitehorse, Yukon to fulfill his lifelong dream of creating a vineyard and winery from the ground up. The results were enchanting.
“We fell in love and I convinced her to marry me,” George fondly remembers. “She moved here and together we started to build the wine business.”
THE LEGEND The name of Seven Stones Winery comes from the legendary seven rock formations left from glaciers and scattered throughout the gorgeous Similkameen Valley. The original indigenous inhabitants believed the rocks were put there to remind them of what was important in life. The rocks represent relationships, love, food, water, fire, magic, and home. 22

While George was successful in planting his vineyard he found it a bit lonely. Shortly after, he met a woman online, Vivianne, who lived in Northern British Columbia.
George was ready to move ahead with his ultimate dream to build a cave to store the wine. His wife, however, had other plans. They were living in a double-wide trailer that Vivianne described as “the ugliest house in the world.” After they built their home, his wife was still resistant to the idea. In 2007, the couple visited several wineries in the Napa area and George made sure every single one had a cave. That did the trick.

It was decided that Vivianne’s son, Colin, would tackle the project and they began making plans. Then tragedy struck. Although Vivianne had been diagnosed with ovarian cancer a year after their marriage, they thought they had it beat, but then the cancer returned. “Unfortunately she died,” George says solemnly. Nonetheless, her son, Colin, moved in and they began building the underground caves as planned. Halfway through the project, George was leafing through a book on caves and by fluke discovered instructions that Vivianne had painstakingly written regarding some of the final details. “Colin and I changed our plans,” George says. “The little French Canadian girl always got the last word,” he adds affectionately.

THE MUSIC Although his beloved wife passed away four years ago and she was never able to see their dream of a world-class cellar realized, two years later the underground caves were finished in her honour. The caves are spectacular with a spiral staircase, a commercial kitchen, an event cave that seats 80 people, and separate barrel caves to store the wine with a waterfall that provides the proper humidity. There’s even a “mancave” entrance from George’s home. But that wasn’t enough. George wanted to add music to the mix. He installed an underground studio-quality audio system that plays Baroque-style classical music in the acoustically perfect cave. The music entertains guests with the purest of sound

From the 2013 vintage came the award-winning Legend wine, which comes from the best barrels in his cellar and is George’s favourite. As the wines hibernate this time of year, the vineyard is a quiet place and George is making plans to build more warehouses on top of the caves to store the 4,500 cases of wine made each year. He is living his lifelong dream with no regrets and wouldn’t change a thing. “I have a good life. I’ve had my ups and downs with Vivianne passing, but overall it’s been wonderful.”

You may be feeling as though you have compromised on your square footage, but this does not mean you have to compromise on the esthetics or your comfort. As a designer, I believe your home should be a timeless design reflecting your personality and lifestyle, but it should also be functional. Great design is not necessarily about the size of our living spaces but in fact how well the space is utilized and organized. Believe it or not, it is possible to create a well-appointed, beautiful home in very small surrroundings – even 400 sq ft. I have found that with the rise in “small space” builds over the last few years, many of my suppliers have adapted their designs and product lines to accommodate this growing trend. If you have a small kitchen, look to maximize the space you have by adding any number of great storage solutions like a “magic corner.” This allows for maximum usage of what we like to call a “blind corner.” Another way to utilize limited space in your kitchen is this great feature from Blanco for your sink. The Blanco workstation is part of their new Quatrus Gourmet Series and enables you to create an additional work surface at your sink – a wonderful feature for small kitchens where space is at a premium.

The kitchen is not the only room that can benefit from fantastic space solutions. Think about increasing your storage vertically in hallways or bedrooms with custom built-in closet organizers that go right up to the ceiling. Though you may believe small spaces are easy to work with, in fact they can be the most challenging. Consider working with professionals like ourselves to make the most of your small space and live large in your beautiful small home! Here are a few quick tips to get you started • Always look for the lost valuable space in a room, for example the “kick-plate” of your kitchen cabinetry could be adapted as a shallow drawer for baking trays. • Look to use reflective or transparent materials in your design such as chrome, glass or Lucite. • Avoid getting caught in the trap of using small scaled furniture or décor items, in fact that will make your space seem even smaller, and don’t clutter your space with too many nick-nacks!

by William MacDonald As a designer, I've designed a lot of living rooms over the years; in fact they are my favourite rooms to create. Some are more formal, while some casually luxe or lavishly homey, but all are well-lived in. Ironically the living room is the space that is lived in the least! Many people prefer to spend time in the family room or kitchen, however I think it’s a huge mistake and a waste of good real estate to ignore the living room. Saving the living room for a special family occasion or the holidays is a shame; it’s a room that should be used and enjoyed everyday. century21.ca/lifeathome

Treat the design and decor of your living room as beautiful, useable and easy – not "special". Think about how you live and what you want the living room to do for your lifestyle. For my clients and myself, I use the living room as a multi-functional space for working, playing and entertaining. Knowing that they have to fulfill many roles I design living rooms to be versatile, stylish and easy to live in. I like to use sturdy but lush fabrics like velvet and linen blends with a fun pattern; one of my favourite sources is Robert Allen Fabrics. Look for strong durable surfaces like stone and hardwoods, a variety of floor covering like sisal mixed with hides, persians or dhurrie’s and accents that are amusing, personal and lend humour to the atmosphere. Lighting is a important factor as well. To create a functional and well-lit space, I recommend using a mixture of overhead lighting, table lamps, floor lamps, up lights, century21.ca/lifeathome
In my living room, there’s also enough seating for 10 people; I've achieved this by using a mix of sofas, easily moveable side chairs and stools for perching, plus lots of empty floor space for pillows. Tables showcase trays filled with objects that have special meaning but there’s always room for a cocktail or bowl of pistachios. I have also incorporated a desk into my living room, which doubles as another servery if a party breaks out. I like my living rooms to be casually grand – not formal or intimidating. It’s all in the attitude of the execution and the overall balance; use high with low, shiny with matte, rough with smooth, colour with black and white, gold with silver and precious with “junk” Live in your living room – and don’t just save it for a special occasion or holiday. Use it to its full potential and create a beautiful and comfortable space where you can eat, drink and be merry – everday!

ichael Moffatt is the Executive Chef of Beckta Dining & Wine, a criticallyacclaimed restaurant in Ottawa. He has worked in one of New York’s most iconic restaurants as well as an award-winning kitchen at a Banff resort. So what is this distinguished executive chef’s favourite meal? The surprising answer to that question is grilled cheese sandwiches. Why? They remind Michael of his grandmother who lovingly made the best sandwiches when he was a kid. “I believe the best foods in the world have memories attached to them,” Michael explains. “Good meals should remind you of happy

times in your life. Food becomes more than just food if it has an emotional bond with it.” Some of his favourite foods, in fact, are simple. He loves tacos – because they were the one thing his mother was good at cooking. Today, when he cooks at home for his wife and 9-year-old son, it is often a simple roast chicken, left-overs are used for soup, stew, or chicken pot pie because “work is for creativity and home is for nourishing your spirit and your family.” Michael’s nostalgic connection to food helps explain Beckta's reputation for fine dining and innovative menu items combined with a friendly and joyful atmosphere.

The restaurant has the elegant white tablecloths you’d expect and is housed in a restored heritage landmark, putting fine dining on centre stage in the nation’s capital. However, Beckta is not so formal that the staff have forgotten the simple goal of making people feel special when they visit. In other words, Michael’s viewpoint that good food should remind people of good times is put to practice. “We go that extra mile to make sure everyone has a great time,” Michael says with a down-to-earth and thoughtful attitude notwithstanding his culinary accomplishments. “Regardless of the day you had, we want to make it a little better. If you had a great day, hopefully, we can enhance it. If you had a bad day, maybe we can turn it around for you. Beckta has a throwback attitude about the quality of service. It doesn’t matter if you visit us once a year or once a week, we try to make each time you dine here feel like a special occasion.” Born and raised in Ottawa, Michael has been cooking for 20 years and started working

for Beckta 12 years ago. Since that time, he’s taken the helm at sister restaurants Play Food & Wine and Gezellig. His 10 to 14 hour days as partner and chef include rotating between the three restaurants wherever he is needed most. Every day is different. “I’m not on a set path each day and I like that,” Michael admits. The other part of the restaurant business Michael loves are the talented people he works with. “At our restaurants, we build great, caring teams,” he says. “As you work years in this business, you realize you can’t control everything, so you need to count on people.” The creation of menu items is paramount to any restaurant. However, coming up with menus has never been a problem for Michael. Thankfully, his inventive ideas come naturally. “I’m a little superstitious, so I don’t even question or mess with the process,” he says. Food trends come and go, but Beckta is on top of Canada’s recent preference for local, sustainable, organic foods – a movement

Michael thinks is here to stay. “Consumers have become more smart and savvy about their food choices this last decade – whether it be organic or pasture-raised meat - they are interested in local sustainable seafood, vegetables, and free-range meat,” he explains. Michael admires Chef René Redzepi at the world-famous Noma in Copenhagen for his innovative use of food from his own backyard like Icelandic seaweed, Greenlandic musk ox, and sorrel from Danish forests. Michael incorporates that same philosophy by using local foods unique to Canada such as caribou, bison, and black walnuts found in Ottawa. What does this hardworking chef do for fun? The answer to that is simple as well – spending time with his family and golfing. What’s on his bucket list? “I’ve never been to Europe,” he says. “I’d love to do some dining and go exploring. Food and travel go together and my son has a good palette.”
1 recipe Gnocchi (recipe follows) 1 vanilla bean, split and scraped 1 butternut squash, peeled and diced 1 tbsp brown sugar 2 sprigs fresh rosemary 2 + 2 tbsp butter Salt and pepper
1. Combine butter, brown sugar, and vanilla pulp in small saucepan and heat slowly until butter melts. Toss squash in butter mixture, spread evenly on a sheet tray and roast in 350F oven 20-30 minutes until squash is cooked through. 2. Blanch gnocchi in boiling salted water until floating, about 2 minutes. Drain. 3. Add remaining butter to frying pan and melt over medium heat. Add gnocchi, rosemary and squash and sauté until gnocchi caramelizes slightly and butter starts to brown and take on a nutty flavor, approx. 3-4 minutes. Season to taste with salt and pepper. Serves 4.

3lbs fingerling potatoes 2 eggs, lightly beaten 1½ cups flour 1 tbsp parmesan 1½ tsp unsalted butter, melted 1½ tsp e.v. olive oil 1½ tsp salt ¾ tsp black pepper
1. Roast potatoes, and then pass through food mill or ricer. 2. Combine other ingredients then cut in potatoes with bench scraper until just combined. 3. Cut off small piece of dough and roll into a long log, approx. 1” thick. 4. Cut into bite-sized pieces. 5. Keep refrigerated up to 24 hours or freeze up to 1 month.
