MORSELS FROM THE EDITOR Summer is a season for celebrations, and most of it features food we love to both prepare and eat. From the quintessential Memorial Day picnics to the 4th of July backyard BBQ, summertime is all about the food.

In South Florida, summer is also about Miami Spice, our much-heralded foodie program that celebrates the very best in cuisine right here at home. And this summer, Miami Spice will host its very own Quincenera party as it turns 15!

I remember the very early days of Miami Spice. My friends and I would map out our summer dining plans based on the new (or new to us) restaurants. We could try those places that would normally be a bit out of our budget as well as those that were completely outside our comfort zone.

It was a culinary adventure where the prize was always an amazing meal at an incredibly affordable price and usually with great friends. Most restaurants immediately embraced the concept as a way to get additional exposure across the region and build a new audience of foodie evangelists at the same time. But, when the Great Recession came in 2008, more relied upon the program as a way to survive the most challenging of economies during the toughest part of the year. That is the beauty of Miami Spice; it is not only a great way to diversify your tastes, it is also a stimulus program for our restaurant community.

So, as the month of August dawns, check out all the participating restaurants (with many of them located right in the heart of Coral Gables) at www.ilovemiamispice.com and start charting your course to culinary greatness. I am looking forward to another year of great eating – and during this Olympic summer, I expect to finish September strong with a gold medal around my neck! Happy Birthday Miami Spice, you’ve never looked (or tasted) better!

This issue of Let’s Eat – our 6th – also features a profile by Nikki Deas of Vine Communications on our local version of the Cheddar Heads, the masterminds behind the uber-successful Ms. Cheezious, a new arrival in the Gables on the north end of Ponce de Leon Boulevard. What started as the local centerpiece of a food truck frenzy is now enjoying its own bricks and mortar location complete with a full menu of the most amazing grilled cheese creations ever dreamed up and so much more. If the constant line out the door is any indication, then you know it’s the cheese that makes it good!

Finally, we welcome back our smashingly scintillating sommelier Jacqueline Coleman to share her take on South American Wine, specifically Malbec. Plus, hear about the French invasion propelled by Gastronomicom, a new cooking and pastry school in the heart of the Gables. You will be impressed!

Ms. Cheezious Arrives in the Gables By: Nikki Deas

Comfort food comes in many flavors, shapes and sizes but no one does it better than hometown hero Ms. Cheezious®.

Known for their innovative spin on the classic grilled cheese sandwich, co-founders Brian and Fatima Mullins and M. Christian Dickens launched the brand with a Ms. Cheezious® food truck in December 2010 and have just kept on truckin’ ever since. In just a few short years, the company has added a second truck and stand-alone restaurants to help them on their mission of brining cheesy love to the masses one melt at a time. The Cheez gang recently opened their second brick and mortar location in Coral Gables, turning the City Beautiful into the City Bleutiful.

“We opened our Biscayne location in 2014 and the stars aligned for us to open our second location in the Gables almost two years later,” said Ms. Cheezious® co-founder Brian Mullins.

Heading home after a day of scouting unimpressive restaurant locations Brian, Fatima and Christian decide to take a ride through their neighborhood and stumbled upon a turnkey location just off of Ponce de Leon Boulevard. Brian and Fatima had lived in Coral Gables for the past eight years and knew that this section of the Gables was prime for an accessible food concept like theirs that could cater to a wide audience of businesses, families and young professionals. They were able to quickly move through the permitting process, add some of their signature Cheezious charm and open the doors in six short weeks. The rest is grilled cheese history.

Ms. Cheezious® was conceptualized during a trip to Vegas in 2010, the trio decided to combine their 20+ years of food industry experience with their creative cooking spirit and flair for business to create a restaurant concept of their own. Staying true to the their culinary philosophy that life’s most prized moments are created around good food and good people, they delved into the think-tank and created a menu designed around the grilled cheese sandwich, satisfying everyone’s comfort cravings. The concept of the sexy maven, the iconic Ms. Cheezious® character was born. Using fresh ingredients and inspiration from their diverse palates, the team began adding new layers of flavor to the classic American favorite.

So what are the favorites? Best selling sandwiches include the Pulled Pork Melt that comes with homemade BBQ pulled pork, sharp cheddar cheese and is served on Texas Toast. The Short Rib Melt is also another fan-favorite boasting braised short rib, jack cheese, pickled onions and arugula on sourdough bread.

Sometimes triumph rises up from the ashes of great tragedy. Such is the history behind Miami Spice, our community’s uber-successful and downright savory restaurant-themed program every summer that has become as much a part of South Florida as the sun and beach. has its own unique “temptation”, from film and live entertainment months to the ever popular museum and spa months (imagine a hot stone massage for just $99!).

The dream team of “imagineers” at the GMCVB, including Rolando Aedo, Madeleine Paredes and Janel Sierra, keep the hits coming month after tempting month!

Such was the case when Haas and team pitched Miami Spice to the GMCVB. From the beginning, they did the heavy lifting and made it happen, understanding that immediate success was vital to the survival of the restaurant industry and to tourism in Greater Miami. There was no option for failure. Lives and livelihoods were at stake.

Today, Haas is like a proud papa when he talks about Miami Spice sweetly referred to as his baby. He has been recognized around the globe by his many fans as a man on a mission.

Dreamed up by iconic restauranteur and community activist Steven Haas fifteen years ago, Miami Spice was a nod to Restaurant Week in NYC and born after the tragedy of September 11th.

Following the events of 9/11, the hospitality industry was hit hard and restaurants and hotels were empty and suffering. We needed a way to turn things around and get people moving (and eating out) again.

Miami Spice was the perfect elixir and boy has it proven to be successful for our local restaurants and uniquely South Florida gastronomy.

At its core, Miami Spice is really about exploration, delighting locals (and visitors alike) with culinary opportunities that might not garner their attention if it were not for the added promotion (thank you GMCVB), great pricing (for lunch and dinner - 3 amazing courses) and the high-impact buzz that it creates for foodies across the community.

Like most things in Greater Miami, we do them bigger (and some would say better) than every other place on the planet. In our estimation, we needed more than a mere week to shine the spotlight on our restaurants - so we decided to make Miami Spice last two months (August & September) and shake out the doldrums of a hot summer by doing what we love most - dining out!

And thus Haas and the marketing team at the Greater Miami Convention & Visitors Bureau (GMCVB) set about creating a signature program that has become the marvel to many and envy of most.

Today, Miami Spice has helped save an industry and propelled it forward and not just during the summertime. Every month in Miami now

What "4" desserts will students – professional and non-professional – be able to learn to make at your school? Why these four?

Croissants, Eclairs au Chocolat, Mille Feuille and Macaroons.

I think these desserts are well-known around the world and very traditionally French, yet difficult technically to do at a high level of quality.

What are your "4" favorite ingredients to cook with – both sweet AND savory? What makes them so special?

Personally, I love olive oil because it is a Mediterranean product and very healthy. I also love truffles because they are the king of the mushrooms and we use them in several high-level gastronomic dishes. Herbs like basil, cilantro, and chervil augment the taste of many dishes, and basil can even be used with desserts like strawberries or melons. Balsamic vinegar (generally 25 years old with no acidity) also enhance the taste of strawberries or a risotto or a piece of parmesan. It is naturally an Italian product, but used a lot in the gastronomy in France, too.

What "4" cities in France are currently noted for their amazing cuisine? How are they changing the culinary world?

- Lyon is the capital of French gastronomy.

- Paris is the city where you can find the best French restaurants and any type of food.

- Strasbourg in Alsace where several 3 Michelin star restaurants are located and where they prepare perfectly the famous "Foie Gras".

- Nice, the capital of Mediterranean food in France. I love the Mediterranean food because it is tasty, colorful and healthy!

What are "4" ways that local companies can engage and work with your culinary school?

We would love to collaborate with the farmers of the region around Miami and all the producers of high quality organic products to promote them through our school. In addition, we wish to work with the restaurants of Coral Gables and Miami to train their chefs and help them to improve their skills in French cooking or pastry. Plus, we would love to help local companies who would like to organize team-building activities at our school by doing some cooking and pastry all together and have a real collaborative experience with tremendous spirit. Finally, yacht owners and their chefs who wish to get new ideas and recipes to impress the people they invite onto their yachts.

Beyond Malbec!

n the wonderful world of wine, there is nothing wrong with a particular varietal reaching a certain level of celebrity status, especially when that grape brings a great deal of attention to a wine region that deserves being recognized. Just as in any industry, waves of popular wine fads often overshadow other wines from a region or continent that are equally as delicious and should be discovered! Let’s dive into some tantalizing varietals that you can find coming out of South America that go beyond your favorite Malbec.

Carménère: One of the original six red grapes of Bordeaux is rarely grown in France these days, but has burst on the scene in Chile with intense red berry flavor and a kick of spice. This deep red wine has a medium body and softer tannins than a heavier Cabernet. Often Carménère is blended, but holds its own as a strong single varietal as well. One of my favorite Carménère/Petit Verdot blends is from the icon winery in Chile, Viña Montes. Montes makes a premium wine called Purple Angel, born from the Colchagua Valley in Chile. Purple Angel is a treat to add to your dinner party table when eating Steak au Poivre, or even with a strong cheese plate. When you are looking for a new wine to discover, check out additional Montes labels such as the Montes Alpha Carménère.

2 Tannat: Tannat is one of my favorite interesting varietals, and also one of the hardest to find when you are dining out-and-about. Also originally from France, this time from the Madiran region, Tannat is now the National Grape

in Uruguay. Some of the most delicious Tannat wines are coming out of this tiny South American country. Despite the fact that this dark red wine derives its name from the word, “tannins”, and can be quite tannic coming out of France, Uruguayan Tannat wine tends to be more subtle and slightly less tannic than its French cousins, especially when blended with a softer Pinot Noir or Merlot. When considering a pairing, Tannat from Uruguay is still a great choice to pair with your juicy steak or BBQ meats—as the tannins from this wine will help cut through some of the fat of the meat. Bodegas Carrau is a family-owned Uruguayan winery that makes a Tannat to try.

3 Torrontés: Here is a refreshing and crisp Argentine wine I really enjoy! This aromatic white wine has a smooth texture and moderate acidity, with strong citrus and peach flavors. Despite the sweeter flavors on the nose,

Argentine Torrontés is usually made in a dry style, and is a good option for those who are looking for something to pair with spicier Asian or Indian food. How international! Because Torrontés is considered an Argentine specialty, look for a Kaiken Terroir Series Torrontés out of Argentina to pair with your next curry dinner.
