Traditional Challah 1 tsp. sugar 1/2 cup warm water 1 pkg. yeast 1/2 cup oil 1/2 cup warm water 1/4 cup sugar
2 tsp. salt 2 eggs 3 1/2 to 4 cups flour poppy or sesame seeds 1 egg beaten with 1 tsp. water
Dissolve sugar in 1/2 cup warm water in a large mixing bowl which has first been rinsed with hot water. Sprinkle yeast on top and let stand for 10 minutes. Stir to dissolve. Combine with oil, warm water, sugar, salt, eggs and half of the flour. Beat well. Stir in remaining flour. Dough should be sticky. Cover dough and let rest for 10 minutes. Turn out onto a floured board and knead for 10 minutes, adding flour as needed. Round up in a greased bowl. Cover and let rise in a warm place until double in bulk, about 1 1/2 to 2 hours. Punch down, cover and let rise again until double, about 45 minutes. Divide dough into 3 equal parts. (If you want to make 2 smaller challahs, first divide dough in half, then divide each half into 3 equal parts.) Shape into strands. Place on a lightly greased baking sheet and braid loosely. Fasten ends securely. Cover with a damp cloth and let rise until double. Brush with beaten egg yolk and sprinkle with seeds. Bake at 400°F for 30 minutes, until golden brown. (If making 2 smaller challahs, baking time will be about 25 minutes.)
2 Tomato Sauce Gefilte Fish 1 loaf (frozen) Gefilte Fish 1 Onion 1 Can tomato sauce Salt Garlic powder Black pepper
Saute onion and put over roll of unwrapped gefilte fish. Cover with tomato sauce, salt, pepper, garlic to taste and bake according to package instructions.
3 Homemade Chummus 1 (15 oz) can small white beans or cannellini beans, drained and rinsed 1 (15 oz can of chickpeas, drained and rinsed 3 cloves fresh garlic 1/2 cup tahini (sesame paste) Juice of 2 lemons 1.5 T soy sauce
1.5 t salt 1.5 t ground cumin 1/2 t cayenne pepper (if you like it spicy) 1/8 t ground white pepper 1/3 cup extra virgin olive oil 1/4 cup cold water or more as needed.
Put all ingredients except oil and water in food processor fitted with S blade and proces for 1 minute. Drizzle the oil and water and process again. Add more water as needed to thin chummus to desired consistency.

Black Olive Dip 2 cans black olives 4 t olive oil 2 t red wine vinegar 2 t dried oregano 2 t crushed garlic 1 t red pepper flakes Salt
Combine all ingredients together in food processor.
1 to 2 parsnips 1 onion 1 Tbsp. Salt Âź tsp. Pepper 1 zucchini
Clean chicken and remove excess fat. Fill an 8-quart pot with the 12 cups of water. Bring to a boil. Place chicken and vegetables in pot. Add salt and pepper. Simmer covered for about 2 hours. (the more simmering the thicker and tastier it'll get, but save some for Shabbat dinner). Matza Balls: 2 eggs slightly beaten 2 tablespoons oil or chicken fat
1 cup raisins (optional) 3/4 cup sugar 1/4 t cinnamon 1/2 t salt
Preheat oven to 400, cook and drain noodles. Combine all other ingredients in a large mixing bowl, mix together well. Pour mixture into a greased 9x13 pan, sprinkle with cinnamon and sugar. Bake for 45 minutes uncovered until crisp on top.
6 Chicken soup / Matza balls: Chicken Soup: 1 - 3 to 5 pound chicken, quartered 12 cups of water 3 carrots 1 stalk celery
1 Pkg 12 oz wide egg noodles 6 eggs 1/2 oil 1 can crushed pineapple
2 tablespoons soup stock or water 1/2 cup matzah meal 1 teaspoon salt
Beat eggs slightly with fork. Add other ingredients, except matzah meal, and mix. Add matzah meal gradually until thick. Stir. Refrigerate for 20 minutes in covered bowl. Wet hands and form into balls. Drop into bubbling chicken soup or into a large wide pot into which 1 quart water seasoned with 1 tablespoon salt has been added and has come to a boil. Cook for 30 minutes.

Apple Kugel 4 Eggs 1 cup flour 2 t cinnamon 1/2 cup oil 1 cup sugar 1 t baking powder
6 apples, sliced Combine first 6 ingredients. Fold in apples. Bake in pan uncovered at 350 for 45-50 minutes.
SEPTEMBER ELUL 5780–TISHREI 5781 THE SHOFAR The Torah calls Rosh Hashanah the “day of the shofar blast.” The central mitzvah of Rosh Hashanah (the Jewish New Year) is to hear the shofar being blown— ideally as part of the prayer service in the synagogue. There are many explanations as to why we blow the shofar on Rosh Hashanah. Perhaps the most important of them is that we use it as a trumpet to crown G-d as the King over the entire universe. OCTOBER TISHREI - CHESHVAN SUKKOT The Festival of Sukkot is observed through the performance of three mitzvot: Sukkah: For the duration of the holiday it is a mitzvah to eat in a Sukkah, a temporary hut covered by loose tree branches. Lulav & Etrog: Each day of the festival (except Shabbat) we take the “four species� and shake them together. Joy: The overarching mitzvah of Sukkot is joy. When our Holy Temple stood in Jerusalem, men and women, young and old would join in music, dancing and juggling for all seven days of the festival!

TREE’S NEW YEAR The 15th of Shevat on the Jewish calendar is the day that marks the beginning of a “new year” for trees. Commonly known as Tu Bishvat, this day marks the season in which the earliest-blooming trees in the Land of Israel emerge from their winter sleep and begin a new fruit-bearing cycle. To commemorate this special day, Jews throughout the world eat foods that are distinctive to and characteristic of the Holy Land, including the seven types of fruits and grain mentioned in the Torah: wheat, barley, grapes, figs, pomegranates, olives, and dates. On this day, a new seasonal fruit is customarily eaten for the first time. The blessings Shehecheyanu and Ha’eitz are said over the fruit. Art by Michal Gaynor

FEBRUARY SHEVAT – ADAR PURIM The most joyous holiday of the year, Purim, commemorates the salvation of the Jewish people from the complete annihilation decreed by the wicked Haman. Queen Esther, a young Jewish heroine, sought out King Achashverosh and begged him to intervene. Every year, we read the story to remind us of this great miracle. We celebrate in many ways, including a great feast, food gift baskets to our friends, and charity to the poor.

MARCH ADAR - NISSAN PASSOVER Passover is a fundamental holiday for the Jewish nation. After two hundred and ten years in Egypt, G-d saved the Jewish people from slavery. The Jews departed Egypt in great haste, without enough time to allow their dough to rise (matzah). They arrived at the Sea of Reeds. Miraculously, the sea split, revealing a dry path for everyone to walk on towards freedom and the giving of the Torah.

APRIL NISSAN - IYAR TORAH The Torah is a scroll containing the entire text of the Five Books of Moses, hand-written by a pious scribe in the original Hebrew. It is rolled up around two ornate wooden shafts. Kept in the Ark of each synagogue, the Torah scroll is routinely read aloud in all synagogues, and in its presence we offer prayers and blessings for all those in need. Yet the Torah scroll is much more than that. It is the core representation of Judaism itself. It is the tangible embodiment of our connection to G-d and of His wisdom and guidance.

MAY IYAR - SIVAN SHAVUOT Shavuot marks the day upon which G-d gave the Torah to the entire Jewish nation over 3,300 years ago. In Hebrew, the word Shavuot means “weeks” and stands for the seven weeks during which the Jewish people prepared themselves for the giving of the Torah. During this time they rid themselves of the scars of bondage and became a holy nation ready to stand before G-d.

The midrash teaches that when Moshiach comes and rebuilds the third Temple, which will stand forever, these days will be transformed from ones of mourning to joy.

SEPTEMBER ELUL 5781–TISHREI 5782 THE POMEGRANATE It is customary to eat pomegranates on Rosh Hashanah, because their many seeds reminds us of the many Mitzvot that we do. There is however, a deeper explanation. When we eat a pomegranate, we disregard the peel and only eat the sweet fruit inside. So too we are asking G-d that He should disregard our “peel,” our external appearances. Instead, we ask that He focus on our “sweet fruit,” our desire within us to to connect with Him.

HOW TO LIGHT SHABBAT CANDLES 1.
HOW TO: It starts with one light. Add a candle for your spouse, and if you’re a mother, one for each child. A girl over the age of three may (with help from Mom) light her own candle. Before kindling the candles (exact time is mentioned in the bottom of each calendar box), we think of those less fortunate and put a coin in a charity box.
2. LIGHT A CANDLE. After the candles are lit, the woman stretches her hands out towards the candles, and moves them inwards in a circular motion – ushering in a special guest, the Shabbat Queen – three times. After the third time, the woman covers her eyes with her hands and recites the following blessing: Generously printed in Canada by

3. THE BLESSING: Baruch a-ta A-do-nay Elohei-nu me-lech ha-o-lam a-sher ki-dee-sha-nu bi-mitz-vo-tav vi-tzi-va-noo li-had-leek ner shel Sha-bat Ko-desh. TRANSLATION: Blessed are you, L-rd our G-d, King of the universe, who has sanctified us with His commandments, and commanded us to kindle the light of the Holy Shabbat. 4. SAY A PRAYER. The moments immediately after reciting the blessing, while the woman’s eyes are still covered, are an extremely auspicious time for her to offer a private prayer for anything her heart desires. It is customary to use this special time to appeal to G-d for children who will glow with the radiance of the Torah, and that He light up the world with the light of the Redemption.
