His personal devotion to each and every individual Jew and his love for the Holy Land, as well as his dedication to G-d and His Torah, continue to direct and inspire the Chabad Jewish Learning Centre here in Winnipeg., and throughout the world.

Greek - Olive Bread with Sun-Dried Tomatoes
TRY THIS RECIPE AS ROLLS OR A LOAF FOR YOUR “GREEK STYLE” SHABBAT TABLE 2.2 lb. whole wheat flour ½ teaspoon ground garlic 1 oz active dry yeast 1 Tablespoon oregano 5.5 oz finely chopped Kalamata olives 6 finely chopped sun-dried tomatoes 1 ½ cup lukewarm water 3 tablespoons olive oil 1 teaspoon sugar Salt Mix the flour with the garlic, oregano, sugar and salt. Dissolve the yeast in 3-4 tablespoons of lukewarm water. Leave the mixture to rest until it activates. Then put the flour in a large mixing bowl, add the yeast mixture, the water and the olive oil, and knead thoroughly by hand. When all the ingredients in the dough are mixed properly, add the olives and the sun-dried tomatoes. Knead thoroughly again and form two loaves from the dough. Place them on a baking tray covered with baking paper. Cover the dough and let it rise. When the dough has doubled its volume, score across the top with a sharp knife, brush the top with a little water, sprinkle a little sesame (your choice) and bake in a 350° F oven for approximately 15-20 minutes. If making loaves, baking times will vary.
Moroccan - Kefta in Fresh Tomato Sauce Kefta is Lamb meatballs GREAT FOR SUKKOT DINNER UNDER THE STARS ½ bunch coriander, chopped ½ bunch flat-leaf parsley, chopped, plus extra, to serve 1.5 Lbs minced lamb 2 tsp ground cumin 2 tsp sweet paprika 80 ml(⅓ cup) olive oil 1 onion, finely chopped 2 1/4 lb. tomatoes, peeled, seeded, chopped (see Note) 2 garlic cloves, chopped
Combine coriander, parsley, minced lamb and 1 tsp each cumin and paprika in a bowl. Season with salt and pepper. Roll into 24 x 4 cm meatballs and place on a tray lined with baking paper. Cover with plastic wrap and refrigerate for 1 hour. Preheat oven to 375°F. Heat olive oil in a large ovenproof frying pan over medium heat. Working in batches, cook meatballs, turning, for 8 minutes or until browned all over. Remove from pan and set aside. Reduce heat to medium-low and add onion to pan. Cook, stirring occasionally, for 8 minutes or until very soft and golden. Add tomatoes, remaining cumin, paprika and garlic. Season and cook, stirring occasionally, for 10 minutes until thickened. Return meatballs to the sauce. Transfer to the oven and bake for 15 minutes. Scatter with extra chopped parsley, to serve.
Israeli Shakshuka
THE PERFECT BREAKFAST OR MOTZAI SHABBOS DELICACY 1 onion 1 yellow bell pepper 1 tomato 1 red chili pepper 2 cloves garlic 4-5 sprigs fresh parsley 3 tbsp. oil 1 cup chopped (canned) tomatoes 1 tsp. sweet paprika ½ tsp. cumin ½ tsp. turmeric ½ tsp. salt 4 eggs Dice all the vegetables. Sauté the onion in the oil until translucent. Add the yellow pepper, chili pepper, garlic, tomato and chopped tomatoes. Add the paprika, cumin, turmeric, and salt, and simmer until vegetables are cooked through. Drop the eggs into the tomato mixture and cook until eggs are just set. Garnish with fresh parsley. Serve with pita or flatbread.
Italian - Carciofi Fritti
(Fried Artichokes) PUT A SPIN ON YOUR CHANUKAH FRIED FOOD MENU 12 medium artichokes 2 lemons, juice and rinds 3/4 cup matzo meal 1/2 teaspoon salt
A pinch of freshly ground black pepper 1/2 cup cold water 1 egg 2 egg yolks 2 tablespoons olive oil olive oil or safflower oil for frying 1 lemon, cut into wedges Clean artichokes (for instructions, visit tinyurl.com/ycar5c27). Cut in half lengthwise and remove the chokes. Cut each in half lengthwise again. Drop each into a bowl filled with cold water and squeezed lemons. Combine matzo meal, salt, and pepper with cold water. Add egg, yolks, and 2 tablespoons olive oil, and beat until smooth. Drain the artichoke pieces and leave to dry for a few minutes. Heat 1 cup oil in a small frying pan. Dip the artichokes in small batches into the batter. Fry a few pieces at a time in the hot oil (for a few minutes) until golden keeping the recently fried ones on a paper towel on a baking sheet or plate. Serve very hot, straight from the oil, with wedges of lemon.
Russia – Syrniki
SHAVUOS TREAT - FARMER CHEESE PANCAKES 2 eggs 3 tablespoons sugar 2½ teaspoons vanilla sugar (or 1 teaspoon vanilla extract) ½ teaspoon sea salt 2 cups farmers cheese 4 tablespoons flour ¼ teaspoon baking powder Oil, for frying Sour cream, honey, for serving Combine eggs, sugar, vanilla sugar and salt in a bowl, and beat using a mixer or whisk. Add farmers cheese, flour, baking powder and mix until well combined and it comes together as a dough. On a floured surface, divide the dough into 15 uniform balls and flatten each into a disk, about
½-inch thick. Heat oil in a large nonstick pan over medium-low heat. Once the oil is hot, Fry pancakes until golden (3 to 4 minutes on each side). Serve immediately with sour cream, honey or other sweet toppings.

SUKKOT The Festival of Sukkot is observed through the joyous performance of two mitzvot: Sukkah: For the duration of the holiday it is a mitzvah to eat in a Sukkah, a temporary hut covered by loose tree branches. Lulav & Etrog: Each day of the festival (except Shabbat) we take the “four species” and shake them together.

OCTOBER TISHREI - CHESHVAN MEZUZAH The mezuzah, a handwritten scroll containing the Shema, is affixed to the right doorpost. It designates our home as Jewish. Symbolizing G-d’s watchful eye upon us, the mezuzah provides protection for its inhabitants, wherever they may be. The decorative case containing the mezuzah scroll is just that: a mere container. What’s important is the scroll, upon which the first two sections of the Shema are handwritten. Beginning with the eternal words “Hear o Israel, the L-rd is our G-d, the L-rd is One,” these selections contain G-d’s instruction to affix the mezuzah. “You shall write them on the doorposts of your house and on your gates.” These words are handwritten by an expert scribe who is trained in the many laws involved in writing a mezuzah. Every single letter in the mezuzah must be properly formed. A single crack in the parchment or any omission can invalidate the entire scroll. A printed mezuzah is invalid. DECEMBER KISLEV - TEVET CHANUKAH During the time of the Second Temple, the Jews fought the Greeks who were threatening the spiritual existence of Judaism. After a completely miraculous victory, the Jews were once again reunited with their precious Temple. With no usable olive oil for the holy Menorah, but for one small jug, G-d performed yet another miracle and that jug of oil lasted 8 nights instead of one. Latkes fried in oil are customary Chanukah treats to remind us of this great miracle.

JANUARY TEVET - SHEVAT TREE’S NEW YEAR The 15th of Shevat on the Jewish calendar is the day that marks the beginning of a “new year” for trees. Commonly known as Tu Bishvat, this day marks the season in which the earliest-blooming trees in the Land of Israel emerge from their winter sleep and begin a new fruit-bearing cycle. To commemorate this special day, Jews throughout the world eat foods that are distinctive to and characteristic of the Holy Land, including the seven types of fruits and grain mentioned in the Torah: wheat, barley, grapes, figs, pomegranates, olives, and dates. On this day, a new seasonal fruit is customarily eaten for the first time. The blessings Shehecheyanu and Ha’eitz are said over the fruit.

FEBRUARY SHEVAT – ADAR I TZEDAKA Tzedaka is commonly translated as charity, but really means “justice” or “righteousness”. In Judaism, giving to people in need is not merely a kind thing to do, but rather the just, right behavior. Everything in our lives is a gift from G-d, including the money we earn. G-d has granted us this money, and in doing so, has asked us to partner with Him in distributing to those in need. Every coin we give to the less fortunate allows us to become partners with G-d in providing for the needs of another. In a metaphorical sense, the act of Tzedaka raises us up and empowers us to act as the hand of G-d by distributing the money to those whom G-d has intended.

APRIL ADAR II - NISSAN PASSOVER Passover celebrates the miraculous exodus from Egypt and the birth of the Jewish people. After 210 years of slavery and oppression, G-d freed the Jewish people. The Jews departed in great haste, without even enough time for their dough to rise, resulting in the flat unleavened bread we call Matzah. Each year on Pesach, to commemorate this great miracle of redemption, we eat Matzah and refrain from eating any leavened products, known as Chametz. Jewish homes throughout the world spend the days and weeks before Pesach carefully cleaning their homes, culminating in a search for every last crumb. On the morning before Passover begins, one burns the remaining bits of Chametz found during the search the previous night.

MAY IYAR - SIVAN LAG BAOMER Lag Baomer is a joyous day on the Jewish calendar, with bonfires customarily being lit as part of the celebrations. Rabbi Shimon Bar Yochai, the great scholar and Kabbalist of the 2nd century, passed away on this day and instructed his students to mark the day as “the day of my joy”. Rabbi Shimon was a great mystic, and through his writing of Kabbalah, his bright light shines until today. Bonfires are a symbol of the fiery spirit of the deep and mystical teachings that Rabbi Shimon shared with the world, reminding us of our mission to bring light into the world as well.

JUNE SIVAN - TAMMUZ SHAVUOT Shavuot marks the day upon which G-d gave the Torah to the entire Jewish nation over 3,300 years ago. In Hebrew, the word shavuot means “weeks” and stands for the seven weeks during which the Jewish people prepared themselves for the giving of the Torah. During this time they rid themselves of the scars of bondage and became a holy nation ready to stand before G-d.

The midrash teaches that when Moshiach comes and rebuilds the third Temple, which will stand forever, these days will be transformed from ones of mourning to joy.

HOW TO LIGHT SHABBAT CANDLES 1.
HOW TO: It starts with one light. Add a candle for your spouse, and if you’re a mother, one for each child. A girl over the age of three may (with help from Mom) light her own candle. Before kindling the candles (exact time is mentioned in the bottom of each calendar box), we think of those less fortunate and put a coin in a charity box.
2. LIGHT A CANDLE. After the candles are lit, the woman stretches her hands out towards the candles, and moves them inwards in a circular motion – ushering in a special guest, the Shabbat Queen – three times. After the third time, the woman covers her eyes with her hands and recites the following blessing:
3. THE BLESSING: Baruch a-ta A-do-nay Elohei-nu me-lech ha-o-lam a-sher ki-dee-sha-nu bi-mitz-vo-tav vi-tzi-va-noo li-had-leek ner shel Sha-bat Ko-desh. TRANSLATION: Blessed are you, L-rd our G-d, King of the universe, who has sanctified us with His commandments, and commanded us to kindle the light of the Holy Shabbat. 4. SAY A PRAYER. The moments immediately after reciting the blessing, while the woman’s eyes are still covered, are an extremely auspicious time for her to offer a private prayer for anything her heart desires. It is customary to use this special time to appeal to G-d for children who will glow with the radiance of the Torah, and that He light up the world with the light of the Redemption.
