Camp Toast Ingredients • Bread • Wire Coat Hanger (one you no longer need) or if you are fancy a marshmellow roasting stick.
Directions • Bend coat hanger to provide a point to hold the bread. • Turn stove burner on high. • Using hanger (or roaster of choice) hold bread above the burner. • Toast until desired darkness, and flip to toast the other side. Note: turn on stove fan or have tea towel ready to fan smoke alarm.
Overnight Miracle Strata Ingredients
Directions
• 8 slices white bread, cubed • 2 cups diced cooked ham • 1 onion, chopped • 1 celery stalk, chopped • 1 green bell pepper, chopped • 2/3 cup of Miracle Whip (mayonnaise) • 2 cups grated cheddar cheese • 4 eggs, well beaten • 1 ½ cups of milk
• Grease an 8X12 baking dish. • Cover the bottom of the pan with half of the bread cubes. • Combine ham, mayo, and veggies together and spread over the bread cubes. • Sprinkle with half of the grated cheese. • Cover with the remaining bread cubes. • Combine eggs and milk, mix together as is making scrambled eggs. • Pour egg mixture over bread. • Sprinkle the rest of the cheese over the top. • Cover and refrigerate overnight. • Bake at 350 f for 45 – 60 minutes or until set. • Let stand for 10 minutes before serving.
Notes: Feel free to add or omit any veggies. If the bread seem dry in the morning, lightly press it down into the egg mixture prior to baking.
Homemade Bread Ingredients
Directions
• 2 cups milk • 2 T. shortening • 3 T. sugar • 2 T. salts • 1 T. instant yeast • 3-4 cups flour
• In a warm medium bowl add milk, shortening, 2 T. sugar, and salt. • In a small bowl mix, yeast, 1 T. sugar, and 1/4 cup warm water. • In a large bowl mix the content of the medium bowl with the contents of the small bowl, and slowly add the 3 cups of flour. • Sprinkle 1 cup of flour on counter top. • Grease fingers, and empty the contents of the bowl onto the counter top and knead well. • Grease bowl with oil, and place dough in bowl. • Rub oil the top of dough and cover the bowl with a clean cloth. • Let dough rise once, and punch it down. • Let dough rise again. • Remove dough, knead slightly and add to bread pan. Allow it to rise one more time. • Bake in 350F oven until done. Tap the top, when it sounds hallow the bread is ready.
Pumpernickel Spinach Dip Ingredients
Directions
• 1 loaf of pumpernickel bread • 1, 300 g package of frozen spinach • 1, 40 gram package of Knorr Vegetable Soup Mix • 1, 500 ml tub of sour cream
• Defrost chopped spinach & squeeze out excess water. • Hollow out the centre of the pumpernickel loaf (think you are making a bowl). • Cut removed bread into bite sized cubes. • Combine sour cream, soup mix and spinach in a small bowl and mix well. • Place dip in the pumpernickel bread bowl, and refrigerate form 1 hour.
Notes: this is also great for dipping veggies and crackers.
Chicken/Turkey a la King Ingredients
Directions
• 2 T. butter • 1 onion, diced • 2 T. flour • 2 cup milk • 2 cup cooked chicken or turkey • ½ t. salt • Pinch of nutmeg • 1 cup frozen peas
• Sauté onions in butter until translucent (do not brown). • Add flour and stir to cook for 1 minute. • Add milk and whisk to thicken. • Add salt, nutmeg, chicken, and peas. • Cook until warmed. • Serve on toast with cranberry sauce and left over stuffing.
Notes: This is a great way to use up a grocery store roasted chicken.
Baked Macaroni Ingredients
Directions
• 2 cups shredded cheddar cheese • 1 cup shredded old cheddar cheese • 2 T. flour • 1 cup milk • 1 t. salt • 1 t. pepper • 2. t. mustard powder • 6 T. butter • 1 can diced tomatoes • 1 cup bread crumbs • 4 slices of bacon • 1 package of macaroni (not the oversized package)
• Add butter, seasoning, mustard, and flour to pot and stir until cooked for about 1 minute and a paste is formed. • Add in milk and stir constantly until thickened. • Add in shredded cheese (keeping 1 cup for topping), and sit until melted. If it seem too thick, add a bit more milk. • Add cooked macaroni to the cheese mixture and stir until all coated. • Add in diced tomatoes and mix together. • Pour into a greased baking dish. • Top with remaining shredded cheese and bread crumbs. • Lay sliced bacon over the top and bake covered for 30 minutes at 350F. • Uncover and back for 15 – 30 minutes until golden brown and bacon is cooked on top.
Notes: This is sometimes yummy with cooked ground beef.
Chicken & Sliders Ingredients
Directions
• 1 stewing hen/chicken cut into pieces • 1 onion, diced • 1 stalk celery, diced • 3 – 4 large potatoes, chunked • 1 t. salt • ½ t. poultry seasoning
• Boil chicken with onion, celery and salt. Add potatoes and cook until tender. • Mix slider ingredients together to form a dough. • Lightly flour cutting board and knead dough until well formed and able to be rolled out. • Roll out to about ¼ inch thick and cut into strips. • Add sliders to pot and cook on medium f or 20 – 25 minutes.
Sliders • 4 t. baking powder. • 2 t. salt • ¼ t. pepper • ½ - ¾ cup water
Notes: Do not over knead the dough or your sliders will be tough. Before you add the sliders, check the broth. If it is too watery, mix a bit of flour with water add and boil until thick (stir often).
Chicken Cacciatore Ingredients
Directions
• About 3 pounds chicken pieces • 4 T. cooking oil • 1 clove minced garlic • 1 onion, sliced • 1 green bell pepper, sliced • 1 package sliced mushrooms • 2 t. salt • ¼ t. pepper • 2 cans diced tomatoes • 1 cup pitted black or green olives (optional) • 1 package egg noodles
• Brown chicken pieces in oil, and remove from pan. • Sauté onions, green peppers, garlic, and mushroom, until just cooked. • Add chicken and vegetable mixture to a deep pot. • Add salt, pepper and diced tomatoes. • Cook on medium for 45 – 60 minutes. • Cook egg noodles as directed on package. • Serve chicken and sauce over noodles with a slice of fresh bread.
Swiss Steak Ingredients
Directions
• 2 or 3 pounds of round steak cut into serving sizes • 1 t. salt • ¼ tsp. pepper • ¼ cup flour • 3 T. oil • 1 can of diced tomatoes • 1 big onion, sliced • 1 cup celery, diced • 1 T. Worcestershire Sauce • 1 clove of minced garlic
• Combine flour, salt and pepper in a bowl. • Coat steak in flour mixture, and brown in oil on both sides. • Remove steak and place in a baking dish. • Add celery, onions, and diced tomatoes on top of steak. • Cover and bake at 350F for 60 minutes.
Cabbage Rolls Ingredients
Directions
• 1 large cabbage • 2 pounds ground beef • 1 onion, diced • 1 t. salt • ¼ t. pepper • 1 t. garlic powder • 1 egg • 1 cup minute rice • 2 cans diced tomatoes
• Simmer cabbage in a large pot to soften leaves. • Separate cabbage into single leaves. • In a large bowl mix all other ingredients, except for canned tomatoes. • Add raw meat mixture to the center of each cabbage leaf, roll and tuck ends in. • Place tightly together in a baking dish. • Cover rolls with diced tomatoes. • Cover pan and bake at 350F for 75 – 90 minutes.
Stove Top Stew Ingredients
Directions
• 2 packages short ribs or 1 package stewing beef • ¼ cup flour • 1 t. salt • ¼ t. pepper • ¼ cup cooking oil • 2 onions, quartered • 3 – 4 large carrots, chunked • 4 large potatoes, chunked • 3 – 4 parsnips, chunked • 2 beef oxo powder packs or cubes • 1 T. beef Bisto gravy mix.
• Coat meat with flour, salt and pepper and add to pan to brown. • Add onions, and cook covered until tender. • Add carrots, potatoes, and parsnips along with oxo. • Cook covered until vegetables are tender. • Add Bisto and cook 7 – 8 minutes until thickened.
Sour Cream Coffee Cake Ingredients
Directions
Cake • ½ cup butter • 1 cup sugar • 2 eggs • 1 t. vanilla • 2 cups flour • 1 t. baking powder • 1 t. baking soda • 1 ¾ cups sour cream
Cake • In a mixing bowl blend on medium butter and sugar until creamy. • Add in vanilla and eggs. • Add sour cream. • In a separate bowl, combine all dry ingredients. • Add dry ingredients to the mixer 1 cup at a time, and blend until well mixed.
Crumble • ¼ cup brown sugar • 1 ½ t. cinnamon • ¼ cup of chopped nuts (optional)
Crumble • Mix all ingredients together. Baking • Pour ½ of the batter into 9” square or a small bunt pan. • Sprinkle half of the mixture on top. • Cover with the remaining batter. • Sprinkle the remaining mixture on top. • Bake at 350F for 45 or until an inserted toothpick comes out clean. • Drizzle with icing and serve with warm tea.
Seven Minute Frosting Ingredients
Directions
• 1 cup sugar • ½ cup water • 3 egg whites • ½ tsp vanilla
• Cook sugar and water together on a low heat, until the sugar has dissolved. Then cook without stirring until the sugar forms a hair when dripped from a dipped spoon. • Remove from stove and let cool. • Beat egg whites on high until stiff peaks form. • Add cooled sugar mixture the egg whites is a smooth stream while continuing to beat. • Add vanilla and continue mixing until the icing is thick enough to spread on a cake. Note: Good Luck!
Pumpkin Muffins Ingredients
Directions
• 4 eggs • 2 cups sugar • 1 ½ cups cooking oil • 1, 14 oz. canned pumpkin • 1 cup raisins • ½ t. salt • 1 t. cinnamon • 2 t. Baking soda • 2 t. baking powder • 3 cups flour
• Beat egg with sugar until creamy. • Add oil, and pumpkin and continue to mix. • Add baking powder, baking soda, salt and cinnamon. • Add in flour in gradually until mixed. • Fold in raisins. • Fill muffin tins 2/3’s full and bake at 400F for 15 minutes or until cooked.
Peanut Butter Squares Ingredients
Directions
• 1 cup butter • 1 cup peanut butter • 2 cups icing sugar • 2 cups graham wafer crumbs • 1 cup chocolate chips • 2 t. shortening or coconut oil.
• Microwave butter and peanut butter on high for 2 minutes. • Add graham wafer crumbs and icing sugar, mix well. • Pat into a 9X12 pan. • Refrigerate until chilled. • Microwave chocolate chips and shortening on medium for 2 – 4 minutes until melted. • Spread chocolate on top of squares. • Chill until set, cut and serve.
Betty’s Amish Pumpkin Pie Ingredients
Directions
• 1 large can pumpkin puree • 3 cups sugar • 8 eggs separated & Whites beaten into stiff peaks • 3 T. corn starch • 1 ½ t. salt • ½ t. nutmeg • 1 heaping t. cinnamon • 3 T. butter • 3 ¾ cups milk (scolded)
• Scold milk in microwave until very hot, but do not boil. Add butter and let cool. • Beat egg whites to form stiff peaks. • Mix all ingredients together except milk and egg whites. • Add cooled milk and butter mixture and combine well. • Fold in egg whites, not over mixing. • Pour mixture into pie shells and bake at 400F for 15 minutes. • Turn heat down to 350F and continue baking for 30 minutes. Notes: Makes 3 large pies!
Cherry Delight (no bake) Ingredients
Directions
• 1 small box unsalted soda crackers • 1 large package instant vanilla pudding • ½ pint whipping cream • 1 can of cherry pie filling
• Prepare instant pudding as package instructs. • Whip the cream until thick and fold into the pudding. • Place one layer of crackers in a 9X12 baking dish. • Spread ½ of the pudding mixture over the crackers and cover with a second layer of crackers. • Spread the remaining ½ of the pudding mixture over the crackers. • Lightly spread the can of cherry pie filling over the top. • Cover with plastic wrap and refrigerate for 2 – 3 day prior to eating.
Cinnamon Rolls Ingredients
Directions
• 2 cups flour • 1 tsp. salt • 3 tsp. baking powder • ½ cup shortening • ½ cup milk
• Combine all dry ingredients in a bowl. • Cut in shortening until a crumbly dough is formed. • Add in milk and mix until it all holds together. • Roll out on a floured counter top. • Cover the dough with thin layer of butter. • Sprinkle with brown sugar mixture, and roll up. • Cut into 1 – 2 inch slices and fit snuggly into a baking dish. • Bake at 350 F for 35 – 40 minutes.
Filling • 1 cup brown sugar • 1 T. cinnamon • 4 T. butter

It has been one year since your passing, but there is not one day that you are not thought of with loving memories and bright smiles. You are with each us in all that we do, and even though you are no longer here, your life lessons, humour, and love for your family lives on through all of us. Today and always, we honour your memory by remaining a strong and connected family, showing kindness and forgiveness to others, and leading our lives by the extraordinary example you showed us while you were here on this earth.
