OMAR SHARIF AND THE FINAL DESTINATION Getting the chance to meet and speak in a one on one interview with the iconic figure Omar Sharif is as I consider one of my best achievements and interviews that I am proud of the most. Meeting a figure as popular as he is with his spontaneous yet sophisticated and deep attitude answering my questions makes me feel even more proud that I got the chance to meet someone from the golden age of Egypt. When I asked him why he hadn’t get married after his divorce from actress Faten Hamam, he was very clear that he had never fallen in love with anyone but her, she was the love of his life and he couldn’t be committed to any other woman! And when I asked him about religion being a Jewish, who converted to Islam yet, his son Tarek married a Jew, the iconic star had a very controversial yet, interesting reply stating that God will never torture a good being, Muslim, Jew,

Christian or non-religious as long as he is a good person then, God is merciful enough to have His own calculations that human beings can’t perceive. As when I asked him about how easy it was to mingle with Hollywood as an Arab he was very frank stating that he was lucky since he was born and that God granted him everything he wished for without even asking. When I asked him when was the last time he cried he said I didn’t cry since my mother’s death and I decided not to think about the future or the past, “I live at the present, enjoy it and celebrate it.” Since life is too short maybe we can get inspired by Mr. Omar’s theory who lived a celebrated life and a memorial funeral. May God rest his soul for as much happiness and pride he made us Egyptians feel through his film achievements and remarkable movies.

DIDDY UNDERGOES KNEE SURGERY

Diddy underwent knee surgery for an undisclosed injury. The rapper revealed the news on Instagram, writing, “#MOOD … Fresh outta knee surgery!!! Been putting it off for 2 years, this sh*t hurts like a motherf*cker!” Diddy went on, “Shoutout to my doctor, Dr.Ahluwalia, I hope you did a great job, LOL!!” The post was accompanied by a picture showing a medical worker pushing Diddy to his waiting car in a wheelchair. The music mogul is seen holding an open can and a pair of crutches. He also appears to be wearing pajamas. The surgery comes less than a month after Diddy fell on stage while performing at the BET Awards.

BOBBI KRISTINA BROWN, DAUGHTER OF WHITNEY HOUSTON, DIES AT THE AGE OF 22

Bobbi Kristina died on July 26, about 7 months after she was found face-down and unresponsive in a bathtub in the suburban Atlanta townhome she shared with Nick Gordon, the man she called her husband. “Bobbi Kristina Brown passed away surrounded by her family. She is finally at peace in the arms of God,” Kristen Foster, a representative for the Houston family said. She was hospitalized for months in Atlanta — eventually being placed in hospice care — after being found in a manner grimly similar to the way her megastar mother died three years earlier.

Hilary Swank revealed that she’s put her movie career on hold to take care of her ailing father, Stephen Swank. The two-time Academy Award winner gave a candid interview in which she shared that her father, a retired Air Force Chief Master Sergeant, has been living at her home with her since undergoing a lung transplant. The “Million Dollar Baby” actress described the experience as “an honour,” and said that she’s more than happy to give up Hollywood roles to act as her father’s sole caretaker.

Tom Cruise is not getting married to his assistant Emily Thomas, despite a tabloid cover story. Gossip Cop can exclusively correct this. We’re told it’s 100 percent “not true.” According to Star, Cruise is so in love with the 22-year-old brunette, who “bears an uncanny resemblance” to Katie Holmes, that he will “soon make her his fourth wife.” The tabloid says the two have “taken great pains to keep their relationship under wraps,” but the magazine’s socalled “sources” on the set of his film Mena couldn’t help but notice they’re “knowing glances” and talking “cozily” between scenes.

DISNEY DEVELOPING LIVE-ACTION ‘ALADDIN’ PREQUEL

Disney is developing “Genies,” a live-action comedy prequel to its 1992 animated hit “Aladdin.” Damian Shannon and Mark Swift are writing the script for the prequel, which will center on a genie trapped in Aladdin’s lamp. The original Aladdin story is in The Book of One Thousand and One Nights (“The Arabian Nights”), in which a sorcerer persuades the young Aladdin to retrieve a powerful oil lamp from a magic cave.

In the “Star Wars” universe, there are good guys and there are bad guys, and Benicio del Toro might be one of the latter. The Oscar winner is in talks to join “Star Wars: Episode VIII” as the movie’s main villain. He would join “Star Wars: The Force Awakens” stars Daisy Ridley, John Boyega, and Oscar Isaac, who are all expected to reprise their roles in the final film of the new trilogy. Adding a new big bad indicates that one or more of the villains from “Episode VII” don’t make it — Adam Driver’s Kylo Ren, Gwendolyn Christie’s Captain Phasma, or Domhnall Gleeson’s General Hux.

After a lengthy production hiatus, due to the death of star Paul Walker, Furious 7 continued filming with both Caleb and Cody Walker joining the cast to stand in for their brother’s scenes. Elaborate CGI was used by Peter Jackson’s WETA effects house to complete the process. The Universal film earned a staggering $1.52 billion dollars. USS Indianapolis: Men of Courage will be directed by Mario Van Peebles and also stars Tom Sizemore and Thomas Jane. The Patriot Pictures project is produced by Michael Mendelsohn and Richard Rionda Del Castro.

ANGELINA JOLIE TO DIRECT WAR DRAMA FOR NETFLIX Angelina Jolie is teaming up with Netflix to direct an adaptation of “First they Killed My Father: A Daughter of Cambodia Remembers. The online streaming service announced the news. The film will be based on Loung Ung’s memoir of her experiences during the Khmer Rouge regime as a child. It’s expected to be available on Netflix in late 2016. Jolie co-adapted the script with Ung, the director and herself say the memoir de-epened her understanding of how children experience war. It also helped reinforce her connection to Cambodia, where her son Maddox was born.

Explaining the secret behind naming her collection ‘Magnolia,’ Nada said it is the name of a rare flower that blooms only in May “we chose it because it’s the first collaboration between Zaam designs and I, which was in May.” Inspired by the Magnolia flower, Nada chose the floral prints and bohemian mood.

Psychopathy known as, though sometimes distinguished from, sociopathy, is traditionally defined as a personality disorder characterized by enduring antisocial behaviour, diminished empathy and remorse, and dis-inhibited or bold behaviour.

They will first shower you with undivided attention, praise flattery, and then suddenly, they become reclusive and uninterested, which consequently makes you feel desperate & needy, ensuring that you are always the one to initiate contact or physical intimacy, which is basically a way to withhold attention and undermine your self-esteem. They will make sure to fill your Facebook page with nice comments, posts, songs, and poems, they text you dozens, if not hundreds of times per day, and you will get used to it and rely on this over-communication as a source of confidence. They usually rush things and quickly declare you are the right one for them, and for some reason, you don’t find it creepy. They tell you how much you both have things in common and have common interests. They usually leave you do most of the talking on the first few dates.

They compare you to each and everyone in their life, exes, friends, and family members. They also make you feel special by telling you how much better you are than these people. But when you argue, they use these comparisons to hurt you, and make it sound completely the opposite.

They always have an excuse for everything, even things that don’t require excusing, and they make up lies faster than you can question them. They also tend to blame others, and make an effort to prove that it’s not their fault. They spend more time rationalizing their behaviour than improving it. They insult you with a condescending, joking sort of attitude, and smirk when you try to express yourself. They use teasing as a defensive tool and it even becomes the primary mode of communication in your relationship, and so, they subtly belittle your intelligence, even worse, if you try to tell them that they do so, they call you hypersensitive and crazy. They use social networking such as Facebook, Instagram and Twitter to provoke

jealousy while maintaining their cover of innocence. Suddenly, after focusing all their attention on you, they now post ambiguous videos and statuses making you doubt what you really mean to them. They also make new posts and ignore yours. They accuse you of emotions making it sound like it’s you, not them. They will flirt with their ex over social networking for the world to see, and call you jealous if you complain about it. They will call you needy after intentionally ignoring you for a couple of days. They focus on your mistakes and ignore their own, and if you try to point out their mistakes, they will always be quick to turn the conversation back on you. They will suddenly seem to be hypocrites, they first have extremely high expectations for fidelity, respect, and adoration. And after the idealization phase, they will cheat, lie, insult, and degrade. Still, you are expected to remain perfect.

For example, if you have a hard time accepting that such people really exist, you will have a hard time recognizing them when they enter your life. If you think that they are just misunderstood, deserve yet another chance, or merely need more love, you are playing right into their hand. If you don’t have experience in human nature, or believe that you are naïve because you are a nice person you will be magically protected from their influence, you also place yourself at heightened risk. It is important to realize that evil is opportunistic and does not discriminate. A psychopath can affect your life negatively and it becomes worse if his case is serious. You will become obsessive and will have mixed-feelings. You might also become defensive and emotionally unstable. Even worse, dealing with a violent psychopath can cause you much more trouble than that. Of all the things you can do to protect yourself from the psychopath, probably the greatest is learning to listen to your instincts. Many people who have had run-ins with the psychopath report having experienced intuitive warnings that they ignored, to their later regret.

SARAH SHAHIN Tell us more about you… I was born in Cairo on the 19th of June 1982. My parents chose to educate me at La Mere De Dieu French School at Garden City, where I hold very special memories with my childhood friends and teachers. At the age of 16, I moved to Hungary to complete my American Diploma, and then I studied Philosophy & Art at the AUC. My passion for traveling was a motive for me to continue my studies in Interior Design in Montreal & Florence, and I worked for 3 years until the revolution, which resulted in a sudden unintentional career change into acting. How were you nominated for your role in ‘Sukkar Mor?’ Early summer 2014, my phone rang & I was happily surprised to know that Script Writer Mohamed Abdel Moaty & Director Hani Khalifa were interested in meeting me to talk about a new film in preparation. We met to discuss the storyline, the nature of the character and the complexity of events revolving around new beginnings & constant change. I loved the idea of working with talented Hani Khalifa as well as the idea behind the film & the proposed role of Sherry Azzam. I kept on reading the script, which took a couple of hours, I actually couldn’t put the script down. With every page my imagination went flying as events, stories & characters changed with almost every page I turned. I called the same night and accepted the role. Your performance proves that you are a promising star, how did you manage to focus on your acting skills with a background in modeling? Having experience in modeling helped in overcoming the fear of being in front of a camera, which allowed me to focus more on the acting. My ambition is to be convincing, truthful & relaxed during my performance which is easier said than done. Director Hani Khalifa is gifted with actors in the sense that his directing, guidance, and method help the actor perform in his/her best. It is an honour to have undergone this experience, which taught me a lot about the actor’s tools, how to manipulate them & the means to improve. Sherry is a very strong, determined and strong willed woman, how is she similar to Sarah Shahin’s personality? Sherry & Sarah are similar in their independence & career beginnings in fashion; however, I’ve connected with the character from a feminine point of view through the moments of love & hate that any person is subject to when he/she is in love. Her search for love & inevitable heartbreak, how she picks up the pieces and moves on inspired me to wish that on several moments in real life, to have had her courage to change and trust that tomorrow always holds new beginnings. Change is the only constant thing in life. In your opinion, what is the biggest challenge relationships witness in Egypt these days? Pressure to do everything according to what is expected within society could lead some people to choose their partner for the wrong reasons. There is no one formula to follow

for love to succeed. Watching ‘Sukkar Mor’ made me realize, from the sample of society presented on screen, that partners are sometimes unintentionally force their will and personal beliefs and expect their partner to accept situations against their will. What are the biggest flaws in Eastern men’s personality? Middle Eastern men are hot blooded, passionate, possessive, loving and jealous, but these are very general traits & feelings that are common to most men regardless of their origin. I would go as far as saying women are very similar, all human beings in love long for that extra attention or care from their partner. Sometimes our ego & fears overshadow the love we once had; or simply we fall out of love to find that we are incompatible. The most important thing for both men & women alike is to be truthful for each other, not let jealousy & fear bring out the worst and allow each other to be themselves. If a man or a woman have to hide their true nature around their lifetime partner then, something is deeply wrong. Not that we should separate due to differences, but at least talk & hear each other out, and respect the independence and sovereignty of our partner. What is the one thing that would lead a wife to divorce her husband (Kholaa)? Reasons behind divorce differ according to each person and the nature of the problem between the couple. Humiliation, verbal or physical abuse, or breaking the boundaries of respect & love are bound to destroy. A woman would resort to ‘kholaa’ primarily because her spouse refuses to divorce her. The only solution then is to use her legal & constitutional right to divorce. From ‘El Hafla’ to ‘Sukkar Mor,’ how do you feel Sarah Shahin’s acting skills have developed? ‘El Hafla’ was my first acting experience and ‘Sukkar Mor’ is currently in cinemas. As an Actor, I would like to think that my performance has evolved & improved, but that is up to the audience to decide. Director Hani Khalifa gave me a book to read in order to inspire and be prepared for the role. We met several times to rehearse scenes and understand the objective as well as the energy that the character needs to convey in each scene. The incredibly talented actors that star in the film made acting on set very diverse, interesting and fun. I hope that our efforts to convey the story of ‘Sukkar Mor’ find the hearts of our audience. Genuinely, I hope that you enjoy the film experience just as much as it was enjoyed on set. You look stunning, how do you stay fit? Fashion and modeling are in the background of Sherry Azzam, which made it necessary to work on my physic, take care of my diet & workout. For 9 months, I’ve cut dairy and chocolates out of my daily routine, which lead to a massive celebration of chocolates, cream & cheese once we finished shooting. What are your coming acting projects? Currently, I am reading several film scripts and will announce once the project is made public and ready for exposure.

How were you nominated for the role? And how did you prepare for it? It was through the writer of the movie Mohamed Abdel Moaty. He offered me the role, which I fell in love with, I told him that it is a great story, but it depends on the director, he told me that it will be directed by Hany Khalifa, which was a motive for me to do the role as he directed ‘Sahar El Layaly,’ which made a huge success, and having ‘Sukkar Mor’ as his big comeback after 12 years, I knew it was going to be a great movie. Ali is full of internal conflicts, how were you able to depict that on camera? I prepared for the role through a lot of meetings with Hany Khalifa discussing the details and the background of his personality to come out the way you saw it. What attracted you the most to play the role? The story was brilliantly written and the fact that it was directed by Hany Khalifa. Also, Ali’s character is totally different from anything I’ve ever played before, which attracted me to do the role, he is selfish, opportunist and womanizer. Weren’t you afraid of breaking the hearts of your fans? Not at all, the viewers now can separate between the actor’s personality and the character he plays. N addition, I don’t want to be seen as the romantic good guy in all the roles I do, I had to take this step one day and ‘Sukkar Mor’ was the best chance to do so. What is common between Ali and Karim Fahmy’s personality? Nothing at all, unlike all my other roles, I am the exact opposite of Ali. How was the atmosphere behind the scenes? Most of the movies stars are my friends from previous movies. Yet, Haytham Ahmed Zaki & I were afraid to do the roles as our characters in the movie are the wicked ones, but the more we are hated, the more we become convincing to play the character. In your opinion, what would make a man cheat on his wife or think of searching for another wife? I don’t believe that there is any reason on earth that would make a man cheat on his wife, it is not an option. Nothing justifies this at all, if he hates his wife that much, they can get divorced, but not cheat on her. As for marrying a second wife, it depends on what they agreed on together as a couple; however, I personally would never ever think about it. How did you and your wife meet? And what is the biggest challenge in your relationship? My wife is the one I consult for my roles although she is not in the field at all, but she we think alike and she knows well what suits me and what doesn’t. As for the challenge, it’s because I reject most of the roles that come to me, she understands that I won’t act in a movie or TV serial unless I am 100% convinced. She is very supportive when it comes to that and she never pushes me to accept a role I am not convinced with just

CHARLIZE THERON When you first talked to George Miller about Max Max: Fury Road, what drew you to the project and what resonated with you about your character, Furiosa? Well, the whole thing was pretty secret. There was a script, but it was really just a long storyboard. George and I had several conversations, and he communicated what he wanted to do with Furiosa, I think, later on not necessarily even in this movie. So there was a lot of backstory that he introduced me to, and a real intrigue in what he wanted to do with the film, which felt really honest. Every time you make a film with somebody, there is this moment where you have to kind of just jump off the cliff with them. But, in this case, I feel like we were blindfolded, because there was very little to go by, except for George as a filmmaker, which is, I think, why we all signed up. So, for me, what happened with Furiosa was that there was a grain that was really thought out, but the scenes were continuously developing over the years as this project came together. And I think it all happened for a reason, because, at the end of the day, we ended up with a character that I felt was very unique, and somewhat brutally honest. It was interesting for me to play in this world, in a genre where a character’s flaws are celebrated. Once you’d wrapped your mind around this character, did you feel an ownership of her, and did George welcome your collaboration? Yeah. I think I had ownership because George allowed me to have ownership, you know? As an actor, you can’t just kind of take it. I think it’s really up to the filmmaker to invite you into that, and George is absolutely fantastic and encouraging of collaboration. I think he really wanted that for all of us. For me as an actor, that’s always very important. He just loves actors, and really loves the process. I mean, we spent a lot of time sitting down one-on-one, or with the group, and just really talking. You can just see in his eyes when something kind of sparks an interest. He grabs a lot of it, and that’s really nice, to work with a director who values actors that way. Can you talk about who Furiosa is, where she starts out, and your thoughts on the journey she takes in the film? Well, when you watch the movie, you understand certain things about her, but the film is so sparse, and that’s the beauty of it because she really is an enigma. She starts the film in overdrive, helping or kidnapping

we’re not quite sure these brides of a dictator, Immortan Joe. She basically takes off in one of the trucks, and you don’t quite know whether these girls can trust her, or what she’s planning to do with them. You notice that she’s looking a lot like these Warboys chasing her, and that she’s got an arm missing, and has a mechanical arm. She looks like a boy, but she’s not. I think you can tell that there’s a look of desperate revenge on her face. And I loved all of that. Her journey starts off that way, and then, obviously, gets derailed when she runs into Max, and she all of a sudden is kind of captured by him. But then, he’s also captured by her. They’re somewhat stuck with each other on this journey to find hope a journey of hope in a place where there really is no hope. But she’s this kind of rogue survivor; that’s what she has always been. I think she’s lived a life filled with waiting for the perfect moment to grab her revenge. And I know, because of George telling me, that she was kidnapped to perform certain duties that she could not deliver on, and thus she was discarded in quite a terrible way. We don’t see any of that in the movie, but I think she carries a lot of that emotion with her of being stolen and then discarded and is just trying to find a way to rectify that for herself, emotionally. Some members of this generation are going to be meeting Mad Max for the first time in this film, as played by Tom Hardy. Can you talk about working with Tom and what you think he brings to this role? Yeah. I think that’s great because I remember that my parents were huge fans of the original, so I had an awareness of it through them. But there’s definitely a new generation of people who don’t even know what Mad Max is. And I think that’s the beauty of Fury Road. It’s a standalone movie, but it has elements that definitely connect to the movies from the ‘70s and ‘80s. There are nice little gems, if you know those films, but you don’t need to. And if you know those films, obviously what you know is what Mel Gibson brought to Mad Max. But I think George was incredibly smart in getting Tom to kind of reinvent this great character, this iconic character, because Tom just doesn’t play by the rules and I think you needed that in order to really create something new. It was pretty brave for him to step into shoes filled by an actor like Mel Gibson. I think it takes a really

ballsy, brave actor to not be scared to bring his own thing to it, and yet, at the same time, be respectful of the character that George created with Mel back then, and hang onto the emotional drive that I think is very similar. But he really created something that is, I think, very, very deserving of a new Mad Max film. I wanted to ask you about your experience shooting the film out on the deserts of Namibia, and driving the War Rig in pretty much nonstop action. What was that like for you? Physically and logistically, it was the hardest film that I’ve definitely ever made. I think you can bear anything for four months, which is normal for a movie. And we shot, I want to say, six months, seven months? Most of the movie was shot in Namibia. We were really in the middle of nowhere. I think the process of making this movie, too, was very unusual. I don’t think any of us, as actors, has ever experienced a process like this not really having a script, not necessarily having scene numbers. The demand was to kind of show up and just be in this movie, not necessarily be in the scene you’re shooting that day. We were really living in this world the entire time that we were shooting, for 130 days. So, it was exhausting at times. For everything that we lacked in dialogue, we definitely made up for in physical contact, brute force, and just being in the desert. There was a physical aspect to this character I had to keep up upper body strength and a physical look that was hard because it not necessarily easy for my female body to maintain. We were meant to shoot this movie three years earlier, and that was like the perfect time in my life, when I wanted to kind of set off and just live in a tent in the middle of a desert by myself. But then, by the time we actually made the movie, my life was quite a bit changed. I had just become a new mom, and I had different responsibilities. So, mentally, it was a little tricky for me to get my head around it. But, for me, I think all that really helped the movie. Being on that road and the fear we all felt as actors the not necessarily knowing what was demanded from us every single day helped us create these characters. I mean, everything about this movie is determined by fear. All of these people are driven by fear and not knowing. And I found my own life to be that while I was shooting it. That was definitely a strange correlation, and one that I am glad was over after eight months, to be quite honest. Because it was really tough.

But through all the firsts and the lasts, through the past and the memories, through the conflicts and the enemies, and with their friends and families, they both seem to find love. But is it enough?

In a press conference in May, James announced the release of the prequel ‘Grey’ as told by Christian himself on his birthday, June 18th. We finally get to find out what really goes on in that fictional head of his. Exciting?! We definitely think so. In ‘Grey,’ we get to experience the first book again, only now from Christian’s perspective, and read all his exotic and definitely not-soinnocent thoughts about Ana. And if you think Christian was controlling and obsessive before, wait till you read what goes on


his mind now. There’s a fine line between wanting to swoon and wanting to just barf, and the readers don’t know which way to head. Whether good or bad the series sparked a lot of reactions from the readers. Even though the books are best-sellers, people also think that they give a wrong impression of the real BDSM lifestyle and the Dominant/Submissive relationships. It’s also clear that the plot of the

series is entirely unrealistic. Still the release of the first movie starring Dakota Jonson as Ana and Jamie Dornan as Mr. Grey was in fact a major success in the box-office even if it was a major disappointment for the viewers. The second movie ‘Fifty Shades Darker’ is scheduled to premiere in February 2017 and we hope it won’t be as bad.

There is something about his plates that makes you want to try them again and again; they are extra-ordinary. Reem El Shennawi speaks to Chef and Chef’s Market Restaurant Owner Wesam Masoud about himself, his career and much more…

Tell us more about yourself.. In a nutshell, I am the third son of five boys. My parents are both Egyptian, and I was born in Michigan in 1980 in the dead of winter, that’s probably why I like winters more than summers. We then moved to Saudi Arabia when I was 4 years old where I went to an international school. In 1996, I came back to Egypt for university, I went to Medical

School, Ein Shams University, and graduated in 2002. After that, I did the medical research for a while and decided to become a chef at the age of 30. Why did you choose this path? I have always enjoyed food not just in terms of cooking, but the conceptualization, meaning how people come up with these plates of food ever since I was a kid. I have

written a guide book to the restaurants to Al Khobar in Saudi Arabia when I was 11 years old. Teachers used to pull me out of my class to ask me which restaurant to go to. My mom was a fantastic cook, she had to be cooking for 6 men in the house. My dad always asked me to give mom a hand in the kitchen whether to wash up the dishes or help her prepare the food. One of the first recipes


that I tried was barbeque sauce because I would never get enough of it. Going through my mom’s recipes gives me an insight as to recipe proportions and substitute to things that are not available. Was writing restaurant reviews a hobby or a job? I was free-lancing at the time so, I used to write restaurant reviews on the side when I was doing my medical studies. I wanted to be a writer so, I decided in order to be a better writer, I have to know how to cook it professionally. Initially, the idea was to do an internship in a restaurant for a few months and then go back and write. When I started cooking I thought this is what I want to do, either way I wanted to open a restaurant anyways so, I thought I’ll keep on doing this. Do you still write reviews? Not as often as I’d like, I write recipes but not articles anymore. Were your parents for or against your decision? My father passed away before I graduated university, but I’d like to think that he would have been supportive of the idea. My mom was supportive of the idea as long as I wouldn’t completely dedicate myself into this. But, I thought nothing ventured, nothing gained I have to be completely into this, and I decided I’ll do this full time, which was 6 days a week, 18 hours a day, very few vacations and always smelling garlic, but it was the best time in my life and still is. How did you get started? I was going to go to culinary school in the United States and I was told to meet a friend of a friend who had a restaurant in Maadi called the ‘Cellardoor’ who went to culinary school for career advice. So, I sat with him for about 3-4 hours and he ordered everything off the menu and he was testing me the whole time asking me ‘How is this made?’ ‘What’s the problem here?’ and ‘What’s the mistake here?’ And at the end, he hugged me and told me ‘You’ll start tomorrow, you’ll be my Sous Chef,’ I was actually very lucky. I didn’t do anything on the first week, I just watched the way they cooked and took mental notes then, after a week I started running the service and dealing with customers. He then traveled to the United States and came back 3 months later. After that, I was hired to be the Executive Chef of the Cairo Jazz Club to push their food forward.

I left after the Revolution to do some food consultancy for about a year, and then I worked as an Executive Chef for food concepts in Zamalek. Then, I started working on my restaurant, which took a year for preparation before we opened. And how did you join CBC Sofra? They called me one random day at 11:30 pm in April 2013 before the channel launched, and I went in for a meeting then did a camera test, and I remember that I didn’t shave my beard nor did I cut my hair, and I wore my favourite black polo shirt and just cooked. They took me and told me not to change my look or to never watch my own show. And I like the fact that I haven’t changed since the very first episode, maybe I got a little bit more fluent in Arabic that’s all. The idea is that I am trying to explain to people why and how we cook. What’s your favourite programme on CBC Sofra? There is a number because I am a personal friend with the hosts and they also taught me. Sally Fouad’s programme ‘Helw We Hade’,’ ‘Amira Fil Matbakh,’ and ‘Hakawy El Mashawy.’ How do you describe your style of cooking? I like flavours and there are certain things that I like to cook with, my style is based on science actually meaning, I cook things on a scientific background including, temperatures and flavour pairings. Another approach is the history or the story behind a dish that tells why things were done the way they are and I add the modern touch to it. What’s your favourite cuisine? French cuisine but, I have recently been focusing on the Japanese cuisine because it’s as rich in technique as the French. What are the most important things to keep your restaurant business up and running? Definitely consistency, it’s the toughest thing to do and is a daily battle. The same plate of food that you serve at 2 pm on Sunday when it’s kind of quite should be the exact same as it is at 2 pm on Friday when it is really busy. The

only way to do that is proper training, and that’s one reason I spend a lot of time with the chefs here and do dished together that we will not make it to the menu, we try different techniques and teach ourselves new things. And of course passion, you have to love what you are doing. Describe Chef’s Market in 3 words.. Mediterranean, heritage and artistry. What’s your signature dish? Definitely the beef asparagus, which is heavy and filling, and the lemon butter chicken, which is light and filling. The paella dish is very popular here as well, very few people if anybody did paella in Egypt before we did it, we are very proud of this dish. How do you see the job market now? And how do you see it in 5 years? For restaurants, a lot of people are beginning to understand that restaurants don’t sell branding or colour plates, it sells food and an experience. I think in 4 years, people’s taste to food will change more than today, and I am really looking forward to it. As for chefs, because of that trend, the demand on their training is going to increase so you are going to find that it’s not a job for those who have no jobs, but it’s a skill. Also, the culinary schools will focus more on it and we are going to even find the caliber of chefs improve from an educational basis. Are you going to let your wife do the cooking? Absolutely yes. Sometimes I like to shut off my brain, it’s going to be very hard for me not to help her in the kitchen though. I wouldn’t let her design the kitchen certainly. I hope I can marry someone who can compete with me in terms of food so, she’d help me turn off the radar for a while, and be happy to eat my wife’s food and be jealous if anybody else eats her food. However, if she doesn’t know how to cook, I’ll teach her, which depends on her tolerance on that because when I am in the teaching mode, it’s not cool for the students, I get very annoyed very quickly. Do you ever get bored from cooking? I get bored from everything I do in my life other than cooking. What’s your advice to anyone who wants to become a chef? Learn technique, professionalism, and what it means to be a chef in the kitchen. You are going to get there if you dedicate yourself to it and work hard. What are your future plans? I’d like to have another small boutique restaurant about 12 seats, and people would eat what I give them, no substitutions and no additions on the menu. And if I want to stop serving after 12 people, I close down. Thinking about it like an art gallery, which might be opened for a month, and then next year I’d think of the next one. If I can open this restaurant, I’d die happy.
