If you’re into the outdoors — particularly watery pursuits — it’s a simple fact that few cities in the United States offer as much as Charleston. We may not have many hills, but if you have access to a paddleboard, kayak, sailboat or powerboat, you have basically doubled or even tripled the size of the city you inhabit — and infinitely expanded your opportunities to get out into nature. Thanks to the relentless work of organizations like The Lowcountry Land Trust, The Nature Conservancy, Ducks Unlimited and the Coastal Conservation League, no city along the East Coast can boast more nearby protected islands, forests and beaches. If you’re willing to head a few miles out of town, you’ll find an endless array of places to hike, bike (even mountain bike), hunt and fish. Just bring some bug spray. aven Saunders had played the bass drum for two years in the Burke High School Marching Band when its director Linard McCloud kicked her off the band. He stressed that she should instead spend more time with the school’s track and field team. “A lot of kids at Burke had many different talents, but track and field just proved to be the one for me,” Saunders said with a laugh. “A lot of people noticed that about me and tried to push me to be the best I could be.” As a rising junior in 2012, Saunders spent more time honing her track-andfield skills. It paid off. She won the silver
medal in the women’s discus throw at the 2020 Tokyo Summer Olympics. In the meantime, McCloud claims a piece of Saunders’ silver medal as his own. She even let him hang the medal around his neck. Saunders is eyeing the 2022 World Athletics Championships this summer in Oregon and the 2024 Paris Summer Olympics. She’s a Charleston hero who’s also admired by City Paper readers. She said the Best of Charleston honor is special. “When I [compete] I try to do the best for Charleston to bring awareness to the City of Charleston.” —Herb Frazier

ack in 2017, a deep Charleston freeze hammered the Lowcountry’s inshore fish populations. With speckled trout numbers in particular decline, RedFin Charters owner Joel Levine needed to not only save the livelihood of his catch-and-release based operation, but a crucial finned component of our local ecosystem. Levine and colleagues including Z-man Fishing president Daniel Nussbaum, the Coastal Conservation Association and Friends of the Lowcountry developed a way to route funds from a popular “per-fish-caught” donation program among RedFin customers into the rehabilitation of 5,000-gallon unused hatchery tanks at the Bluffton Mariculture Center. These tanks are used by the Department of Natural Resources to raise tiny fish until they’re big enough to be released into area waterways. “They had the ability to do 600,000 trout and 1.2 million redfish,” Levine said. “The new tanks

basically doubled that capacity.” Since that time: “We’ve noticed a large difference and comeback with the trout,” Levine said. “We’re catching some of the largest trout we’ve ever caught in the Charleston waters this year.” More recently, Levine launched a new initiative with The South Carolina Aquarium that teaches not only sustainable fishing practices but practical skills like throwing a cast net or casting a fly rod. Anyone under 12 fishing with RedFin will also have the opportunity to tag that fish and release it. After they send that tag information to the DNR, they are notified if the fish is caught again, its measurements and whether it was kept or released. “Sometimes, you tag a fish and you’ll get notified three or four times that the same fish has been caught and released,” said Levine. “Just from that endeavor — it teaches kids so much about sustainability and the importance of releasing the fish.” —Chris Dixon

or the last 30 years, Chris Crolley has been leading kayakers on excursions from Shem Creek to Bull Island to the deep reaches of the PeeDee and Congaree Rivers. After taking literally thousands of people on watery adventures, you would be correct to assume that he has made a great many friends and connections. Over the last few years, he’s managed to translate that network and love of the Lowcountry into a new venture called the Coastal Expeditions Foundation. Through this nonprofit, he’s worked directly with the U.S. Fish and Wildlife Service creating turtle conservation projects along Cape Romain and with the South Carolina Department of Natural Resources rebuilding the vital bird sanctuary sandbars along Crab Bank. He’s also launched a Boeing-sponsored initiative teaching resilience through kayaking to disabled and wounded veterans. “The foundation — it serves wild animals like sea turtles, wild places like Crab Bank and wild people like veterans,” he said. “It’s just such a natural flow too. It’s the maturation of what we’ve been doing all along. I mean you, you and me and our kids are blessed man. Because we got some kind of undeniable call to be involved with water. It’s so strong that we can’t ignore it. A lot of people have this sort of vestigial itch. And they just don’t know what it is. Well, it’s that same call. You bring them outside and they’re reintroduced to their birthright — to something real. All of a sudden, they’re amidst something that takes their breath away.” —Chris Dixon

The Post House kitchen was renovated by Basic Projects founders Ben and Kate Towill. It was first run by Evan Gadreau, then Nathan Hood and now Nick Wilber. “I’ve known Ben and Kate for a long time,” Wilber said. “These things are a testament to them. hico Feo was opened almost eight years ago on Second Street and East Ashley Avenue by Hank Weed. And in the near-decade he’s been in that spot, the Folly Beach community continues to surprise him. “It’s changed so much,” he said. “But the community is still amazing. It’s one of few places left that has a community, especially off-season. Everyone knows each other’s name and passes around the same $20 bill, and then in the summer, everyone just helps each other out; It’s a community that looks out for everybody.” The community showed its love for Chico Feo this year by voting it Best Folly Beach Bar and Best Folly Beach Happy Hour. Weed joked that thanks to no TVs in the outside bar, “our bartenders are forced into interactions with clientele.” Doing away with TVs allows the staff to show off their personable and unique personalities, a standout quality he believes is the reason they’ve maintained such a good reputation as a beach bar. “And we have an amazing set of regulars,” he added. “You know who you are.” —Michael Pham

armella’s Cafe and Dessert Bar owner Brian Solari opened the Italianinspired cafe in 2014 with the intention of bringing a little piece of Europe to Charleston. “Charleston has such an amazing European feel to it. It’s a very old-looking, beautiful city, and I just thought that bringing some of that European flair would definitely fit well,” Solari said. Solari, who comes from an Italian family, learned to develop and fine tune his business with the help of other family members who have worked in the food and beverage industry. The cafe makes all its own gelato, desserts and breads in house. Though vanilla is the most popular gelato flavor, Solari likes to mix Carmella’s blackberry and limoncello varieties together. “Nothing goes into the case that isn’t A+,” he said. “I’ve had people from Italy who are in the business say that we have the best gelato they’ve had this side of Italy. And we really worked hard over the years to fine tune and perfect that gelato recipe.” Carmella’s is mainly known for its desserts and sweet treats, but the cafe also serves a variety of Italian-style ciabatta sandwiches and pizzas as well as cocktails, beer and wine. “We really do take pride in what we make, the ingredients we use and that all of our recipes are recipes that we’ve developed over time,” Solari said. “We’re very passionate about it.” —Samantha Connors

ink Bellies Vietnamese restaurant began as a food truck on the corner of Calhoun and St. Phillip streets at the College of Charleston in 2013. As owner Thai Phi scaled up his concept to the old Workshop food court stall on upper King Street and then found its permanent home back down lower King Street, he kept his humble beginning in mind. “When we think about who we are, we still think about us as a food truck,” Phi told City Paper. Pink Bellies’ garlic noodles encapsulate the restaurant’s bumpy journey when they were impeded by the COVID-related shutdown. “When we started the restaurant, we could not get the egg noodles that we were using for years,” he said. “All of our recipes are based on the texture and cook time — the way that noodle paired with the sauce.” Phi ended up creating a partnership to set up a distribution chain for that particular noodle. “Turning that negative into something positive, that is how everything has been for us during the pandemic.” For Phi, the minimalist yet detailed design of the newly opened space manifests the eclecticism he brings to his menu. “Our entire kitchen is pretty much exposed, so when our customers come in they can hear the cooks talking, they can hear the ticket runner going, for better or for worse. We share that side of cooking with our customers, which is a little bit different for Charleston.” —Chelsea Grinstead

aco Boy has steadily built a reputation as a favorite spot for tacos and margs since it opened in 2006 with growth and change in mind. “We are very intentional about keeping the brand relevant,” said founder Karalee Nielsen Fallert. “Restaurants are a living entity. If you’re not growing, you’re dying. So for us, besides opening new locations — which we’re doing soon — to stay relevant and to be vital is to be constantly trying to improve what we’re doing. We are always looking for better products, whether it’s a better tortilla or better salsas.” Yet the vision behind the place is connected to something much bigger. Fallert’s approach to the restaurant business focuses on enriching surrounding neighborhood communities through initiatives like the Green Heart Project launched in 2009. Today, Green Heart creates opportunities for food cultivation and nutrition education across 18 schools and around 5,500 K-12 students. For Fallert, it’s all connected. “If we create more restaurants, we are able to give other people more opportunities to become owners and create financial mobility for our team members and stability for those who need it. he unassuming Mexican cantina at the corner of Morrison and Meeting on the upper peninsula brings the perfect blend of traditional Mexican cuisine and Mexican-American dishes to the Holy City. Opening up in 2003, when little else was going on in that part of downtown, restaurateur Santiago Zavalza introduced the Lowcountry to his childhood food — dishes from the Mexican state of Jalisco. Zavalza’s menu is subtle in its authenticity and its genius. This is the only place in town we’ve found where you can order a plate of traditional Mexican streetor American-style tacos and both knock everyone else’s out of the park. The early days weren’t easy, though. Zavalza publicized his restaurant with flyers and meager advertising, fighting against near-constant theft — the restaurant was robbed 15 times in the first eight weeks of opening. But once the popularity started growing, some of those hurdles disappeared — especially when former Charleston Mayor Joe Riley became a regular. Now, the area is growing rapidly, with a looming housing development at the same corner dwarfing the small cantina. With Santi’s beginning to look smaller and smaller amid all the crazy growth, it seems they’ll eventually have to add a few stories — not only to seat all the pending hungry customers, but to compete for skyline space. —Skyler Baldwin

our House has been a pillar of the Charleston music scene for 20 years. The elegantly understated venue circulates incredible music acts seven days a week and bursts at the seams with vendors and activities at its Sunday Brunch Farmers Market. Needless to say, the bar can get pretty packed. To bar manager Tony Kowalski, the staff has created a solid dynamic that enables them to excel as a high volume bar — basically by getting along and hanging out as friends. “It’s a good mixture right now,” Kowalski said. “People who have been here since the beginning, people who have been here a long time and the next generation learning their way. We work really hard. There’s not a lot of glory in it. But I think we all do this for the love of music.” The stages at Pour House have fostered up-and-coming bands and been a home away from home for touring acts of all genres. “We do hip-hop every Monday, which cultivated this really good hip-hop scene I think Charleston needed. We have a lot of southern roots rock bands, a lot of country, Americana, electronic. It’s why we’re here.” —Chelsea Grinstead

eer, especially craft beer, isn’t for everyone. But Zach Kramer at Low Tide, who scored the title of Best Bartender this year, finds ways around that. “People are kind of intimidated by craft beer,” Kramer said. “It is definitely kind of trying to find that big picture thing, and then start breaking it down to what people like. I want to encourage them to be open minded.” It’s also a passion for craft beer and the culture surrounding it that gets Kramer excited to go to work every day. He explained when he sees tourists stop by Low Tide wearing a local brewery’s merchandise, he uses it as a way to learn about the brewery and what the customers’ tastes are, while also building a relationship with them. “The thing I like best about bartending is just getting to interact with people and meet all of Charleston and its tourists,” Kramer said. “We get a lot of people that come once a year, twice a year, so they always come back, and if I remember them, they’re all, ‘I can’t believe you remember me!’” — Michael Pham

It shows in their selection, as Oyediran, a self-professed music geek, describes choosing the retail shop’s wine like you might pick songs. “You know, when you curate a selection of wine, to me, it’s very much — and this might even seem cliche for me to say — but it seems very much like building a playlist,” said Oyediran, who also won this year’s Best Sommelier. “So to me, a really great wine selection of a store, or even a restaurant, is very well thought out in the same vein as a playlist, right? Everything kind of conveys perspective, it says something about your tastes, it’s your commentary on what you’ve learned, or what your reflections are on the world of wine.” When asked what he loves best about being a sommelier, he again cues the music: “Sharing the sensation you feel and someone else feels when you put them onto something exciting, whether it be music or wine, is always one of the best deals.” —Michael Pham

Holy Mackerel Infant Aquatics teaches survival swim skills
A
nna Faenza recognized Charleston was lacking an important service right after the birth of her first child in 2018 — an Infant Aquatics program. “I started looking for an instructor and was kind of surprised that there wasn’t one in Charleston because there’s so much water here,” she said. Faenza had recently sold her wine bar, Elliotborough Mini Bar, and wasn’t working at the time. After speaking with an Infant Aquatics instructor in Columbia, she decided to get certified. She took a six-week training program in 2019 before launching Holy Mackerel Infant Aquatics, which she runs from her at-home pool in West Ashley. “Drowning is the leading cause of death in children 1-4 years old, and we live in

an area that is completely surrounded by water,” she said. “I think it’s crucial that children learn these skills from a young age.” Faenza teaches survival swim skills to children 6 months to 6 years old. Children can take 10-minute self-rescue float classes four days a week for four weeks once they are at least 6 months of age and able to roll from belly to back. Swim-float-swim classes are 10 or 20 minutes, four days a week for three or six weeks depending on the child’s age and can begin once a child is walking. Her summer classes are full, but interested parents can request to be put on the waitlist for next season, which will begin February 2023.

VIRGO (Aug. 23-Sept. 22): Before Virgo-born Leslie Jones achieved fame as a comedian and actor, she worked day jobs at United Parcel Service and Roscoe’s House of Chicken and Waffles. Her shot at major appreciation didn’t arrive until the TV show Saturday Night Life hired her to be a regular cast member in 2014, when she was 47 years old. If you’ve been attuned to cosmic rhythms, you have been doing what Genet described and will continue to do it for at least another ten days. If you have not yet begun such work, please do so now. Your success during the rest of 2022 will thrive to the degree that you spend time dreaming big in the darkness now. SCORPIO (Oct. 23-Nov. 21): “Cursed are those who feel floods but who can only express a few drops.” So says an internet proverb. Luckily, this principle won’t apply to you in the coming weeks. I expect you will be inundated with cascades of deep feelings, but you will also be able to articulate those feelings. So you won’t be cursed at all. In fact, I suspect you will be blessed. AQUARIUS (Jan. 20-Feb. 18): “Stop insisting on clearing your head,” advised author Charles Bukowski. “Clear your f---ing heart instead.” That will be a superb meditation for you to experiment with in the coming weeks. Please understand that I hope you will also clear your head. That’s a worthy goal. But your prime aim should be to clear your heart. What would that mean? Purge all apologies and shame from your longings. Cleanse your tenderness of energy that’s inclined to withhold or resist. Free your receptivity to be innocent and curious. PISCES (Feb. 19-March 20): “The winner will be the one who knows how to pick the right fights,” wrote author Jane Ciabattari. Heed her advice, please, Pisces. You will soon be offered chances to deal with several interesting struggles that are worthy of your beautiful intelligence. At least one will technically be a “conflict,” but even that will also be a fruitful opportunity. If you hope to derive the greatest potential benefit, you must be selective about which ones you choose to engage. I recommend you give your focus to no more than two.
