Green Goes The World!

T

he movement towards ecology, conservation, recycling and reducing our carbon footprint is finally getting the worldwide recognition it deserves. The environmental sector is now one of the fastest growing industries globally. Multi-national corporations and industrial giants are now being made accountable for their serious impact on the environment. Government agencies are getting involved and the media is going to great lengths to publicize and recognize those companies who are making extra efforts to make a difference. The key to sustaining a healthy global environment obviously comes in the form of educating our young. It is after all their future and they should be informed from the earliest possible age why and how they can all reduce the impact that their future lives will have on the planet. What can we do on a personal level to reduce our own impact on the environment? That’s the easy part. Besides the obvious things we have been doing for years like recycling our drink containers and newspapers, the movement towards green requires a little thought and minimal effort. Become more of a green consumer by supporting green companies. Discern what products you buy and the impact they will have on the environment. Less packaging means less waste. Those companies who are making the extra effort to help the cause deserve our hard earned dollars. Know that every buying decision you make has an impact on the system. Whenever possible, eat exclusively organic produce. Organic produce in theory contains no chemicals or pesticides. We know this to be better for your health, and it is definitely better for the environment. All those chemicals get washed off of farmers’ fields into rivers and streams, where they pollute our water. In addition, many of the chemicals are made from petroleum and other nonrenewable resources. So, don’t eat chemicals, eat real food! Identify energy wasters. There probably are several companies in your community that are wasting precious resources. Does a used-car showroom leave its bright lights shining all night long? Do parents waiting to pick up their kids from school leave their cars idling at the curb for a long time? Wherever you see people being wasteful, say something! Educate your friends and family and ask them not to waste our Earth’s precious resources. Make yourself and the people around you accountable to the future of your environment. How sweet it isn’t

o matter how sweet it is, sugar spells trouble if you want to lose weight and improve your health. The average Canadian consumes 141 pounds, or 13,536 teaspoons, of added sugar per year. A recent study found that even children as young as two eat 14 teaspoons of sugar per day – more than three times the limit recommended by health authorities. What’s wrong with eating sugar if you keep your weight in check? Nothing, if it’s an occasional treat. You should know, however, that behind that sweet and innocent image lurks a highly addictive and destructive chemical. According to Nancy Appleton, Ph.D., author of the book, Lick the Sugar Habit, sugar can suppress your immune system and its defences against everything from bacterial infection to cancer. It can increase your blood pressure and risk for heart disease, cause hormonal imbalances, damage the pancreas, increase PMS symptoms, weaken eyesight, increase cholesterol levels and create an acidic digestive tract that leads to several illnesses. It upsets the balance of minerals in your body, interfering with absorption of calcium and magnesium and leading to chromium and copper deficiency. You know it can cause tooth decay and diabetes, but did you know it contributes to asthma, arthritis, Alzheimer’s disease and kidney stones? It can also change the structure of your DNA, lead to premature aging by free radical damage and make skin wrinkle by damaging collagen. And what about weight gain? All types of sugar have 16 calories per teaspoon, which can add up to several pounds a year. But in addition to that, your body changes sugar into at least twice as much fat in the bloodstream as it does starchy carbs (the other supposed no-no for dieters). Sugar is Mother Nature’s addictive substance that she put into fruits, vegetables and other plants to encourage man (and other animals) to eat the entire food —the food’s hundreds of combined ingredients provide the vitamins and minerals to sustain us. But food manufacturers took this one enticing chemical out of the plant, leaving the rest behind, and put it into refined non-foods to get us to eat more of them. All caloric sweeteners raise blood glucose and insulin levels, but a whole apple’s natural sugar has a very different effect on the body than processed sugar or even 100 percent apple juice. Along with vitamins and minerals, whole fruit and vegetables contain fibre, which slows sugar absorption and gives the body time to process the sugar without producing a spike in blood glucose. Did you know that sugar plantation workers who regularly chew sugar cane don’t get tooth decay? It’s because they’re eating the whole plant with its fibre and nutrients. Our society’s sugar addiction has been reinforced and intensified, with everything we eat calibrated to an artificially high level of sweetness that we’ve gotten used to. Why is sugar put in peanut butter, canned vegetables, prepared dinners, and even in salt? It’s not a required preservative. It’s used to get you to eat more, so you’ll buy more, and so food corporations’ profits increase. A small bottle of orange juice has 10.5 teaspoons (42 grams) of sugar. Many breakfast cereals have 50 percent sugar (as much per serving as a chocolate bar). In a bowl of canned tomato soup (approximately two cups), there are eight teaspoons of sugar; in 2/3 cup (180 ml) serving of fruit-flavoured yogurt there are seven teaspoons of sugar, and in two tablespoons of barbecue sauce, there are four teaspoons of sugar. Health authorities recommend no more than 10 teaspoons (40 grams) per day for adults. Millions of calorie-conscious consumers are turning in fear from sugar to eat sweet chemicals instead. If artificial sweeteners are better, why isn’t anyone getting thinner? Saccharin, aspartame and sucralose satisfy cravings, but a 2004 study published in the American Psychological Association’s Behavioral Neuroscience Journal links artificial sweeteners to obesity. Researchers at Purdue University found that consuming artificial sweeteners of any kind may cause weight gain and overeating. Rats fed a zero-calorie sweetener ate more and gained more weight than those that ate the same food containing sugar. Researchers said that artificial sweeteners may confuse the body’s natural attempt to keep track of calories based on the sweetness of the food being eaten (humans adapted to the fact that the sweeter the food, the greater the calories). Studies of saccharin and aspartame found evidence that they cause greater damage – everything from hyperactivity and migraines to cancer. You don’t have to completely nix your fix, but simply use better types in moderation. Try the nocalorie herb stevia, a safe, natural alternative found at health stores. Blackstrap molasses contains the iron, calcium, magnesium and potassium that have been stripped from sucrose. Raw, unpasteurized honey and pure amber maple syrup, which are sweeter than sugar, also retain trace nutrients.

Matrix Detox Therapy By Stefan Kuprowsky, ND

I

n VISTA’s March/April 2008 issue, I introduced the “the body matrix.” The concept of the matrix is a difficult one to grasp at first. The extracellular matrix includes all of the connective tissue and extracellular fluid that surrounds all the cells and organs of the body. It is the support structure for all of the cells and organs; the soil or terrain of the body. While Western medicine focuses on the cells and organs as the key determinants to health, Eastern medicine and modern bio-energetic medicine see health as coming from the surrounding terrain or area. Therefore, our cells, organs and tissues can only be as healthy as our matrix. Our problem is that the modern day matrix in humans is very toxic and polluted. The matrix can be thought of as a separate vital system of the body. It begins where the capillaries release oxygen and nutrients into the extracellular fluid and moves through the connective tissues to the edge of the cell membranes where the nutrients and oxygen are absorbed. At the same time, the cells release wastes which are transported through the matrix to the lymphatic system on its way back to the liver. At the same time, the matrix is connected to the hormonal endocrine system through its hormones, which are released into the blood of the capillaries. The matrix is also connected to the central nervous system through the peripheral nerves that end here. As well, the white blood cells of immune system hang out in the matrix, on-call to attack invaders and communicate back to the rest of the body through a network of information molecules. This network of hormones, nerves and info-molecules creates a sophisticated feedback system throughout the entire body and forms the basis for what we know to be the “mind-body connection.”

A chronically inflamed area of the matrix, called a focus, can become a chronic site of infection. Common areas for focuses to occur are the head and digestive system; these areas become inflamed and infected with bacteria, viruses or fungi and become chronic sources of stress.

If there are spaces in your intestinal parking lot left empty after it experiences the high toxin load of a cleanse, bad microbes (for example, salmonella) take over. Making a good choice

S

pring is a time of detoxing and inner cleansing. If you are considering a detox this spring, be sure to add probiotics (good bacteria) to your routine. There are three main steps to detoxing: 1) clean 2) capture 3) sweep. In step one, your body’s detoxing organs (for example, your skin, lymph, blood, liver and kidneys) work to clean out toxins hiding within your body. They send these toxins to your liver. In step two, the liver adds these toxins to bile and sends them into your intestines. Fibre in your intestines traps the toxins so you will not re-absorb them. Step three involves the colon. Sweeping or moving the toxin-filled fibre out of your body is very important. If left too long in your colon, the toxins can cause damage to the tissues. Cascara sagrada and magnesium hydroxide are two supplements commonly used to help sweep out waste from the colon. This sweeping is the step in which probiotics fit into cleansing. How? Certain species of beneficial bacteria help sweep out the colon and can be used to promote colon health during a cleanse. However, your colon is not the only part of your intestines affected by a cleanse. The increased amount of toxins in your intestines during a cleanse can cause damage to your probiotic populations. Therefore, it may also be beneficial to replenish your probiotic populations after a cleanse.

Replenish your probiotics

Rapidly replenishing the intestinal tract with probiotics after a cleanse can help ensure the intestines do not become a host to infections. Your

When selecting the probiotic to add in your cleansing programme, choose one that includes both lactobacilli and bifidobacteria species. These probiotics live in your small and large intestine respectively. Using this type of probiotic product will help ensure that your entire intestinal tract is replenished, not just one part. Look for a product that contains a variety of probiotic species. Your intestinal tract contains over 40 different species of probiotics, so using a product with many species is beneficial because it mimics your natural, healthy probiotic environment. Make bifidobacteria your friend

The health of your colon is important. The colon is not just a holding tank for waste; it is also the site of vitamin synthesis (usage by the body). Bifidobacteria also help convert vitamin K in foods to vitamin K2, the form your bones need to stay strong and healthy, as well as play a role in boosting your immunity. Bifidobacteria help to detox, too! When your colon contains bifidobacteria, it has lower amounts of putrefactive substances (harmful toxins caused by “putrefying” or rotting food). This means that your colon tissue is less likely to be damaged. Cancer: Support Your Body’s Healing By Joe Goodwill The media constantly bombards us with conflicting reports; one day something will help prevent cancer, and the next day it will give you osteoporosis. How can you decide which therapies are the best to support your health, particularly if you are at risk for or already have cancer? For those dealing with cancer, integrated (combining medical and complementary) therapies offer your best defence. These include specific vitamin, mineral and antioxidant supplements which draw on the latest scientific research to provide much needed nutritional support. This places a cancer patient under extreme physical and emotional stress. You therefore need optimal nutritional support, both to withstand the treatments and to be able to heal

your body. Treatments often impact the ability to eat, by affecting appetite and taste, or inducing nausea. Thus, it is often an especially difficult time for you to get adequate nutrition by eating a healthy diet. A multivitamin that provides optimum nutrients to alleviate stress, and to support your diet when your appetite is impaired, should include the following: vitamin B complex – meaning vitamins B1, B2, B5, B6, B12, niacinamide and folic acid, vitamin A, and minerals including calcium, magnesium and zinc to support the body’s metabolic and healing systems. It should include vitamin D because clinical studies have revealed that high blood levels of vitamin D are associated with significant reductions in certain types of cancer. When calcium and vitamin D are combined in a supplement it may help to reduce cancer risk in postmenopausal women, according to some research. Proper dosage is the key. Vitamin A, for example, is an important antioxidant addition, however higher levels of vitamin A may increase the risk of osteoporosis, and some cancer treatments, such as chemotherapy, put patients at risk for osteoporosis. Natural Allergy Remedies By Brian Craig

A

t long last the final grip of winter seems to have relaxed and the anticipation of a glorious summer beckons. While this is an exciting time for most, there are an increasing number of people to whom this time is one of dread rather than anticipation. Instead of heralding a time of seasonal pleasures, it seems like all of the flowers, trees and shrubs are conspiring to attack with pollen, and all that awaits them are sneezing, itchy eyes and runny noses. Modern science has come up with some interesting approaches to solve these problems. We have all seen the barrage of ads that seem to pop up like spring flowers – ads promising “clearer” days, fewer side effects and non-drowsy relief. The problem is that despite all of the promises, most of the medicines used to treat allergies and sinusitis will have some form of side effect, even if it is just an increased need for the medications. The reason for this is that these medicines treat the symptoms of the allergies by suppressing the body’s natural reactions and defences. They don’t address the root cause. For real relief, a holistic approach is necessary. When our bodies are exposed to pollen or other allergens, our immune systems release histamine to swell tissues and block the entry points for these allergens. Furthermore, the body increases the amount of mucous produced to help wash away any of the allergens that may be attached to the nasal passages. These are natural defences that are designed to keep the allergens, bacteria and pollutants out of the system. Since most allergy medications contain antihistamines or steroids, they block these natural reactions and can even dry out the protective mucous membranes that line the nasal passageways. While this may give some temporary relief, in the long-run the body will sense the need to produce even more histamine, setting-up a “rebound” response which will require additional medication. And once the mucous membranes are thinned out, more allergens and pollutants will actually be able to by-pass this barrier and start a vicious cycle with increased allergic reactions. Since the natural immune response is compromised, often allergy suffers become more susceptible to bacterial infections which can lead to additional suffering as these develop into sinusitis and ear infections, especially in children.

But how do we break the cycle and still be able to function without the runny nose, sneezing and itchy eyes? There are some time-proven alternatives to the modern drug approach. One simple but amazingly safe and effective method has been that of “nose washing.” While this may sound foreign and bizarre, it actually has a sound medical basis. Just as washing one’s hands effectively reduces the introduction of bacteria and pollutants into the system, washing or rinsing out the nasal passages can dramatically reduce the total amount of allergens present in the system that can cause the allergic reaction. This “washing” is most often done with purified water or a saline solution. Recently, Dr. Oz (on Oprah) discussed using a “neti pot” – a device invented centuries ago in India for rinsing out the sinuses. The procedure involves preparing a mild saline solution at body temperature that is poured into one nostril and allow to flow out of the other nostril. This helps to rinse away pollen and built-up mucous and can reduce congestion. People who regularly make use of this practise notice fewer allergic reactions and less development of sinusitis. While the neti pot procedure may take a little time to effectively irrigate the sinuses and properly clean them, many ears, nose and throat specialists (ENTs) encourage the usage of saline nasal sprays to cleanse and hydrate the nasal passages. This can be accomplished with just an “over-the-counter” saline spray that is sprayed up the nostrils while breathing in to pull the solution up into the sinuses. While this may seem almost too simple, it has been proven to have great effectiveness. Recently the US Food and Drug Administration urged pediatricians to recommend to parents that they should use saline nasal sprays and drops to treat nasal congestion and upper respiratory problems in their children rather than using medications. Numerous clinical studies have shown the saline nasal spray method to have clear advantages over other treatment options. Building on the simple but effective saline spray, Dr. Alonzo Jones, a family-practice osteopathic doctor had been reading about the therapeutic benefits of xylitol – a natural five-carbon sugar. In his research into preventing inner-ear infections in his own granddaughter, he was impressed by a number of studies conducted

in Scandinavia that focused on xylitol’s positive effects on oral and dental health. Some of these studies indicated that xylitol interfered with the ability of bacteria to adhere to the tissues in the mouth and in the upper respiratory tract. Dr. Jones added xylitol to a saline spray and was able to dramatically reduce the incidence of ear infections in his younger patients. Convinced with these results, he also began offering the saline and xylitol mixture to his adult patients that were suffering from allergies and sinusitis. Just as with his younger patients, these adults noticed a dramatic reduction in their symptoms. Further clinical studies showed that while the saline solution helped to wash away the allergens and other irritants, the xylitol actually helped reduce the ability of bacteria to adhere to the tissues and simultaneously helped to hydrate the mucous membranes. This increased the ability of these tissues to block the entry of allergens into the system and resulted in fewer allergic reactions and a lessening of sinusitis episodes. Additional research into the benefits of xylitol has shown that it encourages the normal action of the cilia (or hairs) in the upper-respiratory tract to help remove allergens and irritants out of the system. On-going research is also investigating the ability of xylitol to help moderate asthmatic reactions. Keeping the nasal passageways clean reduces the stress on the immune system and effectively eliminates the need for the body to release massive amounts of histamine which can lead to congestion, runny nose and watery eyes. This is clearly a much more logical approach to handling allergies. Rebuilding and rebalancing the body’s own defence systems by using a saline spray with xylitol or by following a timeproven method of rinsing the nasal passageways has clear advantages over suppressing the system and struggling through the associated side-effects from drug treatments. By using the seemingly simple, yet effective methods, we can come to enjoy rather than dread the high pollen seasons of spring and summer. Rethinking the Way We Feed Kids By Carol Crenna

A

t some point between being nursed on mother’s milk and lining up at the school cafeteria, something has gone very wrong. Could it be that bad eating habits begin right from when our kids are strapped into a highchair? Research shows that by age two, children have developed food preferences that will follow them for life. That’s not good, since a Time Magazine article reporting on a 2002 survey cited that one in five babies age two or younger is eating sweets every day, and the vegetable they eat most isn’t pureed peas or carrots – its French fries. During their first year of life, babies self-regulate how much they eat; if they aren’t hungry they refuse more food, no matter how much you try to get them to eat. But in the second year, babies begin responding less to hunger pangs and more to cues around them, like how much they get compared to others at the table, the times they’re fed rather than the times they’re hungry, and when and where others are snacking around them. According to feeding infants and toddlers study that tracked the diets of 3,000 kids, eightyear-olds usually like the same foods they did when they were four, their likes and dislikes are guided by their mothers (if you dislike a vegetable, you don’t give it to your kids so they don’t learn to like it), and many children don’t even eat a couple of servings of veggies a day. The Lancet medical journal published research showing that children will suffer irreversible damage into their adult life if proper nutrition is not obtained regularly before two years of age. Deficiencies in vitamin A, folic acid and zinc – found in veggies – are the greatest contributor to childhood disease. By the time a child is an adolescent, it can be difficult to make major shifts in their meal-time experiences, so how do you instill good eating habits from the start? There are three points to keep in mind: 1. Avoid feeding them when they’re not hungry, which includes trying to chase them around with a spoon when you’re concerned that they aren’t eating enough. 2. Don’t feed them unhealthy-but-easy snacks when you’re on the go, like soda crackers, Cheerios, baby cookies and sweetened juice, which are almost completely devoid of nutrients . 3. Stop giving them “kid food” instead of whatever healthy meal you are eating — pizza, maca-

roni and cheese and chicken nuggets are no better for them than they are for you. Don’t masquerade vegetables. Popular new cookbooks promote tricking kids into eating their veggies by pureeing cauliflower, squash, spinach and sweet potatoes and hiding them in brownies, pudding and mac and cheese. It not only confuses the issue, but it sends a terribly wrong message and makes you lie to your kids. It doesn’t get kids used to the value of fresh whole vegetables. It might even make you leery of your children trying to help you make dinner (for fear they might notice what you’re putting in it) and even insistent that they finish their dessert to get their allotted veggies. Develop their appreciation of the flavours and textures of various vegetables by introducing them over and over again until they catch on. Present vegetables in imaginative forms that appeal to young palates. Put tomato sauce on veggies instead of pasta; bake yam wedges with a little olive oil instead of fries; dice a variety of vegetables into Chinese chicken fried rice (a kid-friendly favourite); try a multi-layered veggie lasagna without noodles; or create fun shapes with raw vegetable “building blocks.” The owner of a health restaurant in Calgary made a “fairy princess broccoli forest” for her five year old’s birthday party with a massive mound of mashed potatoes, coloured pink with a little beet juice, and steamed broccoli florets mounted all over it. The kids loved it. Stop giving your money to the sweet tooth fairy. Although added sugar was removed from most jarred baby foods in the 1990s, food companies then launched baby desserts, loaded with sugar and refined starch, to get the addiction started young. Children younger than five should not have sugar since their taste buds are especially attuned to sweet flavours. Offerings of fresh fruit at an early age will enable that level of sweetness to satisfy you as an adult, but if given processed, concentrated sugar, the addiction for intense sweets will follow you for the rest of your life. Sixty percent of toddlers get some kind of baked treat every day, and 10 percent of infants aged four to six months eat desserts or sweetened beverages daily. The result? Twenty-five percent of calories eaten by the average toddler to 18 year old is from sugar.

Salt – the other stimulant. The average two year old consumes over 2,000 milligrams of salt daily, soaring well above 225 milligrams, the sodium recommendation for them according to the US’s The Bogalusa Heart Study. By the time kids reach the age of 17, they’re eating 3,670 milligrams of sodium daily in packaged and commercially prepared foods, and their RDI is 500 milligrams. Eating too much salt increases their blood pressure, distorts vision, and can contribute to ulcers, tumours, and kidney, liver and heart problems. Raw fruits and vegetables can supply most of the required sodium …but they have to eat them. Forget diet foods. Filling the fridge with diet pop and fat-reduced, calorie-reduced processed foods could make kids fat later, according to research by University of Alberta. They found that when juvenile rats are conditioned to associate certain tastes (sweet or salty) with low-calorie foods, they will begin to overeat at later meals to compensate. The study concluded that the same could happen in young children. If they’re exposed to a lot of diet foods early in life, their bodies could begin identifying any sweet and salty foods with insufficient calories for growth, and trigger them to overeat. Turn off your TV. Over 40 per cent of commercials teach kids that dinner consists of fast food, candy and processed snacks and drinks. There are no whole fruit and vegetable commercials. The US’s Kaiser Family Foundation reported that over a three month period in 2005 (on 13 television networks), 2,613 ads featured processed food targeted to children and teens. Children age eight to 12 see the most food ads on TV – an average of 21 a day – and see one PSA on fitness or healthy eating for every 48 food ads. Since preteens are just becoming independent consumers, understanding what type of advertising they’re exposed to is vital. Feeding our kids as poorly as we feed ourselves has manifested adult-styled problems that may linger for life. Many parents know that school cafeteria food isn’t really the problem; it’s how kids have been taught to consider their food choices and, often, what they’re eating while not at school. Eating our way to a healthy planet Ever think of the environmental impact of the food on your plate? Well maybe it’s time. By Brendan Brazier

Protein production: A significant environmental strain

T

he fact is, he production, processing, and delivery of food have the largest environmental impact out of any other industry. The energy used in producing and distributing food accounts for roughly 60 percent of the total energy North Americans produce. Of that 60 percent, more than 85 percent is generated from the burning of fossil fuels which generates greenhouse gases that contribute to global warming. Since food production is the largest energy draw in North America, it’s also the best place to start when looking for ways to reduce energy consumption. Less processing is better not just from a health standpoint but from an environmental standpoint. The first and easiest way to do this is to simply reduce the number of steps involved in the production of food. The more processing and refining that is required before food is consumed, the more energy will have gone into its production. Many experts believe that the traditional production of food uses more energy than it returns. One report suggests that for every 10 calories of fossil fuel energy burned in food production, only 1 calorie of food energy is produced. So when you’re choosing something like a glass of orange juice, ask yourself if you could go straight to the source, and go grab an orange!

Traditionally, protein-rich foods have taken the most resources to produce, requiring the most land, the most water, and the most energy. Traditional protein-rich crops consist of animal products: meat and milk. Land must be used to grow the food to feed the animal, and pasture land is needed to raise the animal. From there, the processing and distribution of animal products are labor and energy intensive. The numbers tell it all: producing one kilocalorie (kcal) of beef requires the input of 35 kcal of fossil fuel, whereas the production of one kcal of plant protein uses a mere 2.2 kcal of fossil fuel. That means beef production requires nearly 16 times more fossil fuel energy than plants to produce one kcal of protein! Most standard crops, such as wheat and corn, produce very little protein. What is needed is a plant with a high protein content, enabling it to be fed directly to humans without having to pass through numerous energy-intensive steps to convert it to a reliable form of protein. Fortunately, such a plant does exist: hemp. Both nutritionally and environmentally superior to most plants, hemp seed contains 35 percent protein and delivers numerous nutrients. And unlike many crops, hemp can be grown in both hot and cold climates and it grows much faster than many traditional crops. Naturally resistant to most pests, hemp crops can also be grown efficiently without herbicides and pesticides. Chlorella, a green algae, is another incredible plant. The number one food supplement in Japan, chlorella is currently being investigated in the West as a “land saver”. Because of its ability to reproduce four times every 24 hours while having the highest protein

content of any living organism on earth, chlorella is by far the most environmentally efficient method of protein production. hoosing the right insect repellent can protect your family’s health. Even if you’re not travelling to foreign countries, there are dangers associated with insects and even with repellants that you should know about. West Nile Virus is responsible for more than 1,000 deaths in the US and Canada over the past five years, according to the Center for Disease Control. In 2007, the Public Health Agency of Canada reported 1,404 cases of West Nile in Saskatchewan, 572 in Manitoba, and 318 in Alberta. Cases were also reported in British Columbia, Ontario, Quebec and New Brunswick. Diseases transmitted by mosquitoes are a worldwide health problem — more than 5 million people die from malaria every year. How can you protect your family and yourself without harming them in the process with a chemical repellant? Twelve million Canadians use insect repellents every year. However, there is a growing body of evidence that DEET – the active ingredient in most mosquito repellents – can cause health problems. A study conducted by Duke University Medical Center pharmacologist, Dr. Abou-Donia, Ph.D., reported that the chemical DEET causes brain cell death and behavioural changes in rats after frequent and prolonged use. While the chemical’s risks to humans are still being debated, Dr. Abou-Donia states that his 30 years of research on pesticides clearly indicate the need for caution by the general public. Dr. Abou-Donia reports that children in particular are at risk for subtle brain changes caused by chemicals in the environment because their skin absorbs them and can affect their developing nervous systems. Exposure to DEET and other insecticides may cause people to experience memory loss, headache, weakness, fatigue, muscle and joint pain, tremors and shortness of breath. Such overt symptoms are not seen immediately after use but may manifest themselves months or years after exposure, making a cause-and-effect relationship difficult to establish. A study released by University of Manitoba warning against using DEET-based mosquito repellents in combination with sun block can compound the negative effects. Hockey Legend with a Higher Purpose:

Mario Lemieux

In 1993, hockey legend Mario Lemieux was enjoying the greatest season of his career. Then he was diagnosed with Hodgkin’s lymphoma. Hockey fans will fondly recall Mario’s courage in overcoming the disease in the middle of the 1992-93 season. By Carol Crenna

O

n the morning Mario finished his last radiation treatment, he took a plane to Philadelphia, scored a goal and an assist against the Flyers and then led his team to a 17-game winning streak, establishing a new NHL record. Mario, who won six scoring titles and three Most Valuable Player awards, also fulfilled a dream in 2002 when he returned to the ice and defeated the US to lead the Canadian Olympic hockey team to its first gold medal since 1952. Mario staged another type of comeback when he purchased the near bankrupt Pittsburgh Penguins with investment partners and became chairman, and the once failing franchise is now considered one of the favourite teams to win the 2008 Stanley Cup. Though Mario has been cancer-free for 15 years, his experience in overcoming Hodgkin’s has led him to devote much of his time to the Mario Lemieux Foundation. Founded in the same year he developed the disease, he continues to raise funds to help reach another type of goal: a cure for cancer. Mario discusses his home life, his health and his foundation with VISTA. VISTA: Your life and career have been all about comebacks. Where do you get your motivation and drive from? Did your upbringing have anything to do with it? Mario: I’ve always had high aspirations in hockey and in life, and I credit that drive to my parents. VISTA: Is it true that you are still married to your high school sweetheart? Mario: Yes. Nathalie and I met at my cousin’s wedding and have been together ever since. She is the best wife and mother you could ask for. She is also quite an athlete – she plays paddle tennis and has a great golf game! VISTA: Has there been any “positive” aspect in your life that has come from the experience of having cancer? Mario: Having cancer did change my outlook… It’s the reason I started the foundation. My battle with Hodgkin’s disease made me realize how fragile life can be. It also helped me see how fortunate I am to be involved in the greatest game in the world. But I know there are many people who are not as fortunate as I am. That is why the Mario Lemieux Foundation continues to be important to me, and why I devote time to raising funds for it. Our foundation’s tag line is “Giving others a chance to win,” and that’s exactly what I want to do: give others in unfortunate situations a chance.

And I think our researchers are doing just that. Their findings provide patients with opportunities to live longer and enable them not to have to experience the treatments that I had during my own time with cancer. I’m just happy that Nathalie and I are able to give back. VISTA: The type of cancer that you were diagnosed with is considered one of the most curable forms. Why is that? Mario: The research being conducted on Hodgkin’s and the progress they have made even since I had cancer is remarkable. I’m certain that one day a cure will be found. Our researchers in the foundation lab at the Hillman Center (part of the University of Pittsburgh Cancer Institute) are working on progressive treatments, cancer vaccines and gene therapy. It’s very fascinating to see the progress. VISTA: What are the highlights of working with the Mario Lemieux Foundation? What are the challenges of working within the non-profit sector? Mario: The challenge, of course, is to continually raise funds to support our initiatives. In this economy, charitable giving is always the first thing cut out of a budget. However, we have many long-standing sponsors and supporters who have been very generous. Highlights include hearing so many stories from cancer survivors and their positive outlook on life. VISTA: The Mario Lemieux Foundation donated millions of dollars to establish the Mario Lemieux Centers for Patient Care and Research. What is the “patient care” part of this facility? Mario: The Mario Lemieux Centers for Patient Care and Research is really a centre without walls. Cancer affects the entire family and not just the patient. Our areas within these centres are tailored to provide assistance to the entire family, such as in our Austin’s Playrooms. VISTA: Your playroom project sounds wonderful. How did this concept come about? Mario: My wife, Nathalie, actually came up with the idea. Our son Austin was born prematurely at just 26 weeks old and spent 71 days in the NICU. This is stressful enough with just one child, but we had two older daughters at the time. As Nathalie and I were taking care of Austin, there was no place, or no one, to engage the lively minds and provide a

comfortable calming environment for Austin’s sisters Lauren and Stephanie. It was then that Nathalie thought of the idea to raise funds for playrooms at hospitals in western Pennsylvania. The Playroom Project was established to benefit families and improve the quality of a child’s hospital experience whether they are a patient or a visitor. Nathalie serves as chair. I’m very proud of her efforts; we have 16 playrooms that are either completed or pending. VISTA: Are any located outside of Pennsylvania? Mario: All of the playrooms are in Pennsylvania, but someday we hope to bring them to hospitals in Canada. VISTA: Do you think that diet, exercise, stress reduction and developing close relationships play an important role in cancer prevention? Mario: I think that a healthy lifestyle has proved to be helpful in preventing many forms of cancer, but there are exceptions. Prevention is a key, but I also think that screening and early detection is critical to long term success. If you are going through cancer, a support system including friends and family are the most essential. VISTA: How do you maintain your health now, after retiring from playing hockey, since your career has gone from a very physical one to a corporate one? You must have been fit! Mario: Yes, as a professional athlete, I was in great shape back then. I’ve tried to maintain that after my retirement. I try to work out as often as I can and I do pay attention to what I eat. I play a lot of golf; it’s a great game and is always a challenge. Nathalie and my four kids also keep me busy! VISTA: Back issues have been troublesome for you. How have you been able to deal with them? Mario: As I said, I’m a big believer in staying fit, and I regularly stretch so as to avoid further back problems. VISTA: You’ve traded your stick for a club. Do you still play hockey for fun? Mario: I am the “assistant” coach for my son’s amateur hockey team, which gets me on the ice frequently. VISTA: Did having children change your point of view about health issues? Mario: I’m very involved in my kid’s lives. So being healthy is extremely important to me. I want to be around for them for a long time. VISTA: Your golf tournaments have been overwhelmingly successful at fundraising. Could you give some highlights of your upcoming tournament? Mario: My golf event, called the Mario Lemieux Celebrity Invitational, will be held at Nemacolin Woodlands Resort, Pennsylvania, at the end of June. We will play two-days of Pro-Am golf and one day of celebrity-only golf. We’ve gone to a private format for the tournament and found that it works out very well with our sponsors. They will play a very intimate round of golf, playing as a twosome with their celebrity. And, of course, all of the proceeds benefit the foundation. Some of the guys playing this year include Dan Marino, Brett Hull, Sidney Crosby, Jerry Rice, Marcus Allen and some of our other current Penguins. VISTA: Is it true that if you didn’t become a hockey player you’d have been a golf pro? Mario: Sure! VISTA: Do you still have ties with your Canadian roots? Mario: Definitely. We try to get back to Canada whenever time permits. Both of our families are still there, so those are very strong ties.

Strontium:

A Bone-Mending Mineral By Dr. Douglas Lobay What’s stronium? “Didn’t I hear about radioactive strontium during a nuclear reactor meltdown in Chernobyl?” “Isn’t that the stuff used in radiation therapy in certain forms of cancer?” This article is not about radioactive strontium. This article is about a highly effective supplement used for the treatment of osteoporosis. Read this article closely and pay attention; you won’t get this information from your medical doctor or the pharmaceutical industry. Strontium is as effective as current drugs including fosamax and didrocal used to treat osteoporosis. Strontium is a naturally occurring white to yellow coloured alkaline earth metal. It is the fifteenth most abundant element in the earth’s crust. Strontium was first discovered in 1787 in the lead mines of Scotland near a town called Strontian. Strontium compounds have been used in industry since its discovery for a variety of uses. Strontium alloys have been used in the automobile industry, and have been combined with other compounds to give off a brilliant red colour in fireworks. Strontium is also a common element in certain magnets, has been added to commercial paints and is used in glazes for pottery. Strontium has even been used in several toothpaste brands — a 10 percent strontium compound is used for sensitive teeth. It is in the same category on the periodic table of elements as calcium, but it is a heavier metal. Strontium elements vary from being stable to unstable, radioactive to non-radioactive. Radioactive strontium has been used as a fuel source for thermoelectric generators and has been used in cancer radiation therapy. However, it is important to clarify that stable forms of strontium used in industry and as a bone building element are not radioactive. In the North American diet, a person routinely consumes between 1 to 3 milligrams of stable elemental strontium per day. The body stores 320 milligrams of strontium in bone and connective tissue. In 2004, the pharmaceutical company Servier launched a new “drug” to treat osteoporosis called protelos, available in European countries as a prescription medicine (it is not available in the US or Canada). Protelos is essentially two strontium molecules bound to an organic acid called ranelic acid or ranelate. The product is licensed for the treatment of postmenopausal

osteoporosis to reduce the risk of vertebral and hip fractures. Strontium ranelate has been tested in two large clinical trials involving postmenopausal women with osteoporosis. The Spinal Osteoporosis Therapeutic Intervention (SOTI) study included 1,649 patients with previous vertebral bone fracture and showed that strontium ranelate reduced the risk of vertebral fracture by 49 percent in the first year. The researchers concluded that the reduction in bone fractures “seems similar” to existing osteoporotic drugs including aledronate, risedronate and raloxifene. The Treatment of Peripheral Osteoporosis Study (TROPOS) included 5,091 women with low hip-bone mineral density and showed a 36 to 39 percent reduction in the risk of hip and vertebral fractures for strontium treated patients. Strontium stimulates the formation of new bone and prevents the breakdown of old bone. Drugs like fosamax and didrocal prevent bone breakdown by inhibiting cells called osteoclasts from acting on bone. Strontium also prevents osteoclasts from breaking down bone and prevents bone resorption. However, since strontium is a natural substance, unlike the drugs, it has very few negative side effects. Strontium also stimulates bone formation by stimulating osteoblasts to produce new bone, and preliminary research shows that strontium may be beneficial in preventing osteoarthritis and joint deterioration. It is important to note that strontium is a heavier element than calcium, and can replace it within the bone, and part of the increase in bone density is due to the weight of strontium. Strontium supplementation improves bone density measurement by 3 to 12 percent over one to three years. Though it sounds insignificant, this small percentage in bone density translates into an almost 50 percent reduction in bone fractures, meaning half of all hip and vertebra bone fractures could be avoided. This is consistent with osteoporosis drugs like fosamax and didrocal. Drug manufacturers would have you believe that only strontium ranelate is effective for osteoporosis. However, it is the current understanding that ionic strontium is used in bones, not ranelate. Strontium is bound to ranelate in much the same way as calcium is bound to carbonate or citrate. Once in the stomach and digestive system’s acids, strontium ranelate separates into two

molecules of ionic strontium and ranelate. Scientists believe that ranelate plays no role in bone health and is probably excreted unused by the body. However, they believe that other forms of strontium compounds such as strontium citrate are as effective as prescription drugs. Strontium citrate readily separates into ionic strontium in the digestive system, is absorbed into the bloodstream and travels to bone where it becomes incorporated into the bone matrix. Strontium citrate supplements have been recommended by health food stores, health oriented pharmacies and naturopathic doctors for treating osteoporosis for several years. At less than $30 per month, strontium citrate is a cost effective treatment, compared to the cost of prescription strontium ranelate in England at about $60 per month. Take strontium approximately two hours after eating, preferably in the evening before bedtime. Do not take calcium at the same time as strontium because they compete for absorption. Side effects from strontium supplementation are minimal. Individuals with thick blood or hypercoagulation disorders should consult with their doctor prior to use of strontium. There are several unanswered questions about strontium supplementation that future research will hope to answer. Strontium is a safe and effective supplement for the treatment of osteoporosis. Medical research concludes that it is as effective as conventional prescription drugs currently available in North America. It should be a recommended option for individuals who cannot take prescription medicines due to side effects, and as a supplement to benefit those taking pharmaceutical drugs for osteoporosis. If you’re a baby boomer, you can’t do anything to change the fact that you are nearing or are over 50. But you can change how you deal with it. You can make subtle-but-oh-so-significant changes to face the years ahead with confidence and resolve.

Why do you look older?

Vancouver physician Dr. Shehla Ebrahim humorously coined the stages of an aging face as “the 3 D’s”: deterioration, deflation and descent. Deterioration includes pigment changes (age spots, sun damage spots), wrinkles, enlarged pores and sallow, lifeless complexion. The second tell-tale stage, deflation, is caused by loss of hyaluron, a naturally occurring substance in the body. Its function is to add volume (such as full, rounded cheeks and mouth). As you age, the body loses its ability to produce hyaluron. The third stage, descent, is caused by loss of collagen and the falling “pad” of fat under the cheek. The Chinese “acupuncture facelift” also improves metabolism, slows down the aging process and helps to release harmful toxins. All of these therapies’ results are cumulative, so they work over time. Although no dramatic next-day changes will be noticed immediately, others will definitely begin to comment on “how great you look” within a few months. In addition to trying more natural and nonsurgical routes to youth, remember to avoid the four factors that can make you seemingly age overnight: 1. Stress, which makes your body release hormones that can end up causing free radical damage. 2. UV damage from overexposure to the sun (note that under-exposure caused from applying sunblock every minute that you’re outside can also speed aging and disease). 3. Lack of sleep – it’s called “beauty sleep” for a reason. 4. Dehydration from drinking too little water and not taking omega-3 and omega-6 essential fatty acids. Age is an attitude, not a number. The Most Basic of All the Earth’s Foods By John Austen

long with a healthy diet, one of the most powerful and natural aids to help the body’s healing may be marine phytoplankton. This “new” food has regenerative properties that can be traced back farther than human existence on Earth. The most basic of the planet’s foods, phytoplankton (microalgae) was only developed as a food supplement for humans in 2004, though it has been giving life to sea creatures for thousands of years. According to the newly released book Conscious Health by naturopath and natural health expert Ron Garner, marine phytoplankton is a superfood that replenishes the body’s nutritional resources. It helps us regain the nutrients that we’ve lost through improper eating habits and poor soil quality used to grow our foods. He explains that some very potent, highly concentrated foods act as both a food and a supplement. They therefore play an important role in optimum health. In addition to phytoplankton, he also lists natural bee pollen and hemp as concentrated superfood sources. Marine phytoplankton is a group of microscopic single-celled plants that create the base of the food chain for all animals in the ocean. Whales eat these plants and develop great strength (and live an average of 150 years). They are responsible for creating much of the Earths’ oxygen and for regulating our atmosphere. They are able to convert sunlight, water and inorganic minerals into amino acids (that make up protein), fatty acids, carbohydrates, vitamins and organic minerals. They use chlorophyll (the green colour in plants) and light to release oxygen into the water for life in the sea, and in the process, and they convert huge amounts of carbon dioxide into living matter. Phytoplankton was thought to be food only

for sea creatures until a fish farmer from Vancouver Island made a discovery. The farmer, named Tom Harper, grew phytoplankton for his shellfish and uncovered its potential virtually by a whim. Harper was diagnosed with a rare form of inoperable cancer in 2004 and was told that he only had a few months to live.

Continuing his work, he began eating half a teaspoon of concentrated microalgae every day, which he was also feeding his fish. Within a few weeks he astounded doctors by having a complete recovery, with no signs of cancer evident in his body when a biopsy examination was completed. He continued taking the phytoplankton and his diabetes was also corrected, allowing him to be taken off his daily insulin requirements in six more months. His blood sugar count had also returned to normal. According to author Ron Garner, studies by Dr. Bob Rowe on the subject found that the nutrition contained in phytoplankton works to repair and regenerate the cell’s mitochondria (our cell’s control centre which creates energy). However, Dr. Rowe states that marine algae concentrate “is not a panacea (cure-all) or a treatment for any particular condition. It works by providing essential nutrients needed by the body to stay in an optimal level of health.” Phytoplankton helps to strengthen the body due to its abilities as an antioxidant, antiinflammatory, anti-tumor, anticataract and antidepressant substance. It appears to be able to repair the liver and nervous system, improve endocrine function (the organs that produce hormones), and help correct sleep disorders and weight problems. Phytoplankton may prove to be a significant breakthrough in building health, reversing disease conditions and providing a viable and environmentally friendly food source for the world. It appears to supply all of the basic nutrients required by the cells of the body in a whole and unprocessed food – it’s a natural supplement.

Dive Into Health By Cory Holly

C

alifornia brown pelicans are magnificent creatures. Standing on a pier in Redondo Beach, CA, I am watching them dive from 60 feet, plunging bill-first into the ocean below. Like arrows shot from the bow of Robin Hood, their aim is true. Rarely do they appear from under the water without several herring trapped in their throat pouch. Pelicans use their pouch like a net to scoop up their prey. Beholding this natural spectacle, I realize that the action of the pelicans is analogous to several principles that apply to life and functional health. The first word that comes to mind is “motive” – motive to act or, in this case, to hunt. Hunt is the action word here. It demands skill, cunning and movement. It’s a “do” word, like the word “exercise” is. Motive drives the hunt, but what initiates the motive? The answer is hunger. Hunger is a natural form of physiological stress. If stress or hunger in this example is not satisfied, severe consequences result. Are you hungry for health? Dr. Hans Seyle taught the world about the different phases of stress: the alarm phase, the adaptation phase and the exhaustion phase. How many of us ignore symptoms of “dis-ease” caused by neglect and abuse? Are you run off your feet with “hurry sickness?” Heart disease, cancer and diabetes don’t just happen. Obesity doesn’t blindside us. All disease has a dark and sordid past that can be explained and understood. Without the stress of hunger, the pelican has no incentive to hunt. Wild animals are guided by instinct. Few kill for pleasure. They all follow the path of least resistance. Their action (or inaction) is based on conservation of energy. Pretty much everything they do is based on necessity and survival, like the bottom level of Maslow’s hierarchy of needs pyramid. But unlike the pelican, humans can create incentive for positive outcome through the power of conceptualiza-

tion and visualization. We can tap into a “higher source.” We have the ability to see things in our mind before they become real. We can ponder the consequences of almost anything in advance like a master chess player who can calculate dozens of possible moves in the same way. Conceptualization demands a sound, functional brain. In the book Save Your Brain, Dr. Michael Colgan teaches not only how to save our brain, but more important, why we must. “There is no worse disease,” as he states, “than to outlive our intelligence.” The brain is the central command station of the body. It houses over ten billion neurons hardwired and designed by nature to be challenged and pushed as mental muscle. This is why the dictum “use it or lose it” is true. Those who respond to stressful life situations like wild animals without contemplation are guilty of wasting both our innate intelligence and the gift of free will. Vitamin K: Knight in Shining Armour? By John Austen

itamin K rarely gets any accolades or press. You may have some vague sense of having heard of vitamin K, but it’s unlikely that you know what it is or does. Why? While other nutrients like the A-CE fighter vitamins do daring things like bombard free radicals to protect you from life-threatening disease, vitamin K’s only claim to fame is that it helps blood coagulate. That was before the research started pouring in about the knight-vitamin’s potent powers to fight heart disease, premature aging and bone conditions such as osteoporosis. It may even be a stronger antioxidant (free radical-fighter) than vitamin E or coenzyme Q10. Let’s take a closer look at this unsung hero.

Where is vitamin K used in the body?

Vitamin K accumulates in the heart, lungs, liver, pancreas and kidneys. It has broader health applications than scientists ever imagined. Vitamin K is an essential nutrient in our diet to activate certain proteins that help calcium build strong bones and also stop calcium from accumulating in the arteries.

What about blood coagulation?

Yes, vitamin K is also necessary for helping blood to coagulate, meaning that blood becomes solid – so that wounds heal, for example.

What foods have vitamin K?

High concentrations of vitamin K are found in green leafy vegetables, especially spinach, kale and broccoli. Other fruits and vegetables can also supply the body with the vitamin K it needs to function if you eat enough of them. Fermented foods also contain vitamin K.

Do we get enough vitamin K in our diet?

While it was long thought that we all had sufficient amounts of vitamin K in our bodies, recent research indicates that many of us suffer from a deficiency. Evidence suggests that bone and heart health require a relatively high intake of vitamin K, more than previously thought to be enough in a healthy diet.

Why is that?

Vitamin K is called a fat-soluble vitamin, but unlike the other fat-soluble vitamins, it is not stored in the body. This means that you have to get it from foods (for it to synthesized in the gut), and many people don’t eat enough vegetables to obtain vitamin K. You may also be unwittingly reducing your supply. For example, hydrogenated oils in margarine and baked goods may stop the proper utilization of vitamin K in the body. Environmental stress

places unusual demands on vitamin K reserves. Antibiotics destroy intestinal flora, which are the source of vitamin K in the body. Cholesterol-lowering drugs, some laxatives and drugs that interfere with how fat is absorbed reduce vitamin K. Even extremely low-fat diets and very high protein diets (that don’t include greens) can reduce your vitamin K.

How does it help our arteries?

Hardening of the arteries, or atherosclerosis, is caused when calcium enters the arteries and lesions are formed that lead to their degeneration. This is associated with heart disease. Scientists have found that when vitamin K was introduced in lab animal studies it significantly reduced the amount of calcium in the arteries feeding the heart, so damage to the heart valves was reduced.

But if vitamin K reduces calcium, isn’t that bad for bones that need calcium?

The other side of calcification is the leaching of calcium from your bones. This is known as decalcification. Amazingly, vitamin K has been found to regulate the flow of calcium in and out of the bones and arteries; it may keep calcium out of your arteries and in your bones.

Is there only one type of vitamin K?

There are two main forms of vitamin K: vitamin K1 (phylloquinone), which is found in green leafy vegetables and makes up 90 percent of the vitamin K in a Western diet; and vitamin K2 (menaquinones), which makes up 10 percent of Western vitamin K consumption and can be made in the gut by microflora (good bacteria). The K2 type, menaquinones, can also be found in fermented foods and in small amounts in meat. Until recently, vitamin K1 had been the main type of vitamin K that was used in supplements and is the most common type found in foods. Current health claims in scientific literature related to K2 (using a traditional Japanese food made from fermented soybeans), however, have increased interest in this form of vitamin K.

Isn’t K2 a mountain in the Himalayas? What does it matter which K we take?

A study published in the April 15, 2007 issue of Blood, the American Society of Hematology’s journal, revealed greater benefits of vitamin K2 over K1 in promoting bone and cardiovascular health. The study demonstrated that vitamin K2 had better absorption, was able to be absorbed much longer and had higher efficacy than vitamin K1.This was the first human study using natural vitamin K2 as a dietary supplement, and showed that vitamin K2 is the most potent K-vitamin. Large scale human studies have shown that eating foods rich in vitamin K2 significantly promotes bone health, reduces risk of bone injury and promotes cardiovascular health.

What’s the evidence that taking vitamin K2 will help our heart?

The benefits of dietary vitamin K for cardiovascular disease are supported by the findings of a Dutch study called the Rotterdam study done in 2004. This study involved 4,800 people over a 10-year period and revealed that increased intake of vitamin K2 significantly reduced the risk of heart disease mortality by 50 percent as compared to low vitamin K2 intake. In that study, vitamin K1 had no effect at all. The primary reason for vitamin K2’s superiority appears to be its power to remain in the blood for a long time (three days), compared to the one to two hour “staying power” of K1, which results in more stable blood levels and significantly greater accumulation of vitamin K2. In addition, the study revealed that K2 had better blood coagulation activity and dramatically higher absorption in the body.

What is the evidence that vitamin K2 helps our bones?

In research from Japan, vitamin K2 was found to reduce bone loss in postmenopausal women by as much as 80 percent (using a fermented soybean source). The study reported that women with a dietary intake of this vitamin K2 source reduced bone mass loss on the thigh bone and in the arm by 80 percent and 60 percent, respectively. There is a growing body of scientific evidence linking vitamin K to benefiting bone health because it influences osteocalcin, a protein needed to bind calcium to the bone matrix. The protective effects also appeared to increase with advancing age. For example, postmenopausal Japanese women in their 50s eating the soybean source of vitamin K2 had a bone mineral density (BMD) loss of 1 percent per year, compared to 1.6 percent per year for the same age that didn’t eat it. Women in their 70s had BMD losses of 0.5 percent per year when consuming it, while septuagenarians not consuming it had average BMD losses of 1.8 percent per year. The researchers could not rule out the effect of soy isoflavones present in the fermented soy, however, which may also play a role in bone health.

What other ways does vitamin K keep us young?

Anti-aging research has found that as you age, your body suffers from an increase in inflammation due to increases in certain hormones and decreases in others. One of the hormones that is increased and can cause inflammation throughout the body is called interleukin-6 (IL-6). This has been found to increase arthritis, diseases of the blood vessels and heart disease. Scientists have found that vitamin K2 reduces IL-6 and therefore may have a role in reducing these degenerative diseases.

Is it safe to take a vitamin K supplement?

Since vitamin K2 is not stored in the body, it is non-toxic. Supplement dosage varies according to your health needs, age, diet and use of prescription drugs. People taking blood thinners should not take vitamin K2, and there has been some controversy over supplementing infants with vitamin K2. As with any vitamin, taking the most natural food-source supplement is the best way to ensure that it is used by the body and not just excreted without being used.

Better Ways to Get Vitamin C By Michelle Kwon

I

n 1935, a supplement was introduced that completely shocked the medical industry and caused widespread controversy. It was commonly referred to as toxic. It was the first vitamin C tablet, and it took several decades to gain any type of respect and acceptance. Much has changed in the past 70 years, but even though vitamin C is now used for everything from relieving colds to cancer, there is still confusion regarding what it is, what are the best forms, and how much of it we should be taking. Part of the issue is that when it was first introduced, it was inappropriately labeled as the chemical ascorbic acid, which is not, in itself, a vitamin. Vitamin C complex, in its natural form in fruits and vegetables, contains several other nutrients which provide its powerful protective properties. In research, ascorbic acid by itself has not shown to have the benefits that natural vitamin C in fruit does, with all of its factors including enzymes, rutin, “vitamin P,” bioflavonoids and other nutrients. For example, ascorbic acid, which is the only ingredient in many vitamin C supplements, does not even prevent scurvy, the acclaimed original use that saved sailors hundreds of years ago. It needs the other components found in the fruit to accomplish this. The other part of the confusion is how much our bodies need, and how much can be absorbed before it no longer serves us and is excreted from our bodies. One thing that nutritionists and researchers agree on is that the recommended daily allowances set by the government are far too low. The current RDA for vitamin C in healthy adults is set at 60 milligrams. Consider that most of the supplements you buy from health stores offer 250 to 500 milligrams of vitamin C in each capsule or tablet. While this 60 milligram dose may provide enough vitamin C to maintain life on a sofa, those who have an active lifestyle have far more need for this important nutrient. So how much do we need, and how much is safe to take? Good question. Renowned Noble Prize-winning chemist Linus Pauling frequently took 10 to 18 grams (10,000 to 18,000 milligrams) of vitamin C for his health. His book, Vitamin C and the Common Cold changed the way vitamin C supplements were used, and earned global respect. Many experts feel, however, that between 1 to 3 grams (1,000 to 3,000

milligrams) per day is safe for most active adults. But like anything else, needs vary from person to person. Our bodies let us know when we’ve consumed too much vitamin C — diarrhea is a common sign that we’ve taken too much. Like many other nutritional advancements, today’s high quality vitamin C offerings are light

years ahead of what we had even a decade ago. Traditional vitamin C supplements have served for 70 years, but similar to all vitamin and mineral supplements, the latest discoveries to determine the best source, the highest level of efficacy, greatest absorbability and acceptance by the body are vital. It is these factors that make taking supplements either worthwhile and a good investment in your health or useless and a waste of money. In creating the best possible vitamin C supplement, the source comes first. That takes researching all types of fruits and vegetables. Vegetables such as yellow peppers, for example, have

more vitamin C than oranges, which have traditionally been marketed as a good way to obtain it. We look to other countries, too, to find out what they are using. The amla fruit, unknown in Western diets, has been a fundamental part of India’s ayurvedic medicine for centuries, and it is considered to be one of the most concentrated sources of natural vitamin C. It has been estimated that, gram for gram, amla fruit contains 30 times more vitamin C than oranges and 160 times more than apples — 100 grams of amla yields over 500 milligrams of vitamin C. Then there is the issue of absorption and use by the body, and its annoying side effect if too much is taken. Many forms of vitamin C create acidity which is difficult to digest and absorb, which is why some add buffering minerals and other nutrients to alleviate these effects. However, the vitamin C found naturally occurring in amla is non-acidic and won’t cause discomfort. It therefore makes it possible for people with stomach and digestive sensitivities and those requiring megadoses (such as for cancer) to reap the benefits of a compound they might otherwise be unable to take. (Amla actually plays a role it healthy digestion and is used in ayurvedic digestive tonics.) Like many types of supplements that attempt to reproduce the therapeutic effects of plant foods without using the entire fruit or vegetable, various forms of vitamin C simply don’t offer the absorption and efficacy of the whole food. For example, research shows that based on its unique active constituents, amla offers a number of beneficial effects that could not be achieved by only taking the vitamin C from it. ver feel overwhelmed when looking at the long list of nutrients in your multivitamin? Which nutrients are most important to you? If you have a particular health problem you are probably already looking for certain ingredients. What do the rest of us look for? Well, if you’re like me, you’re looking for more energy. This article will help you to conquer the nutrient list on your multivitamin by focusing on the top five nutrients for energy. 1) B vitamins: There are many B vitamins that are essential to your health. They include thiamin (vitamin B1), riboflavin (vitamin B2), niacin (vitamin B3), pyridoxine (vitamin B6), biotin (vitamin B7), folate (vitamin B9) and, cyanocobalamin (vitamin B12). B vitamins support energy metabolism. They play a role in the metabolism of fats, carbohydrates and proteins into energy, meaning that they help cells to turn these nutrients into energy. The most important of the B vitamins to contribute energy is vitamin B12. According to Health Canada, the Recommended Dietary Allowance and Adequate Intake (RDA) – the suggested amount of a nutrient we should consume in a day – of vitamin B12 for adults is 2.4 micrograms. 2) Iron: The true driver of energy is oxygen. Though your body needs certain types of free radicals for vital functions, others can cause damage to healthy cells by stealing electrons from parts of the cell. cals made by the immune system help to destroy viruses and bacteria and others are involved in producing hormones and activating enzymes.) The ribosome is the part of your cell that makes energy similar to an internal battery; it relies on its structure to be able to make energy. If free radicals damage the structure of a ribosome, it can not make energy. Antioxidants can protect your cells and ribosomes from free radicals. Antioxidants therefore protect your internal batteries. It is recommended that we to eat a rainbow, or wide variety of fruits and vegetables because different fruits and vegetables contain different antioxidants. You need as many different antioxidants as you can get because every antioxidant neutralizes a different free radical. Look for a multivitamin containing a wide variety of fruits and vegetables to ensure you’re getting a good mix of antioxidants. 4) Amino acids: Amino acids are the building blocks that your body needs to make proteins. Most of us think of amino acids as a requirement for body builders and athletes. However, did you know that enzymes and hormones are also proteins? Yes, you need amino acids to make the enzymes that drive your metabolism. Hormones that make you feel happy and energetic are also made from amino acids. To keep your energy levels high, be sure to look for amino acids in your supplements. Remember there are 20 amino acids, about half of which are considered essential (meaning that you can only get them from your diet). A diet with a rich variety of protein sources, or proper supplementation, can help ensure your body has sufficient amino acids to product the enzymes and hormones you need to feel your best. 5) Magnesium: Recent research from the US Department of Agricultural Research Services found that inadequate levels of magnesium in the body increase the need for oxygen during exercise. In the study, people with low levels of magnesium expended more energy to perform exercise and therefore were more likely to tire easily. In other words, your lack of energy may be due to low levels of magnesium in your diet. The RDA of magnesium for men is 420 milligrams and for women is 320 milligrams. eart disease is Canada’s number one killer. Almost everyone either knows someone with a cardiovascular condition or has a heart problem themselves. Heart disease is the result of a variety of factors; some are preventable and some are not. Changes to your lifestyle, including regular exercise, not smoking, reducing stress, maintaining a healthy body weight and eating a diet rich in heart-friendly foods can dramatically reduce your risk. The origins of many pharmaceutical drugs prescribed today as treatment for various heart problems can be traced back to their roots in the plant world. Several herbs can provide a safe, gentle and effective addition to any prevention or treatment plan, without negative side effects. Herbs affect the cardiovascular system in different ways: some increase the strength of the heart beat and others normalize the rate of the beat. They may also increase the efficiency of each heart beat, reducing the amount of oxygen required by the heart muscle. This allows the heart to effectively pump blood around the body and to reduce fluid build-up in the lungs and swelling of the extremities. They dilate the blood vessels to stimulate circulation and lower blood pressure – many heart problems arise because of a deficiency of blood supply due to a blockage in the arteries supplying the heart itself (coronary arteries). Some herbs are known as cardio-tonics. These herbs nourish and increase the overall health of the heart and improve the function of the cardiac muscle. It is not completely understood how cardio-tonics exert their beneficial effects on the body, but herbs such as hawthorn, garlic and motherwort have long been in the herbalist’s repertoire for heart problems.

Hawthorn

Hawthorn is one of a herbalists’ most important heart remedies. Its berries, leaves and flowers may be used for any cardiac condition and it is a key herb for angina pectoris. Hawthorn can help regulate arrhythmia, or an irregular heart rate, due to its toning support on the electrical activity of the heart. Coronary arteries directly supply the heart muscle with blood and oxygen, but sometimes these arteries become blocked or narrowed, reducing the blood flow to the heart and causing problems including angina. Hawthorn dilates these coronary arteries, allowing sufficient blood, oxygen and essential nutrients to reach the heart. When used regularly, hawthorn helps produce a stronger, more efficient heart beat. Hawthorn is rich in antioxidants called flavonoids, which help to improve the strength and integrity of blood vessels and protect the heart from free radical damage commonly resulting from atherosclerosis.

Garlic

Garlic has been used as both food and medicine for thousands of years to help prevent heart disease. It has been published time and time again that garlic supports the cardiovascular system and helps to lower high cholesterol. It helps decrease the risk factors for developing atherosclerosis, a disease that leads to high blood pressure and other serious heart problems. It may also help decrease fatty deposits on blood vessels and has a mild blood thinning effect. An important point to note is that garlic has only a mild effect on thinning the blood and it is not strong enough to effectively replace anti-clotting drugs; it is best used for prevention.

Bilberry

Bilberry is one of the best herbs for improving blood vessel strength. It is an effective antioxidant, containing anthocyanidins which protect the vascular system against cellular damage and stimulate the repair of damaged vessels, making capillaries more resistant to injury. Anthocyanidins encourage the normal constriction and dilatation of arteries, helping to maintain normal blood pressure. They help to regulate the permeability of capillary walls, controlling the amount of fluid leaving and entering the blood stream. This helps reduce swelling that is often associated with heart problems. They help to keep the blood vessels in the eye healthy, and may provide protection against damage caused by diabetes and hypertension. Bilberry is an antioxidant which protects against free radical damage.

Cayenne

Cayenne pepper has long been known for its ability to “get the blood moving.” It is an excellent circulatory stimulant, increasing blood flow into the extremities by dilating the blood vessels in the arms and legs. Cayenne is very effective at reducing inflammation, which may be beneficial for certain CVS conditions such as atherosclerosis. Cayenne has traditionally been used to improve blood supply to the heart muscle itself, ensuring it receives optimal oxygen and nutrients.

Mistletoe

Mistletoe is one of the best herbs to lower blood pressure. This is due to its effectiveness in dilating blood vessels, which allows the circulatory system to accommodate a larger volume of blood. It is a cardio-tonic herb and can help to regain a normal pulse if the heart is beating too quickly. Mistletoe is a very powerful herb and should be used with caution.

Motherwort

Motherwort’s effects on both the nervous system and cardiovascular system greatly complement each other. It is known for its ability to relax the nervous system, helping to reduce stress that may be causing or aggravating high blood pressure.

White willow bark

White willow bark was the original source of the drug known today as Aspirin or acetyl-salicylic acid. White willow bark has a powerful antiinflammatory effect and helps to reduce pain. Herbs can provide a safe, gentle and effective approach to the prevention and treatment of heart disease. Like all medicines, herbal remedies must be used with care. Herbal remedies are completely safe, have no cumulative effects and or side effects when given under the supervision of a trained herbal practitioner. Self-medication is not recommended because there is potential risk of interactions with other medications.

Strong Bones: Part 3 In Parts 1 and 2 of this series, we discussed why North America is in crisis with increased rates of osteoporosis, and why pharmaceutical drugs have failed miserably to save our bones. We also reviewed five of the 11 factors essential to build and maintain bones. In this article, we continue discussing the nutrients that will give you strong bones for life.

The 15th most common element, strontium is widely distributed on Earth. During our evolution, strontium was incorporated into the design of human bones along with calcium, which it is close to in structure. Because of the uneven distribution of different forms of strontium in soils, and therefore in diets, measurement of strontium in prehistoric bones is widely used today in paleontology to determine migration patterns of human groups. Strontium adds strength to bone. It is needed in small amounts and makes up 0.2 percent of bone, where it is used in place of and in combination with calcium. During the early 20th century it was being researched as a possible essential mineral. That research stopped in 1945. Strontium fell into disrepute with the advent of nuclear bombs. Nuclear fallout contains a large amount of an unstable, radioactive isotope of strontium called strontium-90, which does not occur in nature. Nevertheless, strontium-90 is readily incorporated into human bone and causes numerous diseases, including bone cancer. The 1986 Chernobyl disaster, for example, contaminated thousands of square miles and tens of thousands of people with strontium-90. When the word “strontium” began to conjure terror, natural strontium, which is not radioactive, lost consideration as a human nutrient for many decades.We know now that strontium is an essential part of bone. Dozens of studies during the past 10 years, including the large PREVOS trial, show that strontium supplementation reduces the risk of fracture in women with osteoporosis. Better yet, strontium supplementation prevents post-menopausal bone loss. It achieves these miraculous effects, not by stockpiling old, weak bone as most osteoporosis drugs do, but by inducing the growth of new bone. No one knows how much strontium we need; there is no dietary reference intake (DRI). It is not even included by the US Table of Essential Minerals. Official lists of human nutrients always lag at least 20 years behind the research because their compilation is driven more by politics than evidence. From the hundreds of studies over the last two decades, the Colgan Institute recommends 250 to 500 milligrams per day for all people at risk of losing bone, which includes women over 30 who’ve had three or more children, all women over 40 and all men over 50.

7. Vitamin D:

The chemical calciferol is still called vitamin D, one of the errors of 20th century nutrition science. The biochemical definition of a vitamin declares that it has to be a chemical that is not an element, which the body cannot make, and which is essential for health. We know now that the human body can make vitamin D easily in our skin when it is exposed to the ultra-violet part of sunlight. Calciferol (vitamin D) is an essential nutrient for calcium, phosphorus and magnesium absorption and metabolism, and for muscle contraction, energy production and im-

munity. We don’t need much, as calciferol makes up less than 0.1 percent of the body’s weight. The current DRI for calciferol is only 5 micrograms – 5 millionths of a gram. Five micrograms equals 200 IU, if measured in international units. The old RDA used to be 10 micrograms or 400 IU. Then the DRI got cut in half because those making decisions learned at medical school that too much vitamin D can be toxic. What they didn’t learn, or forgot, is that the research they used to justify their decision had been discarded as use-

less decades ago. The current DRI for vitamin D was set from studies of the relationship between calciferol intake and the active form of vitamin D in spot measurements of blood serum. There are many reasons why this measurement is incorrect. Blood is a transport mechanism. Amounts of vitamin D (and many other chemicals) therein bear little relation to the amounts being used in bones or tissues, or the amounts necessary for health. We don’t even know the “normal” levels of vitamin D in living bone, let alone the optimal level. It’s as inaccurate as taking random snapshots of cars on the freeway to calculate how many cars can operate in the city. There is overwhelming evidence that the DRI for vitamin D (5 micrograms) is woefully insufficient to maintain bones. Even the old RDA of 10 micrograms is insufficient. In studies, 10 micrograms failed to maintain vitamin D status, even in young, healthy Canadian women. Nor does it reduce fracture rates in osteoporosis. From studies since 1992, we have known that both men and women need a vitamin D supplement of at least 20 micrograms (800 IU) to increase bone mineral density and reduce fracture risk. Being fat-soluble, vitamin D is easily stored in the body and can build up to a toxic level. But the lowest observed adverse effects level (LOAEL) is 50 micrograms or 2,000 IU, 10 times the DRI. And the one person who reportedly had this adverse effect didn’t actually become ill. In controlled trials, subjects have taken 100 micrograms (4,000 IU) of vitamin D for months without any toxicity. The Colgan Institute recommends 20 to 30 micrograms (800 to 1,200 IU) of supplemental cholecalciferol (the most effective form of vitamin D3) daily, depending on gender, age, exercise levels and health history. Take 20 minutes a day in the sunshine. You don’t have to go naked; sleeveless is sufficient. It’s a free and effective strategy for making vitamin D.

8. Vitamin K:

Vitamin K is another essential player in the synergy of bone. It exists in the body in minute amounts and is required daily in the microgram range. Unlike vitamin D, which is available to the public in Western nations, health authorities in Canada do not know that strong bone is impossible without sufficient vitamin K. Con-


sequently they do not permit over-the-counter access to vitamin K supplements. Numerous scientists consider this restriction irresponsible. As a consultant to several health authorities, I have tried to convince them, but the excuse is always public safety. When courageous souls eventually listened in the US and allowed over-the-counter vitamin K, there was some political breath-holding, but there has not been a single case of vitamin K poisoning since. Understanding the necessity of vitamin K requires re-education for any physician over 40, because they were taught that vitamin K is the blood clotter – and we seem to have too much blood clotting. Fortunately, excess vitamin K is not responsible. This medical misconception of vitamin K function occurred when it was discovered by Henrik Dam in Denmark in 1920, and its function was recorded as “coagulation.” The name stuck and human requirements for vitamin K were calculated based on the amounts required to clot blood. We have known for 50 years that blood clotting is not controlled by the amount of vitamin K you ingest. The full story of vitamin K was published in 1988 by Paul Price, University of California (La Jolla). It is clear that blood coagulation is only one of its functions – probably a minor one. The major role of vitamin K is to make bone matrix proteins and their conversion into a form which binds calcium into crystals to create bone structure. No vitamin K – no bone. The daily amount of vitamin K used for bone is much greater than required for blood clotting. It is based on testing the amount of vitamin K required to make and convert the vitamin K-dependent proteins in bone into their final form. From the first controlled double-blind studies with this test in the mid-1990s, US health authorities made major advances. They discovered for example, that women with osteoporosis are all vitamin K deficient, and that this deficiency increases their risk of fracture by 600 percent! The US Institute of Medicine, which sets the DRIs, promptly more than doubled the daily requirement for vitamin K to 90 micrograms for women and to 120 micrograms for men. There are two main forms of vitamin K: phylloquinones (vitamin K1) found in green, leafy vegetables, and menaquinones (vitamin K2) found in meats and in fermented soy products such as natto. Vitamin K2 has proved more effective as a supplement for bone, although your body does have the ability to convert KI into K2. The Colgan Institute recommends 100 to 300 micrograms of supplemental vitamin K1, plus 240 to 480 micrograms of vitamin K2, depending on age, gender, exercise level and health history. One large body of evidence supporting vitamin K supplementation comes from many recent Japanese studies (2006 Japanese Population-Based Osteoporosis Study) using the menaquinone found in natto, or measuring the bone strength of people who use natto regularly in their diet. There is no

doubt that vitamin K saves bone, with only positive side effects on health. Even massive doses in studies were non-toxic (Sarah Cockayne and David Torgerson, at the University of York, England, used supplements of 15 to 45 milligrams of vitamin K2). None of these studies showed excess blood clotting or undesirable side effects. But they did show that vitamin K supplementation reduced hip fractures by 77 percent, vertebral fractures by 60 percent and all other fractures by 81 percent. If there was a non-toxic cancer drug that was one-tenth as effective, health authorities would be all over it. In fact,

osteopenia and osteoporosis are far more prevalent than cancer, cause far more suffering and cost more tax money to treat. Despite the facts, bone diseases are swept under the political rug, especially in Canada, largely because they are considered to be problems of old people. Wrong! You get your maximum bone strength between age 25 and 35. Unless you do something about it, it’s all downhill from there. References available from VISTA. An Inside Guide to Omega-3 By Joel Thuna

F

or the past few years, news items have described omega-3 fatty acids, as well as foods that contain them, as superfoods or wonder-foods or some magic elixir of life. A growing collection of solid clinical science gives credence to the concept that a generous daily dose of omega-3s provides a host of health benefits. Omega-3 fatty acids are called essential fatty acids because your body cannot manufacture them from other nutrients; you must obtain omega-3 from your diet. Omega-3 fatty acids come in three varieties: ALA, EPA and DHA. ALA (alpha-linolenic acid) is found primarily in dark green leafy vegetables, flax seeds, hemp seeds, walnuts and a variety of vegetable oils. Dark green vegetables, freshly ground flax seeds and raw walnuts are the richest sources of ALA. EPA (Eicosopentaenoic acid) is found primarily in cold water fish like salmon, cod, mackerel and tuna, and in smaller amounts in fresh seaweed. EPA is also found, albeit in significantly smaller amounts, in organically raised animal products like free range eggs, chickens and grass-fed beef. DHA (Docosahexaenoic acid) is found in the same foods as EPA. EPA and DHA are the most researched of the omega-3s. They are both biologically active and provide direct health benefits for the cardiovascular, nervous and cerebral systems. ALA provides health benefits through its conversion to the active forms of omega-3, DHA and EPA. Your body is able to convert ALA into EPA and DHA. So theoretically, if you are in excellent health and eat lots of dark green leafy vegetables, ground flax seeds and walnuts, your body should be able to produce EPA and DHA from ALA to provide numerous health benefits.

Is this just a theory or reality?

When you eat foods or supplements containing DHA and EPA, in effect you are skipping a step. You are allowing other animals (the fish and birds you eat, for example) to convert the ALA from their diets into DHA and EPA for your benefit! Historically, humans’ ability to convert ALA to DHA and EPA was not an issue. Regardless of where your ancestors lived, sources of all three omega-3s were part of their daily diet so they were able to meet all of their requirements from the food they were eating from their surroundings. Today, however, that is not the case, since few of us in the Western world get enough omega3s from our regular diet. Therefore, we are forced to supplement in the hopes of topping up our amounts to a respectable level. As the number of people following vegetarian, vegan and other special diets grows exponentially, these people may be forced to rely on ALA as their sole source of omega-3s in the hope that they can convert enough to get the DHA and EPA they require to be healthy. Some experts claim that humans don’t have a problem converting ALA found in plant foods to EPA and DHA, thereby suggesting that it is not essential to eat animal foods to receive an adequate dose of both EPA and DHA. Ultimately, the only way to know with certainty that you are converting enough ALA to EPA and DHA is to analyze your fatty acid “profile” with a specialized blood test. However, clinical evidence has shown that vegans don’t consume enough ALA to convert enough EPA and DHA. The research also shows that as you age, your ability to convert ALA to the biologically active forms of omega-3 decline. It is also important to note that these studies reveal that women are better at converting ALA than men.

How is it used?

The vast majority of ALA, over 60 percent, is oxidized (combines with oxygen in the body). Of the remaining 40 percent, the most is used to create cholesterol and non-essential fatty acids used in various reactions and processes. ALA also goes to organs including skin, fat tissue and muscle. Studies have shown that the maximum amount of ALA remaining to be converted into EPA and DHA is only 3 percent of the amount eaten. In other words, you would need to consume 1,000 milligrams of ALA to have only 30 milligrams available to convert to DHA and EPA.

* * Research shows that conversion from ALA to DHA (required for healthy brain development and function) is highest in preterm infants. This is to be expected because they need it for development of their brains and nervous system. Even they can only convert 12 percent of the ALA, at best. Healthy full-term infants are able to convert only 6 percent, as compared with healthy adults who are only able to convert 3 percent. This is not where the story ends. We also know that women are more efficient at converting ALA to DHA and EPA. This is due to a variety of factors. First, the conversion is far more efficient in the presence of estrogen. The effect is so dramatic that they have found significant differences in the same women at different points in their cycles (corresponding to varying levels of estrogen in their systems). Second, the way in which we use calories is a factor. Women tend to use carbohydrates as their primary source of energy, with their bodies preferring to store fatty acids, including omega-3s. Men will use what is available to them at the time of need, whether it is carbohydrates or fatty acids, for energy. This leads to men burning some of their ALA as energy before it ever has a chance to be converted to DHA or EPA. The combination of low conversion potential (often from food choices), declining conversion potential (due to age), and gender differences affecting potential (with men being naturally hampered by low estrogen) means that women are poor ALA converters and men are exceptionally poor converters. This is why researchers and regulatory bodies recommend eating a well-balanced diet to ensure you get enough DHA and EPA to meet your needs. If you are unable to get it directly from your food each day, supplement your diet with high quality omega-3. In part two of this article, I will explain what to look for and how to choose omega-3 supplements for maximum health benefits.

Ahi Tuna Steaks By Tracy Holly

I have prided myself on having a clean, healthy diet over the past 20 years. However since my husband, Cory, and I began traveling throughout the United States in an RV, my diet has become cleaner and simpler than ever before.

O

ne day I shopped at Trader Joe’s, a nationwide grocery outlet that has top quality fresh and frozen organic products at very reasonable prices. I picked up two large frozen Ahi tuna steaks (wildcaught yellow fin), plopped them in the sink, and they were thawed in no time. Each steak was approximately 120 grams (4 ounces) and the nutritional value totalled 26 grams of protein and only 1 gram of fat. This means that 92 percent of the fresh raw tuna calories are protein. It doesn’t get better than that! Fresh tuna (not canned) is a great bodybuilding food, literally. Every cell in the body will become stronger when you eat fresh tuna. It’s loaded with water, vitamins, minerals and essential fatty acids. You don’t need to eat much to feel full and satisfied.

Easy Ahi Tuna Steaks 2 Ahi tuna steaks 1 C filtered water 2 tbsp Bragg Liquid Aminos 1 tbsp garlic powder In a large skillet, add water and Bragg, and then stir in garlic power. Bring to a boil. Place Ahi steaks in the skillet and reduce heat to low. Turn over Ahi steaks when bottom turns beige colour. Repeat on other side. Ahi steaks should be rare (raw) in the centre. I served the Ahi steaks with a large organic spring mix salad topped with organic olive oil and balsamic vinegar. Leftover Ahi steak is a great snack right out of the fridge thinly sliced, or rolled up in a sheet of nori. It just doesn’t get easier than that.

Thankfully, modern scientific research has led to exciting new revelations that hold promise for the prevention and treatment of this major health issue. We now know that inflammatory “mediators� play a huge role in both prostate cancer and benign prostatic hyperplasia (also known as enlarged prostate). SEEK THE TRUTH their late 20s but are kept in check when inflammation, which is mediated by a specific enzyme known as 5-LOX, stays at low-normal levels. When the 5-LOX enzyme becomes elevated and comes into contact with excessive arachidonic acid in the body, it creates another acid called 5-HETE, which provides essential fuel for the survival of prostate cancer cells. Therefore, decreasing the levels of 5-HETE that is produced can “starve” prostate cancer. So how can we do this? There are several ways. First, it is important to limit consumption of arachidonic acid-producing foods like meat, corn and dairy, which increase the inflammatory and carcinogenic action that leads to the growth of cancer cells. Consuming enough anti-inflammatory omega-3 fatty acids in your diet is also essential in the form of fish, flax, hemp and other oils. Last, given the fact that increased levels of the 5-LOX enzyme result in creating 5-HETE, decreasing the effects of this enzyme is a must. The good news is that nature has provided us with herbs that contain potent 5-LOX modulators, meaning that they control and reduce the negative effects associated with this enzyme. Some of the most valuable 5-LOX modulators include saw palmetto, stinging nettle and green tea. Saw palmetto, the most popular and researched prostate-affecting herb, comes from a small palm tree native to the Atlantic seaboard. Studies show that saw palmetto helps to shrink enlarged prostates and reduce inflammation in prostate tissue. Supplementing with saw palmetto extract is advisable. However, research published in a German pharmaceutical journal shows that certain extraction processes are better than others. Supercritical fluid extract of saw palmetto yields a purer, more effective saw palmetto than conventional methods. This method was found to reduce inflammatory arachidonic acid and LOX inflammation. Saw palmetto also contains powerful compounds that interfere with the conversion of testosterone to DHT. Higher levels of DHT in the body are another key factor in the development of enlarged prostate and prostate cancer. Stinging nettle root is another well-known prostate-supporting herb, particularly in Europe, where it is commonly used to alleviate symptoms of enlarged prostate such as reduced urine flow, incomplete bladder emptying and a persistent urge to urinate, all of which stem from the enlarged gland pressing on the urethra (the tube that empties urine from the bladder). Laboratory studies have shown stinging nettle to be comparable to finasteride (a common drug used for prostatic hyperplasia) in slowing the growth of certain prostate cells. Stinging nettle root was also found to decrease growth of prostate cancer cells in clinical studies. It’s particularly beneficial when used in conjunction with saw palmetto. Green tea consumption is also of great benefit to prostate health. Scientific literature abounds with numerous studies indicating green tea’s preventative role in prostate cancer. One study of high risk individuals found that men who consumed a daily green tea preparation over the course of a year were 10 times less likely to develop prostate cancer than men who did not. Other valuable modulators of 5-LOX include pumpkin seed oil, a known symptom reliever for enlarged prostate; rosemary, a powerful antioxidant that protects prostate cells; and ginger, nature’s richest source of 5-LOX modulators and an important anti-inflammatory for general health. According to a 2001 report in Cancer Metastasis Review, substances that control or modulate 5-LOX may also reduce tumor cell movement, decrease tumor cell growth, and cause cancer cells to die. In other words, 5-LOX modulators not only decrease the growth and spread of cancer, they also help to destroy cancerous cells. Therefore these natural, cell-protective herbs offer an ideal strategy for defending your prostate.

www.vistamagonline.com we require on a daily basis has been a matter of debate for quite a while. We’ve all heard the stories of early sailors whose journeys had to be cut short due to scurvy. Time spent at sea was limited until the British discovered that scurvy could be avoided by carrying citrus fruits onboard, hence the term Limeys for our English friends. Vitamin C is required for the synthesis of collagen, that intercellular glue that keeps skin, lungs, arteries, the digestive tract and all organs intact. It is a potent anti-oxidant, protecting against free radicals, pollution, carcinogens, heavy metals, and other toxins. It is strongly anti-viral and mildly anti-bacterial. Energy cannot be made in any cell, brain or muscle without adequate supply of vitamin C. The adrenal glands have a high concentration of vitamin C, essential for stress hormone synthesis. So how important is vitamin C? Vitamin C is so central, in so many chemical reactions in the body, that without it, life is simply not possible. The question of whether liquids or pills are better has been going on for a while. In Europe, it is generally accepted that vitamins and supplements should be taken in liquid form. The New England Journal of Medicine recently published a report on calcium that stated, in order for calcium to be absorbed in sufficient quantities, it must be taken in a liquid form. It is generally thought that the gastrointestinal tract absorbs

liquid more easily than pills. It is reasonable to assume that a liquid form of vitamin C is much more acceptable, or bioavailable, to the body than the pill form. Taking vitamin C in liquid form becomes even more important in the summer as we all seem to be even more dehydrated than usual. Perhaps one of the most important functions of keeping hydrated is ensuring that our electrolytes are kept in balance. Electrolyte is the medical and scientific term for salts, specifically ions. Electrolytes are important because they are what your cells (especially nerve, heart, and muscle cells) use to maintain electrical communication across their cell membranes and to carry electrical impulses (nerve impulses, muscle contractions) across themselves and to other cells. Your kidneys work to keep the electrolyte concentrations in your blood constant despite changes in your body. For example, when you exercise heavily, you lose electrolytes in your sweat particularly sodium and potassium. The same also occurs when you are sick with the flu. When you are ill with flu or cold, your kidneys tend not to be able to keep up with the body’s demands for electrolytes, hence the experienced feelings of mental sluggishness, achy bones and muscles. These electrolytes must be replaced to keep the electrolyte concentrations of your body fluids constant. One of the benefits of vitamin C in the form of mineral ascorbate is that it is made up of these electrolytes, specifically po-

tassium, sodium, magnesium, and calcium. It is important to note that as spring comes alive and summer is around the corner, we must focus on constantly maintaining and replenishing our electrolytes. The more we sweat the more we need to drink fluids that will maintain electrolyte balance in our cells. When looking to supplement your electrolytes, try and stay away from sugary artificially flavored, and colored sports drinks, and stick with naturally occurring Vitamin C in the form of Mineral Ascorbates, that comes in powdered form. One of the most important electrolytes is potassium, which takes on a positive or negative charge that helps regulate blood pressure, muscle contraction and keep your bodily processes working right. Go Green to Defend Against Cancer By Vince Ziccarelli

W

e have all been reading about “going green,” and how helping to save our environment can also help to save ourselves from disease. This is true, but there is another way of “going green” that will help us avoid disease: eating more greens.

Greens prevent cancer

Overwhelming evidence clearly shows that consuming a higher intake of plant foods protects us from many forms of disease. A review study published in Cancer Causes Control, 1991, looked at a total of 13 ecological studies, nine cohort studies, and 115 case-control studies. It was shown that fruit and vegetables keep cancer at bay, particularly cancers of the epithelial tissue. Epithelial tissue forms the covering or lining of all internal and external body surfaces and includes skin and the tissue covering your organs. The anti-cancer effects of fruits and veggies were found in cancers of the lung, breast, colon, rectum, esophagus, larynx, oral cavity, stomach, pancreas, prostate, bladder, ovary, endometrium, cervix and thyroid. Although these benefits were associated with all forms of fruit and vegetables, the raw forms were shown to be especially protective. Plant foods contain a myriad of anti-cancer substances such as carotenoids, vitamin C, vitamin E, selenium, dietary fibre, indoles, phenols, protease inhibitors and plant sterols. These substances work in many ways to offset cancer development. For example, vitamin C prevents the formation of cancer-producing nitrosamines; phenols and carotenoids act as potent antioxidants, thereby reducing DNA damage; indoles and other sulphur compounds stimulate detoxification enzymes; and sterols improve cellular membrane integrity. The end result is a concerted effort to protect the body from cancer.

Greens strengthen the heart

Consuming more green leafy vegetables and vitamin C-rich fruit and vegetables appears to protect against heart disease. Epidemiological evidence shows that green vegetables and foods high in vitamin C can offer a significant risk reduction for heart disease, which can be complementary to medical treatment. For instance, evidence shows that a Mediterranean diet that is high in fruit, vegetables and omega-3 fatty acids (from fish, for example) substantially reduces recurrence of heart attacks over a fouryear period in persons with established heart disease. Another study of 459 adults with borderline hypertension showed that fruit and vegetables offer significant blood pressure lowering effects. It has been suggested that plant foods work in many ways to keep our heart healthy. Fruit and vegetables are also loaded with antioxidants, vitamins, minerals and fibre that work as a team to promote a healthier heart. Fibre helps to regulate or balance blood cholesterol levels, which slows down plaque development. Antioxidants reduce lipid oxidation, thereby preventing the internal rusting of the arteries. Lipid oxidation is a chemical process that occurs when fat cells combine with oxygen. This makes the cells unstable, which can be dangerous; oxidation of lipids (fats) in the blood is an important factor leading to heart disease. Green foods (meaning plant foods) provide high levels of essential minerals including potassium and magnesium that are well-known for reducing blood pressure and the risk for stroke.

Greens lower the risk for diabetes

Diabetes is a major problem in North America, and one that continues to grow. Fortunately, green foods may also help with this serious disease. A recent study of 504 male health professionals showed that a diet richer in whole foods including vegetables and fruit may help to reduce the risk for type 2 diabetes in men. The high levels of antioxidants provided by plant foods may also lessen the development of complications associated with diabetes. High blood sugar tends to increase the levels of oxidation in the body, causing damage to organs and tissues. Antioxidant foods, along with keeping blood sugars in check, can help protect against oxidation.

Greens build stronger bones

Fruit and vegetables are also well-known for their alkalizing properties. They contain considerable levels of alkaline minerals such as potassium, magnesium, calcium and many trace minerals. Bone mineral density (a marker for bone strength) may be compromised by diets that are high in acid-forming foods such as animal protein. The bone minerals act as a buffer in maintaining the blood pH at a healthy range, so when acids increase, bone minerals are released to keep acid levels in check. In a four-year observation study, it was found that a higher intake of fruit and vegetables rich in potassium and magnesium was associated with significantly better bone mineral density in men and women.

People are not eating enough

Even though most people know that plant foods are the best foods for health, many of us are not making the necessary changes to our lifestyle. A relatively recent survey reported that many Americans are far from eating enough dark green vegetables required for optimal nutrition. It was shown in the survey that dark green vegetable intake averaged 0.2 servings daily; red vegetable intake averaged 0.5 servings daily; and the intake of citrus fruits and berries averaged 0.8 servings daily. Clearly people are not eating enough.

Supplement your intake

Given the demands of daily living, it can be very difficult to eat balanced meals with enough fruit and vegetables. Simple strategies to include more greens are possible. It may take being more organized and packing a lunch and snacks including a variety of fruits and vegetables, which are very portable. Include a fruit and vegetable with every meal and your daily intake will dramatically improve. For added insurance, explore the use of a green food supplement with rich levels of dark green super-foods. f you’re a baby boomer, the painful truth is that you probably already have or will have arthritis. You are likely familiar with the word “arthritis,” but you may not recognize some tell-tale signs of its onslaught. What are they? Your fingers feel stiff, your knees hurt when you bend, there’s a nagging pain in your shoulder, or your hip begins to ache when you walk more than a block. Arthritic diseases have a variety of possible causes, often associated with age, injury or chronic musculoskeletal over-use. Arthritis can also be caused by skeletal structural abnormalities, calcium build-up and/or the formation of uric acid crystals in the joints. Immune system dysfunction, infection of the joint or an infection of the kidneys, heart, liver, thyroid or lungs can all contribute to arthritic disorders. Many products such as glucosamine, chondroitin and MSM (methyl sulfonyl methane), have been on the market for several years as treatments for arthritis. Historically, this was used in the cosmetic industry because of its ability to act as a lubricant. As a fatty acid ester, it appears to have the same characteristics as the essential fatty acids, linoleic and alpha linolenic acids, except myristin is stronger and longer lasting. These fats are referred to as essential fatty acids (EFAs) because the human body cannot make them and we must ingest them from our diet. The use of EFAs over an extended period of time has been shown to decrease arthritic pain and inflammation and improve mobility.

Hyaluronic acid

Hyaluronic acid (HA) plays an integral role in maintaining and regulating moisture within the tissues and helps to both transport nutrients into the cells and remove metabolic waste. HA is found in all of the body’s tissues, with the highest concentrations located in the extra-cellular matrix of the skin and the synovial fluid that bathes the joints and cartilage.

White willow bark extract

White willow bark contains salicin, which the body converts to salicylic acid. It has the same effect as aspirin without the side effects; specifically, it helps to relieve pain associated with inflammatory conditions like rheumatism and arthritis. Bamboo: The Amazing Grass I

think my father has always regretted the day he planted bamboo in the front yard of the house I grew up in, much the same way he did when he planted prickly pear cactus. I love my dear old dad, but what the heck was he thinking? The bamboo became somewhat of a monster, sending out runners and shoots throughout much of the yard, dozens of feet away from the main plant. These young shoots were like spears that threatened anyone in bare feet. No matter what he did – hacking, digging, poisoning, depriving it of water – this thing just couldn’t be killed; in fact, each attempt seemed to make it say “in your face, sucker!” and only spurred it on. This resilience, though it can be frustrating, is also what makes bamboo such a wonderful plant. Bamboo, a type of grass, consists of approximately 1,400 species. I don’t remember the type that we had, but I think it was a four-letter word my father used to utter each time he looked at it. The attributes vary between species, but generally speaking, it is pest (and dad) resistant, can grow in poor soils and, in comparison to other crops, requires little water. When we think of bamboo, we usually think of Asia; but of all the species, 900 are tropical and 500 are temperate. North America has species of bamboo in the Eastern and Southeastern US and Western Canada. There are several species native to Australia. Bamboo is the world’s fastest growing plant, with some species growing up to a foot per day in the right conditions. It’s this amazing growth rate, coupled with the “spear” type shoot I mentioned, that led it to its unfortunate use as a torture device – the methods of use I won’t go into.

,roofing, scaffold, tableware, toilets, toothpicks, toys, umbrellas and walking sticks…and that only scratches the surface. There also appears to be some medicinal applications for bamboo, and even perfume is being made from the stuff! Another important use for bamboo is food. The shoots are used in many Asian countries as a vegetable that is eaten raw, steamed or boiled. I can’t say I’m a big fan of it, but given a choice between a bowl of bamboo shoots and a bowl of twigs, I’d certainly opt for the bamboo. People in China make beer from bamboo, which I’ve read is quite palatable. It may also be useful in production of cellulosic ethanol for fuel. Bamboo: you can wear it; you can eat it; you can build with it. It may increasingly replace plastics and wood products. What a marvellous gift from nature! Consider bamboo alternatives when purchasing items. There is debate about the exploitation of bamboo, the fact that shipping from the source to consumers results in environmental impact and associated production processes of bamboo goods. However it is readily renewable, doesn’t require pesticides or herbicides, is sustainable and still seems to have less environmental impact than chemical-ridden crops, destruction of old growth forests, and petroleum-derived materials. Cousteau on the Ocean Crisis Jean-Michel Cousteau was “thrown overboard” by his father at age seven with newly invented scuba gear on his back, and since then he has spent as much time on and under the water as he has on land. Son of renowned explorer Jacques Cousteau, Jean-Michel is an explorer, environmentalist, educator and film producer who travels the world’s oceans with a mandate to protect them.

ousteau founded Ocean Futures Society, a marine conservation organization that takes its message to everyone from children to world leaders across the globe. Cousteau has produced over 70 films, including the documentary Return to the Amazon, on the health of the Amazon jungle and waterways, which was recently broadcast across Canada on PBS. Cousteau, who has spent his life communicating his love and concern for our water-dependent planet (and raised two children who continue his and his father’s work), spoke passionately at lectures in Vancouver and Toronto at The Green Living Show. Here are excerpts of his lecture about how oceans affect our lives.

All water is connected

Cousteau states, “The world’s water is our life support system. We’re all connected to the ocean no matter where we live, and completely depend on its health for our own health. All water, whether it is salt or fresh water, is connected because the ocean’s water evaporates into the atmosphere, becomes snow on the mountains, melts and trickles down the mountains into rivers and streams and is then carried back into the ocean. And it arrives there with everything toxic that we put into it, because we continue to use the ocean as a garbage can.”

How oceans affect weather

Cousteau explains that on the Andes Mountains, located from Chile to Venezuela, glaciers melt and flow down the mountains until they reach

the Amazon River, which continues to the Atlantic. In another part of the world, the Missouri River in Milwaukee becomes the Mississippi River, which supplies water to more than 65 percent of the US, and continues to the Gulf of Mexico. How are these two parts of the world connected? The currents which travel north bring fresh water from the Andes and Amazon up to the Gulf of Mexico. And at the other end, fresh water from the Mississippi and Gulf of Mexico is taken by currents down toward the Amazon. Some of this combined warm water is then taken further north in the Atlantic by the Gulf Stream which plays a critical role in Europe’s weather. But as glaciers above Greenland increasingly melt, this cold water travels to the Gulf Stream and competes with the warm water there, cooling it. This, says Cousteau, will dramatically affect the weather, causing it to become extremely cold throughout Western Europe in the years ahead. Melting glaciers aren’t really about global “warming;” they’re about climate change.

Andes glaciers support millions

Back to South America: the Andes’ glaciers are melting faster than they can be built back up, with devastating affects on Peru, which sits at the mountains’ base. Lima, Peru, has approximately 9 million people who rely on the drinking water that comes from the Andes. All electrical power that serves the city (and others) comes from this glacial water. Scientists predict that within 15 to 20 years, the glaciers there will be gone. So the government and corporations have concluded that in order to save Peru’s people, they will do extensive drilling for oil in the Amazon rainforest to supply

corruption and pollution of the waters taking place, unlike in the past, the people there are trying to make a difference. There are major efforts to reforest where there has been deforestation, though 17 percent (an area the size of Alberta) has already been clearcut.

The fish farming dilemma

power, and build massive pipelines from the Amazon (resulting in mass CO2 emissions from new power plants). They will build a second pipeline to bring fresh drinking water from the Amazon River. There are obvious problems — it requires 20 litres of fresh water to make one litre of oil. As the Amazon’s water is used to produce oil, this polluted water will then get released back into the environment, contaminating the soil, drinking water, and everything up the food chain to the people living there. Approximately 20 percent of world’s fresh water comes from the Amazon.

The Amazon today

Cousteau discusses his latest adventure. “Two days ago I was at the mouth of the Amazon River. My son, Fabien, daughter, Céline, and I returned there to get a status report on the changes that have occurred since my father and I were there 25 years ago, and explored its entire length. We traveled up murky black waters caused by deforestation that was done for cattle and massive crop farms. We found that it is a life and death struggle for the wildlife and the people who live there.” It’s difficult to imagine just how large the Amazon is; ten of its tributaries are as big as the Mississippi (which is much larger than the St. Lawrence River in Canada). There are between 3,500 and 5,000 species of fish there, more than in the Atlantic ocean. Many may become extinct before we even know they exist, not to mention the many plant species in the rainforest being lost which may have helped to heal human diseases. His prognosis wasn’t all bleak. Although there is still much deforestation,

New aquaculture (fish farming) projects are successful in the Amazon because they are very different than those in North America. He explains, “I believe in fish farming, but we are farming the wrong fish. It is absurd to farm salmon, which are carnivores. We need to farm herbivores, just like we do on land with cows and chickens. We have to catch wild creatures to feed the imprisoned salmon, and it takes approximately 60 kilograms of other living things (from fish to plankton) to produce 1 kilogram of salmon. If I was an investor, I wouldn’t think that was very efficient. In spoiled rich countries we can afford to, but we are not going to save other populations with salmon because the investment is much too high. In the Amazon they farm a delicious type of herbivore and it requires 1.4 kilos of vegetable material to produce 1 kilo of fish.” He mentions our other fish-farming problems. “We were told when salmon farming began that they would not escape. They do escape. We were told that they would not breed with other species. They do mate with others, beyond the fourth or fifth generation, and we may be creating monsters. Most fish farms are located on the ocean. Approximately 85 percent of antibiotics, manmade vitamins and colourants used in fish farming get eaten and absorbed by the fish, and the rest falls through the nets. This particularly affects crabs, lobsters and shrimp. The amount of untreated sewage that is being produced by farmed fish represents a city of 100,000 people. Why do we treat ours and not theirs? On land we’re able to input conservation efforts; we can avoid release of parasites to wild species; we aren’t at the mercy of an accident such as Exxon Valdez killing everything including our investment; and we can offer consumers fresh fish rather than that frozen for months from the sea. Cousteau has seen evidence that we are emptying the ocean of its resources, harvesting anything that we find, much of which is juvenile and therefore hasn’t had a chance to reproduce. In poor areas of Asia people desperate to feed their families are using dynamite on corral reefs, which sustain all ocean creatures, to kill and bring a few fish to the surface, destroying all that survives on the reef and the reef itself. Others are using cyanide, killing everything in the reef to get the fish (which then contains cyanide). This is why he believes that fish farming is the future to feeding our planet. Cousteau concludes, “It is easy to see how our life support system is being threatened around the world and unless we take drastic measures it will become a major issue in our future. I have realized that people protect what they love. All we have to do is to get people to care enough to make changes, and though time is of the essence, with the help of young minds that are working for solutions, I feel that we can slow down the process, and perhaps allow future generations to have the quality of life that we have had. But it’s going to take a lot of work.”

oday, as farmers force greater fruit and vegetable yields from the soil with excessive amounts of fertilizer, pesticide and fungicide, this destroys the vital microorganisms that are essential in creating the fulvic acid that converts minerals to plant food. Sick soil means sick plants, which means sick humans. The USDA’s studies have shown a 25 to 80 percent decline in minerals in the food we eat. The US Senate Document (#2641936) states, “The alarming fact is that foods, fruits, vegetables and grains, now being raised on millions of acres of land, no longer contain necessary levels of essential minerals. They are starving us, no matter how much we eat.� Our bodies have little chance of maintaining good health, particularly as we age, if they’re consistently deprived of the fuel needed to function. Although diseases may appear suddenly, the truth is that they are the result of years of deficiency (undetected because they start at a cellular level) that could have been avoided or reversed through supplying adequate minerals and vitamins. What are humic acid and fulvic acids?

Humic acid is made from a mixture of partially decomposed organic materials, and fulvic acid is actually a type (subclass) of humic acid. Fulvic acid is an organic substance, and the smallest water-soluble material on Earth. It makes minerals and vitamins more absorbable by refining, purifying and combining them into organic, ionic forms that are easily transported into our cells. It dissolves and bonds nutrients into its own structure so they can be absorbed, and is so powerful that one fulvic molecule can carry over 60 minerals into cells. Some scientists think that fulvic acid is tiny fragments of DNA from past generations of living organisms left behind to ensure life continues. Fulvic acid is also the most powerful and versatile antioxidant known to science. This is because it can neutralize both types of free radicals (a molecule that has either a positively or negatively charged electron). This differs from most antioxidants. It also contains phytochemicals, nutrients, enzymes, hormones, and amino acids, in addition to having antibiotic, antiviral and an-

tifungal properties. It has also been found necessary for metabolism. For centuries, Native Americans have taken fulvic mineral solutions to cleanse the inner body. This is because fulvic acid can also chelate (pronounced kee-late) – attach to and carry unwanted substances out of the body as waste. Fulvic acid has the ability to turn bad guys into good guys by rebalancing free radicals so that they make up part of a nutrient. If the free radical is of no benefit, it is chelated. Fulvic acid can remove heavy metals from the body in the same way. Electrical energy within our cells is the life force of the body (cells die when electrical energy is reduced). Scientists believe that electrical balances within the cell can be controlled by electrolytes—the body’s mini battery chargers. Fulvic acid is said to be one of the most powerful electrolytes, able to restore the electricity in the cell by recharging, regulating and delivering its own living energy to cells. It is also used to rid the body of poisons, heavy metals, fungus, parasites and pollutants.
