Talk to the Chef unveils a local star with a strong pedigree. “Saawaan” opened in early 2018 and I was lucky enough to try it early on. Within its first year it won a Michelin Star. Chef Aom tells her tale, her inspirations and her desire to keep the traditions of street food alive. By using a traditional approach and incorporating her life experiences she has created a unique dining experience.

Talking about street food. There is no question that Bangkok and Thailand has the best in the world. When the first Michelin guide was released I was sure that one vendor would receive a star and I had my money on Jay Fai. However, there is so much more variety and in many different locations. Value for money is amazing and if you go to the right locations you can have a feast on your table. There is no doubt that Thai cuisine is one of the best. You will really see and taste the freshness and vitality on your fork and spoon.

Have you ever heard of Afro-Japanese or Afrasian…….. South Africa has been a culinary bubble waiting to burst. The fertile areas of Cape Town have given the stage for Chef Peter Tempelhoff along with Ashley Moss the stage for him to build a budding gastronomic empire. He and his team are creating a very interesting and different way of using local produce paired with Asian and Japanese ingredients.

This concept is not just in the food but also utensils and elements of the restaurant design.

Also there are plenty of recipes and other stories, including an update from Michelin in California that feature throughout the magazine.

Heaven

on a Plate Shocked and stunned are the words 33-year-old Sujira ‘Aom’ Pongmorn uses to describe her reaction when it was announced that Saawaan, the fine dining restaurant where she is Chef de Cuisine and co-owner, was to receive a star in the 2019 edition of Thailand’s Michelin Guide. Those who were neither shocked nor stunned were the legions of loyal customers who have been frequenting this intimate, 24-seat restaurant on Bangkok’s Soi Suan Phlu since it first opened its doors in April of 2018.

The Thai word saawaan translates as “heaven”, although Chef Aom points out that at her restaurant it’s more like “heaven at night,” referring to the hours of operation (daily from 6pm till midnight), the low lighting, and the black wall adorned with fanciful golden clouds. Here diners partake in a 9-course, set menu culinary journey in which each course is named after a traditional Thai cooking style, such as raw, fermented, boiled, stir-fried, charcoaled, and so on. Essentially it’s a gourmet interpretation of Thailand’s common street food and rural fare, reimagined with top quality ingredients and high-end presentations.

“I like street food so much,” Chef Aom explains, adding that she gets a lot of inspiration from her nation’s humble local dishes.

“But some street food is disappearing or fading away because of changing laws, and I don’t want to let them die. That’s why I want to dress them up, and make them in a new way.”

Aom certainly knows her stuff when it comes to traditional Thai fare. Her parents ran a small restaurant in Bangkok and she recalls that when she was six her father taught her how to make a Thai omlette. She instantly fell in love with cooking, even

though at that age she had no idea it could also be a career.

At the age of 18, after completing high school, she enrolled in the Mandarin Oriental Bangkok hotel’s chef school apprenticeship program, studying international cuisine and later working at the hotel’s Lord Jim restaurant, and on occasion at their renowned French restaurant Le Normandie. It was at Le Normandie that she trained briefly with guest chef Juan Amador.

“I only trained with him for a week, but I learned so much,” she recalls.

Her next mentor would be Chef Henrik Yde Andersen at Sra Bua

by Kiin Kiin, who introduced her to the mind-bending world of molecular gastronomy. After a year at Sra Bua she moved on to the Issaya Siamese Club, followed by a stint at TWG—where she learned about tea and food pairing—and then on to join the pre-opening team at W Hotel’s House on Sathorn, under the guidance of Chef Fatih Tutak.

Working in Bangkok with such amazing kitchen talent was a priceless education, and it paved the way for Chef Aom to eventually open her very own restaurant. In 2016, with the backing of local restaurateur Frederic Meyer, she launched Baan 13

Phadthai, putting a gourmet spin on Thailand’s iconic wok-fried noodle dish. It proved to be a huge success, but even after two years of acclaim Aom still needed some encouragement to take her next big step and enter the big leagues of fine dining—a very different ball game, and one that is traditionally maledominated.

“I did feel intimidated,” she confesses, “but Frederic said to me ‘Why not? You can cook. You don’t have to stay in your corner.

Why don’t you go out and grab it?’ That was my motivation for Saawaan.”

From day one the set menu dinners at Saawaan were garnering 14

rave reviews, but Chef Aom continues to experiment, revamping her line-up approximately every five months. One menu item, however, that has remained a constant is the rice paddy crab dip with sticky rice, a dish inspired by a chance meeting with local farmers during a visit to Nakhom Phatom province (where Saawaan owns and operates its own organic farm).

In her interpretation the tasty crab fat is mixed with herbs and homemade curry, and then grilled in the crab shell and served alongside coconut steamed sticky rice. It’s a dish that Aom says truly exemplifies what she’s trying to do in the sense of preserving these oft forgotten, traditional rural delicacies.

“The flavour is so special,” she gushes, explaining how rice paddy crab differs greatly from mud crab or blue swimmer crab, both of which are more commonly used in Thai cuisine.

“And you have to know how to take out the fat, because inside the crab they have the—how can I say it?—the ‘shit bag’ inbetween there and you have to know how to remove it and not break it,” she goes on to say, as we both burst out laughing at her colloquial, but unquestionably apt, description of the poor crustacean’s digestive tract.

Another dish that underscores Aom’s mission to preserve traditional recipes is the charcoaled quail, served with an

incredibly delicious, but decidedly untraditional som tum (papaya salad) reduction jus. Aom explains that as a child she remembers deep-fried quail being commonplace but not so much now, mainly because the birds are small, bony, and without much meat. To counter that perception, her birds are raised free-range—at the farm in Nakhon Phatom—and fed a healthy mix of grains and coconut. When they arrive on the plate they’re plump, tasty, and beautifully roasted.

On a menu filled with nothing but highlights it’s hard to choose favourites, but my picks would probably include: the one-bite raw sea urchin starter, with Thai madan fruit and homemade 15

chili jam; the fermented black pork with pickled cucumber and Thai herbs; and the wonderfully satisfying curry course, consisting of Andaman black grouper in Penang curry, sided with jasmine rice from Phayao province and an indescribably good char-grilled eggplant. Heaven on a plate indeed!

For those with a sweet tooth, the other version of heaven on a plate will be the divine desserts and petit fours at Saawaan, which are the creations of award-winning pastry chef Arisara 'Paper' Chongphanitkul (a graduate of the Gastronomicom culinary school in France). Chef Aom and Chef Paper became acquainted when they were both working at Issaya Siamese Club, and for Aom it was an easy decision to make when it came to who would be in charge of the sweets at her new restaurant.

“In Thai we say sabai jai,” she tells me, explaining the comfortable, relaxed, almost sisterly feeling she experiences working with Paper. “We are matching. I also think her talent is the most interesting. For me she’s the best pastry chef in Bangkok.”

At Sawaan everything seems to be a match made in heaven, and that also extends to the superb course-by-course wine pairing available with dinner. Alternatively, guests can choose the expertly curated course-by-course tea pairing, which features all Thai-grown, wild leaf teas.

The mid-morning sun came into the lounge on the 9th floor. Outside of the hotel in the Bangkok city center, the foliage was drying off from an early shower. Sitting right beside Lumpini park, SO Sofitel Bangkok, the hotel was more than awake, it was bustling. The lounge was sprinkled with guests who sat on plush couches either happily fed from the morning breakfast, or wide-eyed from their coffee.

As the day began the SO GM, Jean – Francois Brun walked the floor.

“I always, always, always walk the floor,” he said. “To me, it’s a habit. I will start and end the day the same way. I walk the property before the operations meeting.

I walk to breakfast. I walk to our Club Signature. You need to make sure the operation is going well. To check the vibe of the guests and to try to connect directly with them.”

Dressed in a contemporary suit, splashed with small dots the Canadian expatriate is well used to walking the floor. He’s been with Accor Hotels, the French Multinational hospitality company for over six years.

Originally coming to Vietnam on vacation, he began working for Premier Village in Danang, known for its sandy beaches and central location. Despite just recently opened, the resort at the time was struggling, as there was a high turnover with the management and a lack of cohesion with the strategy. A sound game plan was imperative for the large complex.

“The big picture, the resort wasn’t completed. There wasn’t a proper strategy. We created a number of initiatives to elevate the service, the entire experience and to simply get known” Brun said.

In addition to creating resort hosts, Brun shaped many of the four-bedroom villas into three, two or one bedrooms. This created a larger net for more guests.

The increased service and greater reach quickly turned the location around and what was originally the black sheep of the company quickly became a favorite and the leader of guest satisfaction on TripAdvisor.

Following the success of this first Premier Village, it lead to open a second one, even bigger, better and more complexed; this time on the island of Phu Quoc, Vietnam. The massive Premier Village Phu Quoc resort is over four kilometers long with a private road to the resort that is five kilometers long. It is seen as the Maldives of Vietnam, truly a gem and it was an absolute pleasure to prepare and open this new resort.

him move to Bangkok. With the job done in Danang and Phu Quoc, SO Jeff was tapped to be the new general manager by the founding general manager of the brand, Gilles Cretallaz, who is now Vice President of Luxury Brands in several regions of Asia.

“The hotel is the first urban flagship of the company for the luxury lifestyle,” Brun said. I was privileged to be offered to take on the SO/ Bangkok and SO/ experience… two months later I am on the job.”

Of course, there were changes for Brun.

The space in which he walked differed.

The Bangkok location is in a city center and is an entirely different ecosystem. It is known the environment very well that matters no matter where he goes for Brun. This is especially important as the guests are highly loyal and many are long term repeats.

“My third day here I met a guest who it was his 100th stay at the hotel,” Brun said. “That is his 100th arrival. He’s been staying almost 300 days, almost an entire year.” How impressive this is for a General Manager According to Brun, the guests come back to the hotel and the team. The décor, the proactive design even down to the uniform all reinforce the luxury feel. The staff is the other essential ingredient as well they are the ones that make the guests feel like family, knowing the details of their partner’s name, their favorite dishes, and the little idiosyncrasies that make people unique.

“Behind the scenes, luxury is a finetuned machine that doesn’t happen by accident,” Brun said “Every day we review our guests. We screen them. We keep track of what they like and don’t like. It’s a very fine-tuned operation.”

Brun’s daily walks have him constantly inspecting the intricate machinery of the hotel and he always begins with the famous morning breakfast. Brun was clear with how important breakfast was.

“Every single one of the guests will try breakfast. If you cannot impress them by breakfast they will not be impressed by anything else,” he said.

Getting a good first impression is important especially since the hotel has six different outlets for wine and dining, Red Oven, Park Society, HI-SO, KOF, Chocolab, and Mixo. These operations mix with the guests and draw in outside clientele with innovative events such as Cheese@SO, SO Fit SO Fun Run, and Drag Me at SO among so many others.

The first event draws cheese lovers from around the city as goods from around the world are collected and sampled by guests and customers.

“The elevators doors open you cannot have more of a scent of cheese in the lobby. It’s absolutely amazing.” Brun said.

“Wine and Dine is SO connected to the experience of the guest.”

The hotel has also put together a wellness initiative and one of the biggest events of the year as more than 1200 participants gathered together to run 5k-10k around Lumpini park. All proceeds from the event were given to two charities, BaanGerda and Hands Across The Water to support children in need across Thailand. The event is expected to reach new heights next year with a predicted participant number of 2000.

Other events included Drag Me at SO, a Pride event held on the top floor of the hotel. The event came first and foremost from the staff and is part of the playful theme to the hotel.

“It was a public party on the top floor that 24

had a Drag Queen parade. The whole spectrum of people. One of the MC’s was a host of the restaurant,” Brun said. “The playful side of SO Sofitel Bangkok comes from letting each our ambassador’s express themselves in their own way. Be SO but don’t forget to be yourself.”

The playful side of the hotel is also expressed in the monthly pool party in the heart of the city, SO Pool Party.

“It is a well-known pool party,” Brun said. Throughout each event, we have over 750 guests, 2 DJs, and a great ambiance.”

The playful side has gotten serious with Red Oven as recently chef Kenny Karlsson has taken over. He has reviewed the menu and offerings and come to the position with more maturity and experience.

“He’s taken a really on the floor approach,” Brun said. “It has a very guest-centric experience. He comes out

of the kitchen. Luxury doesn’t have to be all deconstructed cuisine. In a nutshell it's run very smoothly but very fresh.”

While Red Oven has been renovated with the new chef there will also be changes with Park Society. The dramatic changes will be complete before the festive season.

“You won’t even recognize it. The owner is very supportive and cheerful,” Brun said. “We really want to make our mark in with this.”

By the end of the night, Brun is on the top floor of the building. Walking the rooftop bar, enjoying the guests’ company and the city landscape.

“It’s a fantastic team to be working with Accor. We keep growing at a pace that is unbelievable. It’s one of the most fantastic companies to work for,” Brun said.

Having covered the entirety of SO Sofitel Bangkok, Brun is keeping pace with the growing luxury brand and market. Chef

If you live in Thailand, and particularly if you live in Bangkok, you’ll know that the term “street food” has a very elastic definition. In its broadest sense it has less to do with where the food is being served, and more to do with what is being served, how much it costs, and the casual nature of the setting.

At its core, street food is the simple, often humble comfort food that regular Thai people eat on a regular basis. Whether it incorporates noodles, rice, meat, fish or vegetables, it’s invariably cheap, flavourful, and usually ready in a few minutes or less.

Street vendors pushing wheeled carts full of ready-made snacks such as moo ping (marinated BBQ pork on a skewer) represent street food in its purest form, as theirs is a simple “grab and go” dining experience. Pushcart vendors who set up regularly 30

on public sidewalk space, and assemble a few folding tables and plastic stools around their cart, bring street food to its next level by offering customers an actual place to sit-down. Finally there’s the no-frills, fixed address restaurants that are partially or fully open to the streets, and often have a few tables and chairs—and sometimes even the whole kitchen—spilling out onto their sidewalk space. For some ultra purists only the first two can strictly be considered street food, but for foodies simply interested to know who makes the best pad Thai in town, it’s only relevant whether there’s a roof overhead or not during the rainy season.

Interestingly, this “what is and isn’t street food?” argument was raised in earnest in November of 2017 when Michelin launched the first Thailand edition of their famous guidebook. Within its

pages a chapter was given over to Bangkok’s best street food, but due to Michelin’s criteria that all award winners must have a fixed address almost no cart vendors could be included on the list. Meanwhile, some argued that Raan Jay Fai, the lone street food eatery awarded an actual Michelin star, could hardly be considered street food anymore since their signature crab omlette was priced at a whopping THB 1,000 (around US$32), which is more than some entrées at Bangkok’s five-star hotels!

Regardless of the ensuing debates, Chef Jay Fai’s newfound stardom through Michelin immediately intensified worldwide interest in Thailand’s street food scene. To this day her bare bones shophouse eatery at 327 Maha Chai Road, in the heart of Bangkok’s Old Town, has a three-month long waiting list. And with the airing of the new Netflix series Street Food, in which

The Queen of Curbside Cuisine Episode One shines a massive spotlight on this 75-year-old queen of curbside cuisine, the demand for a table at Raan Jay Fai has never been greater.

So is it worth it? Can it possibly live up to the hype? Well, if you can endure the long waits and stiff prices then definitely, yes!

The dishes themselves are everything Thai street food can and should be—spicy, fragrant, perfectly cooked, and bursting with flavour. The hefty price tags are simply the result of Chef Jay Fai’s insistence that all of the ingredients and produce used must be of the best quality, and that doesn’t come cheap (even in Thailand).

Enjoying Chef Jay Fai’s cuisine is the easy part; the hard part is actually scoring one of the mere half dozen tables at any given hour of the day. If you’re not on the advanced waiting list you 32

are allowed to join the daily queue of hopefuls trying to snag any last minute spots that might come available. This involves showing up in person at 11am, putting your name on a numbered waiting list, and then returning at 2pm, when the restaurant opens for business, and waiting for your number to be called.

Our party of four dutifully followed the outlined procedure, ending up at #20 on the day’s list and finally getting seated at 6:20pm. By that time we were starving, which made the food taste even better.

During our four-hour wait we took turns venturing off to explore the surrounding Old Town area, but as number 20 got closer and closer to being called we diligently stayed put. It was interesting at that point to observe the assembled crowd of like-minded hopefuls, who by and large were young (20s and

30s) and seemed to represent every corner of the globe judging from the languages we detected—German, Japanese, Chinese, Spanish, Filipino, and most variations of English.

The wait time also allows for ample viewing of Chef Jay Fai herself, who works in an open-air cooking area that faces the street. It’s here, with her trademark aviator goggles firmly strapped on, that she toils five nights a week—Tuesday through Saturday, from 2pm till midnight—over a trio of open flame burners. It’s less like a kitchen and more like a triage unit, where food orders come in at a furious pace and Jay Fai deftly handles each emergency in turn; her sizzling hot woks, pots, and pans churning out an unending series of perfectly browned crab omlettes, piping hot orders of stir-fried noodles, and steaming bowls of seafood tom yum soup (just a few of the many items on 33

her varied menu). She is aided by a handful of assistants that flit back and forth, delivering this or taking away that, while she herself remains firmly rooted in place, always within an arm’s length of the bright orange flames.

When our number is called, and we finally get seated, we greedily order six ample entrées, including two of the signature crab omlettes. The torpedo-shaped omlettes arrive at the table first, and they are huge. Cutting them open lengthwise reveals a fleshy white interior made up almost entirely of plump, tender chunks of fresh Nakhon Si Thammarat crab. It’s so good that we immediately forget the drudgery of our tedious, four-and-a-halfhour wait. Somehow, it’s all been worth it.

The sharing portion dishes that follow include a plate of yummy yellow crab curry (which is even more expensive than the omlette), Jay Fai’s signature “drunken noodles” with seafood, a heaping cauldron of super spicy tom yum soup with jumbo prawns and perfectly cooked squid rings, and a tasty fried rice dish. The servings are big, and we can barely finish it all, and when the final bill comes the meal plus drinks clocks in at just over THB 2,000 per person (around US$64). Yes, it’s the most 34

Bangkok Battles Street Food Ban Back in 2016 Bangkok residents first started to hear about the Bangkok Metropolitan Administration’s (BMA) plan to remove street food hawkers from certain downtown streets. The situation got worse in March of 2017 when the BMA announced that vendors in three popular upscale neighborhoods— Thonglor, Ekkamai, and Phra Khanong—had until mid-April to pack up and move on. A short time later the BMA was reported to have announced that street food would be eradicated from all 50 districts by the end of the year, although they quickly backpedalled on the issue, hastily telling a CNN reporter that their representative had been misquoted.

To 99.9% of the city’s population it seemed unthinkable that there was suddenly a government sponsored “war on street food”, and the public outcry was fierce. Since that time only a handful of Bangkok’s street food hot spots have been wiped out entirely—which is still a handful too many—and for the most part the average residential city street is still lined with enough food carts to keep the local citizenry from starving.

The question remains why stamping out this vital aspect of daily life in Thailand seems a sane path for the BMA to pursue, especially since worldwide interest in street food has never been

I’ve ever spent on street food since moving to Thailand 10 years ago, but it’s the street food experience that I will now measure all others against.

Before leaving I chat briefly with Jay Fai’s daughter, Yuawadee Junsuta, as Jay Fai herself doesn’t—and to be honest, couldn’t— give interviews during work hours while she’s frantically cooking.

I ask Yuawadee if her septuagenarian mother ever thinks this has all become too much, and wants to hang up her apron and retire.

“No,” she answers without hesitation. “She’s never said that.

She wants to keep going.”

We then talk about the impact of the new Netflix show, which Yuawadee—who quit her day job to assist in her mother’s restaurant full time—admits has been attracting a somewhat younger demographic. I ask if TV fame has resulted in bigger crowds than what she witnessed after the Michelin win.

“I don’t think it’s a lot more,” she replies. “I think it’s pretty similar. But because we experienced what happened with Michelin before, after Netflix we were pretty much prepared for it.” Chef

In a nutshell, the real problem has to do with the taxes that the no-fixed-address street vendors allegedly don’t pay, although the BMA usually cites hygiene concerns as the primary need for regulation. It’s quite a ridiculous excuse as Bangkok’s true hygiene and cleanliness problems are the filthy canals and rivers, the toxic polluted air, and the impromptu garbage dumps found in every vacant lot.

It’s probably safe to say that in this lifetime street food won’t completely disappear from the thoroughfares of Bangkok, but it will get slowly pushed further and further to the fringes in certain upmarket areas; leaving in its wake a surfeit of bland, chain restaurants and soulless faux bistros that will likely have more staff than customers.

International Editor Namai Bishop travels to Portugal’s Vila Vita Fine Wine & Food Fair 2019 to meet Portugal’s most notable Chefs and Chef Thomas Allan bringing his taste of NYC to sunny Algarve!

Airport Calamity!

“It looked like the larder exploded!” Says Chef Thomas Allan of his arrival into Southern Portugal from his transatlantic flight from NYC. “You should have seen the customers inspectors faces, who are more used to bags of golf clubs here in the Algarve no doubt! When we unpacked our luggage what did they uncover? A mass of sauces, batter, pastry - some of our preparations were still even frozen when we got here!”

Part-prepped authentic local foods, lovingly transported across an entire continent; that’s the extent this revered NYC based Chef goes to with the aim he says of “Bringing a taste of NYC as close and as accurately, as possible to the rest of the world”.

Throughly ‘Modern’ “What we do at in our kitchen is quintessentially New York.”

The kitchen Chef Thomas Allan modestly refers to is the twoMichelin starred restaurant The Modern, the pinnacle dining spot of an already iconic Manhattan institution, MOMA (Museum of Modern Art) where he presides as Executive Chef.

“We have genuine love of the city and how cosmopolitan it is it’s a city made up of so many different nationalities, that all have merged to create a new separate multi-cultural identity - so when we travel abroad to different countries, we want to really showcase the melting pot that’s become the city’s own unique flavour.”

He continues “So we brought as many genuine ingredients as 41

we possibly could to best transmit the flavours and personality of what we do back home” the Chef tells me.

NYC goes Portuguese “What does it mean to be a NYC Chef and to cook NY food? Well, look at me here, with my mixed background, cooking with my Korean pastry Chef, producing flavours from across the globe. It’s a melting pot. And what could be more from the very streets of of New York than a pretzel?!” says Chef Allan. “It’s what we serve at our restaurant, made from NYC flour and NYC water, and it’s what we’re serving here at Vila Vita today. So to transmit that best, we brought NYC water to Portugal! We were unsure how the local flour or water would work in our recipe for the pretzel-croissant, so we brought the pastry here part frozen”. The Chef speaks eloquently as he continues “It’s essentially a representation of what we inherently do: products and flavours indigenous to NY but acknowledging the fact that NYC is itself a city of abundance and unique multiculturalism.”

He continues “So yes, it’s important that even our batter is made with NYC water.

We don’t compromise on details”.

This level of detail has ensured the Chef earns notable accolades, such as StarChefs Rising Star award, an award that highlights emerging values of the 42 38

contemporary American dining scene. His formidable training is well witnessed in his craft, having worked as chef de partie for Thomas Keller and chef de cuisine Jonathan Benno at Per Se, all before his role as sous chef for Yannick Alléno at Le Meurice in France.

“I gave Alleno’s book to at least 20 Chefs - even before I worked there! His word is that important to me” the Chef says with clear affection about his formative 2 years spent at Chef Alleno’s Parisian Palace hotel restaurant.

Pirate-Chefs and a Tight Ship!

Yet the Chef still remembers his British roots, having been born in Middlesbrough, and I tease him as I glimpse his three lions tattoo that he bears on his forearm. “Yeah, done by an Italian guy who went all artistic with it!”.

But no Northern British accent on this Chef - his part Texan drawl hints at his eclectic upbringing. At three years old his family moved to Canada and then onto Texas, but for this creative 19 year old, it was not long before the lights of the city called.

“I was lucky, my first job was at Blue Smoke” [managed by renown restauranteur Danny Meyer]. “There the Chefs looked like pirates! All hipster skull scarves, tattoos and nose rings. So you 43 39

can image the shock of starched crisp whites and toques at my next job at 11 Madison Avenue!” the Chef laughs. “I remember I walked in on my day off and got hired. I was in awe: 200 covers on a Saturday night? That sure taught me discipline.” No room for pirates on that tight ship!

Although the Chef left 11 Madison Park after two years, it wasn’t the only time Chef Allan would work with renown Chef Daniel Humm.

“I was 21 and when he called me - that was it! Four years behind the pass as sous chef. It was during that time I was part of a 2 Chef USA team for Bocuse D’Or 2011 and we came 10th.”

Impressively, all while Allan was just 23.

“But as well as the great experience it provided, it also changed my nationality!” He laughs “With days before I was meant to go, I only just managed to get my US citizenship!”

All great in the Algarve I chat languidly with Chef Thomas and his pastry Chef on the lawns of the picturesque Vila Vita resort in Southern Portugal.

The resort is well respected for its own cuisine headed by talented Executive Chef Hans Neuner, both at Michelin started Ocean as well as across all of its 11 restaurants each with a distinctive menu featuring hyper local, home grown and ownlabel produce.

Increasingly the resort is also renown as the meeting spot for Top Portuguese Chefs as well as notable international guest Chefs who gather for its Gourmet food festival held every other year. Top Chefs from around the world are invited here to showcase their own style cuisine, served at a revolving roster of “four hands” or multi-Chef gala dinners. Chefs at this year’s event included renown Portuguese Chef Dieter Koschina of

two Michelin starred Vila Joya, Spanish Chef Àlvaro Garrido from Bilboa’s Mina restaurant, nicknamed “Mina Warrior’s Kitchen” that carves out a unique new menu daily, as well Karlheinz Hauser of Hamburg’s two Michelin restaurant Seven Seas as UK’s own Nigel Haworth from Northcote, that hosts its own annual food festival “Obsession”. Shake in some dapper Mixologists including Pedro Paulo from London’s One Aldwych hotel and top gourmet producers from caviar, cheese, meats to fine table and Port wines and you had quite a showcase at the sizzling Kitchen Party! But it’s not all fun in the sun for these Chefs: as well as the challenge of working with unfamiliar local produce, kitchens, mis en place and with limited support staff, each Chef’s chosen menu at their individual gourmet dinners must be paired with wines from selected top international producers.

Fine Wines - a perfect pairing?

“Well that threw a spanner in the works!” says Chef Allan. There I was, menu all sorted, excited to feature fresh seasonal greens and delicate flavours of spring - and then boom! We were told we would be paired with some pretty punchy Nappa Valley wines. Well, with the help of my sommelier at the restaurants we changed the menu radically, to better fit the wines.”

An excellent pairing it proved to me: the robust profiles of the boutique winery Realm Cellars were reflected in Chef Allan’s menu, rich with deeply flavoured dishes such as Dry aged Duck, Chanterelle mushrooms and apricots and the umami heavy beef crusted in aged Comte cheese, green asparagus and bone marrow. A highlight was the ‘Eggs on Eggs on Eggs’ a signature dish that also included caviar as one element in the egg trilogy.

Equally well matched to this four-hand Gala dinner I attended was the setting, at the hotel’s fine dining restaurant Ocean.

The views here provide exactly what it says above the door: 46

breathtaking views across the Portuguese coastline and it’s menu, devised by two Michelin starred Austrian Chef Hans Neuner, features freshest catch of the day and the finest flavours of the region. So whilst Hans Neuner showcased dishes such Sea Urchin, carrot and olive or rock prawn, almond ‘satay’ and a main course of Atlantic Monkfish, lentils and Topinambur (a type of Jerusalem artichoke) Chef Allan was busy at work in the same kitchen on his own separate menu. The kitchen’s slick open plan design, certainly provides enough space for the busy Chefs and additionally, the pride of Chef Neuner - ever the perfectionist - is that he also has an entire warehouse of bespoke crockery plus a plethora of various stemware, so that each dish and wine pairing can be perfectly matched to their precise contents.

It is that level of care, even in what may be considered a holiday resort, that has ensured Vila Vita and Chef Neuner continue to herald the next wave of top chefs at Ocean! Chef

Namai Bishop International Editor talks to one of South Africa’s leading Chefs Peter Tempelhoff as he unveils his new ‘FYN dining’ concept.

“No! Not Fine but FYN!” pronounced like grain but with an "f" Peter Tempelhoff corrects me as we sit together in Cape Town, the location of his already hugely successful urban fine dining eatery. “It’s the Afrikaans word for ‘fine’ but I like to think of it as the better half of the word Fynbos” (the indigenous shrub that is grown in the Western and Eastern Cape).

The name is testament to this Chef’s pride in his South African heritage. “It’s reflective of the dining concept we’ve created - plus I like to think it’s rather ‘fine’ too!” he chuckles.

Indeed, this is a Chef who has a lot to smile about: for the past decade he’s been

spearheading the South Africa dining scene as group Chef for the Liz McGrath Collection Hotels’ not one, but four, restaurants. Loved by Capetonians and tourists alike, his eateries are a beacon for those who want to experience the best in South African fine-dining but in a relaxed environment.

I meet the Chef on his home turf in Cape Town, on the very week it is announced that he is embarking on the next stage of his Relais & Châteaux journey at the city’s most exclusive boutique hotel, Ellerman House. As Culinary Director and mentor to Executive Chef Grant Daniels and his team, Tempelhoff will be responsible for

catering to the hotel’s discerning clientele.

"My dad's South African; I'm a product of this environment and so is my food," he told me, as we strolled the manicured lawn of the hotel overlooking the city and the vast ocean beyond. Indeed, he’s crafted a new menu and an exclusive dining experience for the hotel, showcasing the best in local produce alongside the high quality imported ingredients. “What I love is to harmonise local ingredients with unexpected international touches, creating a multi textured, balance of powerful flavours, such as my dish of Karoo lamb with sweetbreads, Parmesan pap, spekboom 51

and pickled honey, gremolata and jus gras” he told me.

An Urban Oasis At FYN, Tempelhoff switches scenery, with a bold move back to the bustle of the city centre. With its enviable rooftop position and polished aesthetic, FYN is Peter Tempelhoff’s answer to gourmands’ insatiable search for the epitome of culinary je ne sais quoi. Indeed, FYN is as groundbreaking as its contextual surroundings: restoration of Cape Town’s historic Speakers Corner, replete with heritage buildings, is underway and Tempelhoff is an anchor tenant of this new development.

The original interiors of the dining space have been creatively remastered and given new life; similarly, the Chef is reworking 52

local and traditional elements and creating something completely new with this latest dining concept. “We engineered every inch of FYN; it’s a meticulous realisation of a dream I’ve had since I started cooking. Even then, I dreamt of a restaurant where the menu would incorporate taste variations of the same ingredient on one plate” he tells me.

Working alongside Tempelhoff are two of South Africa’s most revered professionals – Ashley Moss (formerly head Chef at Greenhouse) and Jennifer Hugé (formerly front of house manager at the famed winelands eatery La Colombe) – who bring with them the well-honed expertise necessary to maintain the standards a discerning

clientele demands.

The design of the Cape Town restaurant echoes the style of cuisine on offer, with its mix of Afro-Japanese decor. Japanese and African cultures have after all, many similar design elements, incorporating materials such as dark woods, raw rope, textured ceramics, natural beads and raw stone. A vast mural dominates the back wall which depicts a hybrid AfricanJapanese warrior woman carrying the symbolic birds of the two nations. As colorful as Ashley’s own tattoos., it was no surprise to learn it was done by his same tattoo artist.

This Afro-Asian mix is present too on diners’ plates. The menu, laced with umami-rich local and Japanese ingredients,

including wakame (edible seaweed), daikon and Koji (a type of fungus commonly used in fermentation, like in the conversion of soybean to sauce) and furikake (a dry Japanese seasoning usually sprinkled on top of cooked rice, vegetables, and fish and consisting of a mixture of dried fish, sesame seeds, chopped seaweed, sugar and salt).

The tasting menu starts with a Bento box selection of miniature canapés. Each varied in taste and textures, like crispy sweet Karoo lamb samosa with lemon archar or the daikon and octopus with creamy ink mayonnaise, are all prepared with oragami-like intricacy and meticulously conceived to awaken the palate and indeed all the senses. Then follows a Kaiseki 53

Each dish, one hot starter and several cold, arrive in hand crafted ceramics, like the grainy half-oyster dish containing the luscious seafood Cale Malay ‘Somen’ (squid cleverly disguised by being precisely cut into noodle shapes). Another may be the dish of daikon maki (his own three year pickled radish) with salted cherry blossom or crispy chewy rice with local white fish served with aged soy sauce, wasabi and dashi aioli or the game fish with seaweed dressing, koji cucumber and Katsuobushi (a triple preparation of dried, fermented and smoked skipjack tuna).

Next on the FYN set menu, the main plate, featuring again, local ingredients with Japanese touches, such as grass-fed beef with green bean ‘risotto’ umami jus and crispy sweetbread.

Final act: another selection, this time Sweet Kaiseki featuring Madagascan chocolate, salted Japanese plums and fennel ice cream or another of blueberries with yuzu and coconut, (that paired well with the honey-sweet local Klein Constantia Vin de Constance).

Whilst South African ingredients form the basis of the larder, they are painstakingly dressed, as dazzling as an elaborately textured Japanese Kimono. The concept behind Kaiseki dining is to engage all of the five senses, and this Chef Tempelhoff 54

does with aplomb in the most striking of his dishes, though not really a course per se but more a palate cleanser. We watch as a small bowl filled with dainty edible flower petals and herbs, is transformed right before our eyes using liquid-nitrogen into a brittle, bubbling, fizzing, frozen sculpture. Requiring a further dramatic element of customer interaction we were advised to grind the contents with a pestle before a refreshing celery sorbet was added atop. This one dish epitomises what the Chef is doing here: engaging our eyes, our hands, our ears as well as our sense of smell and taste in an interactive show.

The talented sommeliers continue the storytelling with an expert pairing of both regional wines and international labels, with the strong flavours on the menu particularly well matched to the zing and adaptability of the Reisling varietal.

A Japanese-Afro marriage made in heaven?

Why the Japanese turn for what was a quintessentially South African Chef, I ask him.

Tempelhoff’s answer comes chiefly from his own travel experience and more practically, of what he believes modern city diners are now really after. He explains “Being a city restaurant, people are busy and tend to want an impactful experience

without investing time in a drawn-out tasting menu experience.”

He continues “Our challenge was to create a tasting menu that can be experienced in two hours, and we looked to Japan for the answer. By serving the starter and dessert courses on small Kaiseki trays, we are able to offer the guest a multisensory experience of three or four courses at the same time, shortening the dining experience considerably.”

Chef Tempelhoff has met the challenge by celebrating local produce spiked with powerful Japanese and regional flavours, served in an novel format. “We’re bringing the boldness and vibrancy that’s essential in a cosmopolitan city restaurant!”.

Kitchen dining This drama that the Chef speaks of is evidenced also in the kitchen design. “When say open-plan, we really mean openplan!” he exclaims animatedly as he raises his hands out wide before us: the majority of the restaurant comprises the kitchen and prep areas, dominating the entire central dining space itself. “We want diners to feel part of this theatre, to come up, talk to us, watch the culinary show unfold!”. The show’s royal-box is undoubtedly the Kitchen Counter as Chef affectionately calls it, where those not so time-strapped city dwellers can indulge in a more drawn out 14-dish tasting experience prepared before their eyes.

As I sit at this ‘Kitchen Counter’ talking to the Chef as he preps in the kitchen, the sunset casting shadows over Lion’s Head before us, the bustle of the old Square and stunning rooftop vistas of Table Mountain, I can think of no more inviting table in South Africa right now.

INGREDIENT: Spanish Persimon

Colour Crunch Flavour

This delicious fruit is grown in the Ribera del Xúquer Valley (Xúquer river valley) near Valencia in Spain. They have a sweet, delicate flavour similar to a peach or a mango and are only available for a short period of time; from mid-October until JJanuary.

The variety currently grown in the area is called Rojo Brillante (Bright Red). This does not reflect the colour of the flesh, which is actually bright orange and can sometimes be speckled with natural sugar freckles. These appear as the fruit ripens and indicate extra sweetness, just like a banana.

“Rojo Brillante” grown in the Ribera del Xúquer is larger and longer than other varieties such as the small, squat Sharon fruit.

The fruit, which is an indigenous variety to the region, was first discovered growing in Valencia more than 50 years ago and is thought to have developed naturally from the conventional persimmon varieties that were introduced into eastern Spain.

Spanish Persimon®, Beetroot and Toasted Chickpea Salad Colour, crunch and flavour means that this vibrant vitamin-packed salad is SO good to eat!

1 Preheat the oven to 180°C, fan oven 160°C, Gas Mark 4.

Grease a 22cm ceramic baking dish (or similar) with a little butter.

2 Beat the butter and sugar together until light and creamy, then gradually beat in the eggs. Stir in the milk. Fold in the flour, salt, ground ginger and stem ginger.

3 Transfer to the baking dish and spread out evenly. Cut the persimon® into thin slices and arrange on top of the sponge mixture, fanning out the slices. Sprinkle lemon juice and demerara sugar on top of them.

4 Bake for 30-35 minutes, until golden brown. Serve immediately, sprinkled with pecans and drizzled with syrup.

Cook’s tip: Make the puddings in individual dishes, though reduce the cooking time to 20-25 minutes.

CHOKKA NOODLES

By Peter Tempelhoff SERVES: 4 At Fyn we use Cape Hope Squid (Loligo reynaudii) from the south coast of South Africa for this dish, as it is the largest commercially caught squid here, and squid size is crucial in order to get this dish right.

Chefs and home cooks in South Africa rarely see this product on their shelves because, like most of South Africa’s best ingredients (especially our fish), they are exported almost as quickly as caught. If you ever do happen to come across it at your local fish monger, take my advice and purchase some, as you will be pleasantly surprised by the sweet flavor and generous yield from the meaty mantle.

Squid • 240g Cleaned squid ‘bodies’, frozen and sliced thinly lengthwise on gravity slicer, leave to defrost slowly • Pinch of sea salt • 30ml Canola oil • 75ml Good quality dry white wine • 15g creamed garlic mixed with 20ml canola oil • ½ Lemon • Pinch of chives Bring the squid up to room temperature.

Sear the squid for 4 to 5 seconds in an extremely hot pan with the pinch of salt using the 30 ml oil. Remove squid quickly after it has started to curl a little.

Add a splash of water to the pan followed by the white wine and garlic, 62

Like most cephalopods, if you don’t get the cooking right, expect some serious masticating, so keep the cooking to a bare minimum. Our chokka (the local name for squid) spends less than 10 seconds in the pan, as we have found that keeping them a little ‘under cooked’ yields the best eating experience, ensuring the tenderest noodles.

Reminiscent of a ramen bowl, the noodles are immersed in a broth made from the offcuts, such as fins, heads and tentacles. The dish is completed with a tart gel made from the indigenous Hottentot-Fig (Carpobrotus edulis) pulp and ultratex, and Marsh Samphire (Salicornia) and onion flowers.

Add lemon juice and emulsify with the butter, finish with chives and season Squid Broth 200g offcuts of the cleaned squid, discarding the innards and heads, sliced • 40ml Canola oil • 2 medium sized shallots, thinly sliced • ½ fennel bulb sliced • 1 celery stalk • 2 cloves of garlic • 150ml white wine • 500ml good fish stock • 50ml light cream • Salt to taste Sauté squid in sauce pan and remove once slightly coloured.

Add vegetables and sweat off until soft.

Add the wine and burn off alcohol, add the fish stock and return the squid to the pot.

Simmer for 35min.

Strain and reduce at high heat until broth in concentrated but not overpowering, add cream and simmer for a further 4 minutes. Enhance with fresh lemon then season with salt to taste.

Plating To assemble the dish, heat up the ‘squid frying’ sauce and return the squid to the pan for 4-5 seconds to heat through.

Pile up noodles in a deep ramen style bowl and garnish on top of the squid with Hottentot-fig gel, steamed samphire and onion flowers. Pour the squid broth into the bowl table side.

Phadthai Gai Yong (Stir-Fried Noodles with Grilled Chicken)

By Sujira ‘Aom’ Pongmorn Ingredients 2 tbsp vegetable oil for phadthai 1 tbsp vegetable oil for egg 3 tbsp vegetable oil 80 g dried Chanthaburi noodles 2 tsp dried shrimp 1 tbsp tofu, cut into small chunks 1 tbsp pickled turnip, chopped 1 tbsp shallot, chopped 8 tbsp chicken stock ½ cup phadthai sauce (see below) 1 tbsp ground roasted peanuts ½ cup bean sprouts ¼ cup garlic chives, cut into 2.5-cm pieces 1 egg 1 tsp chili powder 1 lime wedge 1 chicken thigh or chicken breast 1 garlic clove, smashed 1 tsp black pepper 1 tbsp Golden Mountain Seasoning Sauce 1 tbsp palm sugar

Sauce Phadthai Ingredients • ¼ cup shallot, thinly sliced • 1 tbsp garlic, finely chopped • 1 cup tamarind concentrate • 1 cup palm sugar • ½ cup fish sauce • 1 tbsp salt • 1 cup water • 1 tsp chili powder • 2 tbsp vegetable oil Method Add vegetable oil to a saucepan and place on medium-heat stove.

Add shallot and garlic, and fry until fragrant and the garlic is a bit brown.

Add water, tamarind concentrate, chili powder, palm sugar, and salt.

Stir constantly until palm sugar dissolves and sauce is mixed. Let the sauce simmer and thicken.

Remove from the heat and let cool down.

Pour phadthai sauce into a blender and blend until smooth.

Strain, and store in a plastic box.

Method In a mixing bowl, mix together palm sugar, seasoning sauce, black pepper and garlic until the palm sugar dissolves.

Add chicken to the bowl, and hand-knead until the marinade is absorbed by the chicken. Set aside to marinate for 20 minutes.

In a heated grilling pan, grill the marinated chicken until cooked. Set aside.

Crack the egg into a small bowl, and beat till smooth. Set aside.

Heat a wok or large non-stick frying pan over medium-high heat. Drizzle two tablespoons of oil into the pan and swirl around. Add shallots and stirfry until fragrant.

Add tofu and pickled turnip to the pan, and stir-fry about a minute.

Add noodles and chicken stock and stir-fry until the noodles soften.

Add phadthai sauce and stir-fry until noodles and dry ingredients absorb all the sauce.

Remove noodles and set to one side. Stir-fry the egg in the remaining vegetable oil until cooked.

Add sprouts, garlic chives, dried shrimp and chili powder and stir-fry until the sprouts and garlic chives are wilted.

Slice the chicken and place over the noodles. Serve with lime wedge, beansprouts, garlic chives, chili powder and ground roasted peanuts on the side.

De-Luxe champagnes are the prestige brands of the champagne houses - the crème de la crème. They represent, at least in theory, the absolute summit of what the region can produce.

In principle they are made from the best cuvees from the best vineyards, from the finest quality vintages, and are wines, which have been carefully aged after blending so that they have a depth and complexity of maturity as well as all the breed and distinction of the original cuvee. Most of them are marketed in fancy bottles, often copies, like Dom Perignon, of an eighteenthcentury shape. Naturally they are highly priced. Dom Perignon, Louis Roederer Cristal, Perrier Jouet Belle Epoque, and Taittinger Comtes de Champagne, Blanc de Blancs, four of the best known. This makes them double the price of the same firm’s ordinary vintage blends and trebles their non-vintage. As such a question immediately poses itself. Are they worth it? Today when almost every house - not just the most respected - now offers a luxury cuvee, and all at equally inflated prices, are we entitled to curve a slightly cynical eyebrow above all this fuss and activity.

With two exceptions the de luxe cuvee is a recent phenomenon.

A hundred years ago Alexander 11, Tsar of all the Russia's, commanded that the champagne he served to his guests should be presented in clear bottles so that, even when wrapped in a linen cloth for serving, it should be clearly identifiable as his own personal selection, unique to the imperial court, Louis Roederer was his supplier; Cristal was born. Until the Revolution 40 years later Cristal, then a sweet wine, was exclusively produced for the Tsar and his successors. The real pioneer in the concept of prestige champagne was Moet et Chandon. In 1930 Moet purchased the unused brand name of Dom Perignon from Mercier - it was to purchase Mercier itself 40 years later - and in 1937 it launched the first de-luxe cuvee under this name in an elegant reproduction of the sort of bottle the firm itself had used prior to the French Revolution. Today it is the brand leader.

What should you expect from a de luxe champagne? The short answer is: what you get (or should get) from a vintage as opposed to a non-vintage, only more so. Class, complexity, depth and elegance, and maturity without age. If, by definition,

all vintage champagne like all vintage port is very good wine, i.e. the wine is only produced with a vintage label if that vintage and that blend thereof has been especially successful, then, even more decidedly, a de luxe champagne should invariably be a stunning product. Sadly it isn't. Like all too many vintage champagnes the wines are frequently marketed too young. If a quality non vintage should be - I'm not talking about what the legal requirements stipulate - a wine of at least three years of age by the time it reaches the consumer, then a vintage wine six or seven, and the deluxe wines should be, if not older, at least wines of greater ageing potential. Well-made champagne can easily take ten or even fifteen years bottle age.

Champagne is the most versatile of all wines as it the perfect aperitif, goes well with fish and also can be drunk throughout the rest of the meal, pairing well with meat such as lamb and with cheese and dessert.

In short a drink for any time - to celebrate or commiserate, one can always find a reason to drink Champagne.

คำ�ว่าสวรรค์ ที่เป็นชื่อร้านนั้น เชฟอ้อมได้กล่าวว่า ร้านของเธอนั้น อาจจะเหมือน กับ “สวรรค์ยามค่ำ�คืน” เสียมากกว่า ซึ่งเห็นได้จากเวลาทำ�การของร้าน (ตั้งแต่ 6 โมง เย็น ถึงเที่ยงคืน ทุกวัน) แสงไฟสลัว และผนังสีดำ�ทึบที่ประด้วยเมฆสีทองที่หรูหรา ผู้ที่มาทานอาหารที่นี่ จะได้เสพอาหารจำ�นวน 9 คอร์ส ซึ่งเรื่องราวในแต่ละรายการ อาหารจะตั้งชื่อตามกรรมวิธีการทำ�อาหารแบบดั้งเดิมของไทย เช่น การทานดิบ หมัก ดอง ต้ม ผัด ย่างถ่านและอื่น ๆ ซึ่งหัวใจหลักก็คือการที่พ่อครัวได้ทำ�การตีความ อาหารข้างถนนและอาหารท้องถิ่น แล้วนำ�มาปรุงแต่งขึ้นใหม่ด้วยวัตถุดิบที่มีคุณภาพ ชั้นยอดและการนำ�เสนอด้วยศิลปะจัดวางระดับสูง “ดิฉันชื่นชอบอาหารข้างทางมาก ๆ ค่ะ” เชฟอ้อมอธิบายเสริมว่าตัวเธอนั้นได้รับแรง บันดาลใจหลายด้านจากอาหารท้องถิ่นทั่วไปในประเทศเธอ “แต่อาหารข้างทางบาง อย่างได้หายไปหรือค่อย ๆ เลือนหายไปสืบเนื่องจากการเปลี่ยนแปลงของกฎหมาย และดิฉันไม่ต้องการให้สิ่งเหล่านี้จบลง เลยเป็นเหตุผลที่ดิฉันอยากจะแต่งตัวให้พวก เขาใหม่และปรุงแต่งพวกเขาด้วยวิธีการใหม่” กล่าวได้ว่า อ้อมนั้นมีความรู้อย่างแน่นหนาในเรื่องของอาหารไทยดั้งเดิม พ่อแม่ของ เธอทำ�ร้านอาหาเล็ก ๆ ใน กรุงเทพฯ และเธอยังจำ�ได้ว่าตอนที่เธออายุหกขวบ พ่อ ของเธอเคยสอนให้เธอทำ�ไข่เจียวแบบไทย ๆ มันทำ�ให้เธอหลงรักการทำ�อาหารใน ทันที แม้ว่าในตอนนั้นเธออาจจะยังรู้เลยว่ามันจะกลายมาเป็นอาชีพของเธอได้

หลังจากที่เอเรียนจบชั้นม.ปลายตอนอายุ 18 ปี เธอได้สมัครเข้าเรียนเพื่อเป็นเชฟภาย ใต้โปรแกรมการฝึกงานของโรงแรม แมนดาริน โอเรียนเต็ล กรุงเทพฯ เธอได้เรียนรู้ การทำ�อาหารนานาชาติ และต่อมาได้ทำ�งานที่ร้านอาหาร Lord Jim และร้านอาหาร ฝรั่งเศสที่มีชื่อเสียงของโรงแรม นามว่า “Le Normandie” และที่ Le Normandie นี่เอง ที่เธอได้รับการฝึกฝนพื้นฐานจากเชฟรับเชิญอย่าง Juan Amador “ฉันได้ฝึกกับเขา เพียงแค่ หนึ่งสัปดาห์ แต่ฉันได้เรียนรู้หลายอย่างมาก” เธอย้อนภาพให้ฟัง เชฟผู้ฝึกสอนคนต่อมาของเธอคือ เชฟ Henrik Yde Andersen ที่ร้านสระบัว เขาได้ จุดประกายให้เธอรู้จักกับวิทยาศาสตร์การอาหารที่เรียกว่า Molecular Gastronomy ซึ่งหลังจากเวลาหนึ่งปีที่ร้านสะบัว เธอก็ได้ย้ายไปยัง Issaya Siamese Club ตามมา ด้วยการใช้เวลาพักหนึ่งที่ TWG ร้านที่เธอได้เรียนรู้การจับคู่ชากับอาหาร และเธอ ยังได้เคยร่วมเป็นส่วนหนึ่งของทีมเตรียมตัวเปิดร้านให้กับ W Hotel’s House สาทร ภายใต้การแนะนำ�ของเชฟ Fatih Tutak.

การได้ทำ�งานในกรุงเทพฯ พร้อมด้วยพรสวรรค์ชั้นเลิศในด้านการครัว เปรียบดั่งความรู้ที่หาค่ามิได้ และมันยังเป็นสื่งที่ปูทางให้เชฟอ้อมได้มีโอกาสเปิด ร้านอาหารของตัวเองได้ ในปี 2559 ด้วยความช่วยเหลือของ Frederic Meyer เธอได้ เปิดตัว บ้านผัดไทย ที่ปรุงแต่งลูกเล่นให้กับเส้นก๋วยเตี๋ยวผัดอาหารไทยอันโด่งดัง ซึ่ง ถือได้ว่าเป็นความสำ�เร็จครั้งใหญ่ของเธอ แต่ถึงแม้ว่ามันจะผ่านมาด้วยดีกว่าสองปี แล้ว แต่อ้อมก็ยังคงต้องการการต่อยอดเพื่อขยับไปสู้ก้าวต่อไปที่ใหญ่กว่า และเข้าสู่ 73

การแข่งขันในวงการอาหารชั้นสูง ที่มีกติกาที่ต่างออกไป แถมด้วยสนามที่ส่วนใหญ่ แล้วผู้ชายจะเป็นผู้ควบคุม “ฉันรู้สึกกลัวขึ้นมาอยู่เหมือนกัน” เธอสารภาพ “ แต่คุณเฟเดอริกได้บอกกับฉันว่า “ทำ�ไมล่ะ? เธอทำ�อาหารได้นะ คุณห้ามอยู่แต่มุมของคุณสิ ทำ�ไมคุณไม่ออกไปคว้า โอกาสล่ะ? และมันเป็นสิ่งที่ผลักดันให้ฉันทำ�ร้านสวรรค์ขึ้นมา” ตั้งแต่วันแรก ชุดอาหารที่ร้านสวรรค์ได้รับคำ�วิจารณ์ชื่นชมอย่างคึกคัก แต่เชฟอ้อม เองก็ยังคงพยายามที่จะทดลอง ปรับปรุงรายการอาหารของร้านเกือบทุก ๆห้าเดือน แต่มีอยู่หนึ่งเมนูที่จะยังคงอยูไม่แปลี่ยนแปลง นั่นก็คือแมนู ข้าวเหนียวจิ้มมันปูนา จานเด็ดที่ได้รับแรงบันดาลใจจากการที่เธอได้มีโอกาสพบปะกับเกษตรกร ในช่วงที่ ไปเยือนจังหวัดนครปฐม (ที่ซึ่งร้านสวรรค์มีฟาร์มออแกนิคของตนอยู่) การตีความ ใหม่ของเธอนั้น ได้นำ�มันปูแสนอร่อยมาผสมกับเครื่องแกงตำ�เอง และนำ�ไปย่าง ในกระดองปู โดยเสิร์ฟพร้อมกับข้าวเหนียวปิ้งกะทิ ซึ่งเป็นเมนูที่อ้อมบอกว่ามัน สามารถขยายความสิ่งที่เอกำ�ลัพยามทำ�อยู่ได้เป็นอย่างดี ในการที่จะคงรักษาสิตำ�นาน 74

อาหารดั้งเดิมเหล่านี้ไว้ไม่ให้ถูกลืม “รสชาติของมันพิเศษมากค่ะ” เธอเอ่ยขึ้น พร้อมกับอธิบายความแตกต่างระหว่าง ปูนา และปูไข่ ปูม้าที่นิยมใช้มากกว่าในวงการอาหารไทย “และคุณต้องรู้วิธีที่จะเอา มันของปูนาออกมาด้วย เพราะข้างในตัวปู จะว่าไงดี มันจะมี “ถุงอึ” ขั้นอยู่ด้วยตรง นั้น และคุณจะต้องรู้วิธีที่จะเอามันออกมาโดยไม่ให้มันแตก” เธอกล่าวออกมาตรงๆ ในขณะที่เราพากันหัวเราะคำ�อธิบายของเธอ แต่เราก็เข้าใจเพราะมันอธิบายได้ชัดเจน ถึงระบบทางดินอาหารของสัตว์น้ำ�ที่น่าสงสารได้อย่างดี อีกหนึ่งเมนูที่เน้นย้ำ�ถึงภารกิจของอ้อมในการรักษาสูตรอาหารดั้งเดิมก็คือนกกระทา ที่ย่างด้วยถ่านเสิร์ฟพร้อมส้มตำ�ที่ปรุงรสแบบนอกตำ�ราแค่รสชาติอร่อยอย่างเหลือ เชื่อ โดยอ้อมอธิบายว่าเมื่อตอนที่เธอเป็นเด็กเธอจำ�ได้ว่าจะมีนกกระทาทอดกรอบ ขายอยู่ทั่วแต่ไม่ค่อยมากแล้วในสมัยนี้ เพราะเป็นนกตัวเล็ก กระดูกเยอะและมีเนื้อ ไม่มาก และแน่นอนว่านกกระทาของเธอได้รับการเลี้ยงดูอย่างอิสระที่ฟาร์มใน

จังหวัดนครปฐมและให้อาหารด้วยธัญพืชผสมและมะพร้าวคุณภาพดี เมื่อมันมาถึง จานแล้ว พวกมันจึงอวบอิ่ม รสอร่อยและย่างสุกออกมาได้อย่างสวยงาม ในรายการอาหารเต็มไปด้วยไฮไลท์ที่ยากจะเลือกว่าอย่างไหนคือจานโปรด แต่ตัว เลือกของผมน่าจะได้แก่: จานสตาร์เตอร์อย่าง พล่ามะดันไข่หอยเม่น หอยเม่นทะเล พอดีคำ�ที่มาพร้อมกับมะดันผลไม้ไทยและแยมพริกแบบโฮมเมด ตามด้วย หมูดำ� หมักแกล้มด้วยแตงกวาดองและสมุนไพรไทย และสุดท้ายคืออาหารประเภทแกงที่มี รสชาติอันน่าพึงเป็นพิเศษ ซึ่งประกอบไปด้วย เนื้อปลาเก๋าอันดามันราดซอสพะแนง แบบไทย ทานกับข้าวหอมมะลิจากจังหวัดพะเยาและมะเขือยาวย่างด้วยวัตถุดิบชั้น ยอด นี่แหละสวรรค์บนจานอาหารของแท้แน่นอน! สำ�หรับผู้ที่ชื่นชอบของหวานแล้ว อีกเวอร์ชั่นของสวรรค์บนจานก็คงจะเป็นขนม หวานแห่งสวรรค์และเค้กแบบpetit fours ที่ร้านสวรรค์นี่เอง ซึ่งเป็นผลงานการ สร้างสรรค์ของเชฟขนมหวานที่มีรางวัลการันตีอย่าง "เปเปอร์" อริศรา จงพาณิชกุล (สำ�เร็จการศึกษาจาก สถาบันการอาหาร Gastronomicom ประเทศฝรั่งเศส) เชฟอ้อม

แสงอาทิตย์ในยามบ่ายสาดส่องเข้ามาในเลานจ์บนชั้น 9 ที่ด้านนอกของโรงแรมหรูใจกลางกรุงเทพฯ ใบไม้แห้ง คาต้นร่วงหล่นหลังฝนโปรยก่อนหน้านี้ และด้วยความ ที่ตั้งอยู่ข้างสวนสาธารณะลุมพินี จึงยิ่งทำ�ให้โรงแรมโซ ฟิเทล เอสโอ มีบรรยากาศที่มากกว่าคึกคัก แต่เรียกได้ ว่าตื่นตาตื่นใจเลยทีเดียว ที่เลานจ์ของโรงแรมคลาคล่ำ� ไปด้วยแขกเหรื่อที่นั่งอยู่บนโซฟาหรู ทั้งกลุ่มที่กำ�ลัง ทานอาหารเช้าอย่างมีความอิ่มเอม หรือแม้แต่กลุ่มคนที่ กำ�ลังจิบกาแฟรับเช้าวันใหม่

และพยายามจะพูดคุยกับพวกเขาโดยตรง” ชายต่างชาติชาวแคนาดา แต่งชุดสูทแบบร่วมสมัยมี ลายจุดเล็ก ๆ ชายผู้ที่ช่ำ�ชองการเดินสำ�รวจอาคาร เขา ร่วมงานกับโรงแรมในเครือแอคคอร์ ซึ่งเป็นบริษัทการ โรงแรมสัญชาติฝรั่งเศสมานานกว่าหกปีแล้ว

กลยุทธ์ที่เหมาะสมด้วย เราเลยทำ�การสร้างรีสอร์ท โฮสต์เพื่อยกระดับการบริการขึ้นมา" คุณ Brun กล่าว ซึ่งนอกจากการสร้างโฮสต์ของรีสอร์ทแล้ว คุณ Brun ยังได้ปรับบ้านพักตากอากาศสี่ห้องนอนจำ�นวนมาก ให้เป็นกลายสามห้อง สองห้องหรือหนึ่งห้องนอนด้วย โดยที่ส่วนนี้จะเป็นการสร้างรูปแบบที่กว้างขึ้นสำ�หรับ การรองรับแขกได้มากขึ้น ด้วยการให้บริการที่เพิ่มมาก ขึ้นและการเข้าถึงที่ง่ายขึ้นนี้ ทำ�ให้สถานที่ดังกล่าวเกิด การเปลี่ยนอย่างรวดเร็วและจากการที่เคยเป็นแกะดำ� ของบริษัท ก็ได้กลายมาเป็นที่โปรดปรานในที่สุด จากความสำ�เร็จของเขากับกลุ่มแอคคอร์ในประเทศ เวียดนาม ทำ�ให้เขาได้โยกย้ายมาอยู่ที่กรุงเทพมหานคร หลังจากเสร็จงานที่ดานังแล้ว คุณ Brun ก็ได้กลายมา เป็นผู้จัดการทั่วไปคนใหม่ โดยที่ผู้จัดการทั่วไปคนเดิม ของโซฟิเทลโซ กรุงเทพ คุณ Gilles Cretallaz ซึ่งขณะ นี้ดำ�รงตำ�แหน่งรองประธานฝ่ายLuxury Brands ใน หลายภูมิภาคของเอเชีย ต้องการตัวคุณ Brun มาหลาย ต่อหลายครั้งแล้วหลังจากที่ได้เห็นความสำ�เร็จของเขา

ไปจนกระทั่งเครื่องแบบพนักงานที่ทำ�ให้รู้สึกหรูหรา พนักงานก็เป็นส่วนประกอบสำ�คัญอย่า หนึ่ง และเป็นสิ่งที่ทำ�ให้แขกรู้สึกเหมือนเป็นครอบครัว การรู้รายละเอียดต่าง ๆ เช่นชื่อของคู่ครอง อาหารจาน โปรดของเขาและนิสัยแปลก ๆ เล็กน้อยของแขก นั่น จึงทำ�ให้ผู้คนที่นี่มีเอกลักษณ์ไม่เหมือนใคร “การทำ�งานเบื้องหลังนั้น ความหรูหราสำ�หรับเรา คือ ผลิตภัณฑ์ที่ได้รับการปรับแต่งอย่างประณีตที่มันไม่ได้ เกิดขึ้นโดยบังเอิญ” คุณ Brun กล่าว “ในทุก ๆ วัน เรา จะประเมินแขกของเรา เรากลั่นกรองพวกเขา เราติดตามสิ่งที่พวกเขาชอบและไม่ชอบ มันเป็นการ ทำ�งานที่ละเอียดอ่อนมาก ๆ ” การเดินสำ�รวจทุกวันของคุณ Brun จึงทำ�ให้เขาได้มี เวลาตรวจสอบกลไกการทำ�งานที่ซับซ้อนของโรงแรม อย่างต่อเนื่อง และเขามักจะเริ่มต้นด้วยเรื่องของอาหาร เช้าเสมอ ซึ่งคุณ Brun ย้ำ�ชัดเจนว่า อาหารเช้านั้นมี ความสำ�คัญอย่างมาก “แขกแทบทุกคนจะได้ลิ้มลองอาหารเช้าแน่นอน หาก เราไม่สามารถสร้างความประทับใจให้พวกเขาด้วย อาหารเช้าได้แล้วล่ะก็ พวกเขาจะเริ่มไม่ประทับใจใน

สิ่งอื่น ๆ ต่อไปอีก” เขากล่าว ความประทับใจในครั้งแรกเจอ คือสิ่งที่สำ�คัญมาก โดยเฉพาะเมื่อโรงแรมเองมีร้านอาหารอยู่ถึงหกแห่ง ที่บริการแตกต่างกันออกไปสำ�หรับไวน์และอาหาร ค่ำ� นั่นคือร้าน Red Oven, Park Society, Hiso, Kof, Chocolab และ Mixo การให้บริการในส่วนนี้จะ ผสมผสานกันระหว่างแขกภายในและยังดึงดูดลูกค้า ภายนอกมาได้อีก ด้วยกิจกรรมที่สร้างสรรค์มีชั้นเชิง เช่น Cheese at SO, SO Fit SO Fun Run และ Drag Me at SO เป็นต้น อีเวนท์แรกนั้นได้ดึงดูดผู้ที่ชื่นชอบชีสมาจากทั่วมุม เมืองเลยทีเดียว เพราะผลิตภัณฑ์จากทั่วโลกได้ถูก รวบรวมมาไว้ที่นี่ และได้ลองชิมโดยแขกที่มาพักและ ลูกค้า “เพราะเมื่อประตูลิฟต์เปิดออก คุณจะไม่สามารถ ต้านทานกลิ่นหอมของชีสในล็อบบี้ได้เลย เป็นเรื่องที่ น่าอัศจรรย์มาก” คุณ Brun กล่าว “ไวน์และอาหารค่ำ� นั้น ยิ่งสร้างความผูกพันให้กับประสบการณ์ของแขก เป็นอย่างมากด้วย”

นอกจากนี้โรงแรมยังได้จัดโครงการเพื่อส่งเสริมสุขภาพและเป็นหนึ่งในกิจกรรมที่ ยิ่งใหญ่ที่สุดแห่งปี เนื่องจากมีผู้เข้าร่วมงานรวมกว่า 1,200 คน โดยที่ผู้คนมารวมตัว กันเพื่อวิ่งเป็นระยะทางกว่า 5 - 10 กม. รอบสวนลุมพินี และรายได้ทั้งหมดจากการ จัดงานเราก็ได้มอบให้กับองค์กรการกุศลสองแห่งคือ บ้านแกร์ด้าและ Hands Across The Waterเพื่อมอบโอกาสให้กับเด็ก ๆ ทั่วประเทศไทย ซึ่งอีเวนท์นี้หวังจะทำ�สถิติ ใหม่ในปีหน้า โดยคาดการณ์ว่าจะมีผู้เข้าร่วมกว่า 2,000 คนด้วย

ส่วนกิจกรรมอื่น ๆ ที่รวมถึง Drag Me at So ซึ่งเป็นงานแห่งความกลุ่มหลากหลาย ทางเพศที่จัดขึ้นที่ชั้นบนสุดของโรงแรม อีเวนท์นี้ได้รับความนิยมมากและได้รับ ความนิยมจากพนักงาน และยังเป็นงานที่แสดงด้านที่สนุกสนานของโรงแรมด้วย

ในขณะที่ร้าน Red Oven ได้มีการรีโนเวทใหม่โดยเชฟคนใหม่ และยังจะมีการ เปลี่ยนแปลงเกิดขึ้นกับ Park Society ด้วยเช่นกัน ซึ่งการเปลี่ยนแปลงครั้งใหญ่จะ เสร็จสิ้นก่อนหน้าเทศกาลที่จะถึงนี้

ด้านที่สนุกสนานของโรงแรมยังได้กลายมาเป็น ปาร์ตี้ริมสระน้ำ�ทุกเดือนใจกลาง เมืองที่มีชื่อว่า SO Pool Party

“ เขาจัดการได้อยู่หมักเลยจริง ๆ” คุณ Brun กล่าว “เป็นประสบการณ์ที่ให้ความ สำ�คัญกับลูกค้าเป็นอย่างมากเลยครับ เขาเอาตัวเองออกมาจากห้องครัว ความหรูหรา ไม่จำ�เป็นว่าต้องเป็นอาหารที่แปลกแยก สั้น ๆ เลยว่า มันเป็นการทำ�งานที่ราบรื่น มากแต่ว่าสดใหม่มากด้วย”

ในช่วงที่ค่ำ�คืนมาเยือนนั้น คุณ Brun อยู่ที่ชั้นบนสุดของอาคาร เดินไปรอบ ๆ บาร์ บนดาดฟ้า เพลิดเพลินกับการอยู่เป็นเพื่อนแขกที่มาพักและทิวทัศน์ของเมือง

หากคุณใช้ชีวิตอยู่ในประเทศไทย โดยเฉพาะถ้าคุณอาศัยอยู่ในกรุงเทพมหานคร แล้วล่ะก็ คุณก็อาจจะพอคุ้นหูกับคำ�ว่า "อาหารข้างถนน" คำ�ที่มีความหมาย ยืดหยุ่นพอสมควรเลยทีเดียว แต่สำ�หรับความเข้าใจโดยรวม ๆ แล้ว มันมักจะ เป็นอาหารที่ไม่ได้คำ�นึงถึงสถานที่ในการให้บริการ แต่จะมุ่งเน้นไปที่เมนูอาหาร ที่จะเสิร์ฟ ราคาที่จะต้องจ่าย และบรรยากาศของร้านที่เป็นกันเอง ซึ่งโดยหลัก ๆ แล้ว อาหารริมทางหรือข้างถนนนั้นจะมีความเรียบง่าย และมักจะเป็นอาหาร ที่ชาวไทยมักจะทานกันอยู่เป็นประจำ�เพื่อความสะดวกรวดเร็วด้วย ไม่ว่าจะเป็น อาหารที่ทำ�จากเส้นก๋วยเตี๋ยว ข้าว เนื้อสัตว์ ผักหรือปลา ที่มีราคาไม่แพง รสชาติดี และที่สำ�คัญคือ ต้องทำ�ให้พร้อมทานได้ในเวลาไม่กี่นาที ภาพของรถเข็นที่มาพร้อมกับอาหารว่างเต็มคัน อย่างเช่นหมูปิ้งนั้น เรียกได้ว่า เป็นภาพแทนความหมายดิบ ๆ ของอาหารข้างถนนได้ดีที่สุดก็ว่าได้ เพราะมีความ เรียบง่ายในการทานแบบที่สามารถ “หยิบแล้วไปต่อ”ได้เลยทันทีไม่ต้องรอนาน ส่วนภาพของพ่อค้าแม่ค้าที่นำ�รถเข็นมาตั้งขายตรงที่ว่างริมทางเดิน จัดวางโต๊ะพับ 86

สองสามตัว พร้อมด้วยเก้าอี้พลาสติก รอบรถเข็นนั้น ก็เรียกได้ว่าเป็นระดับขั้นถัด มาของอาหารข้างถนน ที่มีสถานที่เป็นหลักแหล่งให้ลูกค้ามานั่งทาน และอันดับ สุดท้ายก็คือร้านอาหารที่มีที่อยู่ที่ชัดเจนในอาคาร ที่ส่วนหนึ่งหรืออาจจะทั้งหมด ของร้านเปิดอยู่ติดกับถนน และบ่อยครั้งทั้งโต๊ะเก้าอี้ก็จะตั้งเลยมาที่ริมทางเดิน และบางครั้งก็จะลามไปถึงการตั้งครัวที่ล้ำ�ออกมาบนที่ว่างข้างฟุตบาทเลยก็มี ซึ่ง สำ�หรับผู้เชี่ยวชาญแล้ว มักจะยกให้สองอย่างแรกเป็นอาหารข้างถนนตัวจริงเสียง จริง แต่สำ�หรับนักชิมตัวยงนั้น ถ้าพวกเขาอยากจะทานผัดไทที่รสชาติเยี่ยมที่สุด ในเมืองแล้วล่ะก็ พวกเขาก็แทบจะไม่สนเลยว่ามันจะมีหลังคากันฝนหรือไม่ หรือ จะเป็นสถานที่แบบไหนก็ตามแต่ ขอแค่ให้ได้กินเป็นพอ สิ่งที่น่าติดตามต่อมาก็คือ ประเด็นที่ว่า “ร้านไหนที่ใช่หรือไม่ใช่อาหารข้าง ถนน” กลายมาเป็นที่กล่าวถึงกันอย่างเป็นจริงเป็นจัง ตั้งแต่เมื่อเดือน พฤศจิกายน พ.ศ. 2560 ตอนที่บริษัทชื่อดังอย่าง มิชลิน ได้เปิดตัวคู่มือท่องเที่ยวสำ�หรับ ประเทศไทยเป็นครั้งแรก โดยที่หน้าหนึ่งในคู่มือมีการเอ่ยถึงอาหารข้างถนนที่ดี

ที่สุดในกรุงเทพฯ อยู่ด้วย แต่ทว่าเกณฑ์การตัดสินร้านผู้ชนะรางวัลของมิชลินนั้น แต่ละร้านจะต้องมีที่อยู่ที่แน่ชัด นำ�ไปสู่ประเด็นที่ว่า ร้านรถเข็นที่เข็นผ่านไปมา ข้างถนนนั้นจะไม่สามารถนำ�ไปร่วมในรายการนี้ได้ มิหนำ�ซ้ำ� หลายคนยังแย้งว่า ร้านเจ๊ไฝ ร้านข้างถนนหนึ่งเดียวที่ได้รับรางวัลมิ ชลินสตาร์หนึ่งดาว ว่าควรหรือไม่ที่จะได้รับการพิจารณาว่าเป็นอาหารข้างถนน ต่อไป เพราะด้วยความที่ไข่เจียวปูเมนูดังของร้านก็มีราคาสูงถึง 1,000 บาท (32 ดอลลาร์) ซึ่งเรียนได้ว่าแพงกว่าอาหารจานหรูในโรงแรมห้าดาวเสียอีก แต่ที่เรื่องที่เกิดขึ้นแน่ ๆ แบบไม่มีข้อต้อแย้งอันใดได้เลยก็คือ ดาวดวงใหม่อย่างเจ๊ ไฝ ได้กลายมาเป็นจุดสนใจจากคนทั่วทุกมุมโลกในเรื่องของอาหารข้างถนนใน ไทย ในทันทีทันใดหลังจากที่เธอได้รับรางวัลจากมิชลินสตาร์ โดยทุกวันนี้ร้าน ของเธอที่เป็นตึกแถวโล่งกว้าง บ้านเลขที่ 327 บนถนนมหาชัยใจกลางกรุงเก่า ก็มี การจองคิวรอคอยยาวเหยียดไปอีกสามเดือนเลยทีเดียว แถมในตอนที่หนึ่งของซี รี่ย์ “Street Food” ที่กำ�ลังฉายบน Netflix ที่กระพือเรื่องราวของเจ้าแม่แห่งอาหาร

The Queen of Curbside Cuisine ริมทาง อายุ 75 ปีคนนี้ ก็ยิ่งทำ�ให้ยอดการจองโต๊ะของร้านเจ็ไฝนั้นเป็นที่ต้องการ มากยิ่งขึ้นไปอีก แล้วถามว่ามันจะคุ้มค่าหรือเปล่า หรือมันอาจจะเป็นแค่กระแสการโปรโมตหรือ เปล่า ก็ขอบอกเลยว่า ถ้าคุณสามารถอดทนรอต่อคิวที่ยืดยาวและราคาที่สูงได้มัน ก็คุ้มค่าแน่นอน! เพราะทุกเมนูนั้น เรียกได้ว่าเป็นทุกอย่างที่อาหารข้างถนนควร จะเป็นจริง ๆ - ทั้งความเผ็ดร้อนหอมหวน อาหารที่ปรุงสุกใหม่ และรสชาติที่ล้ำ� เลิศ ส่วนราคาที่หนักหน่วงนั้น เจ๊ไฝก็ยืนยันเองเลยว่า วัตถุดิบและผลิตผลที่ใช้ ทั้งหมดต้องมีคุณภาพดีที่สุดเท่านั้น และแน่นอนว่ามันไม่ได้มีราคาที่ถูกแน่ ๆ (แม้แต่ในประเทศไทยเอง) การได้เพลิดเพลินกับอาหารของเจ๊ไฝนั้นถือว่าเป็นส่วนที่ทำ�ได้ง่ายมาก แต่ส่วน ที่ยากกว่าก็คือการที่จะได้โต๊ะนั่งที่มีอยู่เพียงครึ่งโหลในเวลาที่จำ�กัดของแต่ละวัน ซึ่งหากคุณไม่ได้มีชื่ออยู่ในการจองล่วงหน้าแล้ว คุณก็สามารถลงชื่อรายวันเพื่อ 100 88

ความหวังว่าอาจจะมีที่ว่างพอจะแทรกได้ในนาทีสุดท้าย ซึ่งคุณจะต้องไปที่ร้าน ในเวลา 11.00 น. แล้วลงชื่อของคุณไว้เพื่อรับหมายเลขคิว จากนั้นกลับมาในเวลา 14.00 น. เมื่อร้านเปิดให้บริการ และรอให้ถึงหมายเลขของคุณ ทีมงานของเราทั้ง สี่คนได้ทำ�ตามขั้นตอนที่ระบุไว้นี้อย่างถูกต้อง และในที่สุดเราก็ได้คิวที่ 20 ของ วันและก็ได้ที่นั่งในเวลา 18:20 น. และเมื่อถึงตอนนั้นพวกเราก็หิวโซกันอย่าง มาก ซึ่งมันยิ่งทำ�ให้อาหารมีรสชาติที่ดีมากขึ้นไปอีก ในช่วง 4 ชั่วโมงแห่งการรอคอย ทีมของเราได้ผลัดกันออกไปเดินสำ�รวจพื้นที่ รอบ ๆ เมืองเก่า แต่เมื่อคิวหมายเลข 20 ใกล้เข้ามาเรื่อย ๆ เราก็เริ่มที่จะรออยู่กับ ที่และตั้งหน้าตั้งตารอ ซึ่งเป็นเรื่องที่น่าสนใจมากเมื่อได้สังเกตไปที่ฝูงคนรอบ ๆ ที่มาต่อคิวด้วยความแบบเดียวกัน ส่วนใหญ่นั้นอายุยังน้อย (ช่วง 20 – 30ปี) และ ดูเหมือนว่าจะมาจากทั่วทุกมุมโลก ที่บอกได้จากภาษาที่พวกเขาพูดคุยกัน ทั้ง เยอรมัน ญี่ปุ่น จีน เสปน ฟิลิปปินส์ และภาษาอังกฤษหลากหลายสำ�เนียง

ช่วงเวลาที่รอคิวเรายังสามารถมองเห็นภาพของเจ๊ไฝที่กำ�ลังทำ�อาหารด้วยตังอย่าง ขะมักเขม้นบนครัวแบบเปิดที่หันหน้าออกนอกถนน ตรงนี้เองคือที่ที่เธอทำ�งาน อย่างหนักกว่าห้าคืนต่อสัปดาห์ พร้อมด้วยแว่นตานักบินที่เป็นจุดเด่นรัดแน่นอยู่ บนใบหน้า เธอทำ�งานทุกวันอังคารถึงวันเสาร์ ตั้งแต่เวลา 14.00 น. ถึงเที่ยงคืน ยืนอยู่หน้าเตาไฟร้อนระอุกว่าสามเตา ภาพมันดูคล้ายจะเป็นห้องฉุกเฉินมากกว่า จะเป็นห้องครัว เพราะแต่ละครั้งที่ออเดอร์เข้ามาอย่างเร่งรีบ เจ๊ไฝจะทำ�หน้าที่ จัดการอย่างเร่งรัดให้แต่ละเคสด้วยกระทะร้อน ๆ หม้อต้มและกระทะที่ใช้เจียว ไข่ฟูฟ่องออกมาเป็นไข่เจียวปูสีเหลืองทองอย่างไม่มีหยุดหย่อน ตามด้วยออเด อร์ร้อน ๆ อย่างบะหมี่ผัด และและต้มยำ�ทะเลปรุงสุกสดใหม่ (นี่เป็นเพียงแค่สอง สามอย่างจากเมนูที่มีมากมายของร้าน) เธอยังมีผู้ช่วยอยู่อีกหลายคนที่จะคอยแบ ไปแบมารับอาหารออกไปเสิร์ฟ ส่วนตัวเธอเองนั้นจะยืนหยั่งรากอยู่ที่เดิม ภายใต้ เปลวไฟสีส้มสดใสที่โอบอุ้มเธอไว้ตลอดเวลา 89

เมื่อถึงคิวของเรา และเราได้เข้าไปนั่งแล้ว เราก้รีบเร่งจัดแจงสั่งอาหารจานหลักไป ทั้งหมดหกอย่างทันที ซึ่งรวมทั้ง เมนูไข่เจียวปูอันโด่งดังถึงสองจานด้วยกัน ไข่ เจียวปูรูปทรงยาวรีมาถึงที่โต๊ะเป็นอย่างแรก และมันมีขนาดใหญ่มาก เมื่อตัดมัน ออกในแนวยาวจะเปิดเผยให้เห็นไส้ในที่อัดแน่นไปด้วยเนื้อปูอวบอิ่มสีขาวนวล น่าทานที่เป็นเนื้อปูสดใหม่จากจังหวัดนครศรีธรรมราช รสชาติมันดีงามากจนเรา ลืมความน่าเบื่อหน่ายขอการรอคอยกว่าสี่ชั่วโมงไปเลย เพราะไม่ว่ายังไง สำ�หรับ เรามันคุ้มค่ามาก อาหารจานอื่น ๆ ที่ตามมาอันได้แก่ ปูผัดผงกะหรี่รสเลิศ (ซึ่งแพงกว่าไข่เจียวด้วย) และ"ผัดขี้เมาทะเล"เมนูซิกเนเจอร์ของ เจ๊ไฝ ตามด้วยต้มยำ�รสเผ็ดเร่าร้อนหม้อ ใหญ่ ที่มาพร้อมกุ้งตัวโตและปลาหมึกหั่นแว่นที่ปรุงสุกอย่างดี ท้ายสุดคือเมนู ข้าวผัดรสชาติเยี่ยม แต่ละอย่างเรียกได้ว่ามาในขนาดที่ใหญ่พอควร และเราแทบ จะทานได้ไม่ทั้งหมดเลยด้วย และเมื่อบิลเรียกเก็บเงินมาถึงโต๊ะก็สนนราคาอยู่ที่ 2,000 บาทต่อหนึ่งคน (ประมาณ 64 ดอลลาร์) ผมต้องขอบอกเลยว่า มันเป็นการ ใช้เวลาในการทานอาหารข้างถนนที่นานที่สุดที่ผมเคยทานมา ตั้งแต่ที่ผมย้ายมา 90

กรุงเมพฯ ประลองการห้าม ขายอาหารริมทาง ย้อนไปในปี พ.ศ. 2559 ชาวกรุงเทพฯ ได้เริ่มรับรู้ข่าวสารเป็นครั้งแรกเกี่ยวกับ แผนการของสำ�นักผู้ว่าฯ กรุงเทพมหานคร (BMA) ในการย้ายร้านอาหารริมถนน ออกจากพื้นที่หลายแห่ง สถานการณ์ย่ำ�แย่ลงในเดือนมีนาคม พ.ศ. 2560 เมื่อทา งกทม. ประกาศว่า ผู้ค้าริมทางในย่านยอดนิยมทั้งสามแหล่ง อันได้แก่ ทองหล่อ เอกมัย และพระโขนง มีเวลาเปิดร้านค้าริมทางได้จนถึงกลางเอนเมษายน และต้อง ย้ายออกไปหลังจากนั้น ในเวลาไม่นานหลังจากประกาศดังกล่าว ทาง BMA ได้ ประกาศว่า ร้านค้าริมทางจะต้องถูกกำ�จัดออกไปจนหมดจากพื้นที่ทั้ง 50 เขตของ กรุงเทพฯ ภายในเวลาสิ้นปี ถึงแม้ว่าจะมีการติดต่อไปยัง CNN เพื่อประกาศแก้ไข ยกเลิกประกาศดังกล่าวงในเวลาไม่นาน ราว 99.9 % ของประชากรทั้งหมดนั้นดูเหมือนจะคิดไม่ถึงว่า จะมีโฆษณาของ รัฐบาลออกมาในทันทีในชื่อ “สงครามร้านอาหารริมทาง” เสียงเรียกร้องของ ประชาชนนั้นรุนแรงยิ่ง เนื่องจากผู้ค้าร้านค้าริมทางในบางพื้นที่ถูกกวาดล้างไปจน หมด – ซึ่งนับเป็นจำ�นวนที่มากมายยิ่ง – และส่วนใหญ่นั้น ถนนในเมืองที่มีประชา กอยู่กันโดยทั่วไปจะเรียงรายไปด้วยร้านค้าริมทาง เพื่อรองรับประชากรในพื้นที่ ป้องกันไม่ให้พวกเขาอดตาย คำ�ถามนี้ยังคงเป็นเหตุผลว่า ทำ�ไมการเหยียบย่ำ�สิ่งสำ�คัญในชีวิตประจำ�วันใน ประเทศไทยจึงเป็นหนทางที่จะให้ BMA ดำ�เนินการ โดยเฉพาะอย่างยิ่งเมื่อความ สนใจทั่วโลกในอาหารริมทางไม่เคยมีมากขนาดนี้มาก่อน โดยสรุปแล้วปัญหาที่แท้ จริงเกี่ยวข้องกับภาษีที่ผู้ค้าริมทางไม่ได้ชำ�ระ เนื่องมาจากผู้ค้าริมทางไม่ได้กำ�หนด ที่อยู่ของร้านค้า จึงไม่ได้ชำ�ระภาษี ถึงแม้ว่าทาง BMA จะอ้างถึงข้อกังวลด้านสุข อนามัยในฐานะที่เป็นสาเหตุหลักในความต้องการเพื่อควบคุมร้านค้าเหล่านี้ มัน ค่อนข้างเป็นข้อแก้ตัวที่ไร้สาระเนื่องจากปัญหาด้านสุขอนามัยและความสะอาด ที่แท้จริงของกรุงเทพฯ คือคลองและแม่น้ำ�สกปรก อากาศที่มีมลภาวะเป็นพิษแ ละ การทิ้งขยะอย่างกะทันหันที่พบในทุกิที่ว่าง อาจจะปลอดภัยกว่าที่จะบอกว่า ในชั่วชีวิตนี้ อาหารริมทางจะไม่มีทางหายไปจาก เส้นทางสัญจรของกรุงเทพฯ อย่างสมบูรณ์ แต่มันจะถูกผลักไสออกไปอย่างช้า ๆ และไกลออกไปจนถึงบริเวณขอบเส้นทางสัญจร ปล่อยให้รูปแบบกลมกลืนดั้งเดิม เก่านั้นกลับมาอีกครั้ง ทิ้งให้ตื่นขึ้นมาอีกครั้งร้านอาหารชั้นยอด แฟรนไซส์ และร้าน อาหารจานด่วนไร้มารยาทที่น่าจะมีพนักงานมากกว่าลูกค้า Chef

ประเทศไทยเมื่อ 10 ปีที่แล้ว แต่ตอนนี้ผมต้องคิดใหม่เสียแล้ว ก่อนที่จะกลับผมได้มีโอกาสพูดคุยกับลูกสาวของเจ๊ไฝเล็กน้อย คุณยุวดี จันสุตะ เพราะตัวเจ๊ไฝไม่มีโอกาสพูด หรือเรียกได้ว่าไม่สามารถปลีกตัวมาให้สัมภาษณ์ ได้เลย เพราะเธอกำ�ลังง่วนอยู่กับการทำ�อาหารอย่างขันแข็ง ผมถามยุวดีว่าคุณแม่ คนพิเศษของเธอ เคยคิดว่าเรื่องนี้กลายเป็นเรื่องที่มากเกินไปสำ�หรับเธอหรือไม่ และเจ็ไฝเคยคิดจะแขวนผ้ากันเปื้อนและปลดเกษียณบ้างหรือเปล่า “ไม่ค่ะ” เธอตอบอย่าไม่ลังเลใจเลย “แม่ไม่เคยพูดอะไรแบบนั้นเลยค่ะ แม่อยาก ทำ�ต่อไปเรื่อย ๆ ” แล้วเราก็ได้คุยกันต่อถึงเรื่องซี่รี่ย์ที่ฉายทาง Netflix กับยุวดี ที่ ลาออกจากงานประจำ�มาช่วยแม่ของเธอที่ร้านอย่างเต็มตัว เธอยอมรับว่ามันมี ผลอย่างมาก และดึงดูให้คนรุ่นใหม่มาที่ร้านมากขึ้น ผมเลยถามว่า แล้วความโด่ง ดังจากซีรี่ย์ทำ�ให้มีคนมาเยอะกว่าตอนที่ได้มิชลินสตาร์ไหม “ฉันไม่คิดว่ามันเยอะกว่าเท่าไหร่นะคะ “ เธอตอบ “คิดว่ามันพอ ๆ กันเลย แต่ เพราะเรามีประสบการณ์มากพอจากตอนที่ได้มิชลินสตาร์มาก่อนแล้ว พอมาถึง Netflix เราก็เลยมีการเตรียมตัวอย่างดีแล้วค่ะ“ Chef 91

“It looked like the larder exploded!” Says Chef Thomas Allan of his arrival into Southern Portugal from his transatlantic flight from NYC. “You should have seen the customers inspectors faces, who are more used to bags of golf clubs here in the Algarve no doubt! When we unpacked our luggage what did they uncover? A mass of sauces, batter, pastry - some of our preparations were still even frozen when we got here!”

Part-prepped authentic local foods, lovingly transported across an entire continent; that’s the extent this revered NYC based Chef goes to with the aim he says of “Bringing a taste of NYC as close and as accurately, as possible to the rest of the world”.

Throughly ‘Modern’ “What we do at in our kitchen is quintessentially New York.”

The kitchen Chef Thomas Allan modestly refers to is the twoMichelin starred restaurant The Modern, the pinnacle dining spot of an already iconic Manhattan institution, MOMA (Museum of Modern Art) where he presides as Executive Chef.

“We have genuine love of the city and how cosmopolitan it is it’s a city made up of so many different nationalities, that all have merged to create a new separate multi-cultural identity - so when we travel abroad to different countries, we want to really showcase the melting pot that’s become the city’s own unique flavour.”

He continues “So we brought as many genuine ingredients as 93

ร้านอาหารผู้โด่งดัง) “เชฟที่นั่นดูเหมือนโจรสลัดมากครับ! ทั้งผ้าพันคอลายหัว กะโหลกแบบฮิปสเตอร์ ทั้งรอยสัก ทั้งเจาะจมูก ดังนั้นคุณคงจินตนาการออกว่าชุด พ่อครัวของผมจะมีหน้าตาแบบไหนตอนที่ผมทำ�งานต่อมาที่ถนนเมดิสันอเวนิว 11!” เขาหัวเราะ “ผมจำ�ได้ว่าผมเดินเข้าไปตอนผมหยุดงานและได้รับการว่าจ้างเลย ผม ค่อนข้างหวั่นเลยตอนนั้น แขกกว่า 200 คนในคืนวันเสาร์ มันสอนผมอย่างมากให้มี ระเบียบวินัย” ไม่มีที่ว่างสำ�หรับโจรสลัดบนเรือลำ�ที่แน่นเอี๊ยด! ผ่านไปสองปี แม้ว่าเขาจะลาออกจากเมดิสัน 11 แต่มันก็ไม่ใช่ช่วงเวลาเดียวที่เชฟ Allan จะได้ทำ�งานร่วมกับเชฟ Daniel Humm ที่เลื่องชื่อ

แต่เชฟคนนี้กลับไม่มีสำ�เนียงของชาวอังกฤษตอนเหนือเลย ส่วนหนึ่งเป็นเพราะการ เติบโตมากับชาวเท็กซัส เมื่อเขาอายุสามขวบครอบครัวของเขาได้ย้ายไปแคนาดา และจากนั้นก็ไปยังเท็กซัส แต่สำ�หรับหนุ่มน้อยนักสร้างสรรค์คนนี้ อายุ 19 ปีในตอน นั้น มันเป็นเวลาตัดสินใจไม่นานเลยตอนที่แสงไฟในเมืองใหญ่เรียกหาเขา

เวียร์ไว้ในองค์ประกอบของเมนูไตรภาคนี้ด้วย

แต่ทว่ามันก็อาจจะไม่งานง่าย ๆ สำ�หรับหัวหน้าเชฟเท่าไหร่นัก เช่นเดียวกับความ ท้าทายในการทำ�งานกับผลิตผลในท้องถิ่นที่พวกเขาไม่คุ้นเคย ห้องครัวสถานที่ ทำ�งาน แถมยังมีพนักงานให้ความช่วยเหลือที่จำ�กัด อีกทั้งเมนูอาหารที่เชฟแต่ละคน เลือกไว้จะต้องจับคู่กับไวน์ที่คัดสรรจากผู้ผลิตชั้นนำ�นานาชาติด้วย
