Whether you are looking for a healthful snack or a non-boring side dish, look no further.
This roasted broccoli has the crispiest, most crunchy texture and a savoury, yet not overwhelming palatability.
You can use Chinese broccoli which is called ‘Gai lan’ or ‘kai-lan’, widely used in the Chinese, Vietnamese, Burmese and Thai cuisine, or you can simply use regular broccoli, which will not affect the taste of the recipe in any way.
Serves 4 | Time 30'
4 cups [24 7oz] broccoli
1 cup [3oz] almond flakes
2 tablespoons sesame seeds
1 tablespoon garlic powder
2 tablespoons soy sauce
4 tablespoons sesame oil
¼ teaspoon black pepper
Preheat the oven to 200°C [392F°]
Line a baking pan with parchment paper
Trim the broccoli and arrange on the baking pan
In a mixing bowl, whisk together the sesame oil, the soy sauce, garlic powder, and black pepper
Drizzle over the broccoli
Roast for 20 minutes until the broccoli gets slightly crispy
Remove from the oven and sprinkle with the sesame seeds and almond flakes
Return to the oven and roast for 5 more minutes, until golden brown
Serve warm

This recipe is inspired by ‘Kappamaki’ – the most popular type of sushi in Japan. The traditional recipe is made with just three ingredients: nori, Japanese sushi rice, and cucumber.
We experimented with different versions and came up with our own, simplified keto version. The cucumber remains the hero ingredient making the perfect base for a velvety cream cheese layer topped with avocado and salmon.
The sesame oil adds an Asian touch which is balanced by the acidity of the lemon zest. Packed with protein and healthy omega 3 fats, this appetiser is the most uncomplicated way to ease yourself into the Asian cuisine!
Serves 4 | Time 15'
1 large [aprox 5 3oz] cucumber
½ cup [2oz] cream cheese, full fat
½ [2 3oz] avocado
1 80oz fresh salmon fillet
1 ½ teaspoon poppy seeds
½ lime, zest and juice
1 tablespoon sesame oil
¼ teaspoon sea salt
Peel the cucumber and discard the peel
Using a vegetable peeler, cut thin, lengthwise slices of cucumber
Discard the peel, or keep to use in smoothies and salads
Place on a clean tea towel (or paper towel) to absorb the excess moisture
Season lightly with sea salt
In the meantime, whisk together the cream cheese with the lime zest, lime juice and the sesame oil in a mixing bowl
Season to taste
Chop the avocado into strips taking the size of the cucumber slices into consideration, as you will be wrapping the cucumber slices around the avocado to create the rolls.
Chop the fresh salmon fillet into thin sticks as well.
Spread the cream cheese mixture on the cucumber slices. Add a piece of avocado and a piece of salmon on each slice and wrap, rolling lengthwise.
Sprinkle with poppy seeds and serve cold.
Cha Yen, or Thai tea is a combination of strong black tea, mixed with condensed milk, sugar (in our case sweetener) and spices such as star anise, or cardamom and it’s very popular in Southeast Asia
Here it is turned into a delicious low carb dessert in the form ice-cream made with coconut cream and infused with vanilla and cardamom
Serves 8 | Time 20' plus chilling
1/2 cup [4.2oz] heavy cream
1 cup [8fl.oz] milk, full fat
2 cups [16fl.oz] coconut cream
2 tablespoons Thai Tea or plain black Ceylon tea, dry
4 egg yolks
½ teaspoon cardamom, ground
4 tablespoons Erythritol
1/2 teaspoon vanilla extract
¼ teaspoon salt
Heat the coconut cream with the milk, Thai tea and salt in a saucepan over low heat.
Turn the heat off and let it steep for a couple of minutes covered with a lid.
Strain and discard the tea residue. Whisk the egg yolks and gradually pour into the warm cream mixture, stirring vigorously to incorporate.
Return the mixture to the heat, add the Erythritol and vanilla, stirring until it thickens slightly.
Remove from the heat and pour in the cold heavy cream, straight from the fridge, whisking to lower the temperature of the mixture.
Pour in a freezer-proof container and place in the freezer for 4 hours, whisking and blending again every one hour to achieve a soft, creamier consistency.
