Colourful Scones
If you’re looking for the perfect afterschool savoury snack then here you go: cheesy scones packed with colourful veg. Delicious hot, warm or cold. They’re really fun for your budding little chef to make during a weekend baking session!
Top Tips
Making the dough can be a bit messy, so have a clean damp tea towel or cloth handy to wipe sticky fi ngers. Use a large mixing bowl so the fl our is more likely to stay in the bowl rather than over the sides.
Ingredients
• 225g self raising-fl our • 1 tsp baking powder • 40g cold butter • 60g cheese, grated • 140ml milk • ½ carrot, grated • ¼ red pepper, diced • ¼ yellow pepper, diced • ¼ courgette, grated • Pinch of salt • Splash of milk (for milk wash)
Method
1. Preheat oven to 200°C / 180°C fan. 2. Grease or line a baking tray. 3. Pre-weigh all the ingredients and place into separate containers. Combine the baking powder and fl our. 4. Ask little ones to carefully pour the fl our into a bowl and rub in the butter until it looks like breadcrumbs. 5. Ask them to pour in the milk and mix. 6. Encourage your little chef to add the vegetables and then sprinkle in the cheese. (Tasting the vegetables as they go in is not a bad thing!) 7. Mix well and bring together to form a dough ball. 8. Ask your little chef to ‘make it snow’ with the fl our on your work surface and then show them how to gently fl atten the dough with their hands (sprinkle a little more fl our if it’s sticky.) 9. Use a circular cookie cutter to cut out the scones and place on the lined baking tray. 10. Bring the dough into a ball again, fl atten and repeat until you have used all the dough. Makes approx. 10 scones. 11. Ask your little one to carefully brush or
‘paint’ milk over the scones. 12. Pop into the oven for 15 - 20mins until golden.
Keep in an airtight container for up to 3 days. They freeze brilliantly - take them out of the freezer in the morning, pop into your picnic bag and they’ll be defrosted by lunch. Yum!
Pizza Twists
Purple Porridge Rainbow Crumpets
Delicious hot or cold, these simple cheesy twists are perfect for packed lunches, after-school snacks and weekend picnics.
Ingredients
• 1 pack ready-rolled puff pastry • Approx. 100g mozzarella cheese, grated • 4 tbsp tomato puree / pizza sauce • Dried oregano • 1 egg • You can add fi llings of your choice too
Method
1. Preheat the oven to 220°C / 200°C fan. 2. In a small bowl, mix the tomato puree with a splash of water and a good sprinkling of dried oregano. 3. Unroll the pastry and ask your little one to use a spatula to spread the tomato sauce over one half of the pastry. 4. Sprinkle the cheese all over the tomato sauce. Cover with the other
side of the pastry. Gently press around the edges to avoid too much spillage. 5. Using a sharp knife, cut the pastry in half lengthways and then cut into 14 strips. 6. Twist in opposite directions and place on a lined baking tray. 7. In a small bowl, help your little one to crack and whisk an egg. Ask them to use a pastry brush to brush the egg over each of the pastry twists. 8. Pop in the oven for 20 mins until golden and the cheese is bubbling. 9. Enjoy!
Top Tips
Keep in the fridge in a sealed container for up to 3 days (if they last that long). They can also be frozen. Defrost and eat cold or reheat in the oven from chilled.
A nutritious, fun and fi lling after-school activity / snack and a great way to get those veggies eaten up. All you need to do is pop a crumpet in the toaster, stick the kettle on for yourself and let them do the hard work!
This vibrant breakfast makes a fun change from standard cereal. Adding berries helps to fi ll little tummies with vitamin C to fi ght those back-to-school germs.
Simply toast a crumpet, slice in half and ask your little chefs to wash and chop the veg and pop into separate bowls or holes in a muffi n tray. Ask them to spread hummus / cream cheese / nut butter over the crumpet and then assemble their rainbow.
Use the same cup for oats and milk to keep measurements correct. Kids can help measure the ingredients and pour into the pan away from the heat.

• 1 cup oats • 2 cups milk (plant based / cows) • 1 cup frozen / fresh blueberries / forest fruits / blackberries • A generous sprinkle of chia seeds (optional) • Banana / berries / blueberries (toppings optional)
Method
1. Simply heat the oats and milk in a pan, stirring with a wooden spoon until it thickens. 2. Add the berries and allow them to mix into the porridge; keep stirring until purple! 3. Top with fruit and a good sprinkle of chia seeds for a nutritional boost (chia seeds don’t taste of anything so the kids don’t mind, but if yours object you could just add them to the pan and mix them in).
