DIRECTIONS
1.) Preheat oven to 350 °F. 2.) Combine brown rice and ½ cup water in a small pot and bring to a boil. Turn heat down to low. Cover and cook until water is absorbed, about 30-40 minutes. Fluff with a fork. Cover and refrigerate until completely cooled. A rice cooker may be used with the same quantity of brown rice and water. 3.) Heat canola oil in a small skillet. Add onions, celery,and garlic. Cook over medium heat for 5 minutes or until tender. Remove from heat. Cover and refrigerate until completely cooled. 4.) In a medium mixing bowl, combine turkey, egg, cranberries, spinach, Worcestershire sauce, salt, peppers, brown rice, and sautéed vegetables. Mix well. Shape into 6 patties. 5.) Line a large baking sheet with parchment paper and lightly coat with nonstick cooking spray. Place patties evenly spaced on baking sheet. 6.) Bake uncovered for 20-25 minutes at 350 °F to an internal temperature of 165 °F or higher for at least 15 seconds (use a food thermometer to check the internal temperature). Do not overcook. Remove from oven and serve on a mini whole-wheat roll. Serve immediately. 7.) Serving suggestion: Serve with onion, lettuce, tomatoes, ketchup, and mustard.

On the morning of September 20th, Henrico County Manager, John Vithoulkas, will join the Innsbrook Table Talks for their monthly gathering. Over breakfast, Vithoulkas will discuss “The State of the County” and how it is specifically important to Innsbrook residents. Guests are encouraged to arrive at the Richmond Marriott Short Pump by 7a.m. so that they can network with one another and engage in a drawing for door prizes before the conversation begins.

When you’re finished networking, you can pull your bull horns out and get ready to cheer! September 22 will bring on the Richmond Corporate Games - an Olympic-themed adult field day. Representing the country of their choosing, corporate teams will gather at either the Innsbrook Volleyball Court or at the Dominion Energy soccer field to compete for their chance at a gold medal. The games start at 8:30 a.m. and will go on throughout the day. Proceeds from this event will benefit the Special Olympics Virginia. And finally, on October 27, the annual Innsbrook Pumpkin Palooza comes back to town! From 10:00 a.m. to 4:00 p.m., the Innsbrook North Shore Commons Lawn will turn into the family Fall-Festival, featuring pony rides, petting zoos, bouncy houses, a rock climbing wall and live entertainment.Other activities will include costume contests, pumpkin bowling and a straw bale pyramid. Attendees can pick their own pumpkins at the pumpkin patch for painting and decorating. All family members are encouraged to attend, even the furry ones. So don’t miss this fun filled day!
