“I propose a complete overhauling of the way the city budgets and spends – one designed to free our government from the current administration’s addiction to irresponsible borrowing and budgeting.” Jesus “Chuy” Garcia. Incumbent Mayor Rahm Emanuel and mayoral hopeful Jesus “Chuy” Garcia are each hoping to have the necessary Black voters on election day, April 7, to take them to victory. Neither can win without a substantial increase in the number of Black votes they received in the primary election on February 24. Their fate also depends on increases in the number of progressive white and undecided voters. A recent poll showed Emanuel with 51 percent of voters likely to vote for him, Chuy Garcia at 37 percent and 11 percent undecided. Thus Garcia’s campaign has launched an aggressive person-to-person ground offensive. The major message being carried by this army of foot soldiers is a five-point platform that his team has determined is key to gaining support in the vital demographic areas that will lead him to victory. ON CRIME – Garcia is committed to hiring 1,000 new police officers and implementing a real community-policing program. His supporters and potential supporters in the Black community welcome a commitment to reducing crime and especially a program that will make real a decades-old promise. This is especially important in Black communities that experience increasing numbers of Blacks males being killed by police and the skyrocketing amounts of taxpayers’ dollars being paid to the families of victims. AN ELECTED SCHOOL BOARD – Garcia advocates an elected school board so that citizens can participate in how schools operate and educate children. The elected school board non-binding referendum that was on the February 24 ballot in 37 wards throughout the city gained more than 80 percent approval. The school closing issue remains a hot button in the Black community and one of the main reasons for the massive defection of Black voters from Emanuel in the February election. Thus, boosted by the support of Karen Lewis and the Chicago Teachers Union (CTU), the Garcia campaign feels strongly that he and Blacks are on the same page. ABOUT RED LIGHT CAMERAS – The speed and red light cameras issue was hotly debated in the run-up to the February election and has continued since. Garcia wants to abolish red light and speed cameras that he says fail to make streets safer and mostly serve as a revenue stream that preys on poor and inner city residents. Garcia has said that if he is elected, he will remove all of them. Emanuel has since announced he is removing 50 cameras from 25 sites throughout the city. Garcia says that the Mayor’s removal of 50 cameras is “too little and too late”! He feels that this is a winning issue among voters in all sections of the city. ON MINIMUM WAGE – Garcia supports a $15 an hour living wage for workers versus Emanuel’s passed legislation that will raise the minimum wage in the city to $13 an hour in 2019, which Garcia contends is too far away to benefit most workers who are now desperate for a needed pay raise. Many Garcia supporters agree and believe that by 2019 the cost of living and inflation may have increased to exceed the benefits of a $13 minimum wage rate and a $15 an hour rate may be barely enough to keep up with inflation. ABOUT PENSIONS – Garcia pledges to protect the pensions and health benefits of municipal employees. He has accused Emanuel of slashing workers’ pensions and health benefits. Garcia has assembled a panel of economic and financial experts who are in the process of studying all of the budgetary and financial issues. Last week, he unveiled a report called Towards Fiscal

With just under three weeks until the run-off election, Chicago’s Black community is faced with making the choice between Mayor Rahm Emanuel, who has been forced into the first ever run-off election in Chicago’s history ort Jesus “Chuy” Garcia, the activist and Cook County Commissioner. Many the would acknowledge that Mayor Emanuel suffers from a likeability issue in the Black community, but is a national player that has brought international spotlight to the city, and attracted business and jobs to the city. Conversely, Jesus “Chuy” Garcia was virtually unknown to the Black community six months ago, but has risen to international notoriety by forcing one of the world’s most formidable politicians into a runoff that no one outside of Chicago could have ever imagined possible. Mr. Garcia is relying heavily upon his connections to the Harold Washington legacy to garner the much-needed support from the Black community if he is to be successful. Candidates, analysts, and pundits all agree that the Black vote is crucial to the success of either candidate hoping to occupy the 5th Floor. For the Black community this vote is crucial because it could very well chart the course of Black political empowerment in the city of Chicago for decades to come. The US Census Bureau already reports that the Latino population has surpassed the African-American population in Chicago and is projected to continue growing at a steady rate, while the Black population in Chicago will continue to decline. These factors put Chicago’s Black community at risk of losing political capital and power in a city, where in spite of its population, the Black community has only been able to elect one Mayor of it’s own, Mayor Harold Washington, whose endorsement Mr. Garcia is claiming post mortem. As the Black community moves to make this momentous decision in less than three weeks, it is important to examine some of Mr. Garcia’s history with the Black community. In 1980’s, Mr. Garcia was elected Chicago Alderman with the support of Mayor Harold Washington. When Mayor Washington died, Mr. Garcia joined with the Progressive Caucus of Chicago City Council. That same Progressive Caucus eventually attempted a coup of Mayor Sawyer and nominated Ald. Tim Evans. Mr. Garcia sided with the Progressive Caucus, which eventually fractured the Black political unity that had been created under Mayor Washington. That fracture lead to the “Black political disunity that has lasted over thirty years,” said noted Black activist Dr. Conrad Worrill. That rift is also what allowed for the election of Mayor Richard M. Daley and the creation of the non-partisan election, which diminished the influence of the Black vote in primary elections, rendering the Black community unable to elect another Black Mayor to this day. Mr. Garcia also served as an Illinois State Senator in Springfield, IL. During that time, the Latino community only had two State Senators, so they were welcomed to join the Black Caucus as a sign of Black/Brown Solidarity. During this same period the Illinois Legislative Black Caucus launched a variety of initiatives and programs that benefitted both the Black and Brown communities, culminating with the creation of the African-American Family Commission. Soon after, as the Latino representation in Springfield increased, Mr. Garcia left the Black Caucus to form the Latino Caucus and the Latino Family Commission. Since that time, the Black and Latino Caucuses and Family Commissions have been competing for resources not collaborating. Additionally since that time, the Latino community has received over $100 million dollars from Springfield to build new schools in their communities, while 50 Chicago Public Schools were closed in predominately Black communities

SOCIETY NEWS

Chicago’s Society of Mannequins Rocks 2015 Fashion Trends By Eleana Elan Seventy-four years ago, The Society of Mannequin’s parent organization, the Association of Mannequins, was formed as an organization to assist Black women who wanted to break into the fields of fashion and modeling. They chose to draw attention to elegant, well groomed and accomplished Black women by announcing and publicizing in Chicago’s Black and White press those women selected each year as the “Ten Best Dressed Black Women of Chicago.” This year, the Society kicked off Women’s History Month with its annual luncheon honoring “The Ten Best Dressed African-American Women of Chicago and the Woman of the Year.” Living up to its reputation as one of the most anticipated, glamorous affairs of the year, the attendees came dressed to the “nines.” The afternoon’s ambience was filled with good food, great spirits, grand entertainment and a glamorous fashion show entitled “Rockin’ The Fashion Trends of 2015.” This Society of Mannequins was formed in 2000 under the leadership of Lee L. Brown to continue and expand the vision of the parent organization which was formed by Emma Beck in 1939 to bolster the spirits of Negro women who aspired to be models. Since then, the Society of Mannequins has grown considerably under Brown’s leadership and the members of the Governing Board, including Cecellia M. Smith, Cheryl Marshall Washington, Janet Blake-Greene, Lucille Banks-Jefferson, Valerie Davis, Leotine Brown and Rev. Gloria Randolph. As a not-for-profit organization established to continue the vision of the Association of Mannequins, the Society’s mission is to award scholarships to needy and talented African-American students and to recognize and honor impeccably groomed African-American women who serve as exemplary role models and outstanding leaders in their fields and communities. Though the organization is centered on fashion, its achievements and sense of community service are far more important than the sense of style or fashion. “We continue to look for and recruit African-American women in Chicago who are best dressed, socially groomed and possess a wonderful disposition,” said Brown. Following the huge footprint of founder Vivian Hieber, along with her co-founders Dr. Bernice Miller, June Robinson, the late Mary Futrell,

Society of Mannerquin Group Photo: Carolyn Griffin Plmer. Robin Robinson, Rev. Gloria Randolph and the members of the Society of Mannequins Trophy Board Photo By: Benard Williams the late Mildred Cottrell, Catherine Beck and the late Emma Beck, the final president of the Association of Mannequins, is no small effort. The Society’s founders chose and brought together women of a certain caliber to inspire each other and the community, to highlight their achievements and, most importantly, to raise scholarship money for Black students attending the School of the Art Institute. Almost all of the original Mannequins have passed away, but their legacy lives on and has evolved over time. Unfortunately, American society often dismisses the beauty of Black women. So try to visualize the era during which the Association of Mannequins was founded. These women were pioneers when most Black Americans in the 1930’s struggled to put together their Sunday best, which is why selecting the ten best-dressed Colored women in

1939 was not exactly as the name implied. “Because we didn’t have much money to buy the things we wanted,” Catherine Beck explains why being “well-groomed” was a more accurate standard. Catherine’s older sister, Emma Beck, was one of the founders of the Association of Mannequins, which for 60 years selected Chicago’s Ten Best Dressed then held a luncheon and fashion show where those selected ladies served as the models. “They organized the Association of Mannequins, because they wanted to have places to model, just like the others. They didn’t have that opportunity at that time,” Beck said. Though the opportunities have increased, they are still far from what they should be. But the founding members desired to promote their luncheon and fashion show public-

ly and have their modeling photos published in the paper in hopes of breaking the color barrier for actual modeling jobs. The selection of what was then the “Ten Best Dressed Colored Women” of Chicago became an event to look forward to in the community as a result of celebrity power which put them in the spotlight. There was stage and screen star Etta Moten, the first Black actress to star in a motion picture in a non-servant role (Flying Down to Rio, 1933), who became a member of the Trophy Board (this involves being selected three consecutive years as one of the Ten Best Dressed). Moten’s membership attracted an avalanche of applications. And then there was Marva Louis, boxing great Joe Louis’ wife. The two of them really raised the status of the organization. Today’s women have wealth and the choice to buy high fashion,

brand names and travel wherever they want to go. So the Society has evolved to focus on more than just fashion. Women have to be accomplished and possess more than a high fashion sense. Women who become a Mannequin today need to have contributed to others, especially those who are less fortunate. The Society of Mannequins highlights the charitable efforts of a few good women once a year. In the last ten years, an estimated $50,000 has been given to African-American students for college. The Mannequins supports each scholar through graduation, as long as the student maintains good grades. The fashion show is extremely entertaining shows as it celebrates African-American women and all that they have overcome, all that they have done and all that they will do while doing it with style. www.chicagodefender.com

as the club still maintains exclusive membership to an intimate group of men. They meet once a month as a group consistently to discuss various concerns and organizing ways of contributing to the community to assist great causes. The members’ wives play a major role as they support their husbands’ endeavors as well as networking and strengthening relationships with each other. Without the formalities, sometimes it’s as simple as coming together to play cards, share a drink, play golf or have dinner parties. President of The Original 40 Club, Todd Brown, explains, “The Original 40 Club gives me the opportunity to fellowship with a group of very successful men whom I might otherwise have never gotten to know. It is truly special to have frank, stimulating conversations with guys who are movers and shakers in politics, law, business, medicine and education. Importantly they also happen to be a fun group who will always keep you honest and humble.” Each person must be invited by a current member and have similar common interests to be considered to join the club.

The theme of this year’s centennial celebration, “40 Rocks 100,” was a defining moment as the club presented an elegant dinner program, acknowledging the organization’s history and newly elected members. There wasn’t a dull moment as the talented Gentlemen of Leisure Band provided the soundtrack for the gala, followed by a fun and festive masquerade after- party as members and their guests danced the night away. In a city where society clubs have become a mainstay among many people from various backgrounds, businessman David A. LeRoy, one of the younger club members, explains why the 40 Club is special to him. “The 40 Club allows me to fellowship with other African American men. We have all been through trials and victories. We can come together and share those experiences. There is a unique mix of men between the ages of 38 to 82 where we meet once a month. The camaraderie is priceless and the opportunities to network with men who share similar values and goals cannot be matched.”

OOOh what a horrid web politics can weave. And as we have witnessed, it often brings out the worst in human beings, rather than the compassion and empathy for others it is meant to inspire. The desire for money and power has been the guiding force driving men to cheat, steal, destroy and kill with racism as a catalyst. We have seen how the Republicans behave badly seeking to stop President Barack Obama at every step he takes to advance society. We heard them declare that it was their goal to see that he fails. So why were we surprised when

most recently they invited the Israeli Prime Minister Binyamin Netanyahu to address the U.S. Congress? They permitted Netanyahu to present his position on plans for Iran knowing that it was not in line with President Obama’s or the other world leaders’ plans with whom he was meeting the same week. They stood in applause at least three times during the Israeli leader’s speech exposing their treachery against the President. And if that were not enough, they sent an unprecedented open letter to Iran’s leaders warning of the limits of a nu-

clear deal with the Obama administration. It said that an agreement between the U.S. and Iran not ratified by Congress should be considered an executive action any future president could revoke. What ass holes! Do the Republicans hate Obama so much that they’d put America in harm’s way? The potential is there. I’m asking you, am I the only one who heard the message in the Godfather? “You don’t break with the family in front of outsiders.” And to think that the Republicans would dare open up the Hillary Clinton use of personal emails while serving as Secretary of State when former Secretary of State Colin Powell, who is a Republican, admitted that he used a private email account for public business. Powell’s announcement should have certainly amounted to a death blow for Republicans who are trying to build a scandal out of Hillary Clinton’s emails. However, that did not deter them from continuing to raise the issue on every news talk show and beyond. Furthermore there’s quite a list of Republican would-be presidents who have also used their private emails while holding government office. They include: • Wisconsin Gov. Scott Walker (R): Though he called Clinton’s use of a private email address an “outrage,” Walker is at the center of a Wisconsin controversy surrounding his use of a private email address. • F lorida Sen. Marco Rubio (R): The Republican lawmaker deleted emails from his private account during his tenure in state government, despite using his personal account to conduct business related to his official duties.

The following topics will be covered:  Featuring a presentation by Department of Procurement Services (DPS), Certifying Agency for the City of Chicago  M/W/DBE Network and Outreach  Small Business Initiative (SBI) Program  Upcoming Capital Improvement Program (CIP), Term Contracts, O’Hare Modernization Program (OMP), and Request for Proposals (RFPs)

•N ew Jersey Gov. Chris Christie (R): Nearly a year before rev-

elations that former Secretary of State Hillary Clinton used her personal email account for official business, the Christie administration was chastised because members of its own staff communicated through private emails. • F ormer Texas Gov. Rick Perry (R) and Louisiana Gov. Bobby Jindal (R): Both Republican governors conducted official business from their private email accounts and have not released the emails for public scrutiny. And finally news that House of Representatives Republicans have exempted themselves from the same standard that they are trying to hold Hillary Clinton to has pushed this story from being ridiculous to being absurd. How can anyone take the Republican fiasco over Clinton’s emails seriously when they’ve taken steps to exempt themselves from having to save any of their own government emails? If there is one thing that Americans have learned since Republicans took control of the House, it is that they should never be trusted. The Republican hypocrisy is par for the course for the party of “do as I say, not as I do.” Just to be clear about this, legitimate questions have been raised that deserve answers. But the Republicans’ hypocrisy matters. And now there’s rumor that Obama senior adviser Valerie Jarrett leaked the details of Hillary Clinton’s use of a private e-mail address during her time as secretary of state but did so through people outside the administration, so the story couldn’t be traced to her or the White House. It is rumored that the alleged sabotage is part of an ongoing feud between the two Democratic powerhouses. Really?

OPINION

Chuy win over Rahm still debatable By Monroe Anderson Defender Columnist

Jesus “Chuy” Garcia had to do just one thing during Monday night’s first mayoral debate: Channel his inner Harold Washington to show Rahm Emanuel and the rest of Chicago who was the boss. Mission unaccomplished. Garcia came off as the man who would be mayor. Emanuel came off as the mayor. In a testy verbal battle between Commissioner Congeniallity and Mayor Meany, both men made valiant efforts to go against type. It was obvious that Emanuel was working hard at being more likeable. It was just as apparent that Garcia was attempting to be No Mas Mr. Nice Guy. At the same time, each man was out to typecast the other. Without name calling, Garcia, the community organizer, reminded voters why there is a book out there entitled, Mayor 1% Percent. “Chicagoans need to know that this mayor has provided corporate welfare to his cronies, millionaires and billionaires in Illinois in terms of tax increment financing and that he promised four years ago to put Chicago’s fiscal house in order,” Garcia said. “We’re in a financial free fall. The city has been downgraded, three of its agencies over the past two weeks, to near junk bond status.” Cook County Commissioner Garcia charged that while “trying to talk in a sophisticated way,” the mayor wasn’t saying anything that would help any Chicagoan who wasn’t physically or professionally in the Loop. Mayor Emanuel, chum to the corporations, was far smoother than

jerk, he’s our jerk who appears to be working. An Ogden and Fry poll on Saturday showed Emanuel at 47.1 percent, compared to Garcia’s 37.6 percent. TAKING CARE OF THEIR OWN By Chicago Defender Staff

State Senators Jacqueline Y. Collins (D-Chicago 16th) and Emil Jones, III (D-Chicago 14th) honored the players of the Jackie Robinson West Little League baseball team yesterday, joining with local business owners and other community leaders to present them with reproductions of a baseball-themed painting by Annie Lee, a noted Af-

rican-American artist with Chicago ties who passed away late last year. The team has undergone the scrutiny of controversy a as a result of the scandal that stripped them of their championship. Though no fault of their own because of the oor choices their coaches made what they worked hard for and won was taken from them. However the experience of team work and the exhilaration of winning, the public

support, all of the accolades they received and the people they met are experiences that can’t be taken away. “Playing the game they love in the national spotlight, these young men showcased not only their athletic abilities, but their sportsmanship, class and grace under pressure,” Collins said. “I’m proud to see a community come together to honor our youth for their accomplishments.” “Far too often, young black men in our community are negatively labeled and don’t receive any sort admiration for their achievements,” Jones said. “It’s an honor and privilege to recognize these young men not only for their athletic ability, but also their ability to unite a city. Our city was blessed to witness a historical event that will never be forgotten.” Lawrence Calvin D’Antignac,

owner of The Woodshop, a major dealer of African, African-American and Caribbean art, presented each player with a reproduction of “Full Count 3 and 2.” The Annie Lee painting depicts a young boy pitching in a sandlot baseball game. Collins and State Representative Monique Davis (D-Chicago 27th) have introduced resolutions calling on Little League International to rescind its decision to strip Jackie Robinson West of the national title it earned last year. Collins, Jones and others have stood with the players of JRW, who have inspired young people, particularly youth of color, throughout the United States and continue to represent Chicago with pride and dignity. Other sponsors of Sunday’s event included The Woodshop, Larry Huggins, Stanley Rakestraw, Everett Rand, Timothy Rand and Community Assistance Programs.

The Chuy Factor: Pro from Page 2 Sustainability: a New Approach in Prudent Fiscal Management of Chicago. In this report, he promises to issue a comprehensive plan to tackle the fiscal problems of the city from pensions to Tax Increment Financing (TIFs). This report clearly outlines the basis of the problems and the wrong approaches to its solutions that have plagued the city for more than 25 years. Political observers are predicting a larger runoff election turnout, perhaps as high as a 20% increase over the February 24 results The Garcia campaign has structured its strategy towards this end. They are now in the GET OUT THE VOTE MODE! This promises to be one of the most watched elections since the Harold Washington victory of 1983. The Chuy Factor: Con from Page 2 According to the City of Chicago Department of Procurement Services, Blacks accounted for 12% of minority spending while Latinos accounted for 13% of the City’s spending. While those numbers seem relatively fair, the Black community must also consider how quickly the Latino community has been able to surpass Blacks in a program that was initially created to ensure that Blacks succeeded. Since the late 90’s the Latino participation in the MBE program has grown exponentially, while Black participation seemingly shrinks annually. Many people in the Black business and civic communities are already concerned that Black participation will reach historic lows if Mr. Garcia is elected. Garcia has already received hammered by Black activists for the limited number of Blacks on his campaign staff, and many expect more of from a Garcia administration. On April 7, 2015 the Black Community of Chicago will not only decide the fate of Jesus “Chuy” Garcia and Mayor Rahm Emanuel, it will also determine the future of Black people in Chicago, for better or for worse. Mr. Garcia has just three weeks to bridge a gap that has been ever widening between Blacks and Latinos in Chicago since Harold Washington died.

Black students in higher education By Robert T. Starks “Every Student Deserves Access to a Quality, Affordable Education” President Barack Obama Students and parents across the country have all applauded President Barack Obama’s recent declarations of support for affordable college and university tuition. Inspired by the examples of the State of Tennessee and the City of Chicago, Obama announced his proposal for free and universal community college education in January. This proposal would cover 9 million or more people regardless of age. All would be eligible as long as they maintain a 2.5 GPA and attend school at least half time. The federal government would pick up 80 percent of the cost and the states would cover the remaining 20 percent. The estimated cost of this program to the federal government is $6 billion a year. Given the fact that American students graduate from college burdened with an average of $25,000 in debt primarily caused by escalating tuition costs, total tuition loan debt in 2015 totals more than $1 trillion. This total debt is expected to increase throughout the decade. This increasingly heavy financial outlay places an unbearable burden on Black students and their families. Thus, the Black community welcomes President www.chicagodefender.com

Obama’s STUDENT AID BILL OF RIGHTS which includes the following: EVERY STUDENT IN AMERICA SHOULD •Have access to a high-quality, affordable higher education. •Be able to easily find the resources they need to pay for college. •Be able to choose an affordable repayment plan for student loans. •Receive quality customer service, reliable information and fair treatment when repaying loans. GOOD NEWS FOR BLACK STUDENTS This is good news for all students and is especially good news for Black students if and when the essence of this STUDENT AID BILL OF RIGHTS is enacted into law and matched with adequate funding. However, as with the free community college proposal, congressmen and state officials have already begun questioning the costs of these proposals and stating doubts about legislative support. In fact, some Republican legislators at the state and federal levels have predicted that these proposals would suffer the same bad PR fate as Obamacare.

Additionally, Black students, especially Black males are less likely to matriculate through college and graduate within the traditional four years. Too many Black males average six years or more to graduate. In fact, in the 106 Historically Black Colleges and Universities, some 30 percent graduated in six years and 37.5 percent of Black students in all U. S. colleges. Further, more than half of those who are graduating in six years or more are Black males. While it is estimated that there are over 2 million Black male college graduates and an estimated 1 million enrolled in colleges, Black females now outnumber Black males in colleges and universities nationally. This dire statistic reflects that fact that the missing additional 1.5 million Black male students who should be in college are now in jails and prisons. Clearly, one of the major reasons for the lag in Black male matriculation is cost. However, we cannot overlook the other factors that predict this lagging behavior. These factors include a 59% high school graduation rate, 15 percent suspension rate, more than 33.5 percent Black family poverty rate and inner city schools that graduate Black males from high schools with less than eighth grade reading scores. Thus, in order to increase the number of Black males in postsecondary educational institutions and eliminating the persistent six plus years graduation rates, we must begin making some significant improvements in education at the elementary and secondary levels. Quad-Career Choice

Black women rock in the kitchen

By Mary L. Datcher

DEFENDER STAFF REPORTER

Since the days of enslavement, Black women have managed the kitchen, running a tight household that included meal preparation, instructing and training other kitchen helpers and making sure the rest of the household was run with impeccable efficiency. Many women preserved and passed down the flavors and traditions from their ancestors and built a blueprint for traditional American and Southern cuisine as we know it today. Fast forward to today’s Black women are choosing careers in the culinary field -- by choice and educated to expand their knowledge and palette to succeed. They’ve moved a long way from how African-American women were seen as it relates to cooking. Some of these shining stars are exemplary role models of the many talents that are brought to the forefront by Chicago’s Black female chefs today. Chef Nichelle Benford is the owner and executive chef of her company, Dream Chef. The Chicago native is a former model and corporate executive who has a passion for cooking. After a few years of working in corporate America, she felt her time was not her own. Taking a leap of faith, she resigned from her job and went to culinary school to earn her degree. She started to work in different areas of the business, taking on various jobs at restaurants such as working from the kitchen to understanding the management of running a restaurant. “I’ve always wanted to be my own boss and own a company. I figured food was the best way to do this,” said Benford. Dream Chef has become a solid fixture on social media, building a following on Facebook and Instagram. “It’s really who you know; I try to network with everyone. No matter where I am, I tell people what I offer,” she explains. What she offers is a unique flair of what she describes as “comfort luxury food.” This style focuses on familiar comfort food with a healthy twist that includes fresh ingredients. While building her company through catering high profile events and launching a fast growing delivery service, as an entrepreneur she still faces certain challenges. The fluctuating costs of food, the economy and catering to a solid clientele are among some of the challenges of running a business. “The biggest challenge is just staying focused when things are slow, to continue to grind and hustle without being discouraged. Keeping good people around you as well as having positive role models is also important. It can be someone that I may not know, but if I see them on social media, sometimes their journey inspires me.” In 2006, a young woman from the South Side of Chicago auditioned for the popular television show, Hell’s Kitchen hosted by

world renowned executive chef, Gordon Ramsey. Chef Jennifer Gavin secured a slot as a contestant and became the third runner-up in the overall competition. Although she didn’t win in Season 4, her life has never been the same. A graduate of St. Sabina and Morgan Park Academy, Gavin when on to attend Kendall Culinary School and after graduating, decided to travel abroad. She studied her craft in Belgium and France, polishing her culinary skills, learning and cooking among some of the best culinary talent in the world. “I’ve always known I’ve had a passion at an early age for cooking. I would watch Julia Childs when I was about eight years old and get into trouble using up my mom’s ingredients. We would play little cooking games, like ‘ready, set, cook,’” said Gavin. Later, Gavin relocated to Atlanta where she took a position as a garde marche chef for a company handling ice carvings and various food sculptures. From there she became a contestant for Hell’s Kitchen where the experience was special for her. With the grueling demands of Chef Ramsey on the show, it was more about endurance and instructional challenges. “It showed how much you can take from Chef Ramsey and how much you can cope in that type of environment. In the end, I’m from Chicago so I have tough skin. We’re not pushovers and it was kind of hard to succumb to that, even though I had strong cooking skills on the show.” Over the years, Gavin has been traveling around the world with some of the biggest names in the music world as the executive chef for a concert catering company. Some of her clients have included Paul McCartney, Lady Gaga, Usher, R.Kelly, American Idol and One Direction. One of her current roles is working with the Goddess Restaurant Group as an executive chef for the Goddess and Grocer stores in Chicago. “That’s been fun. We’re really trying to invent the wheel and take over the Chicago food scene,” said Gavin. As an African-American female chef meeting the adversities of the industry, she feels the best way to deal with the challenges is to lead by example. Working with young women in the kitchen, she shares with them solid advice. She explains, “One of the

things that I stress to them is that being a feeble woman in the kitchen just doesn’t work. I try to teach them independence and to be strong.” Most of us who love cooking have found that it began at a young age. Chef Erika-Thomas Durham loved o cook as soon as she would get home from school. It was fun and she considered it a hobby at the time. Born in St. Louis, Missouri, her family moved to Chicago when she was 13 years old. After attending Whitney Young High School, she later graduated from what is now considered Cordon Bleu Culinary School. Now, she wears the hat of executive chef for one of the biggest kitchen operations in Chicago -- the Federal Reserve Bank of Chicago Conference Center. Everyday, she prepares global infused dishes that serve her international clientele visiting here and from other countries. Some chefs have a particular specialty or signature dish; however, Chef Durham doesn’t like to box herself in with a particular cuisine. “Because I work in the conference center, we deal with people that come from all over the globe. I have the opportunity to prepare a lot of different foods. To show respect to different cultures and express my interpretation of what their traditions may be. I like all types of ethnic cultures,” she said. Being a veteran working in a tough, male dominated industry, she’s had to face some difficult hurdles. But with perseverance and skill, she has carved a solid place as a leading chef. Durham explains, “You have to let your colleagues know that you ought to be taken seriously. When I first started out, it was a challenge because I had a lot of situations where my bosses looked at me as a woman that they could have a relationship with – not a ‘working’ relationship with.’” In order to prepare young, aspiring student chefs for the culinary world, Dunham works with the NAACP Act-So program. Her group of students competed the first two years of attending the national cooking competition with the first year earning a gold medal and following up with a silver medal the second year. What advice does she share with the next generation of potential chefs?

“Just remain steadfast in your goals if this is something that you want to do. It’s fun, but it’s very hard work. There will be people who at are going to tear you down, but you can’t let them -- remain calm. There is no limit in what you can do,” said Durham. Chef Rain Truth has taken on the mission to dispel the stereotypical myths of what vegan means. Owner and executive chef of her company, The Cultured Vegan, she stopped eating meat as a connection to her love of animals when she was a child. Discovering the insides of a chicken drumstick immediately turned her away from eating meat and gradually over the years she became vegan -- no consumption of meat or diary products. Being influenced by her grandparents, she credits her love of cooking to them and her father. “I love being around my elders, especially my grandparents. I was very close to them. While other kids were outside playing, I would be in the kitchen with them. My father was an avid gardener so he grew both vegetables and fruit. I knew I always wanted to do that. Whatever he did, I was right there with him, doing it with him.” Over the years, she would share her knowledge of healthy eating with friends and family through her love of cooking and meal preparation as a hobby. It wasn’t until her father was diagnosed with brain cancer that she realized she had a responsibility to share her knowledge of healthy eating with others. “It really hit me because my dad and I were close -- we talked everyday at 6:30 a.m. This devastated me when I heard his diagnosis because I felt maybe I didn’t do enough. I thought, ‘Let me get back into doing what I love.’ I’m not extreme at being vegan. That’s why people like me because I’m that way,” she said. Truth moved from just cooking for friends and family to starting her own business, The Cultured Vegan, and has been building a successful business based on her lifestyle beliefs. “When you take yourself seriously, people take you seriously.” Being the busy mom of two kids ages 13 and 17, both follow her lifestyle of eating healthy. With the rising statistics of childhood obesity, Chef Truth teaches culinary classes for children at the Waukegan History Museum. In addition to teaching classes to the youth, she is a contracted caterer for corporate clients. Jeep and Chrysler in Toledo, Ohio, working with the Girl Scouts African American Chapter, as well as a personal chef to private clients. Chef Truth explains, “Vegan doesn’t have to be boring. It doesn’t have to be traditional or tasteless. When they taste the food, they love it.” Culinary programs are offered at colleges throughout the Chicagoland area. City colleges on the move Elaine Edwards The City Colleges of Chicago (CCC), officially known as Community College District 508, is one of the nation’s largest community college districts and the largest in Illinois. It’s on the move and change is afoot. Almost 6,000 faculty and staff help prepare more than 120,000 students each year to pursue higher education, enter the workforce and advance their careers. The District serves students on seven campuses and seven satellite sites. It also oversees two restaurants, five child care centers, a trade school, a pastry school, a center for distance learning, a workforce institute, the WYCC TV Channel 20 public television station and WKKC 89.3 FM radio station. In June 2013, City Colleges of Chicago Chancellor Cheryl Hyman unveiled CCC’s Five-Year Strategic Plan to increase credibility, to assist and enable students to matriculate into four- year colleges and to enhance employment opportunities. This was implemented as The Reinvention Initiative designed to ensure student success in the classroom and the workplace. More than two years after faculty, staff and students began improving all aspects of City Colleges, the reform effort began a major new phase. The purpose of Reinvention is to drive greater degree attainment, job placement and career advancement to make the City Colleges of Chicago more competitive. The intention is to ensure that students are prepared to move into higher education and that they have the skills for jobs in the 21st century. Under Hyman’s leadership, the colleges’ administration believes there is no other institution better positioned to become an economic engine for the City of Chicago. The four core goals of Reinvention that were introduced at the inception in 2010 include: increasing the number of students earning college credentials of economic value; increasing the rate of transfer to bachelor’s degree programs following CCC graduation; improving outcomes for students needing remediation; and increasing the number and share of ABE/GED/ESL students who advance to and succeed in college-level courses. Reforms implemented through Reinvention have delivered major progress towards these goals. For instance, City Colleges’ graduation rate has improved, more students are earning certificates and degrees each year, and more adult education students are moving into college-level courses. The Reinvention7 promises to accelerate this progress. College-based task forces launched in April 2013 are working to ensure each and every City Colleges student has a clear path through the institution and receives detailed guidance to complete their programs, maximizing their time and resources, and then move on to further college or careers. They work with faculty, staff and students at their colleges to ensure all students have a clear path and the supports to succeed. At the same time, members of the Reinvention team at the district office will work concurrently and collaboratively with the new teams to nurture a student-focused culture across the system. Progress on six fronts has proven to be awarding. From the beginning, the Reinvention Initiative has focused its efforts into six areas. Here’s a brief overview highlighting successes. Additional details are available through the links. In its effort to attract high school students and better prepare them for matriculation into college CCC offers Dual Credit program offered www.chicagodefender.com

through 15 Chicago Public Schools allowing them to earn college credit . This dual credit opportunity helped to expand the Dual Enrollment program increasing the number of juniors and seniors more than double what it was when first implemented Spring 2011. Readiness is a major factor in the preparation of students to transition from high school to higher education. In the Fall of 2012 5 early College STEM high schools opened with curricular support from CCC staff and faculty. Dozens of new GED/ESL instruction off-sites were created to reach and serve underserved neighborhoods. Attention to continuing education is imperative because life happens and so many adults find themselves unprepared to take care of themselves and or their families because of little or no education. So the adult education program expanded to be offered at all of the city colleges. Bridge programs expanded to five colleges focusing on college to career industries. To assist the adult student, transition specialists have been hired at all the colleges offering adult education. For those interested in occupational careers, a college to careers initiative was launched to align CCC occupational programs to demand in six growing industries in the region. To assist in the effort dozens of companies have partnered with CCC to help enhance curricula, consult on new facilities, and offer students first pass at internships and job interviews. Transferring can often be confusing and much of the details get lost in translation of the transcription of credits from one institution to another. So new transfer agreements between 13 different institutions and the City Colleges were established since 2010. Full time transfer specialist and additional college advisors are on staff to cut student to advisor ratio in half allowing students more quality time with ad advisor. Student services have taken on a new meaning at the City Colleges giving attention to a GradesFirst early alert and management system to help identify at risk students and target them for faculty and staff support. Focus on improving registration to make the process smoother and less complex has increased student satisfaction. In keeping with the times, Wellness Centers are at all seven colleges. Operating more efficiently and effectively is a major goal. So better business intelligence enables staff to better access student data and enables a more evidence based decision making process. TA revised tenure process has improved credential, performance, and professional development guidelines. A staff performance management system has been implemented to facilitate goal setting and more setting and more targeted professional development. And finally the procurement process improvements helped to save 41 million in operations costs between 2010 and 2012. How’s that for putting your tax dollars to good use?

Dr. Angela Henderson received the Chicago State University (CSU) Student Government Association’s “CSU Women Rock” Award in 2014, the same year that she took office as provost and senior vice president at the University after having served as the interim provost. In 2012, she was named one of the “Top 100 under 50 Diversity Executives & Emerging Leaders” by Diversity MBA Magazine. She received the “Phenomenal Woman Educator Award” from the Black Women’s Expo in 2011, the 2009 “CSU Woman of Dr. Angela Henderson Distinction Award” and the Provident Foundation’s 2004 “Emma Reynolds Award” for Excellence in Nursing. Yes, Angela Henderson rocks! Henderson, joined the South Side University in 2011 as vice president of Enrollment Management and was appointed to the interim position in July 2013. She was selected to remain as provost and senior vice president after a search that considered several candidates, according to a CSU statement, making her the University’s chief academic officer. As provost, Dr. Henderson provides oversight for academic and research programs within CSU’s five colleges. Prior to her career as an academic administrator, Henderson worked in the field of nursing as a nurse manager. CSU President Wayne Watson said in a statement, “In order for CSU to grow and strengthen for the future, we need a team of professionals who can lead with both their heads and hearts and I’m proud to say we have the right person at the right time in our new provost, Dr. Angela Henderson.” “I am excited about what we have achieved together and look forward to working with the entire university community to address the challenges that lie before us,” Henderson stated. Henderson, who earned a Ph.D. and a MS degree in nursing, as well as an MBA at the University of Illinois at Chicago, has over 25 years of higher education experience, including serving as dean, department chair, tenured professor, vice chancellor and vice president, according to her biography. She earned her bachelor’s in nursing at Loyola University. Her research interests include HIV/AIDS prevention measures for African American males. As examples go, Henderson is a perfect poster star for many women who face the glass ceiling and male domination in higher education leadership. She gained her 25 plus years of experience in higher education having worked her way through the ranks as a tenured professor, department chair, dean and eventually provost at one of the largest community college systems in the country. Her expertise in higher education includes leadership in academic affairs, student affairs, enrollment management, adult education, developmental education, research and planning, and continuing education.

An old school tradition with new school necessities By Mary L. Datcher DEFENDER STAFF REPORTER

For some students, attending college can be an exciting and fresh start to a whole new world of possibilities, especially for those who’ve never left home. Many college freshmen prepare academically for the higher level of educational studies but also look forward to being on their own away from the confines and worries of family. With the rise of tuition costs, they are often met with the challenges of additional expenses such as books, housing and food. Often scholarships, grants and financial aid may not cover everything a student needs to survive on campus. Trunk parties have become a traditional passage for young people hosted by their families, churches or community organizations for many that need those extra items to assist them in their college freshman year. The burden of costs placed on families to make sure their kids are adequately equipped with bed sheets, comforters, detergent, towels and other items may seem minor, but are God sent in every day dormitory life. Better Love Yourself (BLY) is one of the few non-profit organizations that has designed a unique blueprint for identifying these needs for students and parents. Based in Chicago, the organization is the brainchild of popular R&B singer and entertainer Terisa Griffin who started BLY nine years ago based on her per-

It also gave me hope and a sense of accomplishment,” Griffin said. Traditionally, trunk parties have been a practice more familiar in Southern towns, but are steadily sprouting up in other parts of the

country. Every summer, beginning in July, Better Love Yourself produces an annual trunk tour event that travels to various markets, including St. Louis, Memphis, Houston, Newark, Washington, D.C. and Cleveland with the event wrapping up in Chicago at the DuSable Museum of African American History. Griffin explains that Better Love Yourself is not just your ordinary organization giving

away trunks. She takes pride in its personal approach in assisting young people. “We offer mentoring and a refill of their items throughout their time in college. We also help a lot of students until they graduate from college because grew up in foster care and no longer have families to lean on. When students attend a BLY Trunk Event, they have access to workshops to assist them with their adjustment to college. They enjoy great food and entertainment, have the opportunity to win prizes throughout the day and are treated to the ceremonial trunk presentation,” said Griffin. The process is very simple -- high school seniors must have a 2.5 GPA and provide a college acceptance letter confirming the college they will be attending in the fall. Students can apply online at www.betterloveyourself. com by filling out the application which includes completing a three-part essay. Applications are due by June 1, 2015. BLY partners with other community organizations and key colleges to disseminate the information to parents, teachers and students. Griffin adds, “Parents work so hard to financially afford to send their child off to college. After all of that hard work, they still need to send them away with a fresh start. These items cost more than some can afford. We want the students to take pride in what they have and to know that someone loves them and has invested in their future.” www.chicagodefender.com
