Welcome to the November/ December issue of Chiltern View magazine. As this will be our last issue of a very strange and challenging 2020, we felt it was a nice idea to get into the Festive spirit earlier than usual, so we went all ‘Christmassy’ with our front cover. We felt that many of you would enjoy having something to look forward to and, even if this year will be a bit different, we will all do our best to make it special for those around us. With this in mind, we have a fun competition that all the children (or those young at heart), can get involved with. Somewhere in the magazine, Rudolf is hiding! All you have to do is find him and let us

Cinnamon Stars Perfect for a festive sweet treat or a lovely edible Christmas gift, these spiced star cookies can be kept in an airtight container for up to two weeks. Ingredients 2 medium egg whites 175g icing sugar 250g finely ground roasted hazelnuts 50g mixed peel, finely chopped 1 tbsp ground cinnamon Makes 20 Ready in 1 hour, plus chilling and cooling Method 1. Using an electric handheld mixer, whisk the egg whites in a clean, grease-free bowl until holding stiff peaks. Stir in the icing sugar until thoroughly combined then continue to whisk until thick and glossy. 2. Remove 40g of this mixture and set aside. Fold the hazelnuts, mixed peel and cinnamon into the remaining mixture to make a very stiff dough. 14

Chill in the fridge for 1 hour. 3. Preheat the oven to 140C, 120C fan, gas mark 1. Line 2 baking sheets with baking paper. Roll the dough out on a surface heavily dusted with icing sugar to a 1cm thickness. 4. Using a 5cm star-shaped cookie cutter, stamp out about 20 stars, re-rolling the dough as needed until it is all used up. Place the stars on the baking sheet, well-spaced apart. Spread a little of the reserved egg white and icing sugar mixture on top of each star. 5. Bake for 25 minutes or until the cookies are still white and crisp on top but slightly soft underneath. Turn off the oven, open the oven door and leave the cookies to dry out for 15 minutes then transfer to a wire rack and leave to cool completely.

Tip Dust the cookie cutter with icing sugar frequently to prevent the mixture sticking.

If you cut off a couple of centimetres from the stump, this will enable the tree to absorb more water and help it last longer. Freshly cut trees are very thirsty and can consume up to 4 Litres of water in the first 24 hours. Tip 2 It’s a good idea to choose a suitable Christmas tree stand to help keep your tree looking its best. Choose a stand with a water reservoir to prevent your tree from drying out. Ensure the water reservoir on your stand is topped up regularly and keep the room cool when it’s not in use. Tip 3 Choose a cool spot indoors away from radiators and choose low-heat fairy lights. Give it plenty of space so that air can circulate, too.

Once your Christmas tree is ready, why not add some festive colour to your home. Flowering in December and January, Poinsettias are the ultimate Christmas decoration - as classic as the Christmas tree. With vivid red bracts and dark green leaves, their striking appearance makes them the classic table or windowsill centrepiece for the home. Will Our Babes in the Wood Be Saved? Oh,Yes,They Will! Thame Players have been staging a pantomime or a Christmas show each December for many years, but this December, sadly, the theatre will remain closed due to the Coronavirus restrictions. But it’s not all doom and gloom, because we’re hoping to put on our next brilliant pantomime, Babes in the Wood, in January instead! Oh, yes, we are! We’ve got our director and cast, and rehearsals are underway! It’s the story of two young children (the Babes), who, after their father dies, are abandoned deep in the forest by their wicked uncle and left to die, so he can inherit the fortune their father left them. But his plot is foiled when Robin Hood and his Merry Men rescue them and, with Maid Marion, they return to the castle. The uncle is unmasked as the villain and the Babes get their rightful inheritance – oh, yes, they do!!

Babes in the Wood will include all the ingredients you’d expect in a Thame Players’ panto, with plenty of fun and jokes, music, singing and dancing for all the family. • We hope to run 10 performances of Babes in the Wood in January 2021. If lockdown restrictions are still in force, it will be performed in December 2021. • The Players Theatre remains closed at present due to the restrictions. Downley Common Walk The Chilterns Conservation Board and Chiltern Society have developed a series of 23 walks across the Chilterns which are social-distance friendly, avoiding crowded honey-pot locations and narrow paths where possible. This scenic gently undulating stile-free walk is one of them and takes you through a variety of habitats. Length: 2.8 miles (Allow 1Â˝ hours) Start & finish: Roadside parking along Commonside, Downley HP13 5YA Access Information: Mostly easy walking on good wide paths, some of which can be muddy after rain. One moderate climb at the end. Stile-free and four gates. Food & drink: Le De Spencers Arms just off route on Downley Common Route 1. Go along the top of the common with the road on your right. Go past the bus stop and, just before a large tree, bear left across the grass into the wood. 2. Fork right and follow the path down through the wood to the bottom of the hill. Turn right onto a bridleway out of the wood for 150m to a path on the left signed to Naphill.

3. Turn left through the gate, cross the field to a second gate and continue straight ahead towards Naphill. Climb gently through the woodland and a third gate, continue up the valley on a grass path and through a fourth gate to a lane (Hunts Hill Lane). 4. Turn left along the lane, continue to the end of the surfaced section and bear right onto a track. Follow the main track, ignoring turnings off, until you come to the overhead power lines and a bridleway on the left. 5. Turn left along the bridleway, go under the power lines, and continue straight on passing a small pond on the left (Mannings Pond) to a fork in the track. Fork right past the cottages and continue along the track with the allotments on the right to a lane (Plomer Green Lane). 6. Cross the road onto the common, go diagonally across to the right of the cricket pitch walking towards the radio mast on the horizon. Drop down the bank, stay in the same direction down the common and past the Methodist Church on the right. Bear left uphill across the grass and past the beacon to return to the start.

Kenzo’s Diaries – A Dogs Life I’m still enjoying life with my ‘hoomans’ at home with me all the time, but they keep saying that I am very ‘demandin and needy?’ I have no idea what they mean by this? Surely everyone likes company wherever they go, someone to watch as they take every mouthful of their ‘dinna’ and a playmate 24/7?? They watch that box with moving pictures on far too much and why would you look at something they call a ‘fone’ rather than ‘payin’ me all the attention I need?? Anyway, I must have done ‘somthin’ right as they have taken me to 2 different new and ‘excitin’ places. The first place involved water, which is my favourite, especially if it’s a smelly and muddy puddle! This water was clean though and trapped in a big hole with walls round

it. I was so desperate to get in and swim, especially as my ‘girlfwend’ Maggie was so good at it, but I was really ‘nervos’ and my paws didn’t touch the bottom. Mum and my sister did help me in with a rope on my harness, but I got out very quickly! Perhaps I will be braver next time? The other new place I went to had lots of things to climb on and run round. It was very ‘excitin’ especially as Maggie was there too. We did lots of ‘jumpin’ and ‘runnin’ through these big tunnels. We got told off a lot though as apparently ‘cuddlin’ and ‘kissin’ are not very appropriate! I ‘lurvvvv’ Maggie though so I don’t see any problem with it at all.

Pain and the Festive Period It’s the time of year when everyone is dashing about, getting ready for Christmas day, possibly entertaining family and friends or preparing for some time away from home. This is the time of year when debilitating back pain can be a real inconvenience. I’ve treated many an urgent case of back or pelvic pain from people slipping on ice or wet leaves, to those wrestling the large turkey out of the bottom oven. Then there are the possibly troublesome matters of driving long distances, strange beds, unusual arm chairs and lifting excitable grandchildren – all of which can cause strains to the spine resulting in aches and pains anywhere from the neck, through the shoulders or into the lower back. Don’t forget the Christmas walk is a fantastic way to loosen up a stiff lower back and a little time relaxing can benefit you physically.

Mulled wine is made by heating red wine along with various spices and sliced fruits. It can also be made with non-alcoholic wine, cider or apple juice.

Mulled Wine Gingerbread Trees Ingredients 175g/6.5oz plain flour 1 rounded teaspoon ground ginger 1/2 level teaspoon bicarbonate of soda 1/2 level teaspoon baking powder 50g/2oz margarine 75g/3oz soft light brown sugar 2 tablespoons golden syrup Method 1. Preheat oven to 190C 2. Put flour, ginger, bicarbonate and baking powder into a bowl. 3. Rub margarine into the flour mixture until it resembles breadcrumbs. 4. Add sugar and golden syrup and mix to form a soft (but not sticky) dough ball. 44

Christmas … a time for celebrating By Fiona Mullan BSc Hons RVN VPAC Christmas is coming and after a difficult pandemic year, many of us feel it is an ideal opportunity to celebrate with each other as much as we can. Our precious pets are part of the family and while some enjoy the additional activity many others find Christmas to be a stressful time. What can increase stress for pets at Christmas? Decorations - Pretty for us to look at, but can be frightening to pets. Pets might also be fascinated with the decorations and accidentally ingest them causing serious damage. Visitors - Coming and going can be disruptive to your pet’s usual routine. Nervous pets may be overwhelmed by lots of different people in the home and increased noise levels. Excitable children - They love Christmas but all the excitement increases the level of noise in the home, triggering stress. Children may want to play with the pet, but it might not be used to children and get nervous. Owners going away - Either going on holiday or just out for the day, leaving the pet alone longer than normal increases anxiety. Pets may also have to go into kennels/cattery or be left with a ‘stranger’ looking after them in the home. Fireworks - These loud sudden explosions and flashes in the sky cause intense anxiety for animals, causing them to shake uncontrollably, hide or flee. How do I know if my pet is stressed? Panting, lip licking, over grooming, hiding away, trembling, shaking, shivering, toileting within the 46

house, or destructive behaviour are some of the ways a pet may display stress. What ways can I minimise Christmas stress? • If your pet is easily overwhelmed try to introduce things gradually, avoid putting up decorations in one day and suddenly changing their environment. • Supervise children with pets at all times. • Allow your pet a quiet/clutter free area to hide away and escape to if they need it. • Continue normal regimes as much as possible, e.g. feeding and exercise times. • Consider use of pheromone diffusers in the run up to Christmas. Ask your vet about the use of calming supplements. These are most effective when started weeks before the event, so allow plenty of time. • If someone is looking after your pet in your home whilst you are away, ensure they know your pet’s normal routine and try to introduce them to your pet a few times in advance. • Be wary of using crackers/party poppers, etc. when pets are near. • If your pet has firework phobia, do not over fuss them whilst fireworks are going off, this will reinforce the behaviour. Seeing through different eyes – meet The Bird Whisperer, Steven Gozdz, who provides guided wildlife walks! The difficulties of COVID 19 have been numerous, but we have also seen a really positive by-product; the growing love of our wildlife!

So, a combination of my love for walking, expert knowledge of wildlife, wildlife photography expertise, desire to share knowledge and the clear demand in the area, meant GG Wildlife Walks was born! My Instagram page where I post walk information, imagery and wildlife observations ( www.instagram. com/GGWildlifeWalks ) has now over 1300 followers! A lot of them active, which is really great - many local to The Chilterns, but some from other parts of the UK – and some other parts of the world!

Having moved to the Chilterns from a London suburb last year, I indulged more in my “serious hobby” of wildlife photography and wildlife walking – a great escape from my corporate role in Contract Management. However, I had never envisaged that what I loved could become a business!

I have carried out over 100 walks since July, of varying sizes – ranging from Group scheduled walks, to private bespoke 1 to 1’s…. I have also provided specific wildlife photography sessions for amateur photographers – or beginners just wanting to improve their skills. And also “At Home Wildlife Watch” for those unable to get out and walk.

It started with a wildlife Facebook group I created in Goring Gap Wildlife on Facebook, where I shared walk information and images of wildlife I was seeing – and this grew from 5 to 300 people in less than a month. This suddenly led to requests from group members –asking for walks (group and private), photography lessons or prints of my photos. I became published in several local publications including front covers!

New events include Chilterns Walking Festival, Family Friendly Wildlife Walks with Spotting, Partnerships with lovely, high end hotels like The Swan at Streatley, Great Fosters in Egham, The Great House at Sonning, and Barnett Hill – all wanting wildlife tours for their guests.

My Gift Voucher options have been really popular – people have loved gifting a really unique present of a wildlife walk or event to others. The vouchers can be bespoke and delivered with a wildlife print card.

Before long, Tomas is learning all about his new pet, from the fact it loves broccoli to the unfortunate fact that dragon poo is highly explosive. Flavour – Yotam Ottolenghi and Ixta Belfrage If you’re buying for someone who loves nothing more than spending a couple of hours in the kitchen cooking up a storm, this is the gift for them. It is not, however, a cookery book for beginners or those wanting to whip up a quick and easy dish. The ingredients aren’t always easy to come by and most of the recipes are experimental to say the least. The dishes are not always vegetarian, but fruit, vegetables or fungi are the star ingredients, and often used in rather surprising ways. Lime and Coconut Potato Gratin anyone? My Garden World – Monty Don Wildlife fans will adore My Garden World, which is basically Monty Don’s personal homage to the birds, insects and other creatures that share his garden. The book is packed with interesting nuggets of information about British wildlife and is a real pleasure to read (particularly when sat in the garden with a cuppa). A Classic Christmas Gift September 2020 was not the same without the Kop Hill Climb which, like many other outside events, fell victim to Covid-19. However, the Organising Committee did put together a Virtual Event on its Facebook page, which is still available to enjoy if you missed it. It launched the KHC “Every Pound is Precious” appeal (#everypoundisprecious), for all the charities which depend annually on funds raised by the event. Another way you can help the appeal is to buy a copy of the Kop Hill climb commemorative magazine, published last year to mark the Tenth Anniversary of the climb’s revival. It would make a thoughtful Christmas gift for anyone with a love of classic cars or bikes and the proceeds from its sale go directly to the appeal fund.

It is an A4 format, full colour publication printed on laminated heavy art paper. Its 68 pages contain nearly 100 superb images of the event from the beginning in 1910 up to the present. It covers the story of how it all began, together with how it all came to an end in 1925, followed by an appreciation of the revival years which have attracted over 100,000 spectators and raised over £750,000 for local charities and good causes. As many of you will know, we cancelled our regular daily service from mid-March in response to Government guidelines on dealing with the Covid-19 pandemic. We also stopped running outings and making the bus available for group use. However, our bus and drivers have not been idle. We joined with Princes Risborough Town Council in providing a delivery service from The Risborough Basket and our bus delivered essential supplies to the outlying villages until the beginning of August. The delivery service was a lifeline for many people in the outlying villages and greatly valued.

On 19th July we celebrated the 10th Anniversary of starting our service by delivering afternoon tea tins to nearly 100 of our loyal passengers in and around Princes Risborough. Weâ&#x20AC;&#x2122;re now looking at when we might be able to get back to our normal bus service.
