Editors’ Letter Welcome to the Jan/Feb issue of Chiltern View (Villages) magazine and Happy New Year to all our readers and advertisers. We do hope you all had a lovely Christmas and are looking forward to the year ahead. We had a lot of changes here at Chiltern Directories last year. At times some of these changes were quite a challenge, but we now find ourselves stronger and more positive than ever. We moved offices, launched the Thame area magazine, lost and gained key staff members, changed the delivery of the magazine and doubled our distribution to include a much larger area, which has proved to be a great success with both readers and advertisers. We hope to continue to build all 3 magazines this year but to keep the same format, with a good mixture of local articles, business promotion and community information. Our Christmas Charity donation went to Lane End Youth and Community Centre and we were so pleased to have been able to give to such a good cause. The lovely front cover picture was kindly sent across by Martin Patmore who is a local photographer from Bledlow Ridge, it shows a chilly picture of Bottom Road in Radnage. Martin’s cards are available in the shop at Bledlow Ridge and West Wycombe Village Store. Until the next time

Red Onion Soup with Melting Gruyere Croutons After all the indulgence and expense of Christmas and the New Year, this hearty soup is the perfect antidote. Ideal for a warming winter lunch or supper it’s simple to make, tastes delicious and doesn’t cost a fortune.

Method

1 Heat the oil and butter in a large, deep heavy-based saucepan until the butter is sizzling. Add all the sliced onions and cook very gently over a low heat for 15 minutes, stirring frequently. 2 Sprinkle over the sugar and cover and cook for a further 15-20 minutes, stirring occasionally, until the onions are very soft and golden. 3 Stir in the flour and half the mustard and cook for 1 minute, then gradually stir in the stock. Add the thyme sprigs, season with salt and freshly ground black pepper (see Tip) and bring to the boil. 4 Reduce the heat and simmer gently for 35-40 minutes, stirring occasionally. Adjust the seasoning to taste.

Serves 4 Ready in 1½ hours

Ingredients

2 tbsp olive oil 15g butter 650g small red onions, peeled and thinly sliced 2 tsp brown sugar 1 tbsp flour 1 tbsp wholegrain mustard 1.2litres beef or vegetable stock Few sprigs fresh thyme, plus extra to garnish Salt and freshly ground black pepper 8 thin slices day old French bread 75g Gruyere cheese, grated PAGE 10

Lightly toast the slices of French bread on one side. Spread the untoasted sides with the rest of the mustard and top with the grated Gruyere cheese. Pop under a hot grill for 1-2 minutes, or until the cheese is melted and bubbling. 6 Ladle the soup into warmed bowls and top each with two hot Gruyere croutons. Serve immediately garnished with thyme sprigs. TIP If you use stock made up from stock cubes taste the soup before adding any seasoning as some can be quite highly seasoned.

The Chiltern Hills have been well-known for centuries, though not always for the best reasons. In medieval times the heavily-wooded hills and secluded valleys were the hangout of fugitives escaping the law and the area acquired a bad reputation. However, as nearby London grew some of its prosperous citizens began seeking country estates and a number of great houses and parks were created in the Chilterns, gradually improving its respectability. Nowadays you can visit many of these properties plus a wealth of other historic treasures in the area. There are lots of ways to enjoy the Chilterns, and most will keep you and your wallet healthy! With over 2000km of footpaths criss-crossing the area, plus the Ridgeway and Thames Path National Trails, the opportunities to go for scenic walks are endless. Some of the area’s most scenic lanes have been included in the Chilterns Cycleway – a 173 mile on-road cycling route that goes right around the Chilterns AONB. You may have seen the brown signs for it. There’s no need to do the full route in one go – there are plenty of options for enjoying part of the Cycleway on a circular day ride. Winter is one of the best times to get out into the Chilterns countryside – why not wrap up and head out? The red kites are out in full force, soaring above the fields and woods with their russet feathers glowing in the winter sun. You can crunch through piles of leaves in the woods and look for the first signs of snowdrops peeking through. The Chilterns Conservation Board is the official public body tasked with caring for and promoting the Chilterns AONB. We’re a small organisation but we cover a lot – from encouraging good design in new buildings to conserving wildlife, working with farmers and woodland owners, devising new walks and cycle routes and running public events. A Healthy Start For the New Year

A lot of us may be feeling a little sluggish after over-indulging during the festive period. January is a time of year many of us consider our waistlines and this may be a good time to think about your pets weight as well, especially if they too have enjoyed some Christmas treats! Pet obesity is an ever increasing problem that we encounter in veterinary practice. Although some diseases such as having a low thyroid level and Cushings disease can cause obesity in pets, poor lifestyle management is still the number one culprit and it can have severe health consequences. One of the most common complications of obesity in our pets is the development of diabetes mellitus. Overweight pets are also at a very high risk of developing orthopaedic problems due to the increased stress excess weight puts on their joints.

Other diseases associated with obesity include cardiorespiratory disease and some cancers, for example mammary and bladder cancers. It is worth remembering most commercial diets are balanced and our pets don’t need human foods in their diet as well. One crisp for a dog is the equivalent to us eating a whole hamburger! So if you are starting the new year with a healthy resolution, consider your furry friends as well. It’s never too late to change old habits and most veterinary practices will offer free weight clinics if you need help kick-starting their regime.

Winter Illness and Antibiotics

Question: which one of these statements is false? a) I need antibiotics if I’ve had a chesty cough for more than a week b) I need antibiotics if I have a headache and green nasal discharge for more than five days c) I need antibiotics if I’ve had a sore throat for longer than three days

a period of time. If at any point you begin to feel really unwell and/or develop a high temperature, speak to your doctor. Needless to say, if you have a chronic chest problem, consult your doctor at the first sign of breathlessness.

Answer: trick question, they are all false! Antibiotic resistance in the UK has been steadily climbing to the point where we are now seeing frighteningly resistant bugs. One of the causes is over prescription of antibiotics by GP surgeries and hospitals for minor illnesses that are either caused by viruses, in which case there is no benefit from taking antibiotics, or for conditions that your own immune system normally will have dealt with without needing any extra pills. Antibiotics will only treat bacterial infections. These can occur secondary to viral infections and simple precautions and treatment are often enough to ensure a full recovery without needing them, especially if you are generally fit and well. If a sore throat (usually viral) ‘always’ ends in tonsillitis, gargle aspirin, brush your teeth an extra few times a day and if you smoke, give up smoking. All these will reduce your chance of developing it. If you go on to have a high temperature after 3 days and white spots on your tonsils despite doing some or all of the above, well, at least you did your bit. Speak to your doctor then. If you go down with a cough and have no other chronic chest problems, expect to have it for 2-3 weeks. If you don’t have a temperature, are not breathless or coughing up lots of green/brown sputum (moderate amounts of yellow/green sputum are a normal function of your immune system) inhale steam, humidify your bedroom overnight and it will likely improve by itself over PAGE 30

A recent paper has shown that acute sinusitis rarely responds to antibiotics, if there is an improvement it’s a paltry 24 hours’ worth – again, your immune system simply does its job efficiently and clears it all up over 5-7 days. Take painkillers if you have facial pain or headaches, inhale steam to decongest and settle your sinuses, and avoid decongestants. They work by drying up the sinuses and can exacerbate the problem. Do use nasal sprays - head down, close one nostril, aim towards the back of the head and squirt. They can help with inflammation. Again, if you feel progressively more unwell with temperatures or pain, speak to your doctor. Give yourself the best chance by eating healthily, taking plenty of moderate exercise and not smoking and you should throw off most of the normal winter bugs. If you are eligible for a flu jab, have one. Stay well! The Tree at Cadmore End is a warm and inviting venue, offering mouth watering lunch and evening menus. on the day of issue. Most trains convey a buffet car and the Cambrian Cafe at the station serves reasonably priced tea, coffee, light refreshments and delicious homemade treats. There’s also a well-stocked shop selling railway-style souvenirs and gift items and we find the volunteer staffs are always delighted to discuss their activities with you – but beware, they are so enthusiastic you could end up becoming a volunteer! The Chinnor Railway is our local friendly volunteer operated branch line in the style of the former Great Western Railway and is a not to be missed heritage attraction for tourists, families and enthusiasts alike. Historic steam and vintage diesel services run most Sundays and some Saturdays from Mothering Sunday 30th March to Halloween on 26th October 2014. Starting out from the delightfully restored Chinnor station with its ample free parking, the line follows the foot of the Chiltern Hills and runs parallel to the historic Icknield Way until it reaches the outskirts of Princes Risborough. The round trip is a leisurely 45 minutes long allowing you to take-in some very attractive open countryside and to enjoy outstanding views across the Vale of Whiteleaf. Tickets for Standard Timetable days are generally issued on the basis of pay-once-and-stay-all-day, and so you can make as many journeys as you wish

Cashback Cards By Martin Lewis If I told you I could give you £100s a year with no debt and very little hassle – and all you need to do is change your plastic – would you? If the answer’s yes, read on, as now is the perfect time to grab a cashback credit card. For many, it’s an easy and lucrative way to boost your income. Now’s the moment because the top deals will boost cashback for the first three months you have them. So apply NOW and that boost lasts for most people’s highest-spending period – Christmas and the January sales. This can be serious cash. As one of my Twitter followers (@martinslewis), NM, told me: “Our cashback cards earned us £250+ last year.” This isn’t unusual, I’ve even heard of some big spenders going over the £1,000 mark. So here’s what you need to know: Never pay interest on a cashback card Cashback cards only win if you set up a direct debit to repay IN FULL every month. If not, don’t go for a cashback card, go for the best 0% for spending deals (see www.mse.me/spendingcards). Now you’ve got a debit card that pays you Your credit card is now effectively a monthly-billing debit card, provided you stick within the limit. Use it for ALL spending instead of cash, cheques and debit cards. If you’re in a trusting relationship, add your partner as a second cardholder, so their spending earns too. As it’s primarily marketed as a card to rebuild credit for those with weak histories, even some with past CCJs or defaults can get it. Though you must repay IN FULL each month, or it’s a hideous 34.9% APR. Cashback card golden rules: These three facts are so important they’re worth reiterating: a) Always use a monthly direct debit to repay IN FULL, so it’s interest-free. b) Don’t use it as an excuse to overspend. c) Ensure you’ve got the cash to repay monthly. Spending on a credit card is huge extra protection By law, buy anything costing £100 to £30,000 and pay, even partly, on any credit card (not debit or charge) and Section 75 laws mean the lender’s jointly liable.
