Editors’

Letter

Welcome to the March/April issue of Chiltern View magazine, packed once again with amazing local businesses and a huge variety of activities, exhibitions, walks, recipes and puzzles. One of our last tasks before print here at Chiltern View HQ is to proof read all the community information. It is not a job we especially look forward to but we do our best and once we start we are always amazed at the wonderful range of events, clubs and activities in this beautiful part of the world. We were therefore delighted when we were sent the article (p78) from the

Chilterns Conservation Board about the Lottery grant which will further encourage all of us to connect to the wildlife and cultural heritage of the Chilterns. There are many opportunities to enjoy and have the chance to become involved with the project. We are also delighted to include information about Chinnor Windmill, which has been lovingly rebuilt, following its demolition in the 1960’s to make way for housing. It will be open as part of National Mills weekend on Sunday 12th May and, weather permitting, the sails may tun for the first time under wind power (see article on P76). Lacey Green Windmill is also taking part in the National Mills weekend (see page 82). Until the next time

Stokenchurch Dog Rescue Hello! My name is Chase; I’m a Lurcher and about 2 years old. I arrived at Stokenchurch Dog Rescue after my owners were unable to give me the attention I needed. I am a smart and intelligent boy and have settled into kennels well but would now like to find my forever home. I enjoy playing with my toys and will quite happily entertain myself with them. I would require basic training, but this would give my new owners a great opportunity to bond with me. If my new owners want to allow me off the lead on walks, I would require recall training before being allowed off lead in open spaces, however I am motivated by treats so owners could use high value treats coupled with positive reward based training to teach me new things including recall. I would need to be in a home with people who have owned a dog previously and are prepared

14

to put in some basic training but I will make a fun and active companion. Can you offer me a loving and permanent new home? www.stokenchurchdogrescue.org.uk Stokenchurch Dog Rescue: Giving dogs a second chance 01494 482695

Advice

Healthy Eating The harvesting of fruit, salad and vegetables depends on when they come into season. It can sometimes be difficult to work out which are in season because most are now available all year round in supermarkets. You might notice times when they are more abundant in the shops and markets or selling at a more competitive price than usual. In early spring look out for spring greens, carrots, leeks, kale, rocket, watercress, purple sprouting broccoli, early rhubarb, and those first new potatoes. These fresh foods are full of flavour and packed with essential vitamins and minerals, they are low in fat and calories, and essential for optimal gut functioning as part of a balanced diet. Aim to eat a minimum of 5-a-day portions of different vegetables, fruits and salad all year round. If you can eat foods when they are in season, this is usually the time when they are cheapest, freshest and more flavoursome. Eat some freeze some – so you always have some to hand. Most of the nutrients are preserved during freezing.

Recipe suggestions Serve salmon with mini new potatoes on a bed of sprouting broccoli and spring onions which have been sautéed in Hoisin sauce. Alternatively roast some sweet potato, chop into chunks whilst hot and add some rocket, halved baby tomatoes, chopped spring onions, olive oil and red wine vinegar for a delicious light meal. Guacamole Ingredients 2 large ripe avocados Juice of 1 lemon 3 garlic cloves 1 tomato (optional) 1 tablespoon olive oil 2 spring onions sliced Salt & black pepper

1. Mash or blend all ingredients together except the onion 2. Stir in the onion slices & serve Variation – stir in the tomato and some red onion at the end Serving – with poppadum’s, veggie sticks or tortilla’s

A Dogs Life - Kenzo’s Diaries So, I’m 5 months old now and I finally feel as if I’m getting somewhere with my hooman keepers. Puppy training is a doddle; who wouldn’t sit, stay and lie down for really tasty treats? They might need to find something even more delicious if they want me to behave in the big boys’ class though! There are a few parts of this world I’m not used to yet however. What is the deal with this HUGE, cannon-like whirlwind machine that they use after any mess I make? It creates a jaw-clenching sucking noise while it stampedes around MY living room. They call it… the “who-ver” and it’s scary! Secondly, most days I apparently must exercise! They put me in a very revealing and slightly too tight “haar-nus” and drag me out the front door. I enjoy running in a field but as for round the road eeek! What is it with these massive, moving metal objects? Apparently, these “caws” aren’t going to hurt me, but I can’t say that’s easy to believe! 28

Apart from the occasional, and VERY rational fear of anything that makes a strange noise and/or looks different, I LOVE my life here. My family give me loads of cuddles and keep me safe. I seem to make them happy too, except when I put holes in their silly looking body fabric, which is great fun. Perhaps I will stop when I get my big teeth, but I will keep you updated.

Music in the Park 2019 The superb Dung Beatles to headline! Get your dancing shoes ready! Music in the Park returns to Elms Park on Sunday 5th May. Featuring more than 30 performers across three stages, Music in the Park offers music and dance acts across a wide range of genres. Topping the bill on the main stage are the popular Dung Beatles. If you love Beatles music played the way the Fab Four intended, then The Dung Beatles are for you. According to Terry Bloxham of The British Beatles Fan Club, “The Dung Beatles are pure unadulterated fun - definitely not your average Beatles tribute band”. In 2014 they performed at Liverpool’s world famous “Cavern Club”. Recently they performed to a full house at The Waterside Theatre Aylesbury, along with pop legends John Otway, Howard Jones and Marillion, in support of the Friars Club tribute to David Bowie and the unveiling of his statue in Market Square. With a wide variety of music and dance on offer, there’s sure to be something for everyone.

32

The event will feature two main stages with live music and dance, and an acoustic stage. Have fun dancing the day away or chill out with a leisurely picnic. Of course, there will also be all the usual goodies you’d expect at a festival, including tasty real ales, a wide variety of delicious foods, fun activities for children and adults, and a range of trade stalls. Take a look at the website (www.musicinthepark.org.uk) or Facebook page (www.facebook.com/ MusicInTheParkThame) for the full line-up.

Ingredients: • 750g potatoes, peeled and cut into chunks • Salt and freshly ground black pepper • 225g broccoli florets • 1 tbsp olive oil • 1 red onion, peeled and cut into thin wedges • 25g butter • 25g plain flour • 300ml milk • 150g mature Cheddar, grated • 2 tsp Dijon mustard • Fresh basil leaves, to garnish

1.

Preheat the oven to 200C, fan 180F, gas mark 6. Boil the potatoes in a large pan of lightly salted water for 8-10 minutes until almost tender, adding the broccoli to the pan for the last 2-3 minutes of 34

cooking time. Drain well and place in a large shallow ovenproof dish.

2.

Heat the oil in a large pan over a high heat and fry the onion for 3-4 minutes until just softened. Scatter the onion over the potatoes and broccoli.

3.

Melt the butter in the pan, then stir in the flour and cook for 1 minute until foaming. Remove the pan from the heat and gradually stir in the milk. Return to the heat and bring to the boil, stirring all the time. Reduce the heat and simmer for 1-2 minutes, still stirring, until the sauce is smooth and thickened.

4.

Stir in the half the cheese and the mustard and simmer for a further minute. Season to taste with salt and freshly ground black pepper. Pour the sauce over the vegetables in the dish and scatter over the rest of the cheese. Bake in the preheated oven for 30-35 minutes until golden and bubbling. Serve garnished with the basil leaves.

TIP Choose a firm, waxy-fleshed potato such as Charlotte or Desiree for this dish, or try sweet potatoes instead. www.chilternviewmagazines.co.uk

Feet Treat Julia Adam, foot healthcare professional (clinics in Princes Risborough, Stokenchurch and High Wycombe), says that foot health is not only relevant to the more senior person but to all of us - throughout our age. Children and adults may visit for Verrucas, ingrown toe nails and fungal infections; Mums and dads to get foot ready for holidays, sports activities or just walking the dog. Of course, as we get older, the inability to reach our feet is something to bear in mind especially if we are diabetic. Whatever your age or need, the ability to be pain free and foot healthy is important to everyone. 37

Pet Health

‘Age Is Just A Number!’ By Fiona Mullan RVN

Like us, when animals get older, they start to slow down and are not able to do as much as they used to. But this doesn’t mean that old age should be boring, or that we should not treat or investigate certain ailments. Exercise Dogs may not be able to go for the long walk they used to, but exercise/play shouldn’t stop. Exercise is not only important for health, but for mental wellbeing too. Little and often is preferable rather than one long walk once daily, which could make them stiff, sore or lame afterwards. Joint health will deteriorate with age, and arthritis is common, so discuss with your vet about joint supplements and pain relief to help keep them as mobile and comfortable as possible. Cats also suffer with arthritis but they are very good at hiding signs. They can benefit from ramps to higher levels e.g. window ledges, so that they do not have to jump. Food bowls and beds should be easily accessible, and litter trays should be kept at floor level downstairs so they do not have to struggle with stairs. Joint supplements/pain relief again may be required. It is also vital to keep your dog or cat’s nails trimmed when they are older, as they and more likely to overgrow, cause discomfort and reduce mobility further. Diet Older pets do not have the same energy and calorie requirements as younger pets, so we 50

usually recommend switching cats and dogs to a ‘senior diet’ when they are approximately 8 years old. It is also vital to ensure they are not carrying excess load on the joints. Dental disease Many older pets have very bad teeth! It is common for owners to be reluctant about anaesthesia for dental procedures due to their age. Dental disease can be extremely painful and harmful to their health. Many pets will still continue to eat even though they are in pain so ensure you visit your vet for regular dental check-ups. Anaesthesia in the older pet All anaesthetic involves some risk to the patient. However with pre-op health checks, modern drugs, constant monitoring, intravenous fluids and pre-anaesthetic blood testing (checking kidney, liver function and a blood count) we are able to reduce these as much as possible, adjusting each anaesthetic to the individual patient. Your vet will be happy to discuss anaesthetic risks with you in more detail. As a general guide, animals over the age of 8 years should consider a pre-op blood test before an anaesthetic. www.chilternviewmagazines.co.uk

A robbery, party and some dirty dancing! Spring has sprung at Aylesbury Waterside Theatre with a season of unmissable shows. Laughs galore are in store as The Comedy About A Bank Robbery arrives (Tue 12 – Sat 16 Mar) in a hilarious smash-and-grab hit show guaranteeing swag loads of giggles. From the creators of The Play that Goes Wrong, this latest comedy caper sees Ocean’s Eleven meet the Marx Brothers in rip-roaring style. An iconic comedy classic takes to the stage with Abigail’s Party (Mon 18 – Sat 23 Mar) starring Jodie Prenger and Emmerdale and Coronation Street’s Vicky Binns. It’s 1970s suburbia and there’s a heady mix of free-flowing cocktails, classic disco and cheese and pineapple sticks. As tensions rise and tempers flare get ready to see respectability torn away from warring couples with disastrous (and hilarious) consequences!

A musical favourite full of passion and romance is on its way in Dirty Dancing The Classic Story on Stage (Mon 25 – Sat 30 Mar). With mega hits including Hungry Eyes, Hey! Baby, and of course the heart-stopping (I’ve Had) The Time of My Life, not to mention the sensational sultry dancing, you’re in for a hot night with this muchloved production. Looking ahead to Easter? Make sure you book for Thriller Live (Sun 21 – Mon 22 Apr), the ultimate audio-visual tribute to Michael Jackson, you won’t be able to Beat It! To secure your tickets visit the Box Office, call 0844 871 7607 (bkg fee. Calls cost up to 7p per min plus your phone company’s access charge), or visit atgtickets.com/Aylesbury (bkg fee).

Gardening

Askett Nurseries With the winter weather now behind us, the gardening season can begin in earnest. One of the first jobs to take care of is the planting of your onion sets, shallots and garlic. These can go in now, and will crop around the end of June. The most popular variety onion is the ‘Sturon’. It’s a high yielding variety that stores very well. If kept dry and cool you can be using Sturon right into next winter. They are versatile and tasty, highly recommended. For a late season crop, the best choice is Stur BC 20. Once planted in spring, they will remain in the ground late into the summer, and again store very well. For a red onion, go for Red Baron. They have a white flesh with red rings, and are excellent as a salad onion. Shallots are very easy to grow too. Plant as you would onions, in a sunny open position. For a salad choice go for Red Sun, they possess a delicious mild flavour. For something with a stronger taste Hermine, Longor and Vigarmor are very good. Garlic too can be planted now. One of the stronger choices is Cristo, whilst Marco and Arno have a milder taste.

a late frost. Leeks too are hardy. Make sure when you plant your leeks you drop each one into a hole quite a bit bigger than the plant itself. This will mean the leek will be able to grow and expand easily rather than remain stifled in firm compost. With regards to planting seeds out, make sure the soil is warm enough before sowing. One way of making sure the conditions are conducive to planting is to pop your hand into the ground. If you can leave it in there for 30 seconds or so, plant away! Now is the time to get those greenhouse vegetable plants on the go too. Tomatoes, cucumbers, peppers and aubergines can be sown, then planted into 3 litre pots or deep growbags to give you a great harvest all summer long. Happy gardening, see you soon,

One of the first vegetable plants that can be planted out are Broad Beans. These chunky little things are pretty tough and will survive

Book Review

Books to Share

Belinda and Amma grow close until a revelation causes Belinda to question everything she’s been taught. The three girls struggle with their identities and the expectations placed on them, whether by parents, employers or society as a whole. An intriguing coming of age novel with plenty of unexpected twists.

Whether you give them as a gift or only pass them on once you’ve turned the last page, these books were made for sharing with friends and family.

A Poem for Every Day of the Year – Allie Esiri Whether you fancy a funny poem for April Fool’s Day, a festive one for Christmas or an autumnal treat for October, you’ll find them all and more in this collection. While the book is aimed at children, these are poems that people of any age can enjoy. Poets range from old favourites such as Charlotte Brontë, Emily Dickinson and Phillip Larkin to contemporary wordsmiths such as Kate Tempest. Each poem has a short introduction by Allie Esiri.

Becoming – Michelle Obama Michelle Obama’s autobiography became an instant hit when it was published late last year, and it’s easy to see why. Her trademark warmth, humility and intelligence shine from every page. The memoir takes us from Michelle’s early childhood to her time as First Lady, and beyond. Entertaining, thought-provoking and inspiring to boot. When All is Said – Anne Griffin Widower Maurice sits at a bar in Ireland, raising toasts to the most important people in his life, from the brother who died so many years ago to his late wife. His joys, tragedies and regrets are laid bare. A warm, powerful tale that’s hugely enjoyable to read. You’ll miss Maurice’s humour, straight-talking and honesty when you reach the end. Hold – Michael Donkor 17-year-old Belinda is a Ghanaian housemaid, who is sent to London by her mistress as a companion for another teenage girl, Amma. Belinda leaves behind fellow maid, 11-year-old Mary. 74

Humans of London – Cathy Teesdale Cathy Teesdale has taken thousands of photographs across Greater London over the years. This book features more than 250 of her best shots with short quotes from the subjects. Beautiful pictures, interesting stories, a glimpse into other people’s lives – what more could you ask for from a coffee table book? Sherlock Holmes Case Book: Solve-it-Yourself Mysteries – Tim Dedopulos If you love a good ‘whodunnit’ and enjoy sifting through the clues to identify the culprit for yourself, you’re going to love this book. There are 10 cases to solve, from ‘The Birchfield Mystery’ to ‘Murder at the Carnaby Rooms’. Each one is beautifully illustrated. Twists, turns and plenty of red herrings mean you’ll need all your powers of deduction to solve the crimes. Great fun. www.chilternviewmagazines.co.uk

The Chilterns Conservation Board Largest ever Conservation project in the Chilterns awarded National Lottery funding

A project to restore and enhance habitats, landscapes and the heritage of the Central Chilterns has been awarded a National Lottery grant of £2 million. The Chalk, Cherries & Chairs Landscape Partnership Scheme, spearheaded by the Chilterns Conservation Board will also work to educate communities to become protectors of their heritage and landscapes. The five-year scheme will encourage people to connect to the wildlife and cultural heritage of the Central Chilterns through a number of interconnecting projects across three themes: Wildlife & Landscape, Heritage & Landscape and People, Communities & Landscape. Key aims of the scheme: • Protecting declining wildlife – Wildlife within the Central Chilterns has declined severely over the last 20 years. Chalk, Cherries and Chairs will support habitat management to protect the areas that species rely on. • Reinvigorating Chilterns Orchards – Our once common cherry orchards have all but disappeared, but will be rejuvenated and revived through the scheme. • Solving the Mystery of Grim’s Ditch – Presumed to be an ancient routeway, Grim’s Ditch is a real mystery, which further research will help resolve. • Uncovering the biodiversity in the headwaters of the Chilterns – The Central Chilterns features a number of important small streams and ponds and the scheme will identify and map their biodiversity. • Revealing the history of the Chilterns’ chair Bodgers – The scheme will uncover the lives of historic woodland wood-turners known as ‘Bodgers’, and allow people to reconnect with their craft heritage through events and demonstrations. Supported through the Heritage Lottery Fund (HLF), High Speed Two Ltd through the Community Environment Fund (CEF) and Wycombe District Council through the Community Infrastructure Levy (CIL) the project will leave a legacy of improved conservation and land 78

management, partnerships, skills, volunteers, and engaged communities caring for the future of wildlife and their heritage. Ros Kerslake, Chief Executive of HLF said: “The Central Chilterns has a wealth of heritage stories dating as far back as the Neanderthal huntergatherers of the Paleolithic era…We are thrilled that with money from the National Lottery we are able to fund Chalk, Cherries and Chairs to preserve this important natural heritage for future generations.” Commenting on the award, Kath Daly, Countryside Officer said: “Over the last two years a strong partnership of organisations, ranging from UK-wide charities to local community groups, has united to help plan Chalk, Cherries and Chairs… This major partnership will provide opportunities for people to get involved and volunteer; to increase and improve wildlife spaces; and for communities to learn, create and take action for heritage.” Recruitment of project staff has now started and work will commence in early summer. To find out more about the roles available and to apply please visit the Chilterns AONB website at https://www. chilternsaonb.org/conservation-board/vacancies.html

CHILTERN VIEW MAGAZINE

What our customers say: "My partner and I started Coco Accounting last year and decided to place an advert in Chiltern View to ‘test the water’. Since then we have received some significant enquiries of which some resulted in new customers and some of those are now with us for the long term. We believe we are testament to the fact that local advertising really does work and in today’s internet driven world, the word ‘local’ can mean so much, especially for a small business such as ours as we can meet our customers regularly to collect documents and discuss their business face to face. Thank you Chiltern View for giving us a head start and we look forward to continue growing our business with your help! David Saint - Coco Accounting

WHAT IS TINITUS AND WAYS TO COPE Paula Cook, Audiologist

Tinnitus is a common condition and is characterised by a ringing, hissing or other unwanted sounds that appear to originate in the head or body. Tinnitus is not a disease itself but is usually a symptom of some other underlying condition or as a result of damage to the inner ear. It affects many people and can be a great cause of distress and anxiety. Paula Cook, Audiologist - email: paula@astonhearing.co.uk

IS IT IN THE EAR OR THE BRAIN?

HOW TO DEAL WITH TINNITUS

Our brain is updated constantly with new information. Neurons or nerve cells in the brain receive signals from our ears about what is happening in our environment and process this information. When there is a hearing loss, these electrical signals from the ear diminish, but the brain is still on alert and waiting for information. In its efforts to make sense of this lack of sound input the brain becomes more aware of previously ignored electrical signals and these are perceived as new sounds, or tinnitus.

• Seek specialist audiological help either through your GP or privately. You may be referred to an ENT (Ear, Nose and Throat) clinic to be assessed to rule out any serious medical condition.

CAUSES OF TINNITUS

• Hearing devices can help especially as approximately 80% of tinnitus cases are associated with some degree of hearing loss. Hearing aids enhance the sounds you want to hear, such as voices and music, and thereby lessen the noises associated with tinnitus.

The most common cause is damage to the inner ear, the cochlea, as a result of exposure to very loud noise, a side effect of certain prescription drugs, or even if your ear is blocked with wax. Changes in blood pressure can also trigger tinnitus which means it can actually be a useful ‘early warning sign’ of a more serious condition. Any sudden drop in hearing often accompanied by tinnitus should be assessed urgently as this could be due to Sudden Sensorineural Hearing Loss which is a medical emergency. Princes Risborough 01494 733845

• Counselling can help to reduce stress and the fatigue caused by tinnitus. Cognitive Behavioural Therapy (CBT), mindfulness and relaxation techniques have all become popular techniques to treat tinnitus by having a calming effect.

• Sound therapy is useful for some people and many hearing aids now have specialised tinnitus programmes which serve as a distraction from the tinnitus, especially in quiet settings. • Speak to someone who understands what it is like to live with tinnitus. You can share experiences and get advice at one of our Hear Today free events or coffee mornings. See our website for details.

Health

Time to tackle Stress! Stress can have a terrible impact on your health and relationships, causing both physical and mental symptoms. It can affect our work and our relationships in a negative way and that can make us feel worse. Here are some ways to help you reduce your stress levels and improve your health in the process: 1. Be mindful Mindfulness is all about finding ways to be completely present in the here and the now rather than thinking about what has happened in the past or might happen in the future. 2. Breathe deeply Take a moment to stand or sit quietly and take a few deep breaths, filling your lungs. You should feel your belly expand as you breathe in. 3. Laugh Laughter is great for stress relief. 4. Listen to music Listening to music is a brilliant way to relieve stress. 5. Exercise Regular exercise helps us not only to relieve stress

88

but also to be more resilient against it in the future. 6. Go for a walk Going for a walk is a great way to lower your stress levels. 7. Sleep better Getting a good night’s sleep can help you to feel better, improve your health and help lower your stress levels. 8. Spend time with loved ones Time with friends and family can be a great way to take your mind off your worries. 9. Say no! Many of us feel stressed and overwhelmed because we’ve taken on too much. Practice saying no to the things that stress you out. Stress is a massive problem these days and definitely something to be taken seriously. Try some of the above suggestions and see if they can improve your health and wellbeing. Best wishes, David
