Editors’Letter Welcome to the May/June issue of Chiltern View magazine. With more restrictions lifting every few weeks, there really does seem to be a sense of optimism in the air. People are once again meeting up with loved ones and friends, visiting shops, getting pampered with a new hairdo or beauty treatment, and enjoying an al fresco meal or drink. Whichever camp you are in, the ‘can’t wait to get out and back to normal as quickly as possible’ group or the more cautious ‘happy to meet outside but not quite ready to mix properly yet’ team, it is all about what makes you feel comfortable. As we all ease back into a life prior to the pandemic, a great activity for a many of us, is the proper English picnic and this is the theme we have gone for with this issue. There are lots of beautiful places with the perfect picnic sites right on our doorstep. Many of these places have other attractions to enjoy as well, so there is

Nettlebed and Warburg Walk This is the next in a series of social-distancing walks across the Chilterns. This beautiful, stile-free walk features a nature reserve, beech woodlands and rich wildlife. Length: 6 miles (Allow 3 hours) Start & finish: The Old Kiln, Nettlebed RG9 5BA. Grid Reference SU 701 868 Access Information: Easy walking on good paths. One gradual climb between the nature reserve and Park Corner. Stile-free and no gates. Food & drink: The White Hart pub and the Field Kitchen café in Nettlebed. On route there are picnic tables at Warburg Nature Reserve Route From The Old Kiln road, turn left along The Green and follow the narrow road to a junction. Bear left on a road signposted to Magpies. The road is tarmacked to start with, but later turns into a dirt road. At the end of this road, turn left and you have come to the Warburg visitor centre. 1. From the centre, continue along the main path through the Nature Reserve for 1.5km to reach a 5-way junction. 2. Carry straight on and follow this wide track for further 1.5km path all the way until you come to a lane. Chilli Glazed Salmon With Cucumber, Herb & Lime Salad Wild Alaskan salmon is an excellent source of omega-3 fats and protein. In this dish, fillets of salmon are marinated in a tangy Asian-style dressing and accompanied by a light refreshing cucumber and bean sprout salad. Accompany with some seasonal leafy greens. Preparation time: 10 minutes Cooking time: 7 minutes Ingredients 1 pickled chilli, drained (or ½ fresh deseeded chilli) 2 garlic cloves, crushed 2 tbsp apple cider vinegar 1 tbsp tamari soy sauce 2 tbsp xylitol or honey 2 boneless salmon fillets, skin on 2 tbsp lime juice 1 tbsp xylitol or honey 1 tbsp mirin Handful of bean sprouts or sprouted seeds of choice 1 cucumber, halved and thinly sliced Small handful fresh mint leaves, chopped Small handful of coriander leaves, chopped 2 spring onions, finely sliced 1 tbsp chopped cashews 38

Method 1. Place the chilli, garlic, vinegar, tamari, xylitol or honey in a food processor and process to combine. Put the salmon fillets in a shallow dish, pour over the marinade and set aside in the fridge for 30 minutes. 2. Make up the dressing by mixing the lime juice, xylitol or honey and mirin together (if using xylitol make sure it has dissolved). Put the bean sprouts, cucumber, mint, coriander, spring onions, cashews and the dressing in a bowl and toss until well combined. 3. Preheat the grill to high. Remove the salmon from the marinade. Place the salmon on a lined baking tray. Grill for about 7 minutes or until the fish is golden and just cooked through. Place the remaining marinade in a small pan and simmer to form a glaze. Have you seen a Hedgehog recently? Hedgehogs have declined in numbers by 46% over the last 13 years, due to a range of contributing factors especially urban habitat fragmentation and the general loss of suitable environment. They are on the recently published first IUCN (The International Union for Conservation of Nature) red list for British mammals at risk of extinction in the next 20 years. Risborough Environmental Group are interested to know more about the hedgehog’s populations in the Risborough area and hope that you may be able to help. Please email us with reports of any recent or future sightings and signs over the last year and up to this winter (with details of rough date, location, what you saw etc and maybe even photos!) to regbucks@hotmail.com. We will then have data to consider and recommend habitat and other projects to improve the natural environment for the benefit of these endangered species.

Jaw, Neck and T.M.J. problems The letters T.M.J. stand for the temporo-mandibular joint, the joint attaching the jaw to the head. You can feel it moving in front of your ears when you open your mouth. If you have pain in one or both sides of the face in these area(s), you may have TMJ dysfunction, which can be very debilitating. Musculoskeletal causes of TMJ problems include: · clenching or grinding your teeth · postural problems – affecting the position of your lower jaw & or neck. In all these cases, there is likely to be an imbalance of the muscles which control the TMJ, which, left untreated, can leave the joint vulnerable.
