Recipe

Nectarine and Raspberry Semi Freddo with Raspberry Coulis The Italian name semi freddo refers to the fact that this is a semi frozen or half cold dessert. The fruit can be replaced with any soft fruit such as peaches, mango or apricot and the cream can be replaced with yogurt or crème fraiche.

Ingredients for 4 servings Ingredients: FREDDO

4 good sized very ripe nectarines 50g caster sugar 1 egg 3 egg yolks 15ml lemon or lime juice 300ml double cream RASPBERRY COULIS

Small tin of raspberries Tablespoon of caster sugar

Equipment:

Food processor and large sieve. 2lb loaf tin (this will comfortably hold 1 litre of water if you’re unsure of sizing).

Method:

Line the loaf tin with cling film. Don’t worry about wrinkles it adds character to the finished dish! Leave 5cm overhang on each side. This helps to release the freddo when serving. Drain the raspberry juice from the can into a small pan. Heat juice with the sugar until slightly thickened. Taste raspberry juice and add more sugar

if it’s a little too sharp. Sieve raspberries and discard the seeds from the sieve. Stone nectarines, no need to skin, blitz in processor. Mix raspberries and nectarines. Whisk egg and egg yolks together with the caster sugar in a bowl over hot water until at least double in size and thick and creamy. Gently beat the cream until thickened, but not stiff, and fold into egg mixture. Finally add nectarine and raspberry puree. Pour the mixture into the lined loaf tin. Pop into freezer and leave for 5 hours. Remove from the freezer, pull gently on cling film. Run water over the bottom of the tin if it’s being obstinate and sticking. Place freddo loaf onto serving dish, pour over some raspberry coulis and serve the rest in a small jug.

Legal Eagle Column – Holiday Nightmares Many of you will be spending you’re hard earned cash on family holidays, both within the UK and further afield. Unfortunately tens of thousands of families will find their dream holidays turn into nightmares, some will experience delays with flights and others will arrive at their holiday destination to find that what was described as a luxury hotel with a sea view is in fact a run-down hotel with a view of a building site. Worst still, some will find their holidays cancelled last minute by the tour operator who will refuse compensation. If this happens to you it is vitally important that you know what your rights are. However prevention is better than cure and in this respect there are steps that you can take before and during your holiday to protect yourself. 1. Ask your travel agent if you are ATOL or ABTA protected There are 2 main protection schemes, ATOL (which covers air travel and holidays booked as a package that include air travel) and ABTA. If you buy a package holiday you should always check what protection the tour operator offers and ensure that you get a receipt confirming that you are protected.

3. Use your credit card If you buy your holiday with a credit card, the card issuer is jointly liable for breaches of contract or ‘misrepresentations’ by the holiday company—this is particularly useful if the company goes out of business. This means that if anything goes wrong that the credit card company give you your money back. How much you put on your card doesn’t matter; you are covered as long as the package costs more than £100, but less than £30,000. 4. Take out travel insurance Travel insurance is a holiday essential that should provide you with financial protection if unexpected events occur whilst you’re away. A good policy will cover you for cancelling or cutting your holiday short in an emergency. It’ll also pay out if a personal belonging is lost or stolen and will cover your medical expenses should you become injured or sick whilst you are away on holiday. 5. Be careful when booking online Basing your choices on where to stay by looking at images or hotel descriptions online is a trap that many fall into. It is therefore impossible to know how recent pictures are that appear on the internet, whether they are even genuine and how exaggerated descriptions could be.

Before an ATOL is issued the Civil Aviation Authority (CAA) checks firms, thereby reducing the risk of failure. It also requires to pay into the CAA’s financial guarantee scheme. This provides money to protect customers. It means that if anything happens while you’re abroad, i.e. the airline goes bust or something happens with your hotel accommodation then the CAA will look after you, they’ll protect you and they’ll make sure that you get home.

Reading reviews from holiday-makers who have already visited the location and accommodation you are considering is always a good way to get the most honest evaluation. However, do remember that we all have individual tastes so don’t take the word of one person that the hotel you are considering is great, make sure that several people are of the same view.

ATOL does not protect you if you book direct with an airline or just book accommodation. 2. Consider buying a packaged holiday When you buy a packaged holiday, which is a holiday package including the travel and accommodation or travel and car hire together. It comes with significant legal and financial protection. This is therefore worth a significant amount and makes packaged holidays an attractive and safe option. PAGE 20

Wendover Woods Wendover Woods is an attractive mixed woodland located just outside Wendover on the Chilterns escarpment. This 325 hectare wood has a long, beautiful tree lined forest drive winding its way up to the highest point in the Chiltern Hills. There are many things to see and do, and there is also food and drink available from our Café in the Woods. Health Matters High Blood Pressure High blood pressure is common but you often don’t know that you have it. It usually has no signs or symptoms, so the only way to know is to have yours measured. ‘The emphasis now is on the early detection of patients with high blood pressure in order to reduce the incidence of heart disease and strokes. People over the age of 40 years old, who do not use the health service regularly, may be suffering with undiagnosed high blood pressure Some people only have high blood pressure when they’re at the doctor’s office, known as “white-coat hypertension”. To overcome this, doctors are aiming to measure your blood pressure without you having to see a nurse or doctor. Some surgeries, including Stokenchurch Medical Centre, are using a new self-monitoring service which is available free of charge in the waiting room. If your readings are over 140/90, which is considered high, it needs rechecking over a few weeks. You can do this at home by buying a British Heart Society validated home monitor http://www.bhsoc.org//index.php?cID=246 and registering to send regular readings to the doctor for interpretation. If you have sustained high readings you might need medication as well as making some lifestyle changes. There may be no single cause for high blood pressure. You are at a higher risk if you have a family history and also if : • you eat too much salt; • you don’t eat enough fruit and vegetables; • you are not active enough; • you are overweight; or • you drink too much alcohol or smoke.

You can help to lower your blood pressure and your risk of stroke and heart attack - by changing these lifestyle measures. All adults should have their blood pressure checked regularly. Experts recommend: • At least every 5 years if your blood pressure is normal. • Yearly if you have been diagnosed with high blood pressure To help combat undiagnosed blood pressure in the over forties you may be invited to a NHS health check or offered the opportunity to have your blood pressure checked at your GP surgery, just like have your car MOT’d it is important for your own health to avail yourself of this opportunity. Preparing Pets for Firework Night

Guy Fawkes night might seem far away but this is the perfect time to start desensitising those anxious dogs and cats against fireworks. There are many cds available that are designed to desensitise animals against noise phobias. Initially the cd needs to be played at a low volume below your pets anxiety threshold. Gradually you increase the volume at a rate that your pet can adapt to. It is important not to use sound desensitisation programmes during the period when the scary sounds are likely to occur so it is something you need to do well in advance of firework season! Some dogs and cats might require medication to reduce anxiety. There are supplements and prescription medications available that can be used to reduce anxiety. Please seek your vets advice before using any of these products.

At our practice we have Feliway and Adaptil plug-ins, in cattery and kennels respectively, to try and reduce stress in our patients. These are similar to plug-in room fresheners but release a pheromone that the mother animal would release and they have a nurturing, comforting effect on the animals. These products also come in sprays and collars for dogs. We must not forget the dangers fireworks can pose as well. Cats should be kept in at night and make sure that all pets have an area they feel safe in and can escape to when they are scared. Red Kites in the Chilterns This supplementary feeding could be maintaining an artificially large kite population concentrated in small areas which in the long term is simply unsustainable.

In the Chilterns the red kite is a familiar sight as it glides gracefully above woodland and open country. More than 20 years after the successful reintroduction project brought 93 young kites to the Chilterns countryside the kite population is thriving, with estimates suggesting there could be between 600 and 900 breeding pairs in southern England. Although many people continue to feed the kites on a regular basis, there is no conservation reason to do so - there has never been an official feeding station set up. The sight of a red kite swooping down to pick up food is spectacular, however, such large gatherings of kites over gardens and other areas is causing concern. PAGE 54

The reintroduction of the kite has been a great success, not least because of the fantastic support from local residents including, landowners and farmers, and long may this continue! So let’s allow the kite to move on to pastures new, allowing others to experience the fantastic sight of this truly magnificent bird. West Wycombe Choir

West Wycombe Chamber Choir is a group of enthusiastic singers of mixed abilities ( non music sight readers included) and ages who join together under the baton of their Musical Director Mr Barry Hodkinson.

We have a Christmas Dinner and trips are organised to attend musicals and concerts, usually in London. Once a year we have a choir barbecue; a cream tea and walk as well as a quiz evening, all events where we get to meet each other’s families.

They meet every Wednesday evening during term time at 7.45pm in the West Wycombe Combined School Hall, West Wycombe. The Choir performs 3 major concerts a year usually in the beautiful church of St Lawrence, West Wycombe Hill. Other smaller concerts are held throughout the year at various venues in the High Wycombe area. All profits from the concerts are donated to local charities. New members, especially men, are always welcome.

We sing and perform a wide range of music from African tribal, songs from the musicals, popular hits, religious pieces and Christmas carols. We are pleased to announce that ex-GWR 0-6-0 Tank engine 1369, will be returning to us from the South Devon Railway in late August, and commencing the steam services we have been advertising from the Bank Holiday Sunday and Monday at the end of that month, and running throughout September and October. It will also be with us for the ever popular Santa Trains in December, and the post-Christmas Mince-Pie specials. Please also keep an eye on our website, for October is planned to be something special, running both Saturdays and Sundays on the first three weekends, and the possibility of through trains from Chiltern Railway destinations of Princes Risborough and Aylesbury. There are plots vacant at both Stokenchurch and Water End. Lacey Green Windmill The windmill will be open until Sunday 29th September on Sundays and Bank Holiday Mondays from 2pm to 5pm. Admission is £2 per adult, and £1 per child (aged 5 -15). Please park in Pink Road and walk up the path on the right hand side of The Whip pub. Alternatively Arriva Bus 300 runs hourly on Sundays between High Wycombe and Aylesbury, and stops by the path to the windmill. Stokenchurch Dog Rescue As Stokenchurch Dog Rescue has reached its 50th anniversary this year, a special effort is being made to raise as much money from monthly jumbles PAGE 68

sales to take in more dogs and rehome them. An average of about 40 are rehomed every month. Many thousands of dogs have been saved from destruction in the 50 years. So on Saturday, September 28 the charity is holding a sale in the grounds of its Oxford Road kennels from 10am till noon. Literally tons of donated new and nearly new clothes, books, household goods, bric a brac, DVDs, CDs, plants and other items will be on sale. If weather is bad it is likely to be postponed until the following Saturday morning. The charity has held monthly sales this year and so another sale will be on Saturday, October 26th in the same place and with the same times. Finally, SDR is holding a choice of two autumn sponsored walks from the kennels on Sunday September 22nd from 10.30 am setting off from the kennels. There will be a choice of set distance walks and anyone interested can either bring their own dog or pre-book one of the kennels’ dogs by calling 01494 482695. A service to celebrate the transition of our school from Infant to Primary School. A short service with Bishop Alan, Bishop of Buckingham, followed by tea and cakes. All welome. Stokenchurch Fete What a great day, thanks to everyone who supported it. Most stallholders reported they had sold out by the end of the day and the dog show (proceeds go to support the day centre) had more than 100 entries. Our thanks to those who took part in the main ring events, also to the people behind the scenes who put up the marquees, dog rings etc, without whose help the fete would not happen. The fun run was a great success as was the Fleurfest. All these events help to keep our village organisations going so thank you once again.
