Editors Letter Welcome to Princes Risborough View magazine. Finally it looks as if some warmer weather is on the way. It has delayed everything though and at the time of writing this the daffodils are only just starting to come out. With this in mind, we have decided to choose these gorgeous lambs for our front cover, partly because they were too early for the April cover but mostly because Gareth Hendley (page 10) has taken this lovely picture and we just had to use it. Thanks again Gareth. We have a full page from Waterperry Gardens on page 20. We had no idea there was so much to do there so it is definitely worth a trip out. Emily has written
another excellent article, this month about May Day celebrations (page 46) and we would like to say another thank you to her for continuing to keep up to date with our Facebook and Twitter accounts. Recipe of the Month
Cheese, Bacon & Onion Pie Makes 8 Slices, Ready in 1½ hours, plus chilling
Perfect for a simple lunch or for an early summer picnic this savoury pie has a really rich and buttery crisp pastry and a tasty smoked bacon and onion filling. It tastes just as delicious warm or cold. Look for packs of smoked bacon pieces near the bacon rashers in the supermarket or use flavoursome Italian diced pancetta instead. Pastry: • 225g plain flour • 1 tsp mustard powder • Pinch of salt • 115g butter, chilled and diced • 4-5 tbsp iced water Filling: • 175g smoked bacon pieces • 4 onions, peeled and thinly sliced • 1 tbsp sunflower oil • 200g mature Cheddar cheese, grated • Beaten egg, to glaze • Tomato salad, to serve (see tip) Tip: Serve simply with a fresh tomato salad made by thickly slicing ripe vine tomatoes and layering with finely chopped spring onions and a few fresh basil leaves. Drizzle with a little olive oil and season with freshly ground black pepper. Method: 1. To make the pastry, sift the flour into a large bowl and stir in the mustard powder and salt. Add the diced butter and rub into the flour between your fingertips until the mixture resembles coarse breadcrumbs. 8
2. Stir in enough of the iced water with a round bladed knife to mix to a crumbly dough. Knead very lightly until just smooth then flatten into a disc and wrap in cling film. Chill for 20-25 minutes. 3. Meanwhile, prepare the filling. Dry-fry the bacon pieces in a large non-stick frying pan for 4-5 minutes until just golden. Remove with a slotted spoon and set aside. Add the oil and sliced onions to the pan and fry gently, stirring occasionally, for about 15 minutes until the onions are very tender and pale golden. Leave to cool. Preheat the oven to 190°C, 375°F, Gas Mark 5. Place a baking sheet in the oven to heat up. 4. Roll out just over half the pastry on a lightly floured surface and use to line a 20x30cm loose-based fluted flan tin. Layer the bacon, onions and grated cheese in the pastry case and season between the layers with freshly ground black pepper. 5. Roll out the rest of the pastry and use to cover the filling. Seal the edges of the pastry with water then pinch them tightly together with fingertips. Trim off any excess pastry. 6. Brush the pastry with the beaten egg and pierce 3-4 holes in the top of the pie to allow the steam to escape. Bake on the hot baking sheet for 2530 minutes until the pastry is crisp and golden. Serve warm or cold with tomato salad, if liked.

Monthly Focus
May Day The first day of the month of May is historically known as May Day. Celebrations have been carried out in England for over 2000 years, being a traditional day of festivities associated with the beginning of springtime. It probably originated as a roman festival to enjoy the coming of summer after a long winter season. Popular activities include dancing around a Maypole which has coloured ribbons hanging from the top and dancers (often young children) form patterns down the pole with a complex sequence of movements around it. Crowning a May Queen is also a fun activity and she will often sit at the front of a parade wearing a white gown to symbolise purity 10
and of course a lovely crown or tiara. It is her job to start the May Day celebrations. Indeed it was convenient in days past to give farm labourers a day off, as seeding would have been completed by this date and now we have a special bank holiday in May where we can all enjoy these springtime treats.

Your Health Referred and Radiating pain the pain. A careful history and examination by an Osteopath can usually distinguish this type of pain from radicular pain, or pain that radiates down the leg along the specific course of a compressed spinal nerve. The distinction between referred pain and radicular pain is critical because the treatment of the two types of pain varies considerably. Many people that come into our clinic are very concerned if they have pains coming from their back or neck into their arms or legs. We are often told “I’ve got Sciatica” or “I think I’ve slipped a disc”. These symptoms can be quite severe and patients are naturally concerned. There are normally two forms of pains that spread into the extremities (arms and legs); these are known as radiating or referred pains. Diagnosis of Referred Low Back Pain When determining the underlying cause of low back pain, both the type of low back pain (a description of how the pain feels) and the area of pain distribution (where the pain is felt) helps us make a preliminary diagnosis and determine the appropriate treatment plan. Unfortunately, the brain cannot determine the specific source of 16
A referred pain is a dull, constant, nagging pain that is often described as feeling like a toothache. Nerves always supply more than one part of our body. A referred pain occurs when our nervous system confuses pain coming from one area of the body as coming from another that is supplied by the same nerve. For example referred pain in the back often radiates in to the groin, buttock and upper thigh and sometimes to the knee. It is important to discover the cause of a referred pain as it can also be caused by a disease of an internal organ. For example, left arm, neck and jaw pain in heart conditions and the Gall bladder can give rise to right shoulder pain. A radiating pain feels like a sharp, shooting pain, and can often be described as a stabbing or electric shock sensation. This occurs when a nerve is compressed or
pinched by a spasming muscle, disc protrusion, swelling/ inflammation or malaligned joint in the back. Very rarely this could also be caused by other forms of compression or infection. This is the type of pain that people often call “Sciatica”. There are a number of nerves that travel in to the legs, the sciatic nerve is just one of them. True Sciatica would be felt through the buttock, back of the thigh, calf and sole of the foot. Other areas of pain are caused by irritation or compression of another nerve. We hear people describe shooting pain from the hip to the knee as “sciatica”, this isn’t strictly true, but it does roll off the tongue slightly easier than “lateral femoral cutaneous neuralgia”! The majority of the time the cause of these types of pain are easily diagnosed and treated. Your Osteopath will ask questions about the onset, location and nature of the pain and perform some simple tests to understand the structures involved. Usually the problem can be treated in the clinic, but in some cases you may be referred to your GP for further tests such as x-ray or MRI. Roger Romyn the landlord of the Wheatsheaf in Chinnor is proud to announce the launch of his new Festival of Flavours. Long known for his South African roots and his ability to create Biltong 9,000 miles from its natural home, Roger has been successfully building a reputation for food, beer and music at his pub in the charming village of Chinnor for five years. Now he is ready to move on to the next step. For this change he needed a new group to support him, the return of Adam Ratcliffe after his sabbatical in the big city, working at the Trout at Wolvercote to run the kitchen and the discovery of Kelly Gadsden as the new front of house Manager, the team is complete. Now they are all focused on developing this village pub and the flavours associated with it. Over the coming weeks a stream of new ideas and foods will become available both in the pub and with the new
outside catering and bar facilities that the team have to offer. In pole position, will be cooking from the new oven, designed and built by Roger’s own fair hands, ‘Ella’ as she is known to the team is an artisan stone based oven, fuelled by wood and generating heats in excess of 1200F (700C). This new oven will enable Adam and Roger to create their own bread and pizzas from scratch and cook locally sourced meats to perfection. Alongside the oven is a smoker specially imported from the United States which will be used to produce home made sausages, bacon and even pastrami. Not forgetting the pizza oven that Roger had installed to allow home made pizzas to be eaten in house or served as a takeaway.
Barbecue These four cooking methods will form the backbone of the new expanded menu, some of the specialities from Rogers homeland, like the ever popular boere wors sausage will remain, Monday’s pizza night will still offer amazing value, but now

on a Tuesday you will find a selection of home made hand crafted meat platters on the bar. Spring Has Sprung!
I don’t think anything epitomises an English garden during the summer than a colourful hanging basket. Brimming with gorgeous flowers, a glorious mass of tumbling blooms, a hanging basket is a must in any sized space. These days, it doesn’t have to be a laborious, job, lining a wire framed basket with moss and plastic, and trying to fiddle small plants through even smaller mesh holes. The variety of empty baskets on offer is incredible, lots of them are very ornate and come with a built in liner, you can buy all different shapes, conical and half baskets to fit any available space. This type of basket is very easy to plant, just make sure the base has sufficient drainage holes and buy the correct compost to fill. This should be a fairly light mixture, but with good water and nutrient retaining properties. If you decide to use a multi purpose compost, add some water retaining granules and this is a ood time to incorporate a slow release feed, then the maintenance is down to regular watering and dead heading. The amazing advances in producing incredible floriferous trailing plants, means that you will only need to plant the top surface of the basket to achieve a traditional cascading effect. If the basket is going to hang in a position which gets some sun and shade, the choice of plant material is huge, mixing trailing geraniums, fuchsias, petunias and lobelias with any of the newer introductions, not forgetting to include some non flowering plants 36
to break up all the colour, these include nepetas, helichrysums, ivies in shades of green, gold and silver grey. If the basket will hang in a hot spot, you can’t beat geraniums, pelargoniums, and trailing petunias, they will all thrive in the sun as long as they get sufficient water. For the shade, fuchsias are a must. They prefer this, and will flower happily over many months, again the choice of plants is vast, from very delicate single flowers, to enormous saucer sized double blooms, the choice is yours! Of course, you don’t have to limit yourself to growing traditional flowers in basket, if it is to hang near your back door, why not plant up a selection of herbs. Parsley, basil, coriander, thyme, particularly the low, spreading variety are all ideal for this, just make sure you avoid using the invasive herbs like mint and majoram, and of course the large woody herbs like rosemary and sage as they will outgrow the basket too quickly. If you like the idea of a permanent feature, why not plant up some of the very pretty alpine plants that are available, or if you have shady corner to fill use some of the really attractive ferns for a very different look. Coronation Cream Tea Party By Emily Hyde
Last year was the Queen’s Diamond Jubilee and the whole country came together to celebrate this momentous occasion. This year, the Queen celebrates 60 years since her Coronation. To celebrate, she is holding a Festival in the gardens of Buckingham Palace between 11th and 14th of July and everybody is invited for £30 a ticket. With this in mind, and following the success of the Queen’s Diamond Jubilee Teddy Bears’ Picnic Street Party last year, the Risborough District are coming together again to organise our own Coronation Cream Tea Party in honour of the Queens 60th Coronation Anniversary. The party is being held on 9th June in Wades Park from 2 till 4pm and the organisers are aiming to get the whole community involved. The Risborough Guiding and Scouting family, the Risborough WI, Churches Together and Rotary and Risborough Town Council are just a few of the many local organisations helping to organise this event. The Guides are hosting a face-painting stand and the Country Market are supplying scones, jam, cream and a wide array of cakes. Stage Plus and Breakout will be providing entertainment for the children, and a few local bands, such as the Princes Risborough School Band and High Wycombe Rock Choir, will be playing live music throughout the event. Also
for the children, the WI are organising a table where children can make their own crowns, with a competiton for the best crown and a special prize for the winners! In addition, the team from Lighthouse will be there running a soft drinks stand and assisting childrens entertainment. This will be a great oppourtunity for regular Lighthousegoers to meet the Main Stage crew in person, which is a very exciting prospect for many! The party is open to everyone and the WDC Chairman and Risborough’s Mayor have been invited, as well as a few local MPs. The Queen is also making a special appearance! If the afternoon has good weather, there will be ample space for picnic blankets and, although there will be many stalls to purchase food from, everyone is welcome to bring along their own picnics. Of course, if rain clouds beckon, arrangements have been made to host the event in the Community Centre Hall instead. The Party looks set to be a fun event and there will be plenty for the whole family to do. Juggling busy lives seems to be the expected ‘norm’ these days; head overloaded with work, family pressures, endless emails, books we ‘must’ read, films we ‘have to’ see, not to mention eating the right foods and fitting in exercise. It’s no wonder that our brains get stuck in the ‘doing‘mode and then can’t switch off when it’s time to go to sleep. We spend our lives in our heads, going over what happened during the day or planning how we are going to deal with the next, real or imaginary, problem. Mindfulness meditation offers an alternative way to constantly being in the ‘driven’ doing mode. It teaches us how to stop, breathe, and start to live in the present moment because, 54
Mindfulness-Based Stress Reduction (MBSR) was developed by Jon KabatZinn and colleagues in a Massachusetts General Hospital as way to help people respond more effectively to stress, pain and illness. The benefits of mindfullness can be enjoyed by everyone who finds themselves reeling from modern day living and is looking to find more peace in their lives. It is run in groups over 8 weeks for two hours a week with a one-day retreat (10:00 15:00) approximately half-way through the course. During the classes there are some guided practices and discussions - and not at all like you probably think meditation is - no chanting or joss sticks in evidence anywhere, I promise! It’s a fun and welcoming group of people just like you who want to find some calm in a busy world. You will not learn how to make your mind go blank, force only positive thoughts into your mind or only relaxation skills (although it is relaxing...)
What you will learn during a mindfulness course is the following: • How to be more aware in the present moment rather than caught up in negative or anxious thoughts • How to step out of a constant ‘doing’ mode into simply ‘being‘. • To recognise your own responses to stressful situations and develop other ways of dealing with them. • Simple meditation techniques that you can use anywhere which can transform your daily life. NHS Breastfeeding Support in Princes Risborough An NHS support group for breastfeeding mothers is now running alongside the baby clinic on Tuesday mornings at the Children’s Centre on Wellington Avenue, 10:30-11:30am. It is a dropin service where mothers can consult trained breastfeeding counsellors and receive support and advice on breastfeeding babies of any age. Lacey Green Windmill
Monks Risborough W.I.
The windmill will be open from Sunday May 5th until Sunday 29th September on Sundays and Bank Holiday Mondays from 2pm to 5pm. Admission is £2 per adult, and £1 per child (aged 5 -15). On Sunday 12th May we will be open from 11am to 5pm, and will hope to have the sails turning (as always this will depend on weather conditions on the day). This is part of National Mills Weekend which is co-ordinated by the Mills Section of the Society for the Protection of Ancient Buildings. Our Village Horticultural Society will have their plant and produce stall by the windmill on Sunday 12th May, they will also be open from 11am. The windmill is the oldest smock mill in the country and since 1971 has been restored back to working order by members of The Chiltern Society. Due to the fragile nature of the 360 year old wooden machinery, we do not use the mill to produce flour. Please park in Pink Road and walk up the path on the right hand side of The Whip pub. Alternatively Arriva Bus 300 runs hourly on Sundays between High Wycombe and Aylesbury, and stops by the path to the windmill. St Dunstans Church – Flower Festival From June 28th to July 1st a spectacular Flower Festival with music is being hosted at St. Dunstan’s Church, Monks Risborough, the oldest recorded parish in England. This will feature over 30 flower arrangements to admire based on the lives of Christian saints as well as a wide choice of classical, church and contemporary music to listen to. There will also be a display of local history, the carrying out of an archaeological dig, a 60
chance to buy garden plants, and an opportunity to relax with refreshments and cream teas. A ‘songs of praise’ style service will be held as part of the celebration and monies raised from this weekend will be used to repair the stonework and stained glass windows of the church. Princes Risborough Bowls Club Have you ever played, or thought that you would like to play, outdoor bowls? Interested? If so, come along to an Open Afternoon on Saturday, 4th May from 2.30 pm when Club Officials and Coaches will be available to give help and advice. Have a trial ‘roll-up’ (shoes and bowls will be available) and take the first step to learning a new and absorbing game. The Club is offering a special half-rate subscription this year for those adults who have never played outdoor bowls before- an offer too good to miss! The Club has organised a balanced mix of matches over the summer, designed to present opportunities for bowlers of all abilities and ambitions, from friendly inter-Club Matches to County and National Competitions. We have a flooring project to complete, a few odd maintenance jobs to do (any help on these would be greatly accepted!), and then the pool will be officially opened on Monday 6th May. Do watch out for posters about the opening, which will include details of a fun Village Treasure Hunt. The pool is there for all families (children up to 11 years old) to enjoy, learn to swim and have fun in. We offer pool parties, swimming lessons, ladies only swims, fun swim sessions and one to one lessons. Can you help? We are always looking for new committee members and more volunteers to be trained as Lifeguards as well as volunteers to help with maintenance jobs.
