Recipe of the Month
Mediterranean Fish Bake Serves 4, Ready in 50 minutes
This is a great one-pan dish full of fresh flavour. Monkfish is quite pricey but the meaty flesh is delicious and bakes really well, however you can replace it with cod loin, salmon steaks or thick pieces of haddock fillet if you prefer. Serve with a green salad and warmed ciabatta bread to mop up all the lovely herb and lemon flavoured pan juices. Ingredients:

• 2 tbsp olive oil (choose a good quality fruity one) • 350g small new potatoes, halved • 1 red pepper, deseeded and cut into chunks • 1 yellow pepper, deseeded and cut into chunks • 1 green pepper, deseeded and cut into chunks • 225g small plum tomatoes, halved • 4 monkfish fillets (each weighing about 150g) • 50g butter, softened • Pared rind and juice from 1 small lemon, plus extra wedges to serve • 1 tbsp fresh chopped oregano • Salt and freshly ground black pepper
1. Preheat the oven to 200C/400F/Gas Mark 6. Place the oil in a large non-stick roasting tin and heat in the oven for 5 minutes. Add the potatoes to the tin and toss to coat in the hot oil. Roast for 20 minutes, turning once.
Tip: Replace the peppers with sliced courgettes, chunks of celery and baby button mushrooms, if liked. 8
2. Add the peppers and tomatoes to the roasting tin and toss to coat in the hot oil. Make a space in the tin and add the monkfish fillets. Return the roasting tin to the oven for 10 minutes. 3. Dot the butter over the fish fillets and sprinkle over the lemon rind, juice and oregano. Season with salt and freshly ground black pepper and roast for a further 5-10 minutes until the fish is just cooked through and the potatoes and peppers are tender. 4. Slice each monkfish fillet and arrange with the potatoes, peppers and tomatoes on four warmed serving plates. Spoon over the pan juices and serve immediately with lemon wedges.

Kop Hill Climb 2013
Kop Hill ale will be back this year, after a runaway success at its launch in 2012.
On 21st and 22nd September Kop Hill Climb will be restored to its illustrious past. The revival of the historic hill climb in Princes Risborough is gearing up for its fifth event. The event returns this year with over 400 historic cars and motorcycles taking on the famous hill, and many more displaying in the Paddock. Vehicles range in age from the early 1900’s to modern day exotics. A fabulous weekend for enthusiasts, but Kop Hill Climb is also about families, so there will be plenty for all to see and do. The breathtaking Battle of Britain Memorial Flight will grace the skies above Kop Hill on Sunday 22nd. Enter if you dare the Wall of Death. Climb aboard the cockpit of an Avro Shackleton. And surely on everyones ‘must see’ list this year will be the Napier Railton. The 24 litre aeroengined World Land Speed Record Holder from 1939 to 1947 cannot be ignored. It is almost five meters long, and the sound of the engine has been likened to ‘the sound of a thousand storms’.
And budding designers and racers have been told to get their thinking caps on (or should that be racing helmets!) and take part in the Soapbox Challenge. The Challenge is open to competitors aged 10 to 17 to design, construct and compete in their own gravity-powered soapbox cart. Entrants will compete as teams of up to 6 members, and the soapboxes will be evaluated on their engineering and design just as much as their performance. Last year saw the first Soapbox Challenge, where 16 teams ranging from Green Onions and The Snails, through The Lightening Longwicks to The Lean Mean Green Machine competed for the coveted trophies and a host of prizes. The objective of the Kop Hill Climb revival is to raise money for local charities. All the organising team and helpers are volunteers. Spring Bulbs
The Autumn is the time to plant Spring flowering bulbs. Daffodils, Tulips, Crocus and Hyacinths are just some of the bulbs that will burst into colour in the Spring and should be planted now. The sight of the first bulbs of the season gladden the heart of all gardeners, and really do tell us that the long cold Winter is coming to an end, and the gardening season will soon be with us. To ensure you get the best from your newly purchased bulbs, there are a few simple tips to follow. Always plant in a sunny position. Your bulbs will tolerate partial shade, but like all plants, they will reward you with more colour if they are in full sun. Do make sure you plant in well-drained soil . If your chosen planting area does tend to hold water, add some sharp grit to the hole, this will encourage any water to drain away and prevent your bulbs rotting away during the Winter. Choose a mild, dry day to plant your bulbs. Don’t try to plant if frozen soil or if your ground is very wet. Make sure the soil is as dry as possible so your bulbs can settle. Once you have planted, keep an eye on the weather forecast. If a very cold spell is predicted it is well worth mulching your bulbs. A mulch will insulate your bulbs, stopping the cold from penetrating the soil, and conserve moisture. And finally, plant your bulbs as naturally as possible. Don’t plant in a row nature doesn’t work like that! Plant in drifts - odd numbers look most natural. One way to make sure your bulbs 30
are planted is to simply drop your bulbs onto the ground from a couple of feet . Where they fall is where you should plant them. Wendover Woods Wendover Woods is an attractive mixed woodland located just outside Wendover on the Chilterns escarpment. This 325 hectare wood has a long, beautiful tree lined forest drive winding its way up to the highest point in the Chiltern Hills. The Country Markets organisation has roots going back to 1919, when the Agricultural Organisation Society (now DEFRA) sponsored the setting up of co-operative Markets through the WI to sell surplus produce. This was because, after the 1st World War, men were returning home to find that there was no work. The idea was that they could bring in a small income by selling their surplus garden produce, etc. From this beginning Markets have grown.

“Thank you, thank you, thank you; it’s changed my life!” Drivers of the Risborough Area Community Bus happily put up with winter mornings and otherwise monotonous stop start driving when they hear such oft repeated praise. Now in its third year and extending its footprint further, the bus has opened new horizons for both its drivers and their passengers. Whether it is doctor’s appointments, shopping, local meetings or simply having coffee with friends, those who use the bus, and there are now over 20,000 passenger journeys each year, insist it has made them come alive whatever their age. “It’s such a rewarding experience” says RACB’s oldest driver Pat Voss. “It makes all the difference knowing you make a difference.” Pat is one of our 30 “MiDAS” trained drivers who get as much out of the bus as their passengers. And they are well thought of; “these drivers are the most helpful I have been served by for 44 years” said a passenger recently. It’s not just passengers who benefit from RACB. One of our passengers has said that “the service has resulted in my spending over £700 in Princes Risborough shops this year” And by linking with both Arriva buses and Chiltern Rail services, “our little green bus” allows journeys near and far. Operated by a charity whose trustees, like the drivers, are all unpaid volunteers, RACB 44
operates a scheduled daily service around Princes Risborough and the outlying villages of Longwick, Bledlow, Bledlow Ridge, Speen, Askett and Great Kimble. RACB also runs outings to places of interest and the bus is available for groups when not in scheduled service. “We had quite a few difficulties getting the Bus on the road but we had tremendous help in overcoming them from regional organisations and local authorities”, said Malcolm Maultby, Chairman of the Trustees. Not least among them has been Buckinghamshire County Council and Buckinghamshire Community Foundation who have helped with expertise, experience and funding alongside the enthusiasm and knowledge of local volunteers and passengers. What makes it tick? In a word: involvement. It is now difficult to imagine life without the Community Bus and already plans are being laid for the future development of this very worthwhile project.

Admission is £2 per adult, and £1 per child (aged 5 -15). The windmill is the oldest smock mill in the country, and since 1971 has been restored back to working order by members of The Chiltern Society. Due to the fragile nature of the 360 year old wooden machinery, we do not use the mill to produce flour. Please park in Pink Road and walk up the path on the right hand side of The Whip pub. Alternatively Arriva Bus 300 runs hourly on Sundays between High Wycombe and Aylesbury, and stops by the path to the windmill. We are pleased to announce that ex-GWR 0-6-0 Tank engine 1369, will be returning to us from the South Devon Railway in late August, and commencing the steam services we have been advertising from the Bank Holiday Sunday and Monday at the end of that month, and running throughout September and October. It will also be with us for the ever popular Santa Trains in December, and the post-Christmas Mince-Pie specials. Please also keep an eye on our website, for October is planned to be something special, running both Saturdays and Sundays on the first three weekends, and the possibility of through trains from Chiltern Railway destinations of Princes Risborough and Aylesbury. Details are being finalised now, and an announcement is planned for August 7th on the web site. Risborough Rangers Football Club Let there be light and there was light. That was certainly the case at Risborough Rangers Football Club on 4th July as the installation of floodlights were completed by Highlights Floodlights Ltd and switched on and tested for the first time. Chairman Richard Woodward described the event as a massive achievement in the history of the club which was formed in 1971. The total financial requirement of £38,000 has been reached through the negotiation of grants from the Football Foundation Trust, Bucks West Chiltern Local Area Authority, Wycombe District Council and a massive fundraising effort within the club over the last three years including support from the Risborough Rangers Junior Section. This means the club can now be promoted to Division 1 (Step 6 of the football structure) of the Spartan South Midlands Football League for the this coming season 2013/2014.
