Editors’ Letter Welcome to the Jan/ Feb issue of Chiltern View (Risborough Area) magazine and Happy New Year to all our readers and advertisers. We do hope you all had a lovely Christmas and are looking forward to the year ahead. We had a lot of changes here at Chiltern Directories last year. At times some of these changes were quite a challenge, but we have now find ourselves stronger and more positive than ever. We moved offices, launched the Thame area magazine, lost and gained key staff members, changed the delivery of the magazine and doubled our distribution to include a much larger area which has proved to be a great success with both readers and advertisers.

We hope to continue to build all 3 magazines this year, but to keep the same format, with a good mixture of local articles, business promotion and community information. Our Christmas Charity donation went to FOCUS (Families of children United support) and we were so pleased to have been able to give to such a good cause. www.bucksvoice.net/focussaunderton/services One lucky winner won a family ticket to the Sleeping Beauty Pantomime at Aylesbury Waterside Theatre. Look out for this issue’s competition on page 10 for your chance to win. The lovely front cover picture was kindly sent across by Chinnor and Princes Risborough Railway (See article on page 18).

The Chilterns Area of Outstanding Natural Beauty

admiring the stunning views before popping into a country pub for well-earned refreshments.

It is a beautiful area, full of rolling chalk hills, beech woodland, clear chalk streams and a wealth of wildlife. It was designated as an AONB in 1965, in recognition that its landscape is amongst the finest in the country. It is one of 46 AONBs in the UK Hill l Crowel which, together footpath near Chinnor with National Parks, represent our most scenic countryside. The Chiltern Hills have been well-known for centuries, though not always for the best reasons. In medieval times the heavily-wooded hills and secluded valleys were the hangout of fugitives escaping the law and the area acquired a bad reputation. However, as nearby London grew some of its prosperous citizens began seeking country estates and a number of great houses and parks were created in the Chilterns, gradually improving its respectability. Nowadays you can visit many of these properties plus a wealth of other historic treasures in the area. There are lots of ways to enjoy the Chilterns, and most will keep you and your wallet healthy! With over 2000km of footpaths criss-crossing the area, plus the Ridgeway and Thames Path National Trails, the opportunities to go for scenic walks are endless. There are many circular walking routes of all lengths: you can do a gentle walk in a valley, visit attractive villages, stroll through a river meadow or tackle a longer walk along the Chilterns ridge, 8

If you enjoy cycling there are lots of promoted bike rides. Some of the area’s most scenic lanes have been included in the Chilterns Cycleway – a 173 mile on-road cycling route that goes right around the Chilterns AONB. You may have seen the brown signs for it. There’s no need to do the full route in one go – there are plenty of options for enjoying part of the Cycleway on a circular day ride. Winter is one of the best times to get out into the Chilterns countryside – why not wrap up and head out? The red kites are out in full force, soaring above the fields and woods with their russet feathers glowing in the winter sun. You can crunch through piles of leaves in the woods and look for the first signs of snowdrops peeking through. The Chilterns Conservation Board is the official public body tasked with caring for and promoting the Chilterns AONB. We’re a small organisation but we cover a lot – from encouraging good design in new buildings to conserving wildlife, working with farmers and woodland owners, devising new walks and cycle routes and running public events. We also provide lots of information on where to go and what to see in the Chilterns AONB on our website www.chilternsaonb.org. You can download walking and cycling leaflets, information on the Chilterns Cycleway and find out about local attractions and events.

Spring Season Highlights – Aylesbury Waterside Theatre

Don’t miss Tonight’s the Night, written by Ben Elton and including all the hits of Rod Stewart, be sure to don your leg warmers for brand new production Fame, and celebrate the 25th Anniversary Tour of Buddy: The Buddy Holly Story. The Waterside’s Spring programme has been announced and it’s packed full with something for everyone. Alongside the ‘dirty rotten secret’ being out that the theatre’s hosting Dirty Rotten Scoundrels prior to the West End (starring Robert Lindsay and Rufus Hound), there are plenty of other shows in a season that appears to be bursting at the scenes with everything from comedy to drama, dance to children shows and some of the most popular musical theatre around!

Aside from this the Waterside is proud to be opening the tour of The Two Worlds of Charlie F, featuring ex-service military personnel, now trained actors, telling their stories from the front line. The play is an authentic, uplifting tale of survival, not to be missed. Keep an eye out for an eclectic line up of one night shows from the world-famous Grimethorpe Colliery Band, to the nation’s favourite ballroom dancer Anton Du Beke, to super cute puppets with Peppa Pig and super cool moves with Tap Factory.

Stokenchurch Dog Rescue Dog of the Month Hi there, my name is Dale and I’m a 1 year old small mixed breed. I am a very sweet boy although I can get a little worried when people bend over me or move their hands too fast. I LOVE to run so will need a home with a secure garden and owners who like to have long walks every day. I like other dogs and may be able to live with

14

a cat (subject to a test), and if there are children in the home I would prefer that they are aged 8 years and over. If you are interested in offering me, or any other dog, a loving home please visit Stokenchurch Dog Rescue any day except Thursday between 2pm and 4pm, or give them a call on 01494 482695. It would be great to see you!

Chinnor Railway

on the day of issue. Most trains convey a buffet car and the Cambrian Cafe at the station serves reasonably priced tea, coffee, light refreshments and delicious homemade treats. There’s also a well-stocked shop selling railway-style souvenirs and gift items and we find the volunteer staffs are always delighted to discuss their activities with you – but beware, they are so enthusiastic you could end up becoming a volunteer! The Chinnor Railway is our local friendly volunteer operated branch line in the style of the former Great Western Railway and is a not to be missed heritage attraction for tourists, families and enthusiasts alike. Historic steam and vintage diesel services run most Sundays and some Saturdays from Mothering Sunday 30th March to Halloween on 26th October 2014. Starting out from the delightfully restored Chinnor station with its ample free parking, the line follows the foot of the Chiltern Hills and runs parallel to the historic Icknield Way until it reaches the outskirts of Princes Risborough. The round trip is a leisurely 45 minutes long allowing you to take-in some very attractive open countryside and to enjoy outstanding views across the Vale of Whiteleaf. Tickets for Standard Timetable days are generally issued on the basis of pay-once-and-stay-all-day, and so you can make as many journeys as you wish

In addition to the Standard Timetables there are popular Special Events throughout the year including on 14 June when you can see behind the scenes on the railway’s Open Day, whilst between 9–21 August an intensive service will be run to celebrate 20 years of heritage railway operation, then on 12 October all available steam and diesel locomotives will be in operation on Gala Day. Always popular are the Murder Mystery evenings on 10 May, 5 July and 13 Sept 2014 with dinner and wine served on- board your steam hauled train. Or try one of the Quiz Nights aboard the diesel hauled Watlington Flyer on 31 May, 19 July, 30 August and 27 Sept 2014 and enjoy a fish’n’chip supper whilst you test your general knowledge. Wildlife on the Move is always popular with an experienced guide and commentary on 5 April, 7 June, 26 July and 6 September 2014. Various fare offers are available from time to time, including Mum travels FREE on Mothering Sunday 30 March 2014, children carrying a Teddy Bear travel FREE on 4-5 May and 25-26 Aug 2014, Dad travels FREE on Father’s Day 15 June. You need to be accompanied by a full fare paying passenger, except on Senior Days 13 July & 5 October 2014 when all those 60+ travel HALF-PRICE. In fact, when you purchase any ticket to travel on the line you are not just buying travel back in time - your contribution helps to keep a little bit of our unique history alive and you help to preserve it for future generations to enjoy too. What if there is no need to change?

If you already have a busy and demanding life, New Year’s Resolutions can feel like more items for your ever growing ‘To do’ list. It’s all too easy to beat yourself up about things you feel that you should achieve, and that just piles on even more stress. But what if there is no need to change? How would that feel? Instead of saying:

‘I should be more successful / slimmer / a better parent’, how about saying:

‘I want to be happier with who I am?’ Mindfulness is about accepting what is, instead of thinking about how things should be. It is about recognizing your usual responses to stressful situations and finding other ways of dealing with them. It is the perfect way to find some peace and tranquility in our chaotic, busy lives.

yourself and others. By reducing your stress levels, it helps you to build confidence. As well as being life-enhancing, Mindfulness has been proven to help people to cope with a wide range of issues such as sleep problems, stress, depression, pain, eating issues and anxiety.

Through a set of simple yet powerful meditative practices, Mindfulness helps you to break the stress cycle and rediscover your zest for life.

Mindfulness Chilterns runs regular Mindfulness days, and eight-week Mindfulness courses, teaching all the techniques of Mindfulness Based Stress Reduction. So if your New Year’s resolution this year is to be happier with who you are, why not get in touch?

By helping you to develop your capacity to ‘live in the moment’, it helps you to relax and be more compassionate with

Recipe of the Month

Red Onion Soup With Melting Gruyere Croutons Serves 4 - Ready in 1½ hours After all the indulgence and expense of Christmas and the New Year, this hearty soup is the perfect antidote. Ideal for a warming winter lunch or supper it’s simple to make, tastes delicious and doesn’t cost a fortune. Ingredients:

• 225g/8oz gol2 tbsp olive oil • 15g butter • 650g small red onions, peeled and thinly sliced • 2 tsp brown sugar • 1 tbsp flour • 1 tbsp wholegrain mustard • 1.2litres beef or vegetable stock • Few sprigs fresh thyme, plus extra to garnish • Salt and freshly ground black pepper • 8 thin slices day old French bread • 75g Gruyere cheese, grated Method:

1. Heat the oil and butter in a large, deep heavy-based saucepan until the butter is sizzling. Add all the sliced onions and cook very gently over a low heat for 15 minutes, stirring frequently. 2. Sprinkle over the sugar and cover and cook for a further 38

15-20 minutes, stirring occasionally, until the onions are very soft and golden. 3. Stir in the flour and half the mustard and cook for 1 minute, then gradually stir in the stock. Add the thyme sprigs, season with salt and freshly ground black pepper (see Tip) and bring to the boil. 4. Reduce the heat and simmer gently for 35-40 minutes, stirring occasionally. Adjust the seasoning to taste. 5. Lightly toast the slices of French bread on one side. Spread the untoasted sides with the rest of the mustard and top with the grated Gruyere cheese. Pop under a hot grill for 1-2 minutes, or until the cheese is melted and bubbling. 6. Ladle the soup into warmed bowls and top each with two hot Gruyere croutons. Serve immediately garnished with thyme sprigs. TIP:

If you use stock made up from stock cubes taste the soup before adding any seasoning as some can be quite highly seasoned.

Planting Bulbs ‘In The Green’

With Christmas now behind us, we can start to look forward to Spring, and one of the first indications that the gardening season is nearly with us is the re-emergence of the Snowdrop. We sell the bulb in Autumn, but by far the best way to cultivate Snowdrops is to plant them ‘in the green’. The plants are in bunches, having been just lifted from the soil, and once planted in your garden will thrive, especially if you choose semi shady, moist position - such as under an established tree. We will have our Snowdrops ‘ in the green’ available from early February . There are many varieties of Snowdrop, the most popular being Galanthus Nivalis - the common Snowdrop, whilst Elwesii, the Greater variety, is, as the name suggests, altogether a bigger more showy example and can ultimately reach the height of 18” plus. Most gardeners are happy with these two varieties, however there are an increasing number of Galanthophiles, gardeners who are not content with the common Snowdrop, they will travel many miles to visit gardens that contain rare cultivars and are more than happy to pay big money for a bulb. For instance, one tiny bulb of the variety ‘Elizabeth Harrison’ was sold in February last year for £725! Yes, for just one bulb. The English Bluebell is also best planted ‘in the green’. The variety you should look for is Hyacinthoides non42

Scripta. Best planted in rich soil amongst semi shade, Bluebells, like Snowdrops, will, after a number of years, naturalise and reward you with swathes of bright Spring colour. Whilst Snowdrops only need to be planted around 3 inches deep,to get the best results Bluebells require to be placed 6 inches down . Another bulb treated in the same way at this time of year is the Winter Aconite. They will flourish in any position, and a real bonus is they adore our chalky, alkaline soil. The Winter Aconite will give you a burst of rich yellow flowers, a real delight on a dark wintry morning. One thing to bear in mind with them is, after flowering, they need to be left to their own devices, so leave their foliage to fade away and die down naturally. By doing this, you will ensure they will flower again fully next Spring. Happy Gardening - see you soon,

Simon, Alison, Edith the Jack Russell and all at Askett Nurseries.
