Editors’ Letter Welcome to the March/ April issue of Chiltern View Risborough area magazine. We do hope you like our front cover. We are absolutely delighted to be sponsoring this gorgeous hearing dog puppy, Romeo. He looks such a loveable and inquisitive little dog and has just started out on his training. Recipe of the Month

Ten Mile Menu is a local company and works with farmers and producers in the Chiltern Hills, delivering organic veg boxes and a wide selection of local rare and traditional breed meats.

Serves 6-8 depending on your appetite.

Spiced Wild Venison Lasagna with Celeriac & a Cauliflower Cheese Sauce One day while using up ingredients in the Ten Mile kitchen, we stumbled across what we’re quite certain is our favourite lasagna ever. It’s not as posh as it sounds, and we cut a few corners making it. The celeriac really livens up the tomato ragu, and using a cauliflower cheese puree in place of the classic béchamel brings something quite unique to the dish. We use venison burgers or sausages as the lean meat is already seasoned, and combined with pork fat to prevent it from drying out. It’s also quick and easy to handle, and initially, was what we had sitting in the freezer! What you’ll need: • 600g of venison sausages (or burgers); we’re using wild venison from Wild Game Direct, Gt Missenden. • Pasta sheets • x1 small Mozzarella • For the Ragu; • 50g diced chorizo (from The Merry Pig, Butlers Cross) • 6 cloves of garlic • 1 large onion • x1 celery stick, finely sliced • x1 medium celeriac, in small cubes • x2 medium carrots, also cubed • x1 400g tin chopped tomatoes • Glass of decent red wine • White wine vinegar (good splash) • 1/2 pint chicken stock • Salt & Pepper - be generous • 1 tsp ground cumin • 2 tsp smoked paprika • 1 tsp dried oregano • 1tsp ground fenugreek • 1 bay leaf • 2 thyme sprigs • For the cauliflower cheese sauce; • x1 medium cauliflower, leaves cut off (all our veg is organic and from Sandy Lane Farm, nr Thame) • x1 small onion, sliced • 200g strong cheddar, grated • 500ml whole milk • 2-3 tbsp breadcrumbs, or 4 tbsp plain flour • 1/2 tsp turmeric • Olive or Rapeseed oil for frying • Butter for frying 8

Method:

1. Make small meatballs from your burgers or sausages (remove skin first if using sausages), then season and brown-off quickly in a little oil over a high heat. Set aside. 2. Make the ragu. Brown the carrots and celeriac with the fenugreek, cumin and paprika in some butter over a medium heat for 8-10mins, then add the onions, garlic, chorizo, oregano and herbs. Throw in the white wine vinegar and then the stock, red wine and chopped toms. Reduce down to the desired consistency. 3. Make the cauliflower cheese. Break up the cauliflower and boil until just tender, heat some butter in a pan and fry the cauliflower with onion. Add the turmeric and season well. Add the flour or breadcrumbs, then the milk. Once warm add the cheese and then check the seasoning. When cooled a little, puree with a hand-held blender (or whatever you have). 4. Assemble your lasagna. Layer the roasting dish in this order; meatballs, ragu, pasta, then cauliflower cheese sauce. Repeat until you reach the top, probably x3 layers. Add a little ragu, tear the mozzarella over it and some grated cheddar if you wish. Roast at 180 degrees celsius for 35-40 mins until the top is browned and the sauce bubbling (finish under a grill if you need to). 5. Serve with a lively green salad and garlic bread if you have the appetite!

Neck pain… it’s a pain in the neck!

Neck pain is common in people of all ages and is often caused by how we use our necks. Working all day at a computer, driving long distances, poor posture while standing or sitting, stress and tiredness are all factors that can cause the muscles in the neck and upper back to become tight and the joints to become stiff which can contribute to ongoing neck pain. Sometimes a nerve in your neck can become irritated or “trapped” and cause pain in the arm going down into your shoulder or the hand, and may be accompanied

by pins and needles and numbness. Headaches can also be the result of tension, stiffness or joint restriction in the neck and upper back. Osteoarthritis or age-related wear and tear in the neck can also cause muscular pain from the neck into the shoulder as well as some stiffness in moving the neck. Osteopaths at TLC, after a thorough examination, use a wide range of techniques depending on your age, fitness and diagnosis, to reduce muscular tension in the neck and improve movement in the joints of the neck and upper

back. Gentle manipulation of the soft tissues or rhythmically “rocking” the joints releases tension. Treatment might also involve treating other areas in the back and shoulders as well as the neck and advice on your posture , exercises and stretching to help keep your neck and upper back muscles and joints relaxed. The Gardens at Waterperry are springing back into life with daffodils and fritillaries this March and April. Pruning in the Spring

Now that the worst of the cold Winter weather is behind us, we can take a look at what has to be done to tidy up our garden, and often the most obvious task to tackle is pruning. This is certainly the best time of year to get to grips with major pruning of most plants - a few hours with some sharp secateurs and a good pruning saw can transform your garden, ridding you of overgrown woody shrubs and obstructive trees, bringing light and space into your area . The one major point to remember is not to prune early flowering shrubs such as Forsythia, Viburnum Bodnantense and Daphnes now. If you do, you will take off the buds just about ready to flower, and you’ll lose any colour this year. These early Spring flowering plants should be dealt with after they have flowered. But for most shrubs and trees, now is the time to tidy them up. Many gardens have huge Buddleias and Lavateras , unpruned for many years, they are full of wood and ripe for a dramatic makeover. Be bold with these plants! Take all the old wood off, leaving just around 50cm of stem at the base. They will love it, 26

and after giving them a feed with some chicken pellets or fish, blood and bone and a mulch will reward you with lots of colour from the new fresh growth. Roses too are often overlooked, left to their own devices year after year, allowed to become tangled and woody. Again, be brave - take away all the dense heavy growth to encourage the plant to produce green shoots . Once you have decimated a big overgrown shrub, you may well feel a touch of panic! ‘Oh no, what have I done?’ - but be confident, and in just a matter

of a week or so you will notice the new growth appearing as your plant settles down and starts to reinvigorate . Once you have mastered your first pruning session, you must remember to carry on the new regime, managing your shrubs each year. You will soon appreciate the results. Meet Romeo: Romeo is a handsome brown Miniature Poodle with a fun and energetic character. He loves running around outside, exploring new environments and meeting other dogs. At eight weeks old Romeo went to stay with Joyce

and Harry, who have been volunteers for the Charity for many years. They’ve looked after 18 hearing dog puppies in training so they have plenty of experience! When Romeo arrived at his new home he was keen to explore the house and garden. Once he had looked around and settled in, Romeo met Joyce and Harry’s 13 year old pet dog Dipper. The two got on really well and after a few days Romeo started encouraging Dipper to play with him by chewing her ears and climbing on her. Romeo loves to follow Dipper around and she’s already showed him secret treasures in the garden – like the watering can where she enjoys an occasional drink. Romeo’s favourite toy is a woolly lamb, which he sleeps with and he carries around with him. He also enjoys playing with a ball and he is already really good at bringing it back.

Training Progress: Romeo has started attending puppy classes at our training centre in Yorkshire. His trainer Aime will work with him over the next few months, teaching him some of the skills and basic obedience that will be required as he progresses to advanced training. Romeo is already showing signs of being a fast learner, having started to pick-up some basic commands such as ‘sit’ and ‘down’ in his first class. He’ll be doing lots of classes over the next few months and getting valuable experience out and about with Joyce. Famous People of the Chilterns: WIllIaM MoRRIS

William Morris, the great industrialist and philanthropist, was in his day Britain’s richest self-made man, but lived relatively modestly in the Chilterns near Wallingford. Born in 1877, William Morris set up a business at the age of 16 with £4, repairing bicycles in his father’s garden shed in Oxford. In 1912 he produced the first of his well-known cars in his garage in Oxford’s Longwall Street, going on to expand the business into its huge factory in Cowley. It was here that he mass-produced the Morris Minor and the other affordable models that made Morris Motors the most successful car manufacturer in Europe. In 1933 William Morris bought a country house called Nuffield Place, in the little village of Nuffield above Wallingford, and it remained his home until his death in 1963. In 1938 he became Viscount Nuffield, thus putting the name of this little Chiltern village firmly on the map. Despite being super-wealthy, William Morris and his wife were a modest, down-to-earth couple. Their home was very comfortable but not ostentatious and though they had servants, Lady Nuffield sewed the uniforms for them herself. Lord Nuffield repaired his own shoes in a bedroom cupboard fitted out as a miniature workshop to while away sleepless nights. The house and its contents remain as they left them, a complete and compelling survival of a 1930s upper-middle class home. As well as the original furniture and décor there are photographs, books, letters, official robes and many other personal possessions. The garage still houses the motoring magnate’s 38

small Wolseley car that he drove until his death. You can see for yourself as the National Trust now owns the house and opens it to the public.

William Morris

William Morris is buried in a characteristically simple grave beside Nuffield Church – you can see it from the Ridgeway National Trail, which runs past the churchyard. Island Farm Donkey Sanctuary Oxfordshire (England)

Island Farm at Brightwell-cum-Sotwell was purchased in 1981 from the Hoare family of Wallingford who were coal merchants and pig producers. Following the first rescued donkey in 1993, word of mouth meant numbers steadily increased causing a growing financial pressure and it quickly became clear something had to be done. In May 1997 the Sanctuary became affiliated to a charity enabling the rescue work to continue. In July 2000 the

Sanctuary was registered with the Charity Commission and from then became known as Island Farm Donkey Sanctuary. Currently the Sanctuary looks after over 120 donkeys while an almost equal number have been found new approved homes. Their ages range from new born to 30+ years and as a donkey can live to 45-50 years it is important that they now spend their days in comfortable and friendly surroundings. Nearly all of the donkeys and many of the other animals at the Sanctuary have been rescued

and it is only through the fund raising that this can continue. The donkey adoption scheme is one way of helping and makes an unusual gift for a relative or friend. There are many events held at the Sanctuary ranging from a simple car boot sale to bazaars, pony & donkey shows and a two day country show & miniature steam rally. www.donkeyrescue.co.uk

Mother’s Day Around The World By alison Runham www.alison.runham.co.uk Mothers deserve attention all year round, so why do we celebrate mothers on one special day - and do other countries follow suit?

the UK Traditionally, on ‘Mothering Sunday’ (the fourth Sunday in Lent) people returned to their baptismal ‘mother church’. As their parents’ home was often nearby, over time the day became a holiday for visiting family. Flowers were gathered on the way home and mums received Simnel cakes. Observance of Mothering Sunday gradually withered but after its revival in 1920 it spread throughout the Empire, becoming known as Mother’s Day.

around the World Most countries have a Mother’s Day, but origins and traditions vary. Unless stated otherwise, countries below follow U.S. tradition, celebrating on the second Sunday in May. In France, American soldiers introduced their Mother’s Day during the First World War. Originally focussed on fertile mothers, today Fête des Mères celebrates all mothers, who traditionally receive a cake shaped like a bouquet of flowers. France celebrates on the last Sunday in May, as does Sweden, where the Red Cross sells plastic flowers in aid of deprived mothers. In Italy mums receive a heart-shaped cake, but on the second Sunday before Christmas children in Yugoslavia tie their mother up until she gives them treats. Egypt’s Mother’s Day on 21st March is celebrated with songs devoted to mothers. In Nepal, children return to the family home on “Aama ko Mukh Herne Din” (“to see Mother’s face”) on the last day of Baishak dark fortnight, making breakfast for their mothers and giving them gifts, favourite foods and new clothes. Those who have lost mothers visit Mata Tirtha, a sacred site with a pool in which they ‘look upon their mother’s face’. The USA didn’t keep English Mother’s Day, but Anna Jarvis campaigned for one 46

in honour of her mother, who introduced “Mothers’ Friendship Day” after the Civil War. At a church service on the second anniversary of her mother’s death (the second Sunday of May), Anna distributed her mother’s favourite flowers: white carnations. Today they signify mothers who have passed away, while coloured carnations honour mothers still living. In Australia, Mother’s Day grew from Janet Heyden’s campaign to give gifts to lonely inmates of Newington State Home for Women. Schoolchildren in Japan draw pictures of their mothers for a nationwide competition and winning pictures travel the country in a mobile exhibition. Mexico’s Mother’s Day on 10th May was once a pawn in battles between government and church on modernisation and materialism. It now celebrates both mothers and the Virgin Mary. Children often arrive at their mother’s house the night before. Traditionally the day starts with mass before mothers are presented with a breakfast of tamales and atole, but many mothers are now treated to breakfast at home, accompanied by a song. In Paraguay, Mother’s Day is celebrated with Dia de la Patria (Independence Day) on 15th May, to honour Juana María de Lara’s role in winning Paraguay’s independence. Similarly, Bolivia’s Dia de la Madre Boliviana on 27th May commemorates the women killed fighting for independence in the Battle of Coronilla. In Ethiopia, their ‘Antrosht’ celebration lasts three days, beginning after the rains have ceased (usually October/November). Traditionally, mothers cook a special meal but daughters provide dairy products, vegetables and spices while sons bring the meat. Afterwards they enjoy traditional songs and dances. So why not celebrate Mexican-style this year and sing your Mum a song?

Easter time brings lots of lovely food into our homes, but some of these can be dangerous to our pets. Two of the most common poisons are chocolate and raisins (e.g. in hot cross buns). Chocolate contains toxins called theobromine and caffeine, which are poisonous to all dogs and cats. Dark chocolate, including baking cocoa, is the most poisonous, and white chocolate the least. Raisins have an idiosyncratic effect, meaning that whilst one

animal may have no adverse effects, another may die as the result of eating just a couple of raisins. It is impossible to tell how an animal will react until it has eaten them. Signs of poisoning include changes to eating, drinking, urination, heart rate and breathing, lethargy, vomiting, diarrhoea, restlessness, shaking, wobbling and unsteadiness, seizures, coma and death. If you think your pet may have been exposed to a poison, call us as soon as possible. Treatment is most effective

Record year for Princes Risborough’s Thursday Market

2014 was a great year for local charities and the town due to the success of the Thursday market. The market’s principle aim is to increase the town footfall by offering a range of unique quality products at competitive prices, with any surplus from stall/pitch rents going to local charities/ good causes and promoting

the Town. 2014 saw a record number of stallholders allowing the Market Group to make more contributions than ever. The Princes Centre, being the prime charity supported by the Market Group, received two donations, one of £2,000 and another £1200 for the purchase of a new carpet, with a further £750 going towards the purchase of new Christmas lights in Duke Street. Further donations included a contribution towards pre Christmas one hour free parking, and supporting the local Rotary Club provision of a Christmas party for “young carers”. The market has grown over the last year and plans are in

Stagecoach Charity Extravaganza! Sunday 22 March 6pm, The Waterside Theatre, Aylesbury Students from Stagecoach Aylesbury and Stagecoach Thame are looking forward to performing in their fantastic charity show at The Waterside Theatre in Aylesbury. A total of 250 local students will present an evening of song, dance and drama all in aid of local charity the Florence Nightingale Hospice. The students range in age from 5-18 years and many will be making their debut on a professional stage. Rehearsals are well underway and the show will include a

specially written piece featuring hits from the 1980s, along with selections from well-loved musicals. It promises to be a night to remember! Our chosen Charity, Florence Nightingale Hospice provides valuable support and both inpatient and at-home services for local families affected by life-limiting illness across Aylesbury Vale. The charity needs to raise ÂŁ600,000 a year to continue providing that much needed care, and Stagecoach is very proud to be able to dedicate all profits from the show to this worthy cause.

Anyone can use our bus, young and old, and a recent passenger survey gave us a 100% satisfaction rating. Our trained volunteer drivers are well thought of: “these drivers are the most helpful I have been served by for 44 years” said a passenger recently.

Over 20,000 passengers a year now use our “little green bus” that runs daily scheduled “Hail & Ride” services around Princes Risborough and to outlying villages. Drop-off for passengers is in the High Street. Most journeys cost only £1.50 or 50p for children and most concessionary passes are accepted.
