Recipe of the Month Great for Bonfire Night!
Spiced Winter Vegetable Soup Serves 4, Ready in 1 hour 15 minutes A hearty and warming soup made with seasonal winter root vegetables. Serve with thick slices of warm crusty bread for a filling lunch or supper. Ingredients: • 2 tbsp olive oil • 1 onion, peeled and finely chopped • 1 clove garlic, peeled and crushed • 2 tsp medium curry paste • 300g carrots, peeled and diced • 250g swede, peeled and diced • 2 large parsnips, peeled and diced • 1.4 litre vegetable stock • Crème fraîche or natural yoghurt, parsnip crisps (see tip) and crushed coriander seeds, to garnish tip: To make the parsnip crisps, use a potato peeler to shave long thin strips from one large peeled parsnip. Half fill a large deep frying pan with vegetable oil and heat until a cube of bread dropped in the hot oil browns in 30 seconds. Fry the strips of parsnip in the hot oil for 1-2 minutes until crisp and golden. Remove with a slotted spoon and drain well on kitchen paper. 8
Method: 1. Heat the oil in a large deep pan over a medium heat. Add the onion and garlic and fry for 6-7 minutes until softened. Stir in the curry paste and cook for 1 minute then add the diced vegetables and cover and cook gently for 5 minutes. 2. Pour in 900ml of the chicken stock and season with salt and freshly ground black pepper. Bring to the boil then reduce the heat and simmer, uncovered, for 30 minutes, or until the vegetables are tender. Cool for 10 minutes. 3. Puree the soup in a blender or food processor (in batches if necessary) and return to the pan. Stir in another 300ml of the remaining stock and heat through gently. If you prefer a soup with a thinner consistency add the rest of the stock. 4. Adjust the seasoning to taste and serve in warmed bowls garnished with a spoonful of crème fraîche or natural yoghurt, parsnip crisps and crushed coriander seeds.

Plants for Winter interest
As the clocks go back and the nights draw in, it seems as if the gardening season is coming to an end. But that is not the case! There are many plants that can be planted now for Winter interest. It is quite possible to achieve colour and fragrance in your garden for all 12 months of the year. One of the favourite shrubs for this time of year is the Mahonia family. The variety ‘Charity’ is a tall shrub with holly like evergreen leaves that produces fragrant yellow flowers from November to February. A new variety is ‘Soft Caress’ - this plant carries lighter leaves and again will reward you with winter fragrance. A number of the Viburnum family, particularly ‘Tinus’ are also a good bet. ‘Variegatum’ has green leaves dappled with cream, ‘Eve Price’ and ‘Gwenlliam’ are both excellent choices producing flowers in Winter followed by dark blue/ black berries. ‘Bodnatense Dawn’ is a really lovely shrub. Pink fragrant flowers are produced on bare stem in late Winter. In my opinion, a must for any garden. The Skimmia family are also a great selection. ‘Kew Green’ and ‘Rubella’ are good reliable choices. 16
Pyracantha, also know as Firethorn is a tough, evergreen shrub that produces spiky thorns on its stems. It is a good choice for the security conscious, as a tight hedge of Pyracantha is almost impenetrable. The plant will give you berries in the Winter months - red, orange or yellow - and they are a real draw for birds. The Cornus family, also known as Dogwood, are primarily grown for their bright, vivid stems that can light up a garden during dark damp days. They flower from Spring to Autumn, but it is during the Winter months when they really come into their own. ‘Midwinter Fire’ is a real winner with yellow/orange stem colour, ‘Sibirica’ has very bright red stems whilst ‘Variegata’ carries pretty green/white leaves. No garden can be without a Holly or two for Winter interest. ‘Alaska’ is a smaller example that produces the trademark berries at an early age. ‘Handsworth Silver’ is another fine choice with broad cream edged leaves. There are also a number of trees that produce the goods in Winter. The ‘Betula’ family are a great choice for all year round interest. Any of the ‘Jacquemontii’ varieties are superb. ‘Silver Shadow’ has striking white bark with dazzling white stems, ‘Snow Queen’ is another favourite. We will carry a good selection of many plants, shrubs and trees for Winter interest - and if there is something specific that your are looking for, we will do our utmost to track it down for you. Happy gardening, see you soon,
Simon, Alison, Edith the Jack Russell and all at Askett Nurseries.

Christmas 2015 Cartoon by: Henck and the CBT Partnership in Hertfordshire.
the gift of peace (and quiet) I remember as a child being appalled by my mother who, when she had to go into hospital, said that she was looking forward to the rest and a ‘bit of peace and quiet’. Raising three children, cooking from scratch every evening (on the table by the time ‘Nationwide’ was on) with no dishwasher and, as I guiltily recall, no help from everyone, was a relentless task. Now, as a mother myself I completely understand the desire for everything to just stop, or at least slow down. The images of the ‘perfect’ Christmas in magazines and on cards are full of images of peace, tranquillity and stillness; all glowing candles, crisp snow on country lanes, a lone robin perched on a fence. The desire for peace and stillness extends well beyond the festive period and isn’t just about clearing our diaries of the never-ending list of things that need to be done. Our minds get overloaded and busy with re-living events in the past or projecting into the future, impacting on our ability to get restful sleep, our relationships with others and our ability to enjoy whatever is happening in the present. A course in mindfulness helps us to recognise when we slip into ruminating or anxious thinking and to gain the control to focus attention where we chose it to be. It can be a pathway to recognising familiar patterns of thinking which don’t serve us well and the opportunity to change them. Penny completed the 8 week course a couple of years ago and still practices mindfulness regularly. She came to the course after a period of about six years of quite substantial stress, including the illness and death of her mother, moving house, and her children changing schools. Out of the blue she would feel frightened and panicky for no specific reason. She found mindfulness helped her to manage her anxiety, and describes 22
her newfound ability to manage her thoughts and therefore her feelings as “life changing”. Maia also found mindfulness transformative, finding that she learned how to control her stress levels without really realising the impact until she noticed that she had stopped feeling the compulsion to repeatedly check if doors and windows were locked before going to bed or out of the house. Debbie found that she rediscovered and appreciated the value of stillness and of being instead of doing – after 60 years of rushing endlessly forward and not really noticing what was happening around her. Like all worthwhile things, mindfulness isn’t easy; it needs practice and patience and a willingness to be open to the possibility of recognising how we slip into autopilot how we slip into autopilot in our thinking and behaviour. But it can also be an opportunity to give yourself the most precious gift of all; a year round way of finding your own ‘silent night’, where ‘all is calm’ and at the end of a busy day you can ‘sleep in heavenly peace’. Wishing you peace and calm this winter, Jane For more details: www.mindfulnesschilterns.co.uk or email Jane Barker: mindfulminds@yahoo.co.uk

Living in a Stress Free Zone is healthier and makes you happier… General Adaptation Syndrome is a term used to describe the body’s short and long-term stress. Initially the body releases adrenaline to combat the stress and to stay in control. This is our fight or flight response. The muscles tense, the heart beats faster, breathing and perspiration increase, the stomach may clench. These responses help to protect you in case something bad happens. Once the cause of the stress is removed the body will go back to normal. For long term protection from stress, the body secretes further hormones that increase
blood sugar levels to sustain energy. A prolonged period of time without rest and relaxation to counterbalance the stress response can lead to fatigue, irritability and lapses in concentration as the effort to sustain arousal slides. Finally the body becomes exhausted. It runs out of its reserves of energy and immunity. The hypothalamus-pituitaryadrenal chain of command has served humans well as a means of survival for thousands of years. However, perpetually high stress leads the hypothalamus to continue signalling to the adrenals to produce cortisol which exhausts the stress mechanism and
leads to fatigue and depression. High cortisol levels then have a negative impact on the immune system making the body more susceptible to disease and illness. At The Luxton Clinic we see many patients for neck, shoulder and upper back pain, a significant number for whom stress is a major contributing factor. Osteopathy can help with the physical manifestations of stress, thus enabling us to cope better with our lives.

Risboro’ Garage commits to delivering 20 defibrillators to local villages
Risboro’ Garage, Princes Risborough, has announced that it is partnering with the Rural Community Defibrillator Group (RCDG), to raise enough funds to introduce a total of 20 Public Access Defibrillators (PAD) into local villages, in a move which will greatly improve response times in emergency, lifethreatening situations. The garage has already raised the funds and installed two defibrillators at Haddenham Library and Princes Risborough Fire Station (at a cost of £3,000), as well as donating
a brand new Honda CRV 4x4 emergency vehicle to the Princes Risborough Community First Responders (CFR) team. Now the company directors have revealed that the business will donate £5.00 to the fund for every MOT which is booked with the garage and a further £1.00 will be donated for every ‘like’ received on the company’s Facebook page (www.facebook. com/RisboroGarage). Public Access Defibrillators cost £1,500 per unit and play a vital role in supporting rural and vulnerable communities by enabling the Community First Responder (CFR), a person trained as a minimum in basic life support and the use of a defibrillator, to employ life-saving measures the second they arrive on the scene, which is often ahead of the ambulance or fire service. RCDG Chairman, Mark Tubb, commented: “As more and more rural fire stations become manned by teams of volunteers,
the role of the Community First Responder is increasingly important. Having access to this life saving equipment means that they can act immediately, saving those vital few minutes which can make a real difference. We are delighted to welcome Risboro’ garage as a partner in our efforts to raise enough funds to enable us to continue this vital work.” Sean Graham, director at Risboro’ Garage, explained: “We have seen first hand the difference which these defibrillators can make in an emergency situation and we are committed to doing all we can to support the dedicated teams who volunteer their time to help those in need. PADs can save vital minutes which for some can mean the difference between life and death. We are delighted to be involved in this worthwhile endeavour.” Fund raising activity by all those involved to-date brings the number of PADs installed to seven, others are available at Bledlow Village Hall, Princes Risborough Golf Club, Bradenham Village, Lacey Green and Speen. CHRISTMAS MARKET FUN the many wonderful places to visit and enjoy all the local traditions of Christmas.
As we fast approach the Christmas season thoughts turn to festivities and presentbuying. What better way to get into the holiday season than visiting one of the many Christmas Markets to be found across Europe. Take a short break to many European cities – Vienna, Salzburg, Bruges, Prague, Lille, Cologne, Brussels, Berlin, Stockholm, Copenhagen, Budapest, Munich, Berlin and Tallin – just a sample of
traditional fayre between 15 November and 4 January. Another favourite is Budapest – their Christmas market takes place in the main shopping street Vaci Utca and Heroes Square and features traditional Hungarian dancing and folk music, carol singing and stalls selling local specialities including hot sausages and warm gluhwein. (open 27 November to 31 December)
At all of these wonderful places you can enjoy the huge expanse of Christmas stalls in market squares selling their wares – whether that be local dining specialities like stollen cake with hot gluhwein, bratwirst, waffles and wine or the fantastic array of local hand-made gifts from local craftsmen.
Many of the Christmas markets are available to visit for a short 2/3 day break – and there are a few that you can take in on a one day visit with flights and transfers included.
In Vienna, the market is open from 15 November until 23 December – famous for it’s amazing Christmas trees elaborately decorated with Christmas lights and trinkets to it’s festive music concerts at Schonbrunn Palace. Munich is a beautiful city which comes to life in the lead up to Christmas with it’s wonderful Christmas market in the Marienplatz from 27 November until 24 December.
If you would like to know more about holidays to any of the Christmas markets why not call our travel experts at Spear Travels – always ready to help.

Remembrance Day By debbie singh-Bhatti Following the end of the First World War, my grandfather travelled to France and spent several months burying the dead. This experience affected him forever. The Great War started in 1914, and after four years of bitter fighting the guns of Europe finally fell silent at 11am on 11th November 1918 – six hours after the armistice was signed in a railway carriage in the Forest of Compiegne, France. The following year, King George V sent out a proclamation requesting that a 2 minute silence be held, so “the thoughts of everyone may be concentrated on reverent remembrance of the glorious dead”. Since that first Armistice Day in 1919, a two minute silence has been observed yearly at war
memorials and other public places at 11am on the eleventh day of the eleventh month, and on the second Sunday of November. After the end of the Second World War, Armistice Day became known as Remembrance Day, to include those who had fallen in WWII and other conflicts. Twelve thousand British servicemen and women have been killed or injured since 1945. In the words of the poet Robert Binyon: “They shall not grow old, as we that are left grow old: Age shall not weary them, nor the years condemn. At the going down of the sun and in the morning We will remember them.”

New Christmas Lights for Princes Risborough With Christmas fast approaching, it’s time to dust of those old Christmas albums, stock up on plenty of mince pies and start looking forward to this year’s Princes Risborough Christmas Lights event. This year the Princes Risborough Festival Committee, Market Group, Princes Risborough Town Council and Wycombe District Council have been working together to obtain new lights and infrastructure for this year’s switch-on. It will make Christmas 2015 in Risborough bigger and better than ever! This year will see new lights in the Market Square, High 46
Street and Bell Street. Festival Chairman Richard Stevenson said, “the old lights needed to be replaced, and on behalf of the town I would like to thank everyone who contributed”. To accompany the new lights we have a host of music and fun in the Market Square, starting at 5.00pm on Friday 4th December. We have performances from St Mary’s Church and local school choirs, Allstars Academy, an array of stalls, hot food and more. To top this Father Christmas will be stopping by to wish you a very Merry Christmas and of course a special guest to a switch on the new lights.

Vets Corner
Although many of us enjoy watching fireworks, for our four-legged companions they can be a very different experience. Many pets can become very panicked and stressed by the unexpected loud noises and flashing lights, especially now that the firework season goes on for several weeks, with private fireworks as well as larger, organised public displays. For some, keeping the curtains drawn and providing background noise may be all that is needed; others

can benefit from use of pheromone-based products which can increase feelings of calmness and security. Desensitising cds are available which can be used to very gradually acclimatise pets to increasingly loud noises, but take care not to force a scared animal to listen to loud sounds, this will not help them! Behavioural therapy is always a good idea for animals that are struggling to cope with certain situations. For animals where behavioural therapy and environmental changes are not sufficient,
calming medications may be appropriate, but these should be carefully discussed with your vet as there can be side effects. If concerned about your animals, please call Sprinz and Nash. Vets are available 24 hours a day, 365 days a year. Dr Aurelia Verdin BVetMed MRCVS

Famous People of the Chilterns: AGATHA CHRISTIE
Agatha Christie, the world-famous author of 66 detective novels and the world’s longest-running play (The Mousetrap), lived for over 40 years in Wallingford. She grew up in Devon and married her first husband, Archibald Christie, in 1914. Agatha worked as a hospital nurse during the First World War and later in a hospital pharmacy, where she learnt much about poisons. After the war she began writing and publishing novels and raising her only child, a daughter called Rosalind. Her first marriage ended in 1928 and her interest in history led her to meet her second husband, the distinguished archaeologist Sir Max Mallowan. The Queen of Crime and her new husband settled into Winterbrook House in Cholsey near Wallingford in 1934, attracted by the dignified beauty of this Oxfordshire Thames-side town. Their home here provided them with great contentment in a busy and eventful life. It was their main residence for the rest of their lives and Agatha did most of her writing in it. It is here that many of her elaborate plots involving Hercules Poirot, Jane Marple, Tommy and Tuppence Beresford and others came into being. She often accompanied her distinguished husband on Middle Eastern excavations which provided material for some of the 80 books and plays which made her the best selling author of all time. Though she generally kept a low profile in Wallingford, she became president of the amateur dramatic group, the Sinodun Players. Wallingford itself has become a magnet Agatha for fans who come Christie from far and wide to 1925 visit the picture postcard Chiltern towns and villages that are a hallmark of the series. Dame Agatha Christie died at Winterbrook House in January 1976. She is buried in an impressive grave in the churchyard of St Mary’s, at nearby Cholsey, under her married name of Mallowan. In 2010 a Blue Plaque was unveiled on Winterbrook House, still a private home. The exterior of Winterbrook House, and Agatha Christie’s grave, can both be seen on a walk from Wallingford following the Dame Agatha Christie Trail – you can download the leaflet at www.wallingford.co.uk. Risborough Good Neighbours Risborough Good Neighbours is a volunteer scheme run to help people get to medical appointments. For the people of Risborough and local villages it is a lifeline. It enables people without transport to keep all kinds of medical appointments. Unfortunately, because of a lack of volunteers, this scheme is in danger of having to cease operating. We desperately need telephone coordinators, who arrange the trips, and drivers who undertake to take people and return them home afterwards. Telephone calls can be charged for and drivers get the maximum rate allowed of 45p per mile. Nobody is tied to any particular time, each trip is arranged individually. please help this worthwhile scheme to continue. The vital number is 01844 342600, available from 9am - 4.30pm. If you feel willing to offer or wish to enquire about the service please phone Val Young 01844 345503. The Festival has run for 20 years, initially organised by the Town Council. In 1997 the Festival was taken over by a Festival Committee who have managed the event ever since. Outgoing Festival Chairman, Richard Stevenson said “the committee have done a fantastic job over the years to organise the Town Festival. The committee comprises of local volunteers, the majority of which have full time jobs. For a variety of reasons many of the committee are unable to continue. I am very pleased however to hand over to the Town Council to ensure Festival 2016 takes place”. Town Mayor, Cllr Alan Turner said “we wish to thank all those that have been involved in promoting our wonderful Town and managing the Annual Festival events. Their dedication and commitment has been nothing more than admirable”. Princes Risborough Town Council now looks forward to continuing this significant Town event and further information will be published in the next issue of Crosstalk.
