Editors’ Letter Welcome to the festive November/ December issue of Chiltern View Risborough magazine. It’s never easy writing this editorial at the beginning of October, especially this year because it’s only just started to feel like autumn, due to very warm and sunny September days. However, this is our November/December issue and there’s lots to look forward to such as frosty mornings, leaves turning gorgeous reds and oranges, Bonfire Night and Christmas. We are all hoping for cosy fires, steaming hot chocolate, woolly scarves, hats and gloves to keep out the cold. Time
to spend snuggled up indoors and reading a good book or perhaps our magazine? A couple of dates for your diary; The Xmas Lights Switch on is on Friday December 2nd (see page 22) and the Tree of Light dedication ceremony on Sunday 27th November (see page 46). Each season brings its own magic but we do like the comforting side that winter brings. Right, time for some nice hot soup for lunch and on with the next issue. We always have to be a bit ahead of ourselves here at Chiltern View headquarters. Wishing everyone a very merry Christmas and a healthy and happy New Year.

Dealing with life’s second arrows
Of all the things I teach on any mindfulness course, the parable of the two arrows seems to resonate most strongly with people. If you were hit by an arrow, there is considerable localised pain which if properly treated will, in time, go away. The second arrow is longer lasting and represents the emotional response to the first arrow. The endless questioning: Why me? What if I’m injured and can’t work? I’ll not be able to pay the mortgage. What if I get an infection? If only I hadn’t been there… What if? What if? The irony is, while we’ve all suffered ‘first arrows’ in life (difficulties, heartache, obstructions), the pain of the second arrow lasts much longer than the first arrow and we fire it at ourselves. It’s how we react to events in life that perpetuates our suffering. The good news is, of course, that we can choose how we create the story around what is happening in our lives. For example, my growing children want to spend less time with me. Do I tell myself that I’m an awful mother who they don’t like, or a successful mother who has raised confident children ready to be independent adults? This ‘multiple choice’ is presented constantly to us. For example, the friend who walks past without acknowledging us: have we upset them (cue anxiety), are they worried about something (cue concern) or are they not wearing their glasses (bless!) Having the reflective space to explore how we perceive things and how we can create a different story is the stuff of psychotherapy or counselling. By talking through life events and our reactions, we become aware of our values, judgements, beliefs and their impact on others and ourselves. Often we realise that while we extend kindness and understanding towards others, but not ourselves. All too often we judge ourselves harshly. Of course, there are those first arrows which can’t be perceived in a different way, that are just 6
cruel and painful. Having somebody independent to talk to can be helpful at these difficult times. Learning Mindfulness helps us examine how we respond to life, perhaps noticing where we carry a stress reaction in our body, for example. It invites attention to the here and now, not mulling over yesterday or projecting about tomorrow. Quite often, ‘now’ is actually alright, it’s manageable, and even, maybe, just perhaps, it can be quite lovely.

Mince Pies It’s hard to beat homemade Mince Pies in the run up to Christmas and here at What’s Cooking there is a feeling of excitement and anticipation at the number of these little beauties we have to make each year. As always the devil is in the detail and the first place to start is some excellent homemade sweet pastry. Of course, homemade mincemeat is just as important but the recipe for this is a closely guarded secret. If you want your mince pies to be as good as ours, why not come into What’s Cooking and buy a jar!
Makes 12 Ingredients:
1 x large Jar of mincemeat (about 900gr) 330gr plain flour 100gr icing sugar Grated zest of half a lemon ¼ teaspoon salt 180gr cold unsalted butter 1 free range egg yolk 3 tablespoons cold water Beaten egg to glaze
Method: To make the pastry, put the flour, icing sugar, lemon zest and salt in a bowl and add the butter. Rub it in with your fingers or, more easily use a mixer with the beater attachment. Mix until you get a coarse breadcrumb consistency. Add the egg yolk and water and mix just until the dough comes together. Remove the dough from the bowl and knead for a few 8
seconds, shaping into a flattish disc. Wrap in clingfilm and chill.

Christmas and the festive season is just around the corner and what better way to get into the festive mood than a trip to a Christmas Market or visiting Santa in Lapland. Ouch! What to do when you sustain an injury.

What can you do? Sprains & strains to muscles & joints happen to all of us. Prompt action can help your body to heal faster & may prevent further injury or prolonged pain. Strained or ‘pulled’ muscles often happen when we over exert muscles, train without properly warming up, or try to go beyond a joint’s natural flexibility. Sometimes we feel the pain straight away, however some injuries might not cause pain until later on.
Remember RICE (relative rest, ice, compression & elevation). Relative rest: The first thing to do if you feel pain is to reduce the offending activity. It can be normal to feel a little sore after exercise for a day or two, but if it is more than this, pushing through the pain is rarely beneficial. However, movement stimulates the healing process so stay as mobile as you comfortably can. This is relevant for back pain as gentle exercise, such as walking, can help. Ice: Cooling the area using an ice pack can help reduce swelling & pain. Compression: Gently applying a compression dressing may
help to temporarily support the injured joint & reduce swelling. Elevation: If the injury is in the lower limb (knee or ankle), elevating the area assists draining fluids that might accumulate around the area, causing swelling. If the pain or swelling fails to improve within a week, considering treatment may be beneficial to; assess the injury, provide some manual therapy, taping, dry needling & rehabilitation exercises, to help you get better faster. Fruit Trees There’s always a space for a fruit tree in every garden, even the smallest of plots. The key to planting if space is limited is to make sure you get your tree on the right rootstock. Fruit trees are grown on a range of rootstocks in order to control the rate of growth. Apples, for instance vary from M27 (very dwarf - around 2 metres high) right through M9, M26, M116, MM111 up to the biggest, M25 which will grow to in excess of 5 metres. So obviously, if you own a pocket-handkerchief garden, make sure you go for M27. Likewise, Pears, Plums, Cherries etc. are all grown on a variety of rootstocks. Do make sure you do a little research before purchasing. If in doubt, pop in and one of us will gladly talk you through the options. If you are blessed with a bigger plot and already have sufficient apples, why not take a look at some other interesting fruit trees. Hazel and Cobnuts, Mirabelles and Mulberries, Quinces and Medlars - these are all superb options, and will give you a varied and nutritious harvest of fruits and nuts. There is some management involved to keep your fruit trees in tip top condition. As in dealing with all pests and diseases prevention is far better than cure. Spraying with a fungicide as soon as the trees come into leaf prior to blossom time will stop any mildew and scab from taking hold. These fungal diseases only affect apples and pears, and are not very serious diseases, but to keep your fruit looking and tasting tip top they are best addressed. Traditionally, pruning of fruit trees is a job for the winter - not always the case in fact, as summer pruning does have its benefits. Winter pruning is best to re-shape a tree and generally ridding it of old or dead branches etc. 24
One major point about pruning is that it is far better to prune a little and often rather than taking drastic action every decade or so. A continual renewal of young replacement branches is possible and better for regular fruiting potential each year. Air and light are important, the former to reduce disease and the latter to ripen the fruit for the best flavour and keeping quality. As a rule, Apple & Pear can be pruned anytime and hard, Cherries, Damsons, Gages and Plums - summer only and lightly, Medlars & Quines, anytime and lightly. Lungworm (Angiostrongylus vasorum) is a type of parasitic worm that can infect dogs. The worms are carried by slugs and snails which are eaten (on purpose or by accident) by a dog. The worm then travels through the gut wall into the bloodstream and lives in the heart and the major blood vessels supplying the lungs. Lungworm infection can display a wide variety of non-specific symptoms, including weight loss; breathing difficulties; coughing (sometimes bringing
up blood); lethargy; clotting disorders/persistent bleeding; general illness; poor appetite; vomiting and diarrhoea; and if left untreated can be fatal. As signs are non-specific diagnosis can be challenging but often will include diagnostic imaging of the chest along with faecal and/or blood samples. Although this area is generally considered to have a low risk for lungworm infection, cases do occur. Treatment of clinical disease is normally possible but prevention is better than cure. Lungworm infection can be treated with either a spot-on treatment or a tablet, administered every

Princes Risborough Tree of Light The Tree of Light provides an opportunity to honour, remember or celebrate the life of someone special by dedicating a light on the Tree. The Tree of Light will again be in the gardens at the corner of New Road and Duke Street (next to the Tesco roundabout) and the Dedication Ceremony will this year take place at 4.00 p.m. on Sunday 27th November. The names of those being remembered will be recorded on display boards close to the Tree of Light and published in the Bucks Free Press. The dedication boards will be updated weekly. Dedications can continue to be made and the lights on the Tree will remain lit until the end of the year. All funds raised will be shared between Rennie Grove Hospice Care and Rotary charities. Over £5,000 was donated in 2015, and more than £32,000 over the last 7 years. Walks in the Chilterns:
Box Wood Walks near Princes Risborough View of Ellesborough Church from Chilterns
Walk lengths: circular routes of 3, 3.5 and 6 miles Starting point: Great Kimble or Pulpit Hill near Monks Risborough Discover one of the Chilterns’ best natural gems on these circular walks: swathes of wild box trees and bushes in the country’s largest native box woodland. There are also great views, an ancient hillfort, medieval churches, beechwoods and plenty more to enjoy. There is a choice of walk lengths, depending on how far you want to go and how much time you have. The routes follow waymarked footpaths and bridleways and there are a couple of pubs en route. The box woods on these walks are evidence of how important box trees were in the Chilterns a few centuries ago. Box wood is very dense, because the trees grow so slowly, and in the past it was used widely to make practical items like combs, printing blocks, rulers and lace-making bobbins. Many early woodwind instruments were made out of box. The chalky soils of the Chilterns are ideal for box and people made a living by growing trees and selling the timber. The twisting old trees you can see today, often 6-10m tall, are left over from all this activity.
Much more ancient history is visible at the top of Pulpit Hill where large mounds and ditches are the remains of a 2,500 year old Iron Age hillfort. Away from the woods you can stroll across open grassy hillsides, covered in wildflowers in summer, and take in the far-reaching views across the Vale of Aylesbury.

On these walks you can visit the villages of Ellesborough and Little Kimble, both with attractive parish churches, and follow a section of the Ridgeway National Trail. You’ll need stout footwear as some of the paths can be muddy. There are some steep ascents and descents and several stiles. The Box Wood Walks are part of the Chilterns Country series of walking routes produced by the Chilterns Conservation Board. You can download a free leaflet for it which has a route map and detailed route directions, plus lots of other useful information. Consider bone-conduction hearing devices to minimise direct exposure and to enjoy keeping the ears clear and open and much safer when walking around as you can still hear traffic etc.

It is hoped that County will give our library a “facelift” with new decor and fittings in the not too distant future. In the meantime, the Friends Group would like to enlist the help of the village once more in raising funds for new books and materials for the children’s section.
