Editors’ Letter Welcome to the July/August issue of Princes Risborough View magazine. We are proud to be supporting the Princes Risborough Town Festival again this year and we have produced the separate, full colour programme that you will have received with this magazine. Once again this year the committee have worked extremely hard to bring you a full week of events culminating in a musical extravaganza otherwise known as Rizfest, at the weekend. By combining these two big events in the Risborough calendar, there should be plenty for everyone with continuous interest and fun. Many local businesses and community organisations have things planned for the
an Coralie & J
week and there is an easy guide of what date and time each event is taking place, in the middle pages of the programme. Do go along to as many things that you can, have some fun and help support the town, we are sure it will be a wonderful week and we will all keep our fingers crossed for good weather. We don’t produce a magazine in August but this won’t be a break as we have some exciting plans ahead that will keep us very busy. Very sadly Debbie is leaving us and we will miss her enormously but we would like to welcome Steph who is starting this week. Please look out for all our news on this in our next issue and have a great summer. Until the next time.

Recipe of the Month
Sage and Pancetta Roast Chicken Serves 4, Ready in 2 hours 30 minutes
Give classic roast chicken a tasty makeover with a handful of fresh sage and some delicious smoky flavoured Italian bacon called pancetta. Look out for thin rashers of pancetta in the deli section of your supermarket or buy freshly sliced from an Italian deli. Serve with roasted baby new potatoes and lightly steamed vegetables for a wonderful summer Sunday lunch. Ingredients:
• 1.3kg oven-ready chicken (preferably free range) • 55g butter, softened • Few fresh sage leaves • Salt and freshly ground black pepper • 1 onion, peeled and finely chopped • 85g smoked pancetta slices • 115g fresh white breadcrumbs • 1 medium egg, beaten • Fresh sage leaves, to garnish Tip: To make light gravy to serve with the roast chicken, drain off any excess fat from the roasting tin then heat the pan juices until sizzling. Add a splash of dry white wine or sherry then stir in a little plain flour and 1 tsp wholegrain mustard. Cook for 1 minute then gradually pour in 400ml hot chicken or vegetable stock and slowly bring to the boil, stirring all the time. Simmer for 3-4 minutes until just thickened. Season to taste with freshly ground black pepper.
Method:
salt and freshly ground black pepper. Cover the chicken loosely with foil and roast in the preheated oven for 1 hour 10 minutes. Uncover and baste the chicken with any juices twice during cooking. 2. Meanwhile, melt the rest of the butter in a frying pan, add the chopped onion and fry gently for 5 minutes. Chop half the pancetta and add to the pan, frying for a further 5 minutes until the onion is softened and golden. Remove from the heat. Finely chop the rest of the sage and add to the pan with the breadcrumbs and seasoning. Leave to cool then stir in the beaten egg. Press the stuffing mixture into a greased 18cm round shallow cake tin. 3. Uncover the chicken and top with the rest of the pancetta slices. Return to the oven and roast, uncovered, for a further 25-35 minutes until the chicken is golden brown and cooked through - the juices should run clear with no sign of pinkness when the thickest part of the thigh is pierced. Cook the stuffing in the oven at the same time until set and pale golden.
1. Preheat the oven to 190C, 375F, Gas Mark 5. Place the chicken in a foil-lined roasting 4. Remove the chicken from the oven, cover and leave to rest for 10-15 minutes. Cut the stuffing tin. Smear half the softened butter over the into wedges and serve on a platter with the roast chicken breast, legs and wings and scatter chicken, garnished with the fresh sage leaves. over the sage leaves. Season lightly with 8

Your Health Top Tips for Summer Feet to all parts of our bodies…. including our feet. Walking bare-foot: • Going bare-foot can help to stop your feet getting smelly and sweaty.
During the summer months we all get excited about the weather and tend to forget how to take care of our feet. We toss on those flip flops or sandals, which may not be the best idea. So how do we make sure we take good care of our feet? What are some good ideas about taking care of your feet during the summer? The right footwear: • Look for sandals with a low, wide heel and a stable sole to offer greater support and balance and to reduce pressure on the ball of the foot and toes. Anything over a two-inch heel changes the way the foot functions and puts you at a higher risk for problems. • Check the soles of the shoes. Ultra-thin soles provide inadequate cushioning and foot support, which is needed especially on hot days. • Flip-flops are great near the pool but they don’t offer enough support for other activities. They can often cause blisters when the material rubs the skin between the toes. Trade flip-flops for a supportive shoe when walking or playing any sports. 10
• Avoid wearing wet shoes. Water activities are part of the summer but wet shoes are a breeding ground for bacteria and fungus. If your shoes get wet make sure they dry out thoroughly before you wear them again. • Ring the changes! Wear a variety of footwear over the summer to avoid blisters and sweaty feet. Wear sunscreen: • Don’t forget to put sunscreen on your feet. Skin on the feet is sensitive, so sunburn can be painful and blistering skin can make wearing shoes very difficult! • Protect your feet in the same way as you would protect your face, your arms and your legs, whether you have fair skin or not. • Reapply sunscreen to your feet after you’ve been in the water. Drink water: • Drinking plenty of water will keep you hydrated. This will improve your overall health, and help minimize any foot swelling caused by the heat. • Our bodies need water to function properly and to supply blood and oxygen
• However, limit your bare-foot time! Walking bare-foot exposes feet to a variety of fungi and bacteria and increases the risk of infection and accidents. • You can protect your feet by wearing flip flops by the pool or at the beach and wearing a supportive sandal at other times. Pamper your feet: • Wash your feet every day. This may sound obvious but these days most people have a daily shower and their feet tend to get neglected. Do try to wash them properly with a gentle soap. • In the summer we like to wear open footwear which means the skin on our feet gets dry and many of us suffer from cracked heels. Creaming every day with a good foot cream is very important. • Change your socks every day. Seek professional help: • If you have any problems with your feet such as hard skin or fungal infections, or if you would like some advice on footwear, foot cream or just keeping your feet healthy, you can phone Debby Luxton at The Luxton Clinic on 01844 352200.

Summer Gardening
This is the time of year when you’ll want to be outside from dawn ‘til dusk. Our gardens change throughout the day, in the early morning everything is fresh and calm, and as the day warms up the flowers open and the insects arrive to do their work. By mid afternoon there is an abundance of colour and this continues into early evening and nightfall when any white flowered plants and sweetly scented forms really come into their own. Keen gardeners amongst you will say there is never a good time to leave your plot, but many of us take our holidays during July and August. Before you wave goodbye, give the grass a good cut - don’t forget all the edges, weed your flower borders and the vegetable garden, not forgetting to harvest all the produce you have lovingly tended, although make sure you leave some for the kind neighbour, who will be watering your crops while you’re away! Make sure you give everything a good soak before you leave, and set up any selfwatering systems you may have. Mulching plants at this time of year also helps with water conservation, chipped bark or composted bark is great for this, and don’t forget to make good use of all those grass clippings. Your treasured indoor plants must not be forgotten, there is a great new product out called “ Holiday Plant Savers” it’s a gel filled pouch which you place your pots in and it will keep them watered for at least two weeks. You can purchase these at Askett Nurseries, along with any other hosepipe and essential fittings we will hopefully need for our summer this year! A highly recommended shrub to look out for this month is the blue spirea, or to give it its 20
proper name Caryopteris. There are many forms available now, Heavenly Blue, Kew Blue and a lovely golden foliage variety Worcester Gold. These form a neat mound of foliage, with a mass of beautiful blue flowers in high summer. The bees love it, and it is a really easy shrub to grow and keep from year to year, it just needs a good hard prune in the spring, and feeding along with all your other shrubs. Anyway, we hope you all get to sit and enjoy your gardens this summer, don’t forget to visit some too - I’m sure they’ll provide lots of inspiration, and you can get back to work with your plans in the autumn. Happy gardening, see you soon,
Simon, Alison, Edith the Jack Russell and all at Askett Nurseries.

Marlow - A Great Day Out For All The Family
Marlow is without doubt one of the loveliest locations on the River Thames. Situated on a broad sweep of the river between Henley and Windsor, this medieval market town sets elegant Georgian buildings against the wonderful woodlands of the Chiltern Hills. Its lively and prosperous centre is shaped on a delightfully domestic scale, made up mainly of historic streets of small listed buildings. Together they house a tempting array of interesting shops, restaurants, wine bars and pubs which add so much to Marlow’s charm. The Thames made Marlow what it is today, putting it on the map first as a river crossing and then as an inland port. Appropriately, the towns main landmark is still the graceful suspension bridge, which spans the Thames, completed in 1832 to designs by William Tierney Clark who also designed the bridge across the Danube at Budapest. Higginson Park is a riverside delight, with 23 acres of lawns, flowerbeds, fantastic children’s playground, café and riverside walks and views. In season rowing boats and motor boats are available for hire from the pier. Salters Steamers (Tel: 01753 865832) run pleasure trips as well as passenger boats to Henley and Windsor.
en-route from the Cotswolds to London. Join it by the river in Higginson Park, heading away from the bridge. Walk on through the meadows to see 12th century Bisham Abbey on the opposite bank (now the home of the National Sports Centre). Next comes Temple Lock with its seasonal café. Retrace your steps with different views back towards Marlow (3 miles return). Swan Upping. Every July Marlow plays host to the 12th Century ceremony of Swan Upping. Six wooden skiffs led by the crested flag of the Queens’s Swan Marker, process along the Thames from Sunbury Lock to Abingdon as liveried officers mark the swans as the property of the Queen or the ancient Vintners and Dyers society, the only bodeies now formally entitled to swan rights on the Thames. The procession stops for refreshment at the Two Brewers in St Peter Street, where Jerome K Jerome, author of Three Men in a Boat’ stayed and the day finishes at the Compleat Angler Hotel (www.royal.gov.uk). Marlow Information Centre. For more information about Marlow and all that it has to offer for a great local day out why not visit the Information Centre (55a High St, Marlow SL7 1BA), Tel: 01628 483597, www.visitbuckinghamshire.org.
Marlow Lock and Weir provide a stunning viewpoint over the town and are approached from Mill Road, via the passage beside the Two Brewers in St Peter Street. Riverside Walks can be enjoyed in either direction, giving a variety of wonderful views. The Thames Path national Trail passes through Marlow 32

PROVIDING A WATER-TIGHT SERVICE
Whiteleaf Hill by Emily Hyde
Personally, I think one of Princes Risborough’s most noticable monuments is the Cross on Whiteleaf Hill. It can be seen from many higher areas of Risborough on a clear day and the views from the top can be amazing. I often play the “wheres-my-house” game whenever I am up the top. It’s a great place to take a football or have a picnic. The origins of the cross are unknown, although it is believed that monks changed the border boundaries on the hill ( originally in an indecent shape) to that of the cross around 903AD, although the first direct depiction of the cross is from 1742. Since the cross was first placed, its shape has changed many times. A festival occurred on VE day when the brushwood cover of the cross was removed and burnt.
If you were to go back 6,000 years, to before 4,000BC, the landscape of Whiteleaf would not look much different. The views would still be spectacular and Mesolithic hunters would flock to the area. The highly advantageous views meant they could hunt game. From 4,000BC onwards, the land was used for farming, transforming the surrounding area. Amongst these new settlers is a man who can still be found on top of the hill today. Underneath the giant mound at the top of Whiteleaf is buried what archaeologists believe to be a very important man. By using radiocarbon dating, they have found the man to have died between 3,700 and 3,650BC, around the age of 45. He was most likely an important man, as many people of this time were buried in communal burial grounds. Surprisingly, radiocarbon dating proves that the burial mound around the man - comprised of two tree trunks surrounding him, deep rich soil with pottery, flint and animal bone from a burial ceremony – was built between 45 and 150 years after his death, suggesting that many people came and modified the site through time.

Wimbledon History at Princes Risborough Tennis Club
Wimbledon fortnight grips the nation and the tennis world more than any other tournament, but for one member of Princes Risborough Lawn Tennis Club (PRLTC), the event holds very personal memories.
at the club, and was thrilled to see the boys hitting the ball so well and enjoying the game, as my family had done all those years ago. Who knows, maybe one of them will play at Wimbledon one day!”
Sue List has been a member of PRLTC since the 1950s and is part of a tennisplaying dynasty, her family having been linked to the club since the 1940s. Sue’s mother, Madge, played in The Madge List (left) with Wimbledon Championships legend Helen Wills Moody at Wimbledon from 1930 to 1936, reaching the 4th round of the ladies singles event in 1930. Madge also competed in the ladies doubles and mixed doubles events at The Championships. At that time, the pre-Wimbledon event at Queens, which is now just for the men, was also open to the ladies – and Madge won the ladies singles at Queens in 1930. The previous year, Madge had won the mixed doubles event at Queens with none other than a certain Fred Perry as her partner!
The club has been in New Road for 90 years, and has recently undergone a major development of its facilities, replacing the concrete courts with a new artificial clay surface, which has proved very popular. Club spokesman, Stephen Biggs, explains: “Our courts were due for resurfacing, so we looked into the various types of surface available these days, and decided on the artificial clay. The courts can be used in all weathers, and are much nicer to play on than concrete as the ball doesn’t bounce as high. They are also more forgiving on the feet and knees. Our members supported the proposal to change the surface, and have really enjoyed playing on the new courts”
Penny List, Sue’s sister, also competed at Wimbledon in the junior events, and the whole family played at the Risborough club, with father, Darryl, taking the role of club coach and sister Judy playing for the ladies’ First Team. Sue recalls: “At one stage the club provided five ladies for the County competitions, and County matches were played on the grass courts at Princes Risborough, as they had a reputation for being the best in the area.” Sue still lives in Risborough and often visits the club to support the current players in tournaments and matches against other clubs. “It’s been fantastic to witness the club develop and grow over the years. The courts have changed from grass and shale in the 1970s, to concrete in the 1980s and now the brand new artificial clay which has given the club a whole new lease of life. I recently watched a junior match 36
Another PRLTC member with a Wimbledon history is current First Team player Steve Bailey Kennedy, who as a junior in the early 1970s competed in the UK Junior Wimbledon tournament, alongside the likes of Sue Barker, Annabel Croft, Buster Mottram and John and David Lloyd.
PRLTC and will be running open sessions throughout Risborough Festival Week (see programme for full details)… so if watching Wimbledon gives you the urge to give tennis a go, pop down or contact Membership Secretary Andy Burn on 01844 343478 thafb02@hotmail.co.uk or the Club Coach Mel Burn on 07949 128195 melebbles@hotmail.com.
