Editors’ Letter Welcome to the January / February issue of Chiltern View Thame magazine. We have a very exciting start to our year as our Chiltern View Villages magazine is celebrating its 100th issue. We are so proud to have reached this milestone at the beginning of 2017 and we know from the wonderful feedback that many of you have been reading and using our magazine for all of those issues (over 11 years). We have printed and distributed hundreds of thousands of magazines across our three titles and we would like to thank all our loyal advertisers and our amazing delivery teams for making this possible. Our deliverers are local people, of all ages, who pop 24000 magazines through doors every 2 months, come rain or shine and we couldn’t do this without them. As most of you know, we decided several years ago not to send out Christmas Cards to our lovely advertisers but instead to use that money to support a local charity. This year our donation will be going to Thame Youth Memorial, which is a charity in Thame that created and maintains a garden, to provide a safe place to gather and support people following the premature death of a young person and the impact it has, not just on the family, but the whole community. Bosom Friends Being diagnosed with breast cancer – indeed, any type of cancer – is devastating. A cancer diagnosis is emotionally overwhelming and ultimately life-changing; you can often feel very alone and fearful. Breast cancer is the most common cancer in the UK, with one in eight women being diagnosed in their lifetime. Bosom Friends is a small, Oxfordshire support group run entirely by volunteers and offers a listening ear as well as practical, confidential support to those who have been affected by breast cancer. The group was formed several years ago by two women who discovered how difficult it can be to talk to friends and family following diagnosis; they wanted to ensure that others in the local area would not feel the same isolation that they had experienced. Bosom Friends’ meetings are held once a month, usually in the home of one of the members; lifts can

be arranged for those who may not have their own transport. Meetings offer the opportunity to get together for a chat over a cuppa and cakes in a supportive and informal atmosphere. We may invite a speaker to a meeting, or take the opportunity to share recent local and national information or to simply catch up on news. Whether you have just been diagnosed, are currently undergoing treatment or completed your active treatment a while ago, the group offers friendship, emotional support and practical, up-to-date information. Above all, the group offers an understanding voice at the end of the phone should you ever need it. Ménière’s Disease A condition of the Inner Ear and Vestibular System

Ménière’s disease is named after a French Physician Prosper Ménière who in 1800’s worked at a deaf/mute institute in France and studied the condition, that they finally put his name to. Ménière’s is a condition of the inner ear affecting balance and hearing. It is thought to be caused by unusually large amounts of a fluid called endolymph creating a build up of pressure in the inner ear. This pressure can cause the inner ear Treatments control symptoms rather than curing the condition. Having Ménière’s can affect your mental health and have a impact on to send abnormal messages to the brain resulting in dizziness, vomiting your whole family. The balance aspect of the condition can prevent you from driving and involve days when you cannot leave your bed. and dulled hearing. It is often described by sufferers as a feeling of ‘fullness in the ear’, and can lead on to dramatic unpredictable, devastating attacks of severe vertigo, fluctuating hearing loss, nausea, vomiting and dizziness. Longer term effects of the condition can include permanent hearing loss and tinnitus and on-going balance problems.

Exact causes of the condition are unknown but there are potential links to circulation problems, viral infections, allergies, the immune system, migraines or genetic factors.

How to cope day-to-day: Get up slowly giving senses time to adjust to being upright. Take time out. Regular exercise including yoga and pilates to maintain flexibility and strength which can help balance and aid relaxation. Wearing sunglasses can relieve eye strain. Carry medication on you at all times. Listen to relaxation tapes at night. Use night lights to avoid harsh electric light. Use hearing aids that have a remote control and different programmes to help cope with fluctuating hearing loss. Look after your mental health - talk to people, you are not on your own.

Over our 30 years of practice we meet many people living with Ménière’s disease. We have helped them practically with hearing technology that allows them to adjust the levels to suit different stages of the condition. On a less practical level we feel some of the best help we can offer is social and mental support. We have been working together with Amersham Tinnitus & Ménière’s society to provide an outlet for people to meet and share experiences in a safe,guided place. What’s cooking in winter? Winter is a time for hearty, warming, stews and casseroles. One of the best is a French Classic, Beef Bourguignon. Here at What’s Cooking we use braising steak, smoked streaky bacon and good red wine. Cut the beef into quite large pieces (5cm x 3cm approx.), so that they stand up to the long slow cook.

Beef Bourguignon Feeds 4-6 people Ingredients: 1kg Braising steak 1 x Spanish onion, peeled and diced 5-6 slices smoked streaky bacon, cut into pieces 1cm wide Half a bottle red wine (preferably from Burgundy) 250ml beef stock 2 x cloves garlic, crushed A few sprigs of thyme 2 x bay leaves 40gr tomato paste 12 x peeled shallots 18 x small button mushrooms 1 x tablespoon cornflour Salt & Pepper

Method: In a large saucepan add a little rapeseed oil and gently fry the onions until soft. Meanwhile in a frying pan fry the pieces of beef

over a high heat until nicely browned. Add the beef to the onions and then de-glaze the frying pan with the red wine, using a wooden spatula to scrape up any residue from the beef. Add the wine to the beef & onions and then add the stock, thyme, bay leaves, garlic and tomato paste. Add water to just cover the beef and bring to the boil. Reduce the heat and simmer for about 2 hours or until the beef is very

tender. In a frying pan, fry the bacon in a little oil until browned and add to the stew. In the same pan add the shallots and lightly brown adding them to the stew together with the button mushrooms. Cook for about 15 minutes. Remove the thyme sprigs and bay leaves. Season with salt and pepper, then slake the cornflour with a little cold water and use this to thicken the sauce to your liking.

Chinnor Circular Walks View from Chinnor Hill

Walk lengths: circular routes of 2 and 5.5 miles Starting point: The Village Centre, Chinnor Discover the rich geology of the Chilterns on these circular walks and find out what the chalk rock of the Chilterns Hills means for our local wildlife and our local history. You can also follow part of the Ridgeway National Trail, visit a nature reserve and a picturesque Chilterns village and enjoy some stunning views over the Vale of Oxford. And there is a charming pub en route! The route follows the Chinnor and Princes Risborough Railway line to the pretty village of Bledlow which is a very popular location for the Midsome Murders series: the church doubles as Badger’s Drift Church and the Lions of Bledlow pub is better known as the Queens Arms. You can make a slight detour to visit the tranquil Lyde Water Garden, whose pools were once used for growing watercress. Climbing up Chinnor Hill through the woods brings you to an open grassy area managed by the Berks Bucks and Oxon Wildlife Trust which is covered in wildflowers in summer including gentians

and orchids. Take a rest on the bench and drink in the views.

Chinnor chalk pit

On the way back down you can follow the Ridgeway a short distance to get a glimpse of the huge water-filled chalk pits which are the legacy of 90 years of cement-making in Chinnor. This industry quarried the chalk and at its peak was producing 5,600 tonnes of cement a week. Bond movie lovers may recognise the chalk pits from the opening hovercraft sequence in Die Another Day. You’ll need stout footwear as some of the paths can be muddy. There are some steep ascents and descents on the longer route and several stiles. The Chinnor Circular Walks are part of the Chilterns Country series of walking routes produced by the Chilterns Conservation Board. You can download a free leaflet for it which has a route map and detailed route directions, plus lots of other useful information. I am thinking about getting a dog. What do I need to consider? It is an important decision. A dog could be with you for the next fifteen years or more. There are so many considerations: a puppy, an older dog, a pedigree, a crossbreed and which sex? It can feel daunting, but there is help available – you are not alone. Not all dogs have the same requirements, yet they will all demand your commitment as a responsible dog owner.

Do you have a preference for walks around the block, or would you enjoy a dog that can climb those Scottish Munros? Will he or she be alone at home? If so, what is the cost of the nearest doggy day care? Remember that a working type dog will quickly become “self-employed” if not kept entertained. How much will he or she eat and is this affordable? Then there is the cost of vaccination, parasite control and health care. Good sites are accessible on the Internet. The Kennel Club have lovely descriptions regarding the character, feeding and exercise

Thame Mayor’s New Year’s Day Amble The Mayor of Thame, Linda Emery, has planned a leisurely walk for New Year’s Day to raise funds for her charities, the Red Kite Childrens Centre and the Thame Youth Centre. The walk, to be led by members of Thame & Wheatley Ramblers, is 4 miles to the Thame boundary, starting at St. Mary’s Church at 11:30am and finishing at Racquets Fitness Centre.
