Editors’ Letter

Welcome to the festive November/December issue of Chiltern View Thame magazine. It’s never easy writing this editorial at the beginning of October, especially this year because it’s only just started to feel like autumn, due to very warm and sunny September days. However, this is our November/December issue and there’s lots to look forward to such as frosty mornings, leaves turning gorgeous reds and oranges, Bonfire Night and Christmas. We are all hoping for cosy fires, steaming hot chocolate, woolly scarves, hats and gloves to keep out the cold. Time to spend snuggled up indoors and reading a good book or perhaps our magazine? A couple of dates for your diary; The Xmas Lights Switch on is on Friday December 2nd and the Thame Players have a wonderful pantomime this year taking place from 2nd - 4th and the 7th – 11th Dec (see page 28 for more details). Each season brings its own magic but we do like the comforting side that winter brings. Right, time for some nice hot soup for lunch and on with the next issue. Christmas and the festive season is just around the corner and what better way to get into the festive mood than a trip to a Christmas Market or visiting Santa in Lapland. Mince Pies It’s hard to beat homemade Mince Pies in the run up to Christmas and here at What’s Cooking there is a feeling of excitement and anticipation at the number of these little beauties we have to make each year. As always the devil is in the detail and the first place to start is some excellent homemade sweet pastry. Of course, homemade mincemeat is just as important but the recipe for this is a closely guarded secret. If you want your mince pies to be as good as ours, why not come into What’s Cooking and buy a jar!

Makes 12

Ingredients:

1 x large Jar of mincemeat (about 900gr) 330gr plain flour 100gr icing sugar Grated zest of half a lemon ¼ teaspoon salt 180gr cold unsalted butter 1 free range egg yolk 3 tablespoons cold water Beaten egg to glaze

Method: To make the pastry, put the flour, icing sugar, lemon zest and salt in a bowl and add the butter. Rub it in with your fingers or, more easily use a mixer with the beater attachment. Mix until you get a coarse breadcrumb consistency. Add the egg yolk and water and mix just until the dough comes together. Remove the dough from the bowl and knead for a few

seconds, shaping into a flattish disc. Wrap in clingfilm and chill.

Glaze the top with the rest of the thick. Using a pastry cutter beaten egg and cook for of the right size, cut twelve 20 minutes or until golden circles and line your tin. We use a muffin tin for extra deep brown. Leave to cool, then remove from the tin mince pies. Now cut twelve slightly smaller circles to use and dust with icing sugar.

Walks in the Chilterns:

Box Wood Walks near Princes Risborough View of Ellesborough Church from Chilterns

Walk lengths: circular routes of 3, 3.5 and 6 miles Starting point: Great Kimble or Pulpit Hill near Monks Risborough Discover one of the Chilterns’ best natural gems on these circular walks: swathes of wild box trees and bushes in the country’s largest native box woodland. There are also great views, an ancient hillfort, medieval churches, beechwoods and plenty more to enjoy. There is a choice of walk lengths, depending on how far you want to go and how much time you have. The routes follow waymarked footpaths and bridleways and there are a couple of pubs en route. The box woods on these walks are evidence of how important box trees were in the Chilterns a few centuries ago. Box wood is very dense, because the trees grow so slowly, and in the past it was used widely to make practical items like combs, printing blocks, rulers and lace-making bobbins. Many early woodwind instruments were made out of box. The chalky soils of the Chilterns

are ideal for box and people made a living by growing trees and selling the timber. The twisting old trees you can see today, often 6-10m tall, are left over from all this activity.

Much more ancient history is visible at the top of Pulpit Hill where large mounds and ditches are the remains of a 2,500 year old Iron Age hillfort. Away from the woods you can stroll across open grassy hillsides, covered in wildflowers in summer, and take in the far-reaching views across the Vale of Aylesbury. On these walks you can visit the villages of Ellesborough and Little Kimble, both with attractive parish churches, and follow a section of the Ridgeway National Trail. You’ll need stout footwear as some of the paths can be muddy. There are some steep ascents and descents and several stiles. The Magic Flute By Wolfgang Amadeus Mozart 7.45pm Saturday 5th November and 3pm on Sunday 6th November. It was his last opera being first performed on 30th September 1791 – he died on 5th December that year. He loved the opera so much that he asked for it to be played on his death bed. It was performed over 100 times that year alone. The Magic Flute is a tender and amusing opera, to be enjoyed by seasoned operagoers and novices alike. Whether it is simply a fantasy, or if it has greater depths of symbolism & philosophy, has been argued over, ever since it was first performed. Dealing with life’s second arrows

Of all the things I teach on any mindfulness course, the parable of the two arrows seems to resonate most strongly with people. If you were hit by an arrow, there is considerable localised pain which if properly treated will, in time, go away. The second arrow is longer lasting and represents the emotional response to the first arrow. The endless questioning: Why me? What if I’m injured and can’t work? I’ll not be able to pay the mortgage. What if I get an infection? If only I hadn’t been there… What if? What if? The irony is, while we’ve all suffered ‘first arrows’ in life (difficulties, heartache, obstructions), the pain of the second arrow lasts much longer than the first arrow and we fire it at ourselves. It’s how we react to events in life that perpetuates our suffering. The good news is, of course, that we can choose how we create the story around what is happening in our lives. For example, my growing children want to spend less time with me. Do I tell myself that I’m an awful mother who they don’t like, or a successful mother who has raised confident children ready to be independent adults? This ‘multiple choice’ is presented constantly to us. For example, the friend who walks past without acknowledging us: have we upset them (cue anxiety), are they worried about something (cue concern) or are they not wearing their glasses (bless!) Having the reflective space to explore how we perceive things and how we can create a different story is the stuff of psychotherapy or counselling. By talking through life events and our reactions, we become aware of our values, judgements, beliefs and their impact on others and ourselves. Often we realise that while we extend kindness and understanding towards others, but not ourselves. All too often we judge ourselves harshly. Of course, there are those first arrows which can’t be perceived in a different way, that are just

cruel and painful. Having somebody independent to talk to can be helpful at these difficult times. Learning Mindfulness helps us examine how we respond to life, perhaps noticing where we carry a stress reaction in our body, for example. It invites attention to the here and now, not mulling over yesterday or projecting about tomorrow. Quite often, ‘now’ is actually alright, it’s manageable, and even, maybe, just perhaps, it can be quite lovely.

It will be open to the public from 10am until 1.30pm. Our annual Charity Fair is organised to give local Charities the opportunity to raise funds and promote their services. During the day stalls will be selling gifts Floral arrangements, plants, preserves, books, cards, toys etc. There will also be a tombola and raffle for adults and children. Refreshments will be available organised by

Established in 2001, Thame & District Twinning Association aims to facilitate visits and exchanges between the people and associations of Thame and the attractive town of Montesson 20 km west of Paris. The association is independent and self-financing and, as such, needs to fund-raise in order to finance the annual exchanges. There are also activities such as a visit by Montesson stallholders to the Christmas event in Thame, our visit to the Christmas market in Montesson and regular French film nights. New members are most welcome.
