Editors’ Letter Welcome to the March/April issue of Chiltern View Thame magazine. This issue is always the one where many of us start to look forward. Brighter mornings, lighter and longer evenings, spring flowers blooming and baby animals everywhere. After such a mild but wet and windy winter, it is nice to think about sunshine, warmer weather and wonder what this year will bring. First on the calendar is Mother’s Day (March 6th) followed by Easter (very early this year) and then St. George’s Day (23rd April). If you are planning an event or perhaps a wedding, then we are pleased to introduce Ela from Bochic who is kindly going to write an article for us each issue. She has lots of great tips and advice to help your day go smoothly (page 28). Goodbye ‘BOB’, hello ‘VAL’! This time last year BOB was whisking medical crews to emergencies across Berkshire, Oxfordshire and Buckinghamshire, then in October 2015 BOB ‘retired’ to the south of France, lucky him! Where BOB once reigned a lady has taken his place, welcome ‘VAL’, or G-TVAL to be accurate, a brand new Airbus H135 T3 helicopter. VAL can do everything BOB brought to emergency support across the region and more, she is… an upgrade! Since becoming operational VAL has been working hard, but from mid-March this year she really comes into her own, VAL can fly at night! BOB could too but landing limitations meant only brightly lit locations were suitable. With special lights and nightvision goggles VAL can pretty much go anywhere and it’s not just this kit that makes her special. Carrying a vast range of lifesaving equipment including stateof-the-art ultrasound devices, blood transfusion kit and a blood analyser VAL helps shave off vital
Just one element of a successful ‘partnership’ VAL’s crews also need similar capabilities and the doctors, paramedics and aviation partner Bond Air Services heli-med pilots are currently finalising their night response training. Once completed, the newly renamed Thames Valley Air Ambulance (TVAA) will have full night-flying capability allowing them to operate a 19hr day from 7.00am to 2.00am. During winter when we only have around eight hours of daylight VAL is effectively operational for an additional eleven hours! Working closely with South Central Ambulance Service NHS Foundation Trust, TVAA relies wholly on public support. You can help in many
ways, donations, recycling, fundraising and attending events that support the charity. The Abingdon Air and Country Show held annually at ex-RAF Abingdon, Dalton Barracks, OX13 6JQ, just off the A34 is one such event. This year’s show is on Sunday 1st May from 10.00am until 5.30pm. A full afternoon air display is complimented by ground attractions including static aircraft, falconry and other countryside demonstrations, vintage vehicles, steam engines, music, dance, Daleks, children’s amusements, tank rides, craft and trade stalls and much more!

Recipe of the Month This is a quick, easy and flavoursome way to serve chicken. Use a full-bodied red wine such as a Burgundy for the best flavour, although there is no need to buy a really pricy one!
Chicken in Red Wine Serves 4 Ready in 1 hour 15 minutes Ingredients • 2 tbsp olive oil • 600g skinless chicken breast fillets, cut into chunks • 225g button mushrooms • 200g shallots, peeled • 1 garlic clove, peeled and crushed • 300ml red wine • 200ml chicken or vegetable stock • 2 tbsp sun-dried tomato puree • 1 bay leaf • 2tbsp cornflour • Sprigs of fresh parsley to garnish • Sautéed potatoes and steamed green beans, to serve Method Heat the oil in a large frying pan over a medium heat. Add the chicken chunks and fry for 4-5 minutes, turning frequently until golden brown all over. Transfer to a plate with a slotted spoon. Add the button mushrooms and shallots to the pan and fry for 5 minutes until just beginning to brown. Add the garlic and fry for a further minute then return the chicken to the pan and stir in the 16
red wine, stock, tomato puree and bay leaf. Bring to the boil then reduce the heat, cover and simmer gently for 25-30 minutes or until the chicken and onions are tender. Blend the cornflour and 2 tbsp water to a smooth paste then stir the paste into the pan. Simmer gently for further 2-3 minutes, stirring all the time, until the liquid has thickened. Serve with sautéed potatoes and steamed green beans and garnish with parsley sprigs.
Tip This dish freezes well, so it’s worth doubling up the quantities to freeze away half for another day. Allow to cool completely then spoon into a shallow freezer-proof container and freeze for up to 2 months. Defrost thoroughly then reheat in a flameproof casserole until piping hot.
