Welcome to the March/April issue of Chiltern View Thame area magazine. We do hope you like our front cover. We have had a lovely time looking at Spring/Easter pictures of baby animals but we all agreed that this was too good not to use. Spring is often a time of warmer weather, bulbs emerging from the ground and new beginnings which we are really looking forward to at Chiltern View HQ. We have a brand new Vets Corner from Sprinz and Nash on page 35 with great advice for all you pet lovers and continuing our ‘animal’ theme we are delighted to announce that we have teamed up with Hearing Dogs for Deaf People (www.hearingdogs.org.uk) to sponsor a puppy in 2015 ( Romeo) and we plan to keep you all up to date with his progress in every issue. You can meet him for the first time on pages 18 and 19. We are also delighted that we are launching a new competition this issue in conjunction with Thame Players www.thameplayers.co.uk with the chance to win tickets every issue. Hearing Dogs for Deaf People trains dogs to alert deaf people to important sounds and danger signals, providing a life-changing level of independence, confidence and companionship. Deafness is more than hearing loss - hearing dogs also help to relieve the stress, isolation and loneliness that deafness often brings. Chiltern View is delighted to sponsor puppy Romeo and will be following his training over the next 18 months until he is partnered with a deaf adult or child. The charity receives many requests from deaf people every year for a hearing dog due to the life changing benefits a partnership can bring. Puppy sponsorship plays a key role in the continued development of this vital service.
Meet Romeo: Romeo is a handsome brown Miniature Poodle with a fun and energetic character. He loves running around outside, exploring new environments and meeting other dogs. At eight weeks old Romeo went to stay with Joyce
and Harry, who have been volunteers for the Charity for many years. They’ve looked after 18 hearing dog puppies in training so they have plenty of experience! When Romeo arrived at his new home he was keen to explore the house and garden. Once he had looked around and settled in, Romeo met Joyce and Harry’s 13 year old pet dog Dipper. The two got on really well and after a few days Romeo started encouraging Dipper to play with him by chewing her ears and climbing on her. Romeo loves to follow Dipper around and she’s already showed him secret treasures in the garden – like the watering can where she enjoys an occasional drink. Romeo’s favourite toy is a woolly lamb, which he sleeps with and he carries around with him. He also enjoys playing with a ball and he is already really good at bringing it back.
Training Progress: Romeo has started attending puppy classes at our training centre in Yorkshire. His trainer Aime will work with him over the next few months, teaching him some of the skills and basic obedience that will be required as he progresses to advanced training. Romeo is already showing signs of being a fast learner, having started to pick-up some basic commands such as ‘sit’ and ‘down’ in his first class. He’ll be doing lots of classes over the next few months and getting valuable experience out and about with Joyce. With FixMyStreet, all you have to do is locate the problem on a map, and select a category: the site then sends it off to the right place to get it fixed. Famous People of the Chilterns: William Morris William Morris, the great industrialist and philanthropist, was in his day Britain’s richest self-made man, but lived relatively modestly in the Chilterns near Wallingford. Born in 1877, William Morris set up a business at the age of 16 with £4, repairing bicycles in his father’s garden shed in Oxford. In 1912 he produced the first of his well-known cars in his garage in Oxford’s Longwall Street, going on to expand the business into its huge factory in Cowley. It was here that he mass-produced the Morris Minor and the other affordable models that made Morris Motors the most successful car manufacturer in Europe. In 1933 William Morris bought a country house called Nuffield Place, in the little village of Nuffield above Wallingford, and it remained his home until his death in 1963. In 1938 he became Viscount Nuffield, thus putting the name of this little Chiltern village firmly on the map. Despite being super-wealthy, William Morris and his wife were a modest, down-to-earth couple. Their home was very comfortable but not ostentatious and though they had servants, Lady Nuffield sewed the uniforms for them herself. Lord Nuffield repaired his own shoes in a bedroom cupboard fitted out as a miniature workshop to while away sleepless nights.

Shin of Beef Chilli Con Carne Serves 5-8 depending on your appetite.
Ten Mile Menu is a local company and works with farmers and producers in the Chiltern Hills, delivering organic veg boxes and a wide selection of local rare and traditional breed meats.
Here’s our take on the ultimate Chilli Con Carne, as cooked up at Ten Mile HQ! Using shin and applying a little extra love and patience turns an every-day dish into something mighty impressive! INGREDIENTS:
TO SERVE:
• 1kg good quality beef shin (we’re using pedigree Hereford beef butchered at Seasons Farm Shop, North Dean) • 250g diced pork belly (locally farmed Oxford Sandy & Black pork, optional, but Hugh likes it too!) • 100g diced chorizo (from The Merry Pig, Butlers Cross) • Fresh and/or dried chillies (we’re using 2 dried chipotle chillies and 2 medium red fresh chillies, but go with your taste and what is available) • Olive or Rapeseed oil for frying • 2-3 teaspoons ground cumin • 2-3 teaspoons smoked paprika (use hot if you like) • 1-2 teaspoons dried oregano • 2-3 Bay leaves • 5-6 cloves of garlic • 2 medium white onions (use red if you prefer) • Plenty of good salt and pepper (to taste, but don’t be shy) • 1-2 red peppers (as you prefer) • 1 pint of good stock (beef or chicken ideally) • 1-2 tins of chopped toms (depending on how much stock you use) • x1 400g tin of red kidney beans • 200g borlotti beans (we’re using some grown locally at Sandy Lane Farm, mix your beans as you see fit) • Seasoned Flour (to coat the beef)
• Soured Cream • Fluffy white rice

METHOD: 1. Lightly coat your beef shin in the seasoned flour, making sure you keep it quite chunky, the sinews will melt into your sauce and leave you with much smaller pieces of meat than you started with. 2. Brown off the meat (in batches if need be) and set aside. Fry off the onion with the pork belly, adding the spices, seasoning and chorizo after a few minutes. 3. Add the beef back into the pan (now would be a good time to move to a heavy casserole pot if you didn’t start in one), then add stock, then tomatoes and bring to a simmer. 4. Pop the lid on and place in the oven, the shin will take at least 2.5hrs at a low heat (150 degrees celsius) to tenderise, but we cook ours for more like 4 or 5. 5. Towards the end of cooking, add the beans and the peppers. If you’re being fancy, you might like to char your peppers over a high, dry heat and add in, just throw them in if not! 6. Adjust seasoning to taste (we’re not averse to using a little brown sugar or dark chocolate should the mood take you), the meat will literally fall apart, so be careful not ‘overstir’ before serving (with a cold beer!).

Island Farm Donkey Sanctuary, Oxfordshire Island Farm at Brightwell-cum-Sotwell was purchased in 1981 from the Hoare family of Wallingford who were coal merchants and pig producers. Following the first rescued donkey in 1993, word of mouth meant numbers steadily increased causing a growing financial pressure and it quickly became clear something had to be done. In May 1997 the Sanctuary became affiliated to a charity enabling the rescue work to continue. In July 2000 the Sanctuary was registered with the Charity Commission and from then became known as Island Farm Donkey Sanctuary. Currently the Sanctuary looks after over 120 donkeys while an almost equal number have been found new approved homes. Their ages range from new born to 30+ years and as a donkey can
live to 45-50 years it is important that they now spend their days in comfortable and friendly surroundings. Nearly all of the donkeys and many of the other animals at the Sanctuary have been rescued and it is only through the fund raising that this can continue. The donkey adoption scheme is one way of helping and makes an unusual gift for a relative or friend. Easter time brings lots of lovely food into our homes, but some of these can be dangerous to our pets. Two of the most common poisons are chocolate and raisins (e.g. in hot cross buns). Chocolate contains toxins called theobromine and caffeine, which are poisonous to all dogs and cats. Dark chocolate, including baking cocoa, is the most poisonous, and white chocolate the least. Raisins have an idiosyncratic effect, meaning that whilst one animal may have no adverse effects, another may die as the result of eating just a couple of raisins. It is impossible to tell how an animal will react until it has eaten them. Signs of poisoning include changes to eating, drinking, urination, heart rate and breathing, lethargy, vomiting, diarrhoea, restlessness,

shaking, wobbling and unsteadiness, seizures, coma and death. If you think your pet may have been exposed to a poison, call us as soon as possible. Treatment is most effective if implemented fewer than four hours after ingestion. Bringing the packaging of the food with you is very useful. Thame Players Founded over 60 years ago, Thame Players Theatre has developed from a tiny church hall to a proper theatre with raked seating, a bar and brilliant lighting and sound facilities. With around 30 visiting shows and 32 Thame Players Performances and 20+ cinema showings the theatre is very active, indeed. The Players acquired a 50 year lease on the church hall in Nelson Street in 1977 and began the work of transforming it into the Players Theatre. St Mary;s Church, Thame, agreed to sell the freehold to Thame Players in 1996 and purchase was complete on 28th February 1997. The ideal location of the Players Theatre – near to the High Street and car parking facilities – made its development highly desirable. In Phase one we transformed it into a very comfortable 120 seat theatre and with Phase 2 we were able to increase that to 132 seats all with a good view. We’ve been lucky enough to successfully fund both phases of the development through sponsorship by both SODC and Thame Town Council along with numerous local companies and funding bodies such as The Theatres Trust and The Foyle Foundation and our own fundraising efforts. We’ve enlarged the stage to allow
bigger shows to come to us, we’ve improved the balcony both in terms of view and safety and we’ve put in folding doors to the back of the stage to allow easy access for complicated and bigger sets. Coming up this spring we have the Thame Players own production of How the Other Half Loves, by Alan Ayckbourn which runs from 3rd to 7th of March at 7.45 . Bill Giles is bringing his The Bill Giles Humorous Weather Show to the theatre on 15th March followed by Beverley Craven with her songs and music on 22nd March, both at 7.45pm. In May we have the Thame Players Production of Yes, Prime Minister, by Antony Jay and Jonathan Lynn which runs from 5th to 9th May – and yes, that is election week, and yes, it was deliberate. Sunday 22 March 6pm, The Waterside Theatre, Aylesbury Students from Stagecoach Aylesbury and Stagecoach Thame are looking forward to performing in their fantastic charity show at The Waterside Theatre in Aylesbury. A total of 250 local students will present an evening of song, dance and drama all in aid of local charity the Florence Nightingale Hospice. The students range in age from 5-18 years and many will be making their debut on a professional stage. Rehearsals are well underway and the show will include a
specially written piece featuring hits from the 1980s, along with selections from well-loved musicals. It promises to be a night to remember! Our chosen Charity, Florence Nightingale Hospice provides valuable support and both inpatient and at-home services for local families affected by life-limiting illness across Aylesbury Vale. The charity needs to raise £600,000 a year to continue providing that much needed care, and Stagecoach is very proud to be able to dedicate all profits from the show to this worthy cause.

The Gardens at Waterperry are springing back into life with daffodils and fritillaries this March and April. The National Collection of Kabschia Saxifrages will be at their best during March and with a saxifrage day on the 14th it really is the time to visit.
