Editors’ Letter

Welcome to the January/February issue of Chiltern View Thame magazine. It’s always quite a challenge to put this editorial together because at the point of writing it, it is only the beginning of December and we are yet to have Christmas. As you read this however, all the festivities will be over but we do hope you had a lovely time and are looking forward to the new year ahead. We have many plans for 2016. We are hoping that by now our new look website will be up and running. It should be nice and easy to use and with a real community feel, allowing you to look out for local events and interesting local news that we have published in the magazine. This will all be regularly updated and we hope to link it all in with all our social media sites which are regularly updated by our wonderful colleague Lacey. At this time of the year, when the days are short and the nights are long, what better time to start to think about some winter sunshine. Chasing the sun and the warmth in winter offers you numerous holiday options - for those of you who prefer a shorter flight, around four and a half hours, the most popular destinations are the Canary Islands - Tenerife, Lanzarote, Fuerteventura and Gran Canaria. With temperatures averaging 20 degrees and higher this is a wonderful place to visit during the winter months. There is a wide choice of accommodation -

apartments, villas and a choice of 3, 4 and 5 star hotels. The Canaries also boast fine cuisine across all the islands whether it be traditional Spanish tapas or fine worldwide dining. Travelling further afield gives you an amazing choice of destinations - The United Arab Emirates - Dubai in particular not only offers wonderful hotels and amazing man made beaches but for those shopaholics amongst you, you are spoilt for choice. Flights are approximately 7 hours from many UK airports and you enjoy temperatures @ 26 degrees. The best time to travel is October through to April - as you move into summer the temperatures can be as hot as 40 degrees. Another winter destination is the Caribbean - so much choice - pick up a cruise in Miami and visit a variety of islands over 7, 10, 11 or 14 nights. Alternatively fly direct to some of the Caribbean islands direct from the UK Antigua, Barbados and Jamaica for example. Flight times are @ 11 hours so we would recommend a minimum 10 day stay. There are some amazing properties to stay at in the Caribbean - whether you prefer a self catering apartment on the beach or a luxury hotel the choice is

endless. The Caribbean boasts some of the most magnificent beaches where it is often difficult to find another person nearby. Temperatures in the winter are high - the best months really being January through to April. This way you avoid the hurricane season and the tropical rain season. Once you start to travel further afield the holiday choices broaden - Maldives, Mauritius, Mexico to name but three. The winter is a perfect time to take a break - recharge the batteries, avoid some of the UK winter weather, save on those fuel bills! - relax and enjoy the wonders of the world.

Peppered Rib Eye Steaks With Red Wine Glaze

Treat the one you love on February 14th to succulent pan-fried steak with a luxurious sweet red wine sauce.

Serves 2 Ready in 20 minutes Ingredients 150g baby new potatoes 2 tsp black peppercorns 2 x 250g rib eye steaks, trimmed of excess fat 2 tsp olive oil 3 tbsp redcurrant jelly 3 tbsp red wine 1 tsp cornflour blended with 1tbsp cold water 15g butter 2 tsp fresh chopped parsley Steamed baby carrots, mange tout and peas, to serve Method Cook the baby new potatoes in a pan of lightly salted water for 10-15 minutes until just tender.

Place the redcurrant jelly and red wine in a small pan and heat gently until the jelly has completely dissolved. Stir in the cornflour mixture and simmer for a further minute until slightly syrupy. Drain the potatoes, toss with the butter and parsley and season to taste. Transfer the steaks to warmed plates and spoon over the sauce. Serve with the potatoes and steamed vegetables.

Meanwhile, crush the peppercorns coarsely using a pestle and mortar or the end of a rolling pin. Press firmly over both sides of the steaks. Set a griddle pan over a medium heat to preheat.

Tip:

Brush both sides of the steaks with oil. Place the steaks on the hot griddle pan and cook over a high heat for 1 minute on each side until seared. Reduce the heat and continue cooking for a further 2-4 minutes on each side until the steaks are cooked to your liking. Remove the steaks and cover and leave to rest for 2-3 minutes.

Sirloin, fillet or rump steak can be used in place of the rib eye. Make sure both steaks are an even thickness and always bring the steaks to room temperature for about 15 minutes before cooking. Resting the steaks for a few minutes after cooking will also help to ensure they are meltingly tender.

Snowdrop Teas at Aston Rowant Church Fiveways is a small Nature Conservation area managed by Aston Rowant Parish Council who have installed a short path and little bridges over a small chalk stream, with the support of a Sustainability Grant from the Chilterns Conservation Board. There is also a log seat on which Supplied by to relax. The area used to be Alan Gooders an important part of the village until the nineteenth century, with simple farm cottages beside the bridleway. We presume that the lovely snowdrops were originally planted in their gardens. This would have been an important crossing of tracks in the Middle Ages. An important Drovers Trail, the Lower Icknield Way crossed the Old London Weye from London to Oxford here and there were Church Way Footpaths that converged from Postcombe and Kingston Stert. There was water from the stream, wood and flint from the hills, employment on the land, and we also think that there was even a fish pond close by!

The Aston Rowant Parish Council have cleared a lot of dead and diseased shrubs and trees, and these were replaced with new species of small tree and shrubs provided by SSE. The Council have also funded a big planting programme spreading wild flower seeds and planting bulbs, all indigenous species. Winter Aconites and Fritillaria bulbs have been planted on the stream side and English and Welsh Daffodils, Wood Anemones, and English Bluebells have also been added. On Sunday 14th February, from 2pm – 4.30pm, please visit the wonderful snowdrops in Church Lane at Fiveways, Aston Rowant and enjoy scrumptious Tea and Cakes in the church. There will also be duck races along the stream (for which there will be a small charge). Please wear boots or wellies! The event is being organised jointly by the Church and Aston Rowant Parish Council and all profits are for the Church Funds. Viewing the snowdrops is free! A Good Read Girl on the Train by Paula Hawkins Praise for this novel, first published at the beginning of 2015, has spread like wildfire and it has become THE book to read. So just in case you are one of the few that hasn’t succumbed to this thriller, why should you pick it up? Whether you are a regular commuter, like the central character Rachel, or not, you will easily be able to identify with the opening section. How many times have you sat on a train and looked out of the window into the garden or kitchen windows of the houses that back onto the tracks, as you speed past on your way to your final destination. As you catch glimpses into a life that you don’t know, do you wonder about the people that occupy those houses? Rachel doesn’t have to wonder. She passes familiar houses every day and purposefully looks for Jess and Jason, a young professional couple who live a perfect life. She knows them and is in many ways envious of their relationship. Seeing them in their garden is a moment of comfort as her own life is falling apart. But is all as it seems? On one day, as the train slows down at a signal by the house, Rachel notices that something is amiss. Suddenly she is sucked into a nightmare that seems destined to reveal everything, and that will shock you as her commuter journey turns out to be anything but normal. Just like the generation before them, they are left with a void after reading them all, and so where do they turn? The Charlie Bone series of books may well be just what they are looking for. Published in 2002, Midnight for Charlie Bone is the first of this eight book series. Charlie is a fairly normal 10 year old boy. His father died when he was little, and he lives with his mum and two grandmas, and hangs out with his best friend Ben. One Friday Charlie hears voices coming from a photograph, and then his whole life changes. He learns that his three unmarried greataunts, known as the Yewbeams, are going to fund his education and a private school called Bloor’s Academy. Charlie is not happy about this: he knows the school to be a stuffy place for geniuses, and he certainly won’t fit in there. But the Yewbeams are insistent: and besides, they pay for his mum’s living expenses and so he really has no choice. They explain to Charlie that he is ‘endowed’ and can read the minds of people in photographs. Everyone at Bloor’s Academy has a talent. Charlie’s father went there and he was a musician. But what is Charlie’s talent? Placed in the music department at Bloor’s, despite having no musical talent, it becomes clear that there is another group of children at the school who are all endowed with some mystical magical talent. “Romeo is very affectionate and enthusiastic. He loves work, and he loves life. He’s a great little dog.” This is what Joyce, his volunteer puppy socialiser, thinks about Romeo. She’s one of our most experienced volunteer socialisers, and has been socialising our puppies since 1996. So, she knows what makes a ‘great little dog’! More than any other dog Joyce has socialised, Romeo can get other dogs to play with him. Out in the park, he runs rings around them until they join in. It’s like a magic spell. Everyone exclaims that Romeo has somehow cajoled their dog, who never plays with other dogs, into having a run-around.

Off to Big School Romeo has started basic soundwork training. This is what really makes a hearing dog unique, in that they learn to associate sounds with specific actions, and then alert their deaf recipient to those sounds.

dogs alert deaf people to other sounds such as the doorbell. Joyce is encouraging him to nudge the palm of her hand, by giving him treats. It’s the beginning of a very important action that Romeo will need to use a lot when he is matched with a deaf recipient.

What’s next for Romeo? Joyce is planning on improving Romeo’s ‘wait’. This is important for when he becomes a hearing dog, because he will need to wait at the side of the road before crossing, at the front door when his deaf recipient answers it, and so on. To do this, Joyce tells him to wait, walks ten paces away from him, turns back round, and holds his attention. Romeo should be able to wait for a minute but his current record is 20 seconds. So, his next small step is going to be about improving his focus and not being so distracted.

He has started learning to run to the cooker timer when it goes off. Deaf people need to be alerted to this sound, to avoid burnt dinners or worse. To do this, Joyce sets the timer for five seconds and when it beeps he runs to it for a treat. She is also teaching him nosenudging. This is how hearing

However, his next big hurdle will be when he leaves Joyce, to start his advanced soundwork training at our centre in Yorkshire. Thame High Street is a ‘Rising Star’ Thame High Street has been officially recognised as a ‘Rising Star’ among British high streets, and on 30th November, was presented with a special certificate at the Great British High Street Awards ceremony at Admiralty House, in Whitehall, London. The event was hosted jointly by the Minister for Local Government, Marcus Jones, and Executive Vice-President of Walgreens Boots Alliance, Simon Roberts, who are co-Chairs of the Government’s Future High Streets Forum, which instigated the Great British High Streets Awards. The judging panel said that the Rising Stars particularly impressed them ‘with their commitment to working together to bring new life into their high streets’ and of Thame in particular, special mention was made of its Neighbourhood Plan and for the way Thame has ‘been put back on the map through the use of social media’.
