Editors’ Letter Welcome to the July & August issue of Thame View magazine. These next two months are going to be very busy in the Thame calendar again. There are many events taking place and we are helping to promote them in this issue. Thame Show ( page 16) takes place on Saturday 13th July and is set to be a wonderful day again this year. Towersey Festival takes place from Thursday 22nd August through to Monday 26th August (pages 13 and 14). The spectacular front cover is supplied by the Festival, with credit to Phil Sofer. There are lots of community events through the summer as well so please have a look at the pages at the back of the magazine for dates and times. We are still hoping to include much more community information and we need to make sure we have it way in advance so whatever delivery round you are on, it should always be up to date. Make sure you keep hold of your previous copy. It’s busy time for schools too as they are coming up to the last few weeks of the school year and sports days and leaving parties take place. Let’s keep our fingers crossed for good weather and good luck to all those moving schools or just starting in September. We do hope you all have a good summer. Until the next time

Recipe

Sage and Pancetta Roast Chicken Give classic roast chicken a tasty makeover with a handful of fresh sage and some delicious smoky flavoured Italian bacon called pancetta. Look out for thin rashers of pancetta in the deli section of your supermarket or buy freshly sliced from an Italian deli. Serve with roasted baby new potatoes and lightly steamed vegetables for a wonderful summer Sunday lunch. Serves: 4 Ready in: 2 hours 30 minutes

heat. Finely chop the rest of the sage and add to the pan with the breadcrumbs and seasoning. Leave to cool then stir in the beaten egg. Press the stuffing mixture into a greased 18cm round shallow cake tin.

Ingredients

1.3kg oven-ready chicken (preferably free range) 55g butter, softened Few fresh sage leaves Salt and freshly ground black pepper 1 onion, peeled and finely chopped 85g smoked pancetta slices 115g fresh white breadcrumbs 1 medium egg, beaten Fresh sage leaves, to garnish

3 Uncover the chicken and top with the rest of the pancetta slices. Return to the oven and roast, uncovered, for a further 25-35 minutes until the chicken is golden brown and cooked through – the juices should run clear with no sign of pinkness when the thickest part of the thigh is pierced. Cook the stuffing in the oven at the same time until set and pale golden.

Method:

1 Preheat the oven to 190C, 375F, Gas Mark 5. Place the chicken in a foil-lined roasting tin. Smear half the softened butter over the chicken breast, legs and wings and scatter over the sage leaves. Season lightly with salt and freshly ground black pepper. Cover the chicken loosely with foil and roast in the preheated oven for 1 hour 10 minutes. Uncover and baste the chicken with any juices twice during cooking. 2 Meanwhile, melt the rest of the butter in a frying pan, add the chopped onion and fry gently for 5 minutes. Chop half the pancetta and add to the pan, frying for a further 5 minutes until the onion is softened and golden. Remove from the PAGE 8

4 Remove the chicken from the oven, cover and leave to rest for 10-15 minutes. Cut the stuffing into wedges and serve on a platter with the roast chicken, garnished with the fresh sage leaves.

Tip

To make light gravy to serve with the roast chicken, drain off any excess fat from the roasting tin then heat the pan juices until sizzling. Add a splash of dry white wine or sherry then stir in a little plain flour and 1 tsp wholegrain mustard. Cook for 1 minute then gradually pour in 400ml hot chicken or vegetable stock and slowly bring to the boil, stirring all the time. Simmer for 3-4 minutes until just thickened. Season to taste with freshly ground black pepper.

Hypertension or high blood pressure Blood pressure is the pressure of the blood in your arteries and is measured in millimetres of mercury (mm Hg). It is recorded as two figures. The first one (top one) is called the systolic pressure and indicates the pressure in the arteries when your heart contracts. The second number (lower one) is known as the diastolic pressure and this represents the pressure in the arteries when your heart is resting between heartbeats. A consistently high blood pressure is known as hypertension, for example if your blood pressure was 150/94, for example, and is sustained at this level for some weeks. However, a one off reading of 150/94 does not indicate hypertension as your blood pressure may change throughout the day, depending on circumstances and exercise. It is also important to note that our blood pressure becomes a little higher anyway as we get older due to the lack of elasticity in the arteries as we age.

So what can you do to avoid high blood pressure? A healthy lifestyle can go a long way in reducing your risk from hypertension and its complications. • Losing some excess weight can make a big difference. • Exercise regularly . Aerobic exercise, walking, swimming, dancing, digging are all beneficial. • Eat a healthy diet and in particular, reduce your salt intake • Drink alcohol in moderation • Try to cut down on anxiety and stress in your life.

But if your blood pressure remains at a high level for some weeks, then it would be important to seek medical advice from your GP. In most cases the cause of hypertension is unknown and is called primary hypertension. It may be due to a narrowing of the arteries which means the heart has to work harder. In some cases though, it is caused by another condition such as kidney disease or a hormone problem and this is known as secondary hypertension. Although there may not be any symptoms to high blood pressure, it is a risk factor in developing cardiovascular disease, such as a heart attack or stroke, in the future. In the UK cardiovascular diseases are a major cause of poor health. PAGE 10

Towersey Festival

Towersey Festival returns this August Bank Holiday with yet another great line-up of music, spoken word, workshops, film, dance, entertainment, and activities for all the family. The chart-topping Blockheads get the proceedings off to a fine start on Thursday 22 August, performing such classic hits as What A Waste, Reasons To Be Cheerful Part 3, and Hit Me With Your Rhythm Stick. They’ll be followed by the Mercury Prize nominated Unthanks (Fri 23 Aug), the acclaimed Show Of Hands (Sat 24 Aug), Home Service (Sun 25 Aug) featuring War Horse songwriter and composer John Tams, and Spiers and Boden (Mon 26 Aug), the famed founders of the raucous Bellowhead, whose previous Towersey appearances are the stuff of local legend! Other acts appearing over the five days include The Moulettes (a band with strong links to Mumford and Sons), father/daughter duo Martin Carthy and Eliza Carthy, and guitarist/ songwriter Martin Simpson, whose new album – Vagrant Stanzas – was recorded with Richard Hawley. Meanwhile, a strong international flavour comes courtesy of Swiss Cajun punks PAGE 12

Of course, the Towersey experience isn’t just about the music as there’s also some great artisan food available, along with a wellstocked real ale bar featuring a wide range of beers and ciders from leading independent breweries . There’s also a brand new Music In The Bar stage highlighting some of the best acts from the area, while Thame Cinema For All host a series of film screenings, from cult documentaries to family flicks. The Spread The Word strand includes a range of storytellers, writers and poets, while there’s a myriad of activities for the younger Towersey attendee. For example, the Children’s Festival boasts over 100 events, from shows, dances, song and music, to workshops, and crafts, and Shooting Roots is run by and for young people. “The people that come, and the sheer variety of music and art on offer, make Towersey a total escapist event,” reckons Festival Director, Joe Heap. * The 49th Towersey Festival runs from Thursday 22 August to Monday 26 August 2013. The sum was made up of £1025 from the fete itself, which was held at the hospital (May 11), and £1454 from the Raffle. Mrs Sarah Taylor, chairman of the Friends, said: ‘This result is a tribute to the hard work put in by Gill Coleman, manager of the Day Centre; Gill Norris, Day Hospital Co-ordinator, and Anna Wharrier , the hospital’s Voluntary Services Organiser.’ Gill Coleman also thanked her colleagues for the joint effort and said: ‘As ever, all our share of the funds raised from community activities will be spent for the entertainments and outings we provide for our members. ‘This result is especially gratifying, given that the weather was a bit uncertain. But all the volunteers, helpers and supporters turned up in strength. ‘It was a great day.’ Chinnor Flower and Produce Show Chinnor Flower & Produce Show will be held at 2.30pm on Monday, 26 August at Station Road Playing Fields, Chinnor. Admission to the show is 50p. The 2013 Schedule can be downloaded via Chinnor Parish Council website, or available at the Village Centre, Library or Allotment distribution centre from the beginning of July. There are some 150 classes, from vegetables, fruit, and flowers to crafts, cooking, photography and wine making, including some classes specifically for children. A popular auction is held at the end of the show. Refreshments will be available together with a range of outside local stalls.

Thame & Wheatley Ramblers Association The Ramblers Association is Britain’s biggest walking charity. In 2015 it will celebrate 80 years of promoting walking and improving conditions for everyone who walks in England, Scotland and Wales. Oxfordshire is represented by an area Ramblers Association with groups centred on different districts. Locally the Thame & Wheatley (TW) group covers some 34 parishes within the Vale of Oxford, including Chalgrove, Chinnor and Stanton St. John, as well as Thame and Wheatley. The area group produces a programme of some 300 walks twice yearly, with many of the walks led by members of the TW Group. The programme includes walks of varying lengths and challenges with starting points from the Chilterns to the Cotswolds and all places in between. Longer walks include a pub or picnic lunch. The TW group also organises a short morning walk of 3 to 4 miles on the second Tuesday of each month, which has proved very popular. In addition to organising walks the Ramblers participate in countryside campaigns and lobby local councils to maintain and improve footpaths. Local members can often be seen on footpaths armed with secateurs and loppers clearing undergrowth from stiles and rights of way! As well as being able to enjoy walks and social events arranged by the Ramblers, membership includes the quarterly Walk magazine, discounts at many outdoor shops and offers from the Ramblers holiday partner HF Holidays.
