Editors’ Letter Welcome to the July/August issue of Chiltern View Thame area magazine. We are delighted to be able to promote one of Thame’s big, summer events; The Towersey Festival takes place between the 28th and the 31st August. After celebrating 50 years in style last year, Towersey Festival returns with another unbeatable line-up of entertainment this August Bank Holiday. Headlining the four-day festival (Friday 28 to Monday 31 August) are Joan Armatrading, Bellowhead and Stornoway. Currently in the middle of a lengthy sell-out solo world tour, singer-songwriter Joan’s many hits include Willow, Down To Zero, My Myself I and the enduring Love And Affection. Though no strangers to Towersey, folk big band Bellowhead will be making one of their last major appearances at the festival before their Farewell Tour in the autumn. Named one of the UK’s best live acts by DJs Simon Mayo and Chris Evans, the rowdy 11-piece will be joined by Oxfordshire’s very own Stornoway, whose acclaimed new album, Bonxie, combines baroque indie folk pop with birdsong. Also on the bill are Sally Barker, whose moving performance on BBC One’s The Voice moved Tom Jones to tears, Show Of Hands, Scottish collective Treacherous Orchestra,

Recipe Veggie Bean Burgers Packed with flavour these burgers will be enjoyed by both meat-eaters and vegetarians. For a lovely nutty texture replace the sweetcorn with 100g chopped walnuts.

2. Tip all the beans into a large bowl and roughly mash with a fork. Stir in the onion mixture along with the remaining ingredients and mix well to combine. Season to taste with salt and freshly ground black pepper.

3. Divide and shape the mixture into 8 burgers. Cover and chill in the fridge for at least 30 minutes.

4. Heat the rest of the oil in a large non-stick

frying pan over a medium heat and fry the burgers for 3-4 minutes on each side until golden brown (you may need to do this in two batches so add a little more oil, if needed). Drain on kitchen paper then serve in toasted burgers buns with spinach leaves and sliced tomatoes.

Ingredients

• 3 tbsp olive oil • 1 large red onion, peeled and finely chopped • 2 garlic cloves, peeled and crushed • 4 spring onions, trimmed and finely chopped • 1 carrot, peeled and grated • 2 tsp chilli powder • 2 x 400g cans mixed bean salad, drained and rinsed • 100g canned sweetcorn, drained • 100g fresh breadcrumbs • 1 large egg • 1 tbsp lime juice • 4 tbsp fresh chopped coriander (or parsley) • Toasted burger buns, baby spinach leaves and sliced tomatoes, to serve

The uncooked burgers freeze well, just place on a lined baking tray and freeze until solid then pack away into freezer bags. To cook from frozen, place the burgers on a lined baking tray, brush lightly with oil and bake for 25-30 minutes at 200C, fan 180C, Gas 6 until golden and piping hot.

1. Heat 1 tbsp of the oil in a frying pan and fry

the chopped onion over a medium heat for 8-10 minutes until soft and golden. Add the garlic, spring onions and carrots and fry, stirring, for a further 2-3 minutes. Stir in the chilli powder. PAGE 16

Now that the warm weather is here, long dog walks and holidays beckon. It can be very easy to forget about the dog in the back of the car when stopping on the way back from a walk to pop into the shops, or when stopping to refuel on a longer drive. Sometimes these short stops can inadvertently turn into longer stops. In hot weather, even when parked in the shade, cars heat up incredibly quickly.

Opening just one window a small amount is not sufficient to negate this heating effect. In very hot conditions, even having windows fully open may not be sufficient. Dogs are not able to lose heat as well as we can due to their thick coats, they can only lose heat by panting, which is very inefficient, and a small amount by sweating from their pads. Signs of heatstroke include vigorous panting; dark red, dry/tacky gums, collapse and unconsciousness. Prompt veterinary treatment is essential but unfortunately many dogs will not survive

Benjamin Disraeli Famous People of the Chilterns:

Benjamin Disraeli was one of the most famous politicians of the 19th century, rising to become Chancellor of the Exchequer three times and Prime Minister twice. To help his climb up the greasy pole he acquired a country seat in the Chilterns, at Hughenden Manor, and this became his refuge from the stress and turmoil of political life. As a young man Disraeli had lived with his family at Bradenham Manor, just up the road from High Wycombe. In 1832 he stood (unsuccessfully) as a Radical candidate for High Wycombe, addressing the voters from the portico of the Red Lion hotel. He finally became Conservative MP for Maidstone, in 1837. In 1839 he married the slightly eccentric Mary Anne Wyndham Lewis, a rich widow twelve years his senior. It became a love match. He called her “the soul of my existence”; she repaid him with complete devotion and the settlement of his ever-pressing debts. In 1848, as MP for Buckinghamshire, he borrowed enough money to purchase Hughenden Manor. In 1876 Queen Victoria created him 1st Earl of Beaconsfield and his country credentials were complete. Both Disraeli and Mary Anne loved Hughenden and, driven by her energy, they re-modelled Benjamin the house and Disraeli grounds. “I have a passion for books and trees,” he wrote. “I like to look at them. When I come down to Hughenden I pass the first week in sauntering about my park and examining all the trees, then I saunter in the library, and survey the books.” Now owned by the National Trust, every corner of Hughenden reflects some aspect of Disraeli’s life here. On this terrace he would walk amongst his peacocks and lay out Mary Anne’s pearls to warm in the morning sun. The dining room has the chair designed for his hoped-for victory in the Wycombe election. The stairs are hung with portraits of friends and allies from his “Gallery of Affection”. The Library is where his coffin lay, decked with primroses accompanied by a hand-written note from Queen Victoria. Disraeli is buried in the churchyard near the gates of Hughenden Manor. This is his good-humoured take on how two strong-minded feisty characters meet, clash and finally resolve into a loving relationship. The sub-plot involves passionate rival suitors, crafty servants who impersonate their masters and confusion all round. So when a PR guru becomes a member, the women are glad of new blood - initially. The milk of WI kindness begins to sour when she re-brands them the Bunnington Bunnies. They’re hopping. Lavender

If there is one family of plants that really do epitomise the English summer garden it is Lavender. An evergreen, easy to grow highly aromatic plant that encourages butterflies and bees, Lavender really does tick all the boxes. A reliable winner in either containers or the soil, the key to success is to provide a well-drained, gritty, free-draining base when planting. If your soil is a tad heavy, add some horticultural grit prior to planting - if you are using a container go for a soil based John Innes Number 3 compost. The two most popular varieties are Hidcote and Munstead. Both are compact reliable cultivars that are particularly successful when used as hedging plants, and grow to around 60cm high. Another traditional variety is Stoechas. This is a French Lavender, an early blooming choice that will fill your garden with a rich scent. One of my favourites is Papillon, with its fine strongly aromatic grey/green leaves, the dark purple flowers have long bracts at the top of the flower heads. Planted in a group, this variety really does look outstanding. www.chilterndirectories.co.uk

Other reliable choices are Dutch, Vera,Sawyers, Lady and Tiara. The varieties above are fully hardy and will comfortably cope with a Princes Risborough winter, even the snow and frost of a severe winter. There are however, a number of Lavenders that are half hardy at best. These tend to be particularly showy and scented. But, to get the best of such selections as Pinnata, Sky and Christiana, it is advised to grow them in containers. They are more than happy outside from May to October, but will need bringing in to a frost free environment to survive the winter . Lavender really does need good regular pruning to get the best from the plant. A lot of gardeners will happily plant their varieties out and see them flower away during the

first season, then leave them to their own devices. This is a mistake, as without pruning Lavender will become very woody and lose all its energy. The obvious solution to this problem is to cut the plant hard back to encourage new growth - but this is wrong. Lavender will not come again from this kind of treatment. The answer is to prune a little and often. Let the plant flower in midsummer, then once the flowers fade, trim the plant back leaving neat compact foliage. Once the worst of the winter weather has gone, around April time, give Lavender another trim. If you do this, your plants will continue to give you flowers and fragrance for years to come. Lacey Green Windmill In 2015 the windmill will be open on Sundays and Bank Holiday Mondays until Sunday 27th September from 2pm to 5pm. Admission is £2 per adult and £1 per child (aged 5 – 15). The windmill is the oldest smock mill in the country, with wooden machinery dating from the mid 17th century, and has been restored by members of the Chiltern Society. Please park in Pink Road and walk up the path on the right hand side of ‘The Whip’ pub.
