Editors’ Letter Welcome to the September / October issue of Chiltern View Thame area magazine. There is an exciting month ahead on the Thame calendar and we are delighted to help by promoting both the Thame Show on the 17th Sept ( page 8) and the always, very delicious, Thame Food Festival on the 26th Sept ( page 14). We were inspired, by the many photos sent across, to use this great shot of a cupcake. We aren’t ashamed to say that we do enjoy a cake or two in the office, to help us work of course, and there will be a great many to buy and sample at the Festival, along with all sorts of other mouth-watering food and drink. We have a new travel article to help you make the right choice when choosing your next holiday (page 18), a new crossword competition which we are eagerly awaiting entries for, as we do feel it’s quite tricky (those cryptic crossword specialists should have no problem!) and as always, the Thame Players competition which really is worth entering with a prize for tickets to any of their shows this year. Another date for your diary would be Kop Hill Climb in Princes Risborough on Sept 19th and 20th (pages 34 & 35) which always proves to be a very exciting and enjoyable weekend so well worth a visit. Thame Food Festival
A celebration of local food 26th September 2015 Thame will once again be given over to its annual celebration of local food when the Thame Food Festival returns, bringing a fantastic free foodie day out for all the family. Cooking in the AGA cookery theatre will be Raymond Blanc OBE, who makes the short journey every year from Belmond Le Manoir aux Quat’Saisons to delight visitors with his passion for cooking with fresh, seasonal produce. He is joined by Breton baker Richard Bertinet, sharing the secrets of his sell-out bread making classes in another cookery theatre highlight, then signing copies of his many baking volumes in the pop-up book shop. Famous People of the Chilterns: Roald Dahl
The famous writer Roald Dahl, creator of wonderful tales for children and adults, lived in Great Missenden for 30 years. His life was every bit as eventful as his stories. Born in Wales, to Norwegian parents, his father died when he was three and it was his mother who first fired his imagination, with tales of Norwegian trolls. At 18 he joined an expedition to Newfoundland, then went to work for Shell in Africa. When war broke out he signed up for the RAF, serving in Libya, Greece and Syria. He rose to the rank of Wing Commander in a career in which he crashed, was wounded and shot down. Dahl was then posted to British Intelligence in Washington where, it is said, his success as a ladies’ man outshone James Bond. Fittingly, Dahl wrote the script of the 1970 Bond movie You Only Live Twice and also scripted the film of Ian Fleming’s Chitty Chitty Bang Bang – for which the windmill scenes were filmed in the Chilterns at Turville, near Hambleden. Roald Dahl’s writing career began in earnest when he met C S Forester, of Captain Hornblower fame, who was to write up Dahl’s war experiences for Washington’s Saturday Evening Post. On receipt of Dahl’s notes about the war, Forester replied: “Did you know you were a writer? I haven’t changed a word.” Dahl began writing for children when he had a family of his own. In 1960 he settled at Gipsy House in Great Missenden. Sitting in his garden hut, in a battered armchair with a board across his knees, he wrote the Angling Spring Wood

stories that made him, at one time, the best-selling children’s author in the world. Roald Dahl Roald Dahl died Photo by: Carl of a rare blood van Vechten disease in 1990, age 74, and was buried in the cemetery of Great Missenden parish church. Some years later, the Roald Dahl Museum and Story Centre was established in Great Missenden’s village high street to inspire 6 – 12 year olds with a love of writing and to tell the story of Dahl’s life and work. There are self-guided trails from the Museum to see some of the features around Great Missenden which were included in Dahl’s stories. The library is the one frequented by Matilda while her mother played bingo in Aylesbury. Outside the village is Angling Spring Wood where Dahl took many walks and which was the inspiration for Fantastic Mr Fox. Recipe Lemon Crumble Cheesecake Bars Tangy and creamy with a golden buttery crumble topping, these cheesecake bars make a delicious sweet treat. For a smoother cheesecake filling, use full-fat soft cheese instead of the ricotta. Ingredients:

The Base • 250g plain flour • 2 tsp baking powder • 140g butter, chilled and diced • 125g caster sugar •1 medium egg, beaten
4. To make the filling, beat the ricotta cheese, sugar and lemon juice and zest in a bowl until creamy then gradually beat in the eggs. Fold in the soured cream and cornflour and spread the mixture over the warm base.
The Filling • 750g ricotta cheese • 225g caster sugar • Zest and juice of 1 lemon • 3 medium eggs, beaten • 100ml soured cream • 1 tbsp cornflour • Fresh mint sprigs, to decorate Makes 12 slices Ready in 1½ hours, plus chilling 1. Preheat the oven to 180C/Fan 160C/Gas Mark 4. Grease an 18cm x 28cm tray-bake tin and line the base with baking paper.
5. Sprinkle the reserved fine crumble mixture over the top in an even layer. Bake in the oven for 30-35 minutes, or until set and pale golden. Leave in the tin to cool completely then chill for 2-3 hours. Slice into 12 bars and serve decorated with fresh mint sprigs.
Tip For an extra fruity flavour, scatter some fresh blueberries or raspberries over the cheesecake mixture before sprinkling with the crumble mixture.
2. To make the base, sift together the flour and baking powder into a large bowl. Rub in the butter until the mixture resembles fine breadcrumbs then stir in the sugar. Reserve a third of the mixture and chill in the fridge. Stir the beaten egg into the rest of the mixture to make a crumbly dough. Spread into the base of the prepared tin and press down firmly in an even layer. 3. Bake the cheesecake base for 15-20 minutes, or until pale golden. Remove from the oven and PAGE 22

Would you like to spend a day or two in the rolling Chiltern Hills amongst hundreds of outstanding vintage, classic and modern vehicles and motorcycles? You’ve seen them on the BBC now experience it in real life. Kop Hill is one of the oldest Hill Climb venues in England. The first recorded races were in 1910. It became a major event on the motorsports car and motorcycle calendar and many famous drivers and riders of the time, including Malcolm Campbell, Raymond Mays, Henry Seagrave and Count Zborowski raced up the hill. The last event was in 1925, when as a result of an accident to a spectator, the RAC banned all motorsport on public roads. Today Kop Hill is a public road, and is closed to traffic during the event. The objective of the Kop Hill Climb revival is to raise money for local charities. All the organising team and helpers are volunteers, and the event is managed as a part of the Heart of Bucks Community Foundation. Over £240,000 has been raised since the revival started in 2009.
