Editors’ Letter Welcome to the 100th issue of Chiltern View Villages! We are so proud to have reached this milestone at the beginning of 2017 and know from the wonderful feedback that many of you have been reading and using our magazine for all of those issues (over 11 years). We have printed and delivered hundreds of thousands of magazines and we would like to thank all our loyal advertisers and our amazing delivery teams for making this possible. Our deliverers are local people, of all ages, who pop 8000 Chiltern View Villages magazines through doors every 2 months, come rain or shine. As most of you know we decided several years ago not to send out Christmas Cards to our lovely advertisers but instead to use that money to support a local charity. This year our donation will be going to The Carers Support Group , based in Stokenchurch. You can find more information about this wonderful group in the Community section of this magazine. What’s cooking in winter? Winter is a time for hearty, warming, stews and casseroles. One of the best is a French Classic, Beef Bourguignon. Here at What’s Cooking we use braising steak, smoked streaky bacon and good red wine. Cut the beef into quite large pieces (5cm x 3cm approx.), so that they stand up to the long slow cook.

Beef Bourguignon Feeds 4-6 people Ingredients: 1kg Braising steak 1 x Spanish onion, peeled and diced 5-6 slices smoked streaky bacon, cut into pieces 1cm wide Half a bottle red wine (preferably from Burgundy) 250ml beef stock 2 x cloves garlic, crushed A few sprigs of thyme 2 x bay leaves 40gr tomato paste 12 x peeled shallots 18 x small button mushrooms 1 x tablespoon cornflour Salt & Pepper

Method: In a large saucepan add a little rapeseed oil and gently fry the onions until soft. Meanwhile in a frying pan fry the pieces of beef

over a high heat until nicely browned. Add the beef to the onions and then de-glaze the frying pan with the red wine, using a wooden spatula to scrape up any residue from the beef. Add the wine to the beef & onions and then add the stock, thyme, bay leaves, garlic and tomato paste. Add water to just cover the beef and bring to the boil. Reduce the heat and simmer for about 2 hours or until the beef is very

tender. In a frying pan, fry the bacon in a little oil until browned and add to the stew. In the same pan add the shallots and lightly brown adding them to the stew together with the button mushrooms. Cook for about 15 minutes. Remove the thyme sprigs and bay leaves. Season with salt and pepper, then slake the cornflour with a little cold water and use this to thicken the sauce to your liking.

The Rosie Project by Graeme Simsion There have been several novels published in recent years which feature an autistic character; The Rosie Project is one of them. Don is a scientist working at a university in Australia. In his late 30s he is single and largely contented. His day is meticulously mapped out, and routine is a part of everything he does. He is never early (a waste of precious time) or late (rude and puts everything out of time), and can’t abide small talk. He also has lobster every Tuesday. As the novel opens he is lecturing on Aspergers at a conference but it is not a lecture from a personal perspective. Don is undiagnosed yet many friends and parents of those on the spectrum will identify his traits. A chance conversation with the conference organiser leads him to consider if he can apply scientific methodology to the search for a suitable partner, and The Wife Project is born. Readers will warm to Don, and his naïve approach to relationships and life in general, and anyone who is currently negotiating the dating minefield might wonder if it would all be easier with the aid of his questionnaire? North Child by Edith Pattou This Young Adult novel is published by Usborne Books. Based on the Norwegian fairy tale ‘East of the Sun and West of the 16

Moon’ this sweeping fantasy story is set in the snow-covered lands of Scandinavia. Legend has it that children born facing north are destined to travel far from home and die, crushed under ice and snow. When Eugenia’s eighth and youngest child is born her belief in superstition leads her to fear for her daughter’s future. She lies about the circumstances of Rose’s birth but it would seem that fate cannot be deceived by a lie. As Rose grows up she feels out of place in the family and longs to travel, with a desire for adventure. Her unease, combined with a wanderlust means that when a white bear appears and offers her family a way out of poverty and ill-health if she will come away with him to a land far away in the north, she readily accepts. Here she meets a mysterious stranger in a castle hidden in a mountain. Who is he and why does he only appear at night? Faced with challenges she discovers her purpose in life in a tale of love, betrayal, and adventure. Ménière’s Disease A condition of the Inner Ear and Vestibular System

Ménière’s disease is named after a French Physician Prosper Ménière who in 1800’s worked at a deaf/mute institute in France and studied the condition, that they finally put his name to. Ménière’s is a condition of the inner ear affecting balance and hearing. It is thought to be caused by unusually large amounts of a fluid called endolymph creating a build up of pressure in the inner ear. This pressure can cause the inner ear Treatments control symptoms rather than curing the condition. Having Ménière’s can affect your mental health and have a impact on to send abnormal messages to the brain resulting in dizziness, vomiting your whole family. The balance aspect of the condition can prevent you from driving and involve days when you cannot leave your bed. and dulled hearing. It is often described by sufferers as a feeling of ‘fullness in the ear’, and can lead on to dramatic unpredictable, devastating attacks of severe vertigo, fluctuating hearing loss, nausea, vomiting and dizziness. Longer term effects of the condition can include permanent hearing loss and tinnitus and on-going balance problems.

Exact causes of the condition are unknown but there are potential links to circulation problems, viral infections, allergies, the immune system, migraines or genetic factors.

How to cope day-to-day: Get up slowly giving senses time to adjust to being upright. Take time out. Regular exercise including yoga and pilates to maintain flexibility and strength which can help balance and aid relaxation. Wearing sunglasses can relieve eye strain. Carry medication on you at all times. Listen to relaxation tapes at night. Use night lights to avoid harsh electric light. Use hearing aids that have a remote control and different programmes to help cope with fluctuating hearing loss. Look after your mental health - talk to people, you are not on your own.

Over our 30 years of practice we meet many people living with Ménière’s disease. We have helped them practically with hearing technology that allows them to adjust the levels to suit different stages of the condition. On a less practical level we feel some of the best help we can offer is social and mental support. We have been working together with Amersham Tinnitus & Ménière’s society to provide an outlet for people to meet and share experiences in a safe,guided place. West Wycombe and Bradenham Walks

Walk lengths: circular routes of 3, 4.5 and 7 miles Starting point: Bradenham, Saunderton or West Wycombe Enjoy the beauty of the Bradenham Valley, a spectacular gateway to the Chiltern Hills, on these circular walks. The routes pass through hilltop beechwoods, rolling farmland, historic commons and some picturesque local villages including Bradenham and West Wycombe. If you are feeling fit you can add on some extra miles by including Downley Common and Hughenden Manor en route! There are plenty of quirky and historic features to discover as you stroll along. West Wycombe is full of history – from the imposing Dashwood Mausoleum and St Lawrence’s Church on top of the hill to the classically-landscaped grounds of West Wycombe Park and the spooky Hellfire Caves offering infamous tales of 18th century aristocratic partying. The attractive Manor in Bradenham was occupied by Benjamin Disraeli, Queen Victoria’s favourite prime minister, before he moved to nearby Hughenden. Above Bradenham you can walk up through classic Chilterns

West Wycombe Hill in autumn beechwoods, planted in past centuries for the local furniture industry. When you emerge from the woods there are great views across the Bradenham Valley. If you are taking the detour to Downley you’ll walk across Downley Common, which originally provided grazing land for the villagers of West Wycombe. Ponds in the local woods are probably over 300 years old and were dug to provide water for cattle. If you fancy a stop for refreshment there are pubs in West Wycombe, Bradenham, Saunderton and Downley. You’ll need stout footwear as some of the paths can be muddy. Some parts of the walks have steep ascents and descents and stiles, but other sections are more level and stile-free. The West Wycombe and Bradenham Walks are part of the Chilterns Country series of walking routes produced by the Chilterns Conservation Board. You can download a free leaflet for it which has a route map and detailed route directions, plus lots of other useful information. Dog of the Month Hello, my name is Mungo, I’m about four years old and am a Staffordshire Terrier cross. I am an extremely affectionate and loving boy. I enjoy getting a good run about during the day and although I’m stubborn at first, once you get me going on a walk you couldn’t have wished for a better walking companion. I love to hold onto my favourite human’s shoulders and give them a good ear lick. No need to clean them yourself, I will do it for you! I also love good belly rubs and observing the day go by from the top of my crate on my cosy bed. I don’t like to see my humans leave my kennel without me. I have been here for 4 months now and would really love a home with an active family who are patient enough to encourage me on my walks. I keep my kennel very neat and tidy and

my carers have given me a cosy duvet to wrap up in at night when it’s colder. I love humans but unfortunately I don’t get on particularly well with cats or other dogs so I wouldn’t be able to share my new home with them. I can however live with children from 7 years and up. Crossroads Veterinary Centre Happy New Year! With 2017 just beginning it is time to start thinking about your pets’ annual health check. Just like a car MOT, regular health checks can help pick up developing problems in your pets and preventative action can sometimes divert problems all together. Your vet will perform a ‘head to tail’ exam of your pet to fully assess their well-being. For young, healthy pets we would recommend a check at least once a year; but ‘geriatric’ animals (cats and dogs over 8, rabbits over 5) benefit from more regular checks every six months as they are prone to many age related diseases. Did you know, dental disease exists in 80% of dogs and cats over the age of 4? This starts as just mild staining of the teeth and if tooth brushing is started in time then often that is as bad as it gets. If left unattended it can lead to tartar build up, painful bleeding gums, and eventually tooth loss. Your vet will listen carefully to their chest and have a

thorough feel all over the body. Sometimes an unusual heart sound might be picked up with the stethoscope which could indicated developing heart disease. Changes in your pet’s gums can indicate developing liver disease long before your pet shows symptoms at home, and assessing your animal’s overall hydration status can give clues as to the health of their kidneys. Often small masses are discovered - a quick needle sample taken in the consulting room can tell us whether the mass is benign or possible cancerous. With all disease, the sooner it is picked up the better the outcome. It’s not just dogs and cats that benefit from health checks, small ‘prey’ animals such as rabbits, guinea pigs and degu are masters of disguise when it comes to hiding signs of illness, so a health check could be vital in catching diseases in their early stages. Chinese New Year 2017Year of the Rooster Chinese New Year falls on Saturday 28 January. In China many people will take a whole week off from work to mark the celebration. It is known as the Spring Festival. On New Year’s Eve, Reunion Dinner is eaten. Many Chinese believe this is the most important meal of the year. It is usually shared by several generations and consists of fish, dumplings, spring rolls, glutinous rice cakes and sweet rice balls. To mark New Year, red lanterns are hung in the street, red couplets are pasted on doors and images of prosperity displayed. Fireworks are lit and it’s believed that the person who launches the first firework of the New Year will have good luck. Lion and Dragon Dances take place and these are intended to scare away evil, and attract health, wealth and wisdom. Many New Year activities have links with Chinese legends. New Year is called Guo Nian which means ‘celebrate a New Year’ or ‘overcome Nian’. Nian was an ancient sea living monster who came onto land on New Year’s Eve to eat people and livestock. One year, an old man with white hair and a ruddy complexion managed to scare away the monster by pasting red papers on to doors, burning bamboo which made a loud cracking sound, lighting candles in the houses and wearing red clothes.

Another monster called Sui was said to terrify children whilst they slept. Parents would stay up all night watching and lighting candles to try and keep their children safe. One official’s family gave their child eight gold coins to play with. The child wrapped the coins in red paper and then played at unwrapping them and wrapping them back up until he got so tired he fell asleep. The parents put the coins under the child’s pillow and legend has it that when Sui came and tried to touch the child, the eight coins omitted such a strong light that it scared the demon away. This is the basis for why elders and those who are married give children and young unmarried people red envelopes with coins in them at New Year. The red envelope is called Yasui Qian which means suppressing Sui money and the purpose is to scare away the monster and bring good luck. According to Chinese astrology, each year is associated with an animal symbol. There is a 12 year cycle and 2017 is the Year of the Rooster. The China Highlights website says that those born in the Year of the Rooster are observant, hardworking, confident and courageous. They are best matched with those born in the Year of the Ox or Snake. By Susan Brookes-Morris

With Christmas and the New Year now a memory, the days are beginning to lengthen and slowly but surely, Spring approaches. The garden, at the moment, may be out of bounds due to the rain or frost, so this is time for planning and preparing. If the weather is against you, there’s nothing to stop you getting your greenhouse ready for the forthcoming gardening season. Make a nice cup of tea, pop the radio on and get to grips with your potting bench, hand tools and pots. Give everything a good clean with some diluted Jeyes fluid, making sure all your equipment and glass are spotlessly clean will prevent any nasty diseases taking a hold later in the year. Empty out that seed box and take a look at your seed packets. It’s not always necessary to buy new seed every year as most packs will be fresh enough to sew for at least a couple of seasons but there is a limit. I wouldn’t be at all surprised if you found seeds dating back many years. Whilst it is thrifty to use your old seed, I’ve found that it can be a mistake. You can waste compost and more importantly

time as you will not get any germination and have to start the whole process again. The early new year is just the time to plan any planting schemes you have in mind for this year. Draw up a plan of your garden and do some research on what plants you intend to use. Spend time thinking about what you want in your garden, the height, hardiness, soil suitability, evergreen or deciduous, possible fragrance etc. Planning your new bed is exciting, and it can save you a great deal of money. You may well visit a garden centre and be tempted by an azalea in flower or a rhododendron in bud, but planting them in your garden around here would be a big mistake. These plants, and some others, are lime haters - they need an acid soil to flourish. Our gardens have a high PH, meaning it is alkaline, so the aforementioned

plants would struggle at the very least, or more likely die. Don’t worry, there are a huge number of plants that will thrive in our soil - take a look online, or if you’re still in doubt drop in and one of us will gladly advise you. One of the first tasks of the year is to think about Seed Potatoes. We start stocking them at the end of January, but it is far too early to plant them out. There is a vast choice of varieties, so again, do your research. Some are ideal for mashing, some for roasting and so on. If space is limited and you don’t have a spare bed, you can easily grow Seed Potatoes in a large container. The benefit of growing them like this is they are easy to harvest, and will be ready to eat earlier than those planted in the garden. Local Carers Support and Information Group The Group meets on the last Wednesday of the month at 1.30pm at Stokenchurch Medical Centre. If you are caring for someone who can’t manage without you, this is a chance to meet with other people in a similar position. The Group is supported by Carers Bucks and a member comes to meetings whenever possible. Speakers on relevant topics are invited about 8 times a year. People often do not recognise themselves as Carers, if you know anyone who might be interested, do please tell them about the Group.
