Editors’ Letter Welcome to the November / December issue of Chiltern View (Villages). As I write this we are on the last leg of our boating journey through England and over the past few days there has been a truly Autumn feel in the air. In boating terms this translates as ‘a little chilly in the morning and amazing misty scenes if you are up to greet the dawn’, so we have lit the stove and are making sure that we cover enough miles to sufficiently charge our batteries during the day. Boating sharpens the awareness of consumption of all kinds, but particularly electricity! We have a bank of batteries but these must be charged so that we have sufficient power for our needs. This means that we become vigilant about turning lights and appliances off when we do not need them and I am only allowed to use my little washing machine whilst moving through the beautiful countryside. No need for a Smart Meter on here – we would simply be plunged into darkness! In many ways we will be pleased to be home again, particularly to see family and friends, but I hope we will carry a little of what we have learnt this summer back into our home life. Wishing each and every one of you a very Happy Christmas and a healthy 2017. Until the next time…

Christmas and the festive season is just around the corner and what better way to get into the festive mood than a trip to a Christmas Market or visiting Santa in Lapland. A vast array of European cities offer a huge expanse of Christmas stalls in market squares selling their wares – whether that be local dining specialities like stollen cake with hot gluhwein, bratwurst, waffles and wine or the fantastic array of local hand-made gifts from local craftsmen. In Cologne, the market is open from 21 November until 23 December – the magic of Christmas will be felt throughout the festively decorated city. The larger Christmas Markets are held in downtown Cologne their booths near the cathedral are arranged around a huge Christmas tree, next to which is a stage for a diverse programme of live music performances.

Stokenchurch Dog Rescue Dog of the Month Hello, my name is Bale and I am an 11 month old Husky mix. I am a fun character with a mind of my own. I’ve settled into life at SDR very quickly and I already know the routine – especially when it comes to dinner time! I’m a young boy who has had no training or socialisation so I am looking for experienced owners (preferably owners that have experience with dogs like me - Huskies) that would be willing to take me to training classes. I have met several dogs whilst being here but I don’t know how to say hello! I jump all over the place and get myself quite worked up; however, I know that after a little time and patience, I would love to be walking side-byside with another dog in a very calm manner. If my new owners put in the time and effort to help improve my behaviour around other

dogs, one day I could potentially share a home with a canine pal. I am a lovely boy with a big personality and the staff at SDR say that they are confident that I would make a great, affectionate addition to the right family. Ouch! What to do when you sustain an injury.

What can you do?

Sprains & strains to muscles & joints happen to all of us. Prompt action can help your body to heal faster & may prevent further injury or prolonged pain. Strained or ‘pulled’ muscles often happen when we over exert muscles, train without properly warming up, or try to go beyond a joint’s natural flexibility. Sometimes we feel the pain straight away, however some injuries might not cause pain until later on.

Remember RICE (relative rest, ice, compression & elevation). Relative rest: The first thing to do if you feel pain is to reduce the offending activity. It can be normal to feel a little sore after exercise for a day or two, but if it is more than this, pushing through the pain is rarely beneficial. However, movement stimulates the healing process so stay as mobile as you comfortably can. This is relevant for back pain as gentle exercise, such as walking, can help. Ice: Cooling the area using an ice pack can help reduce swelling & pain. Compression: Gently applying a compression dressing may

help to temporarily support the injured joint & reduce swelling. Elevation: If the injury is in the lower limb (knee or ankle), elevating the area assists draining fluids that might accumulate around the area, causing swelling. If the pain or swelling fails to improve within a week, considering treatment may be beneficial to; assess the injury, provide some manual therapy, taping, dry needling & rehabilitation exercises, to help you get better faster. Fortune’s Rocks by Anita Shreve It is the summer of the final year of the nineteenth century in the New Hampshire town of Fortune’s Rocks on the east coast of America. Women are expected to behave in a certain way and young Olympia Biddeford is no different. An impressionable 15 year old she is about to discover what it means to grow up. She meets John Haskall, a physician and friend of her father. Despite the fact that he is married and 26 years her senior, Olympia falls madly in love with him. Finding herself pregnant Olympia must carve out a new place in society as she finds herself ostracised by those around her. Late Victorian society does not take kindly to her behaviour and there are elements of a feminist struggle as she forges a new life. The prose is eloquent and the descriptions of Olympia’s life and environment are spell binding. Shreve went on to write two more novels set in this town, ‘Sea Glass’ and ‘The Pilot’s Wife’: each dealing with unique struggles of women over the course of 30

The three Fossil sisters are growing up in London. They aren’t really sisters, but adopted by ‘Gum’, a paleontolgist. Each one is a treasure he brought home from his travels. And each is very different. When Gum disappears on one of his expeditions money gets tight and the family take in lodgers. One of them, a dancer, spots a talent for dance in Posy, the youngest, and before they know it, all three girls are enrolled in The Children’s Academy of Dance and Stage Training. What ensues is a glimpse into life on the stage in 1930s London. Since it was first published in 1936 generations of children have indeed considered which of the girls they would like to be. Is it Pauline, who discovers a talent for acting? Or Petrova who would much rather be fixing car engines than performing on stage. Or Posy, the budding ballerina? This children’s classic, though a bit dated in its language and style, never fails to entrance readers and no doubt will continue to do so for years to come. Crossroads Veterinary Centre ‘Festive Faux Pas’ With Christmas around the corner you are probably starting to stock up on lots of delicious treats for the family – but bear in mind that many of these will not be safe for your furry family members. Chocolate contains theobromine, which is toxic chocolate, so is therefore more dangerous. If your dog eats any chocolate then call your vet and let them know the weight of your dog and what was eaten so they can recommend the best course of action. Grapes/sultanas/raisins can all cause kidney failure if eaten by dogs, even if only a very tiny amount. So please be extremely careful with mince pies, Christmas cake and Christmas puddings – if your dog consumes any of these then call your vet immediately. Action must ideally be taken within

the hour. As a general rule, it’s best to avoid giving your pet ‘human food’ as it is often hard to predict the effect it will have on them. The onions and garlic in gravy for instance can cause anaemia. However, if you want to give your pet a bit of your festive feast then a slither of plain turkey meat will go down nicely! Walk lengths: circular routes of 4.5, 5.5 and 9.5 miles Starting point: garden centre in Studley Green, near Stokenchurch These circular walks from Studley Green are in the heart of red kite country so you should get plenty of views of these stunning birds as you walk through the beautiful Chilterns countryside. There is a choice of walk lengths, depending on how far you want to go and how much time you have. The routes follow waymarked footpaths and bridleways through rolling farmland, ancient beechwoods and local villages like Piddington and Radnage. There are plenty of interesting places to see on your walk. Nestled in the lovely, tranquil Radnage Valley is the medieval church of St Mary the Virgin. Inside you can admire some original wall paintings, which were covered with whitewash during the Reformation but were revealed centuries later during restoration work in the 20th century. Near the church are the vines of Daws Hill Vineyard, one of several vineyards which thrive on the chalky Chilterns soil and produce some tasty sparkling and still wines. Below Studley Green is the crescent shape of ancient Bottom Wood, owned by

the Chiltern Society. Wander through here and enjoy the rich autumn hues in October and November, and carpets of bluebells in the spring. There are several bowl-shaped depressions which are the remains of sawpits, used by foresters of old to cut up tree trunks. Autumn and winter are a great time to watch the red kites soaring overhead, with the low sun lighting up their fiery russet feathers. Kites were re-introduced over 25 years ago, having become extinct in England by the end of the 19th century. They have thrived in the protected countryside of the Chilterns Area of Outstanding Natural Beauty and there are now over 1,000 breeding pairs. The kites’ natural diet is principally carrion, and we encourage people not to put food out for them as this can affect the birds’ health and also causes them to congregate in very large numbers. You’ll need stout footwear as some of the paths can be muddy. The 4.5 mile walk has no stiles, kissing gates or steps and only one steep uphill slope for 50m. The other two routes have some stiles and several steep uphill slopes. The Red Kite Walks are part of the Chilterns Country series of walking routes produced by the Chilterns Conservation Board. You can download a free leaflet for it which has a route map and detailed route directions, plus lots of other useful information.

Mince Pies It’s hard to beat homemade Mince Pies in the run up to Christmas and here at What’s Cooking there is a feeling of excitement and anticipation at the number of these little beauties we have to make each year. As always the devil is in the detail and the first place to start is some excellent homemade sweet pastry. Of course, homemade mincemeat is just as important but the recipe for this is a closely guarded secret. If you want your mince pies to be as good as ours, why not come into What’s Cooking and buy a jar!

Makes 12 Ingredients:

1 x large Jar of mincemeat (about 900gr) 330gr plain flour 100gr icing sugar Grated zest of half a lemon ¼ teaspoon salt 180gr cold unsalted butter 1 free range egg yolk 3 tablespoons cold water Beaten egg to glaze

Method: To make the pastry, put the flour, icing sugar, lemon zest and salt in a bowl and add the butter. Rub it in with your fingers or, more easily use a mixer with the beater attachment. Mix until you get a coarse breadcrumb consistency. Add the egg yolk and water and mix just until the dough comes together. Remove the dough from the bowl and knead for a few

seconds, shaping into a flattish disc. Wrap in clingfilm and chill.

Fruit Trees There’s always a space for a fruit tree in every garden, even the smallest of plots. The key to planting if space is limited is to make sure you get your tree on the right rootstock. Fruit trees are grown on a range of rootstocks in order to control the rate of growth. Apples, for instance vary from M27 (very dwarf - around 2 metres high) right through M9, M26, M116, MM111 up to the biggest, M25 which will grow to in excess of 5 metres. So obviously, if you own a pocket-handkerchief garden, make sure you go for M27. Likewise, Pears, Plums, Cherries etc. are all grown on a variety of rootstocks. Do make sure you do a little research before purchasing. If in doubt, pop in and one of us will gladly talk you through the options. If you are blessed with a bigger plot and already have sufficient apples, why not take a look at some other interesting fruit trees. Hazel and Cobnuts, Mirabelles and Mulberries, Quinces and Medlars - these are all superb options, and will give you a varied and nutritious harvest of fruits and nuts. There is some management involved to keep your fruit trees in tip top condition. As in dealing with all pests and diseases prevention is far better than cure. Spraying with a fungicide as soon as the trees come into leaf prior to blossom time will stop any mildew and scab from taking hold. These fungal diseases only affect apples and pears, and are not very serious diseases, but to keep your fruit looking and tasting tip top they are best addressed. Traditionally, pruning of fruit trees is a job for the winter - not always the case in fact, as summer pruning does have its benefits. Winter pruning is best to re-shape a tree and generally ridding it of old or dead branches etc.

One major point about pruning is that it is far better to prune a little and often rather than taking drastic action every decade or so. A continual renewal of young replacement branches is possible and better for regular fruiting potential each year. Air and light are important, the former to reduce disease and the latter to ripen the fruit for the best flavour and keeping quality. As a rule, Apple & Pear can be pruned anytime and hard, Cherries, Damsons, Gages and Plums - summer only and lightly, Medlars & Quines, anytime and lightly. It’s just around the corner… …Christmas that is. Now we all know someone who buys their prezzies in the January sales, has their cards written and addressed by Easter and their turkey ordered before the first frost. We hate their smugness and lack of proper festive spirit but mainly we hate them because we know that we could never ever be that organised...until now! We’re not suggesting that you start planning Christmas while on your summer holidays but it does pay to be a little bit organised. You’ll arrive at December 25th with far fewer grey hairs and much lower blood pressure if you plan ahead. Clear out food cupboards Be ruthless. Chuck out all the out-of-date items and things you know will never be eaten. Make room for all those festive goodies. Clear out toy cupboards Be ruthless. Involve the kids. Donate outgrown and unplayed-with items to charity. If you are an eBayer, spend an afternoon listing items for sale. Order meat early Farmers’ markets and shops are teeming at this Christmas time. Don’t imagine you’ll get what you want if you leave it until the last minute. Who’s coming to dinner? Are there any vegetarians, vegans or dairy intolerances among your guests. Are you planning a party? List all the food, alcohol and gift items you think you will need and add to it as you go along. Study your list Are there items which can be bought online? Do any of your local shops offer home delivery? Look into local veg-box schemes. Divide the remaining list into manageable chunks and purchase a few things each week. For foodstuffs, begin with items

which can be frozen and end with the fresh items which need to be purchased just a day or two before. Puds and cakes Make these early to give them time to mature. Stir up Sunday is the last Sunday before advent and this year is on November 30th. This is traditionally the time when Christmas puddings are made. I make my Christmas cake during the first week of December which gives me time to feed it as much brandy as it will hold. Yum! Write the cards It’s bit of a chore but put the carols on, pour a glass of something festive and get into the spirit. You’ll feel really virtuous when they’re done. Tree lights and outdoor lights Test them well in advance so they can be replaced if necessary. Check bed and linen status! Will you need to buy or borrow fold-up beds, or extra bedding for your guests? What about elderly guests? They may be able to lie down on a Z bed but will they ever be able to get up again! By now you should be feeling organised and in control. You may even feel the beginnings of a smug smile twitch at the corners of your mouth. Enjoy it…you earned it. Just be aware that someone somewhere hates you for it!
