Editors’ Letter Welcome to the July/August issue of Village View magazine. This month we have had a lot of changes as we have moved offices and are sadly saying goodbye to Debbie who has been with us for 2 years. Many of you will have spoken to Debbie or had emails from her and she has done a great job managing Village View and Princes Risborough View magazines. We wish her well for the future. We look forward to welcoming Steph to our little team. We are all hoping for a nice long summer and, as we write this, the weather is just perfect . Recipe
Sage and Pancetta Roast Chicken Give classic roast chicken a tasty makeover with a handful of fresh sage and some delicious smoky flavoured Italian bacon called pancetta. Look out for thin rashers of pancetta in the deli section of your supermarket or buy freshly sliced from an Italian deli. Serve with roasted baby new potatoes and lightly steamed vegetables for a wonderful summer Sunday lunch. Serves: 4 Ready in: 2 hours 30 minutes
heat. Finely chop the rest of the sage and add to the pan with the breadcrumbs and seasoning. Leave to cool then stir in the beaten egg. Press the stuffing mixture into a greased 18cm round shallow cake tin.
Ingredients
1.3kg oven-ready chicken (preferably free range) 55g butter, softened Few fresh sage leaves Salt and freshly ground black pepper 1 onion, peeled and finely chopped 85g smoked pancetta slices 115g fresh white breadcrumbs 1 medium egg, beaten Fresh sage leaves, to garnish
3) Uncover the chicken and top with the rest of the pancetta slices. Return to the oven and roast, uncovered, for a further 25-35 minutes until the chicken is golden brown and cooked through – the juices should run clear with no sign of pinkness when the thickest part of the thigh is pierced. Cook the stuffing in the oven at the same time until set and pale golden.
Method:
1) Preheat the oven to 190C, 375F, Gas Mark 5. Place the chicken in a foil-lined roasting tin. Smear half the softened butter over the chicken breast, legs and wings and scatter over the sage leaves. Season lightly with salt and freshly ground black pepper. Cover the chicken loosely with foil and roast in the preheated oven for 1 hour 10 minutes. Uncover and baste the chicken with any juices twice during cooking. 2) Meanwhile, melt the rest of the butter in a frying pan, add the chopped onion and fry gently for 5 minutes. Chop half the pancetta and add to the pan, frying for a further 5 minutes until the onion is softened and golden. Remove from the PAGE 8
4) Remove the chicken from the oven, cover and leave to rest for 10-15 minutes. Cut the stuffing into wedges and serve on a platter with the roast chicken, garnished with the fresh sage leaves.
Tip
To make light gravy to serve with the roast chicken, drain off any excess fat from the roasting tin then heat the pan juices until sizzling. Add a splash of dry white wine or sherry then stir in a little plain flour and 1 tsp wholegrain mustard. Cook for 1 minute then gradually pour in 400ml hot chicken or vegetable stock and slowly bring to the boil, stirring all the time. Simmer for 3-4 minutes until just thickened. Season to taste with freshly ground black pepper.

Maximum Ride: The Angel Experiment - James Patterson Maximum Ride (or ‘Max’ as she prefers to be known) is just like every other teenage girl. Still Me - Christopher Reeve For many growing up with the Superman franchise, the actor Christopher Reeve was the very embodiment of the lost son of Krypton. Reeve was just as at home in the bumbling guise of alter-ego Clark Kent and movie audiences adored the man in the cape. All the more shocking was the news that Reeve had been paralysed during a freak horse-riding accident and would never walk again. The reality had set in: this screen superhero was not a super human. And yet Reeve, a quadriplegic, went on to display a super human lust for life and his own quest to ensure he was Still Me. This is a moving account of Reeve’s life before and after the accident, chronicling his dedication to campaigning for more awareness and research for others with spinal cord injuries. It’s a very moving autobiography from the actor who truly made us believe that a man could fly. All My Friends are Superheroes Andrew Kaufman Tom was always onto a loser when he married the Perfectionist. In fact, all of Tom’s friends are super heroes; which does have a tendency to leave one feeling a little inadequate. It doesn’t help that at his wedding, the Perfectionist was hypnotised by her ex-boyfriend (the aptly-named ‘Hypno’ leading her to believe that Tom is invisible. Now she thinks he’s abandoned her so she’s leaving to try and find perfection in Vancouver and recover from her heartbreak. Little does she know that Tom’s on board the plane with her. It’s a really sweet love story with a superhero slant that means the path of true love won’t run even remotely smooth.

a great day out for all the family Marlow is without doubt one of the loveliest locations on the River Thames. Situated on a broad sweep of the river between Henley and Windsor, this medieval market town sets elegant Georgian buildings against the wonderful woodlands of the Chiltern Hills.

Together they house a tempting array of interesting shops, restaurants, wine bars and pubs which add so much to Marlow’s charm.The Thames made Marlow what it is today, putting it on the map first as a river crossing and then as an inland port. Appropriately, the towns main landmark is still the graceful suspension bridge, which spans the Thames, completed in 1832 to designs by William Tierney Clark who also designed the bridge across the Danube at Budapest.
Swan Upping. Every July Marlow plays host to the 12th Century ceremony of Swan Upping. Six wooden skiffs led by the crested flag of the Queens’s Swan Marker, process along the Thames from Sunbury Lock to Abingdon as liveried officers mark the swans as the property of the Queen or the ancient Vintners and Dyers society, the only bodeies now formally entitled to swan rights on the Thames. The procession stops for refreshment at the Two Brewers in St Peter Street, where Jerome K Jerome, author of Three Men in a Boat’ stayed and the day finishes at the Compleat Angler Hotel (www.royal.gov.uk)
Higginson Park is a riverside delight, with 23 acres of lawns, flowerbeds, fantastic children’s playground, café and riverside walks and views. In season rowing boats and motor boats are available for hire from the pier. Salters Steamers (Tel: 01753 865832) run pleasure trips as well as passenger boats to Henley and Windsor. Marlow Lock and Weir provide a stunning viewpoint over the town and are approached from Mill Road, via the passage beside the Two Brewers in St Peter Street. Riverside Walks can be enjoyed in either direction, giving a variety of wonderful views. The Thames Path national Trail passes through Marlow en-route from the Cotswolds to London. Join it by the river in Higginson Park, heading away from the

Plant of the Month - Abelia Abelias are a medium sized, colourful shrub with white to pink trumpet shaped flowers appearing at the stem ends in groups of 1-8. They like full sun and are pretty hardy, enjoying well drained soil and a little bit of shelter. This is a great option for a smaller garden being evergreen in mild winters and providing a splash of scent and colour during June and October. Home Grown Herbs There’s a really reliable, easy, low-cost and loweffort way to add some zing to your meals; home-grown herbs. Many herbs are simple to raise from seed and if you start sowing now you should be able to have a plentiful supply of fresh, tasty herbs to add to salads, sandwiches, stews and stir-fries for months to come. All you need is a sunny window sill or balcony, or a well-drained, sunny spot in your garden, so why not sow a few pots and brighten up your cooking? First, find some good quality multi-purpose compost, your chosen herb seeds and some pots. Good-quality compost is well worth the little bit extra you need to pay. The style of pot is up to you – you may want to choose a classic Mediterranean feel with terracotta, or a stylish modern look, or perhaps a good-looking plastic planter for longevity and light-weight characteristics that make it better for a balcony and easier to move about too. Whatever style you choose, bear in mind that plenty of drainage is essential, and that the smaller herbs do not need a deep root run, so there is no need for a very tall planter or pot. It is best to grow each type of herb in its own individual pot, so buy a selection of pots with a minimum diameter of 8cm.
The seeds generally germinate quite quickly and often within just a week or two you’ll have lots of tiny herbs like this coriander. For shorter-lived herbs, such as coriander and basil its worth sowing in succession. All this means is that you need to use a small pot full of seed every few weeks, rather than sowing the whole packet in one go. This will give you a near constant supply of herbs and if you look at the number of seeds per packet you will soon see what amazing value they are.
Once you have your pot to hand, put a broken flower pot or other drainage material in the base and then fill with good quality compost to within 1cm of the rim of the pot and firm it down, not too aggressively, but enough to ensure that there’s no subsidence later on. With large seeds such as coriander, position the seeds evenly on the compost surface. Sprinkle smaller seed thinly. The seeds need to be covered with compost so use your finger or a dibber (an old ballpoint pen or pencil will do) to gently press the seed in to the very surface of the compost and then drizzle more compost on top to the depth stated on the packet of seed. Water the compost thoroughly either carefully from above using a watering can with rose attached, or by standing the pot PAGE 52
in a saucer of water for a few minutes until the compost surface is just moist. The advantage of watering from below is that you are less likely to disturb the seeds.
Once the herbs are up and growing strongly you can start to harvest them. Use sharp scissors or a sharp knife to cut off what you need; this way you’ll minimise damage to the growing plants and so help to keep them cropping for longer. As long as you keep the pots adequately watered, ideally by watering from the base, they should last for several weeks or months but make sure that the compost is not too wet or else your herb pots won’t last long. These plants are mostly of Mediterranean origin and hate wet feet. If at any stage you find that you’re not eating them fast enough and have an excess of herby foliage, store some for later use. Ice cubes give you a really great fresh-herb taste off-season. Just half fill the sections in an ice-cube tray with water. Add chopped fresh herbs to each section and top up with water. Label the tray as chopped herbs in ice can be difficult to identify. The attractive herb-filled ice cubes can then simply be popped whole in to stews and casseroles as and when you need them.

Radnage C of E School We were delighted to have the Wycombe Music Centre perform with their wood-wind instruments, and the children had great fun with the Dance Workshop. They have also been pond-dipping, looking at pond skaters and water boatmen, all set up in our grounds, and have been preparing for the end of term Sports Day...a bit of competitive fun! The Craft Project for the Radnage Summer Fete was great fun, and we had another very successful fete. We will return in September, as the newly formed Radnage Primary School, and hope that

Lane End Conservation Group We meet on the first Saturday of each month at 10am in the doctors’ surgery car park and work for a couple of hours on a variety of tasks, normally finishing in time for refreshment at the Twinning coffee morning in the village hall. Stokenchurch Medical Centre www.stokenchurchmedicalcentre.co.uk On line services We will be introducing new services over the coming months, the first of which will be a facility to enable appointments and requests for prescriptions to be made via the internet. Please look out for details which will enable you to register for these new facilities. Mobile phones We will be offering a service to contact patients via their mobile phone text service. Please make sure we have an up to date mobile number for you. Staff Training The practice will be shut on the afternoon of Wed 17th July for staff training. Over Sixties lunches Over sixties in Stokenchurch know that we still have monthly lunches at the Fleur de Lis. These are held on the third Tuesday of the month with two courses and tea or coffee for £7. To join us please call Ann Sherman to get the menu and book a place. 01494482344 Stokenchurch Community Transport Stokenchurch Community Transport provides a Door to Door service for the elderly and disabled residents and other community groups within the parish. We urgently need relief volunteers to help with escorting the clients who use the bus. This is to help cover periods of absence by the regular escorts. Training will be given to all our volunteers. Chinnor and Princes Risborough Railway The summer period sees the Railway continue to operate its Heritage Train Rides each weekend, with Cream Tea availability on July 14th and 28th, and August 11th. Special promotions during that period are July 14th - Senior Citizens Day, with half-price travel for our Seniors, and August 4th, which is the Annual Gala Day, with all available locos operating, a special timetable, and a free vintage bus service between Princes Risborough Station and Chinnor Station. August 25th and 26th (Bank Holiday) are childrens’ Teddy Bear Days, when children carrying a teddy bear travel free with a fare-paying adult. Evening Events in this period include two of our popular Quiz Nights on July 20th and August 31st, and Murder Mystery Evenings on July 6th and August 17th. Lacey Green Windmill The windmill will be open until Sunday 29th September on Sundays and Bank Holiday Mondays from 2pm to 5pm. Admission is £2 per adult, and £1 per child (aged 5 -15). Please park in Pink Road and walk up the path on the right hand side of The Whip pub. Alternatively Arriva Bus 300 runs hourly on Sundays between High Wycombe and Aylesbury, and stops by the path to the windmill.
