T
he nation’s favourite pie brand1 Pukka Pies, today announces the roll out of an impactful new brand mark and completely new point of sale for fish and chip shops and the wider eating out market. The move aims to bring more consumers into fish and chip shops and broaden the appeal of PUKKA amongst a diverse audience to encourage more people to eat pies more often. Whilst remaining true to PUKKA’s confident, bold feel and instantly recognisable orange, black and white lozenge, the new brand mark has been modernised with more contemporary brand colours and fonts. Moving from black to charcoal, white to cream and neon orange to a warm, natural orange adds a more modern, more unisex and more ‘foodie’ feel. Further, introducing a crafted pie within the ‘A’ adds a subtle link back to the brand’s heritage and reasserts PUKKA as quality pie makers. The update has been made following extensive research with fish and chip shops, distributors and consumers which showed that the brand refresh was welcomed, had excellent appeal and was a significant step change for the brand. The new look was praised for giving a sense of PUKKA’s good quality products and indicating a modern, up-to-date brand.

CHOICE! Although in positive sales growth at +0.9% the UK fish and chip shop market is performing below the market average of 3.3% 2. There is an opportunity to change the sector in order to grow in line with the market and, as the nation’s favourite fish and chip shop pie brand, PUKKA is best placed to drive this growth. Expansion in the eating out market currently stems from outlets that are capitalising on the trend towards a more premium value offering targeting younger audiences. It is this learning which has influenced PUKKA’s decision to make the brand mark more modern, more unisex, more ‘foodie’ and with stronger quality cues. PUKKA’s Director Tim Storer spoke of the changes, “Ever since my father first started trading as Trevor Storer’s Homemade Pies 50 years ago, fish and chip shops and eating out venues have been – and always will be - the heartland of our business. But, like any competitive company we also need to be responsive and nimble, and not sit still. We hope the new brand proposition for our foodservice partners helps attract a wider consumer base, as we know that there is room to grow the category, and in turn increase sales and profits for our valued customers.” ‘Pies’ has been removed from the new 7

However, after learning that fish and chip shops didn’t want to lose the word ‘pies’ from their shop signage and POS, PUKKA developed a secondary brand mark to be used specifically for signage and POS items. This new range of modernised point of sale includes illuminated signs, pavement signs, A2 posters, wobblers and door signs and is focused on communicating that PUKKA makes you ‘feel good inside’ and has a range of high quality, deliciously tasty pies. The new branding brings PUKKA’s eating out offering in line with its updated Grocery channels, in which the refresh and rollout was tested before being brought to the wider market. It’s all go for Fish and Chip Duo
R
oaming the Berkshire countryside, with their distinctive diamondshaped logo surfing a wave across the side of their van, Chris Harris and Paul Brandon are a world away from the kitchen of the chain restaurant where they met years ago, and where they found a mutual ambition and passion to offer the catering world something new and different. In 2013, they decided to take the plunge. They started a period of intensive research, and soon found a gap in the local market offering top quality mobile fish and chips, providing a core menu of quality products, with a focus on freshness, cleanliness and the personal touch. After some disappointing hours journeying up and down motorways to look at possible vans for their new business, they decided only the best would do and opted for a new van, with bespoke fitting, custom built for purpose. They worked with a local designer to come up with the eye-catching logo, wanting something that would make them stand out from the more traditional. Another important decision was in choosing their suppliers. Again, for Paul and Chris, only the best would do. From the beginning, quality won over costsaving, and all their fish comes from an MSC approved sustainable source. Their customers appreciate their efforts, returning week in, week out, knowing that they will receive a consistent, high-

quality product. This is something Chris and Paul are agreed they will never compromise on. Having built up a following at their regular village pitches, and with the private bookings starting to build, the unimaginable happened. Shortly after making the critical decision to go full time with their new business, they lost their van in a devastating fire. Whilst they admit there were times they both felt like giving up, they fought on. With the support of friends, family and industry colleagues, they covered the events they had booked so as not to let down any customers, they replaced their van with a bigger and better version, and when they were back on the road a few months later, their ever-loyal regulars were right there waiting for them. Since then, there has been no looking back. Their reputation precedes them, and since 2016 they have been servicing three weekly pitches, taking part in regular pop-up street food festivals, and taking on more private and corporate events, an aspect of the business they really enjoy and are keen to move into more in the future. They knew they’d made the right decision when, trialling a new round, they arrived half an hour early and instantly had a queue that lasted 3 ½ hours. They had sold out within two hours and a family member was sent back to base for more supplies. “We’ve never worked so hard” says Paul, “but felt like we must be doing something right!”. so far include serving at the London Fire Brigade 150-year anniversary, parked inside their new museum, surrounded by 1900s fire engines. They were already a year into the new business when Paul learnt he was destined for fish and chips all along. His Dad showed him a photo of his grandparents, stood outside the fish and chip shop they owned in the 60s, something he hadn’t previously been aware of. They even had their own mobile round, serving hundreds of workers from the local factories. Not so very different from the business parks where Paul and Chris serve up their fish and chips today! When asked what sets them apart, they don’t hesitate. Cooking every single meal fresh to order and offering consistently high standards. They keep a fryer for gluten free options at every service, and offer their vegetarian customers

interesting alternatives - think zucchini fries, aioli battered mushrooms and fried halloumi. This next-level service, they say, is what keeps their regulars coming back and the bookings rolling in. If they choose to introduce a new product, they test it rigorously before trying it out with their regulars. Their recent fish wrap went down particularly well. So, what’s next for Go Fish and Chips? A shop perhaps? Franchising their brand? Scaling up production of their ever-popular homemade tartare and aioli sauces (don’t ask for the recipes – they’re top secret!) and selling them by the jar? P1… For P100 Wales’ No1 Shop Uses P100 – here’s why We spoke to Jemma Hennighan from Henninghans and Matthew Bedford from Fishtastic to see why they love P100

1. Jemma How long have you been using P100? We’ve been using P100 for 20+years as it was the correct product for us at that time. 2. Why? It is vegetable oil so suitable for vegetarians. It is easy to use. Price is on par with other oils that are known as the “best” however the price of oil is due to increase over the coming weeks. We have never had problems with it so why change, because it does the job for us. 3. What advice would you give about oil care? Filter regularly- daily Change the oil when needed don’t try and drag it out as this is when the product is affected. Don’t mix dirty oil product (sausage, chicken bites etc) with clean If you can filter between shifts, it’s something we’ve started doing since our refurb and works very effectively for us. 4. Are you planning on staying with P100? For the foreseeable future, yes. We are not here to move around suppliers just to get the best deal, we are here to supply a consistent product to our customers. 5. Are you planning on entering the awards this year? This question is still unanswered for us at Hennighans. This year we are celebrating our 35th so do have some ideas and events under wrap. For now we are going to concentrate 16

As you get through more batches of chips, you will also need to top up more often, so your oil is constantly being refreshed. I’m sure you’ve seen it, but when you have a busy day, you don’t end up with dark unappealing chips, it’s when they can be at their best! Now you might have a weekly routine you keep to – getting fresh oil in on a Wednesday or Thursday so it’s fresher but still tasty for the weekend. But it’s worth doing a bit of research. If you have had a really busy week and weekend, it may be that you could reduce how often you go for a full oil changeover. How about two changes in 3 weeks instead of three? But never forget it’s the quality of your food which brings your customers back, so always be guided by the look and taste of your final fried products.
Hold onto the salt… As you cope with this busy season, make sure over-enthusiasm and speed don’t start damaging your oil. Salt acts as a catalyst making oil break down rapidly, so make sure that when you are busy salting food, or customers are applying it themselves that no salt gets into your pans. Where possible, having closed lids on your fryers will also help to keep out any stray salt from over-enthusiastic sprinkling. Another catalyst which has a really bad reaction with oil is copper. Make sure if you’re having any repairs done or buying any new equipment, it’s vital that you avoid any fittings or utensils made with copper as your oil will break down exceptionally quickly. Eddie Takes the Strain! World’s Strongest Man Opens New Blakeman Production Facility
he ‘2017 Worlds Strongest Man’ Eddie Hall was invited to open the new £1.35 million production facility at Blakeman’s High Carr factory recently. In true ‘Eddie’ style he took the strain as he pulled the first production load from the premises, signalling, yet further investment of Blakeman’s expansion within the cooked product market. The conversion of one cold store unit by McVeigh Projects, taking only 40% of its floor space, creating a manufacturing facility from raw ingredients to cooked product all contained in one auditable area. Blakeman’s have increased their cooked volume by up to 35% (42,000 kg) with less handling of its products whilst still maintaining full traceability. Tote bins of meat are accurately measured by in floor weighing scales, minced mixed using a KG Wetter and transferred to a Handtmann filling system. Sausages are then portioned and transported by an Arnott conveyor directly to the GEA inline frying facility. Fry for the RNLI! Be part of the RNLI’s ‘Fish Supper’ 13th-15th October

NLI Fish Supper is the Royal National Lifeboat Institution’s annual charity event to raise funds to support their life-saving work. Participants sign up to host their own Fish Supper for friends and family and ask for donations towards the meal. This year the campaign is over the weekend of 13 – 15 October, and Chippy Chat is inviting you to get involved. Not everyone is able to host their own ‘Fish Supper’ event at home and others may want to save on the washing up and dine out! This is where your frying skills come in. The event is a fun way to encourage customers into your shop bringing friends and family together to enjoy a great meal provided by you, inspired by the sea - and while raising money for a great cause. It is simple for you to be part of the event with two easy options: A) Become a Fish Supper ambassador and support the campaign by choosing to donate 10% per portion of fish and chips sold between the 13 - 15 October. Cod’s Own Country! British favourite - cod is back on the menu after 10 years of industry effort
O
ver a decade since North Sea cod stocks came close to collapse, fish merchants, suppliers, restaurants, fish and chip shops and their customers can finally buy the popular species with a clear conscience and a recognised certification. Scottish and English cod boats, belonging to the Scottish Fisheries Sustainable Accreditation Group (SFSAG) are now MSC certified. Thanks to the enormous efforts of a coalition of fishing organisations with support from seafood brands and the industry body, Seafish, North Sea cod has passed an independent assessment against the MSC’s strict standard. The news means that – subject to strict traceability requirements – North Sea cod can now be sold through MSC Chain of Custody certified supply chains from MSC fish suppliers to certified restaurants and fish and chip shops bearing the MSC ‘blue tick’ label.
North Sea cod’s long road to recovery The announcement marks a momentous achievement for the industry. Cod stocks in the North Sea peaked at 270,000 tonnes in the 1970s, when North Sea cod was widely sold and enjoyed. However, stocks fell to just 44,000 tonnes in 2006. Since then the industry has worked with the Scottish Government and EU Fisheries Council to agree and implement a ‘Cod Recovery Plan’ that would nurse the stock back to health.

The plan linked the number of days fishing that boats were given to the conservation measures they signed up to. The plan aimed to reduce cod catches by 25 per cent in 2009, followed by subsequent annual reductions of 10 per cent. In response, the Scottish industry closed large spawning areas to fishing and introduced a system of real time closures to protect aggregations while trialling new nets and developing a system of remote electronic monitoring using CCTV cameras on board boats. William Crooks, at Dennis Crooks Fish Merchants commented; “I think it’s a phenomenal accomplishment for North Sea Cod to have achieved MSC certification, especially when you consider just 10 years ago it had been fished to within an inch of its life. Hopefully this will spark fresh interest from MSC certified fish and chip shops who have been using frozen Icelandic and Norwegian cod – the only species available to them with the certified sustainable MSC status. We need to get the message out there to the general public that fresh British cod is now available as MSC certified sustainable – to correct any previously confusing media messages.” Craig Maw, NFFF Director and owner of major award-winning Kingfisher Fish & Chips was delighted at the news and what it might mean for the industry; “What a fantastic achievement for North Sea cod stocks being awarded MSC certification. The turnaround is nothing short of miraculous! It is a testament to the joint efforts of UK fishermen, industry bodies and many others involved who have worked very hard to ensure these stocks return back to sustainable levels.”

eep Blue Fish Co was founded in 2017 by local fisherman Sean Woodcock, who has a serious passion for fish & food, decided to combine the two by creating the goto one stop shop for fresh fish, frozen seafood & of course the best takeaway in town. Having grown up on the East Coast of South Africa, in beautiful Durban, Sean spent every chance he got on the beach, whether it was fishing or surfing, the ocean had his heart. You can almost say it was written in the “sand” that life would take him down this path… His new destiny of Deep Blue Fish Co. Opening up a fish shop that was all about creating a family within the community and wanting to provide only the best quality fish, seafood and service to his customers. So, when a store became available in the heart of Durban North, he knew his dream was slowly becoming a reality. Revamping the old shop into a fish shop haven, Sean and his support team truly did put in the hours to make sure that everything was perfect for the opening. They understand the value of a returning customer and they wanted to make sure they had the perfect recipe for just that. Our fresh fish comes straight off the

boat, literally. We strive for bringing our customers the best and that means making fresh fish available on a daily basis. We stock a variety of frozen seafood as well, which grows our menu selection even further, Argentinian prawns, mussels & clams just to name a few. t’s mission complete for NI chippy boss, Malachy Mallon, owner of the Dolphin in Dungannon, after completing his solo UK charity cycle, which has already raised thousands of pounds for The Fishermen’s Mission. Malachy ended his epic 1500 mile ‘MalOnAMission’ cycle, sponsored by McWhinney Sausages at the UK’s No.1 Chippy, Kingfisher in Plymouth after cycling for 18 days across Northern Ireland, Scotland, England and Wales to visit each of his fellow UK Top 10 Fish & Chips Shops (National Fish & Chip Awards 2017). Main sponsor, Kevin McWhinney said, ‘Well done, Malachy from all at McWhinney’s Sausages, we are very proud to have supported this worthy charity mission, such a fantastic achievement and what a passionate ambassador he is for the chippy industry.” Malachy Mallon (centre) is pictured at Belfast’s iconic Big Fish, Donegall Quay with (L-R) Kevin and Elaine McWhinney, McWhinney’s Sausages, Bangor, main sponsor of the #MalOnAMission charity cycle. We all speak the same language, we are like one family and we are there for the greater good of the fish and chip industry.” Malachy hopes his UK charity cycle has helped highlight the vital importance of the lesser known Fishermen’s Mission charity, as well as the wider fish and chip shop industry. “My main objective when I set out was to raise money for The Fishermen’s Mission, but it was also a chance to help give something back because what a lot of people don’t realise is how good we are to the economy. The fish and chip shop sector employs 6070,000 people across the UK, so we’re a big employer and deserve a bit of respect.” Malachy admits the hardest part of the

cycle ride was actually the preparation leading up to it. He comments: “Going out in the wind and rain was hard and, whereas I normally cycle in a group, I went out a lot on my own to build my strength of character. When it came to the event itself, I treated it like a day at work, I went out, did it and came home. “ The journey was not without a few wrong turns along the way. Malachy adds: “One day I should have done 80 miles and I ended up covering about 110. Another day, I got lost in Northumberland Forest as I was separated from my support driver, Susan Brown, Fishermen’s Mission and ended up riding five hours on my own! “Sometimes, because the maps hadn’t always been updated, I would find myself in the middle of a housing estate, riding up to someone’s front door!” The intrepid chippy owner says he is grateful to all who donated and supported him, adding, “I’d particularly like to thank my main sponsor, McWhinney’s Sausages and secondary sponsors, Stephens Catering Equipment and Duncrue Food Processors for their kind support. “Not forgetting the Fishermen’s Mission who have been a fantastic help throughout. Whale of a Time! A fish and chip shop owner believes that his shop serve the largest portion in the UK and only seven people have ever finished it
J
ohn Haggerston, 37, says that the ‘whale challenge’ at Casey’s Fish ‘n Chips involves eating a 32oz haddock, 15oz of chips, a breadcake and FOUR sides. A standard portion of fish and chips by industry standards is a 6oz fish and 10oz of chips, with the haddock used in the challenge being more than FIVE TIMES the size. The fastest the £11.99 challenge has ever been completed is in 5 mins 41 seconds by a competitive eater, who somehow also helped finish his partner’s fish and chips once he had finished. Mr Haggerston, said: “We have run the challenge in the shop for over two years but only seven people have ever completed it. “We have had people from America come over to try it. “The best score is unlikely to be beaten unless someone gets a blender! “We get people coming in every week to try it, about ten a week. “Everybody eggs each other on and there is always a great atmosphere in here. “It was just a bit of a daft idea at first but we like to have a laugh and people love it.”

Mr Haggerston, from Ossett, urges people to tackle the unlikely feat of completing the challenge. He said: “It’s always the ones who think they will beat it that fail the worst! “I urge anyone to give it a go and try to complete it.” There are various techniques that the owner believes are best to conquer the mammoth dish. He said: “The Americans often go for diet pop as they believe that this releases gas quickly which is surprising to me. “Others seem to down a lot of slush drink or litres and litres of water. “Everybody has their own techniques.” Anybody completing the challenge receives a t-shirt and their face proudly adorned on the wall. Incredibly, the owner has plans to double the size of the fish for future challenges and has had requests to make it even bigger. He added: “I have a 72oz haddock ready for anyone who wants to take on an even bigger challenge. “I have a competitive eater called Beard Meats Food who finished our normal challenge in just eleven minutes. “He has told me that as soon as I can get the fish in he will finish it. “I wouldn’t put it past him!” How do you promote your shop – austen@ chippychat.co.uk
