How Rafael Chandler Transformed Hillycroft Fisheries into a Local Favourite

Rafael Chandler owns Hillycroft Fisheries in Morley, Leeds, which he has successfully run for the past six years. Under his leadership, the takeaway has transformed from a “stock it high, sell it cheap” model to a local favourite, known for its commitment to quality and consistency.

“It was an ‘offers’ shop when I took it on, with big discount stickers in the window and a focus on volume over margins,” Rafael explains.

As a result, the shop wasn’t generating much profit, and business was unpredictable. “When it had signs up advertising deals, the place would fill up. But without them, there were no customers,” he adds.

Rafael tackled this by introducing fewer but more targeted offers, however, this lack of consistency extended to other areas of the business such as portion sizes, processes and daily practices. These were addressed when Rafael was introduced to the Ceres portfolio of products.

“I had 10-12 staff, and there was no consistency in portion sizes or how people did things until we started using Ceres products, like the Curry Sauce Mix, the Gravy Mix and the Mushy Peas Seasoning. Ceres helped us standardise everything, from portion control to overall workflow. It made a huge difference and means customers now get as close to the same experience every time they come in.”

The consistency offered by Ceres products has also helped drive sales, as Rafael explains further: “As soon as I put a system in for peas and used the Ceres Mushy Peas Seasoning, we noticed a substantial increase in pea sales.

One item that has developed a loyal, albeit surprising, following is Hillycroft’s homemade fishcake, which uses Ceres Fishcake Mix and is coated in Ceres

Rustic Breadcrumb. This came about when Rafael was left with trimmings after introducing a smaller 3-5oz lunchtime special to combat rising haddock prices.

“I knew introducing a homemade fishcake would be a challenge here in Leeds, where customers love their traditional Yorkshire fishcakes, but they have definitely found a market,” says Rafael. “We make a batch a week now and we more or less sell out. The profit margin is really good because it’s all trimmings, I’m not putting any other fish in there.”

Rafael has transformed the business by bringing structure and consistency to Hillycroft Fisheries. And while turnover has increased - partly due to price adjustments and an estimated 10% growth in footfall - the real difference is its profitability.

“We’ve fine-tuned everything, from staffing efficiency to wage percentages relative to turnover,” says Rafael. “We’ve really got it all nailed down now.”

Rafael is a big fan of the seamless ordering process on the Ceres website too (as well as wholesalers T.Quality and The Q Partnership), adding: “The website is brilliant. It’s optimised for both mobile and desktop so automatically adjusts to your screen size. And because it remembers your past orders and payment details, I can log in, click reorder and it’s done. Plus, delivery is usually next day or the day after - it’s so slick. I placed an order this morning, and it took me two minutes.”

Jacob’s Ladder!

Chippy given grant to help launch

The much-anticipated Jacob’s Fish and Chips Shop officially opened its doors in 2024, bringing a delightful dining and takeaway experience to the community of Cefn Fforest.

Supported by a £30,000 grant from the UK Government through the UK Shared Prosperity Fund (UKSPF) and facilitated by Caerphilly County Borough Council, the restaurant is dedicated to the memory of owner Ross Turner’s late son, Jacob. The location was previously an unused building in a state of disrepair, but with grant support, it has been transformed into a welcoming restaurant equipped with stateof-the-art fryers, including five separate fryers for fish, gluten-free options, meat, and beef dripping, ensuring that high standards of quality are maintained. The grant also funded significant renovations, including decoration, window installations, access points, and signage to make the venue both accessible and appealing.

Jacob’s Fish and Chips is not just about great food; it reflects a strong commitment to the community. Positioned strategically between schools, nursing homes, and a convenience store, the restaurant serves over 200 to 300 covers per day on average, catering to a diverse clientele. With a menu featuring a variety of options, Jacob’s Fish and Chips aims to provide affordable dining while utilising local suppliers whenever possible.

Ross Turner, a former police constable in Blackwood, alongside his business partner Jamie Harris, have expressed gratitude towards the council for their unwavering support. “This could not have happened

without the council’s assistance,” he stated. “Our focus is on community benefits while keeping prices down and quality up.”

In addition to dine-in services, Jacob’s Fish and Chips has partnered with Blackwood Eats to offer a delivery service, making it even more convenient for locals to enjoy their favourite dishes from the comfort of their homes. The restaurant currently employs 6 to 7 full-time staff, along with 14 part-time staff, depending on availability, with future plans to expand the preparation area and eventually open another location.

Real Food Cafe had its famous Deep-Fried Brussels Sprouts back on the menu

Christmas cheer was sizzling at Scotland’s iconic roadside cafe, The Real Food Cafe in Tyndrum, where its famous Deep-Fried Brussels Sprouts were back on the menu this Christmas by popular demand.

The Real Food Cafe’s reimagination of the divisive Christmas staple transformed it from a soggy side to crispy, golden delights. Served with a side of honey mustard dipping sauce, deep fried to perfection and priced at just £5.55 for a dozen, the sprouts delivered bite-sized bursts of festive joy to customers, some of whom travel hundreds of miles for the restaurant’s award-winning fish and chips.

The news came hot on the heels of the announcement that Stirling had become the Brussels sprouts capital of Scotland.

New search engine research by experts at Together Travel revealed a 7% rise in searches for Brussels sprouts in the area over the past year, outranking everywhere else in the country.

Comments such as “This is the news I’ve been waiting for. ‘Mon the sprouts!”

have been the typical customer reaction on The Real Food Cafe’s Facebook page following the announcement that the sprouts had returned for another year.

“I think sprouts get a bit of a hard time”, said Sarah Heward, owner of The Real Good Cafe.

“People have memories of soggy sprouts from their childhood, but I believe the humble sprout has come a long way in recent years, with top chefs creating ‘must try at home’ sprout recipes, so I decided to give my spin on the sprout again this year.”

“We couldn’t believe the media interest last year; again, showing that there’s a real appetite for restaurants doing new, innovative things with food and putting a bit of a twist on tradition.”

“The secret of our sprout success? It’s all in the blanching. We do it for just the right amount of time to ensure the sprouts remain crunchy before we coat them in a light batter and fry them in clean, hot oil. It’s becoming a modern festive tradition here at The Real Food Cafe and judging by the demand from our customers, one that’s probably here to stay.”

She added “Christmas is all about fun, creating memories and enjoying delicious and unforgettable flavours which you might not taste during the rest of the year, so I’m delighted that the sprouts are going down a storm again and adding to the festive cheer.”

Over 120 friers, farmers & suppliers recently travelled to Ely Cambridgeshire for the 10th annual Isle of Ely Produce & Chippy Chat open day.

The event put on by John, Oliver and Claire Boutwood at their farm in Ely is hosted by Chippy Chat Publishing Editor Austen Dack. It highlights the journey the potato makes before it hits the shops. It is the culmination of their ‘field to frier’ platform, which this year also included the story of the potato seed too. The day although dedicated to the potato in recent years has taken on the mantle of being a showcase for what’s also best practice in the industry. Some of the best fish and chip shop owners from across the UK presented on the day from a 30-foot impressive AV stage show set up in one of IOE’s potato storage sheds.

Our featured farmer this year was once again (Dr) Michael Neaverson from Neaverson Growers Ltd. Michael gave the room an honest assessment of the

potato crop for the year ahead.

For lunch visitors were served fish and chips from the 2023 award winning best mobile Pimp my Fish. The lovely Norwegian cod was supplied by Smales and sponsored by Seafood from Norway. The chips were made from Babylon potatoes and gave the new variety one of its biggest tests yet with over 100 guests all queueing up to try them. Also given away was the new Pukka Pie variety Piri Piri (which was very tasty) and also samples from Gills sausages.

In the evening over 50 people attended an industry dinner and drinks in Ely. Another chance for shops and suppliers to mingle.

The 2024 Isle of Ely Open Day was once again well received by representatives from across the supply chain right from the seed growers to the friers themselves. After lunch the group all went via bus first off to a field to see how the 24/25 crop is faring, and then to AL Lee farming company to see how the potatoes are prepared, graded and finally stored.

Exhibitors on the day included two new companies new to the day. First off Stokes sauces were sampling their impressive sauce range. There was much interest in their sachets, perfect for fish and chip shops to sell to their customers. Gills sausages were the other one. Gills sells regionally and were looking to expand to other areas in the UK.

Once again, the Chippy Chat Ball was held at the Holiday Inn West Peterborough. With over 180 people attending, we held a great Christmas party for our industry.

It was a real grand occasion where industry friends and colleagues met up and let their hair down too. We attracted many of the best fish and chip shops in the UK including lots of the award winners and runners up too.

Not only was it a Great Christmas party for owners suppliers and staff, it was also the warmup party to the National Fish and Chip Awards!

Rearrangements at KFE!

After 29 successful years leading KFE, Paul Williams, the company’s founder and Managing Director, is stepping into a new role as Chairman, passing the baton to daughter, Tanya Henderson, son, Nik Williams, and son-in-law, Mathew Henderson. Tanya will serve as Managing Director, and Nik as Sales & Marketing Director, while Mathew will continue as Financial Controller, ensuring KFE remains in the capable hands of the next generation.

Paul founded KFE in 1994 from humble beginnings — a bedroom above his family’s fish and chip shop. Over nearly three decades, he has transformed the company to become a leading supplier of frying ranges to the UK fish and chip industry.

Commenting on his decision, Paul says: “After 29 years at the helm of KFE, the time has come to step aside and allow the younger generation to continue moving the company forward.

“This would not have been such an easy decision if I hadn’t got Nik, Tanya and Mathew waiting patiently in the wings to pick up the reins. Over the years, they have proven that they have the ability, knowledge, and continued excellent relationships with our customers and suppliers to not only maintain our business principles but also take KFE to the next level.”

Paul emphasised the importance of the 30-strong KFE staff in making the transition possible - half of whom have been with the company for over 10 years. “I know I have the full support of our wonderful KFE team, and with that in mind, I am stepping back from the day-to-day decision-making. As Chairman, I will be here to support Tanya, Nik and Matt whenever advice is needed.”

While stepping back from management, Paul reassured customers they would still see him regularly. “I do still plan to visit you, our wonderful customers, and, yes, it is also fair to assume that you may still see me at the bar at all social gatherings!”

Paul expressed his gratitude for the support he has received throughout his career, adding: “I would like to thank my wife Aviy and my family for their support throughout the 46 years we’ve been in the fish and chip industry. My thanks also go to Gijs, his family, and the team at QBTEC, as well as the numerous industry supply companies with whom we’ve built such special, long-standing relationships. I am deeply appreciative of our hardworking and loyal staff and, most importantly, of our customers.”

In his new role as Chairman, Paul looks forward to continuing his relationships with customers and supporting the company’s growth under Tanya, Nik and Mathew’s leadership.

“I hope to visit many of our customers in my new role, but in the meantime, I leave KFE in the best possible hands for a positive and exciting future.”
