he MP for Loughborough, Leicestershire has paid a visit to a chip shop and restaurant in the town to support its recent reopening.

Jane Hunt popped into Devonshire Fisheries, even donning an apron to serve customers some chips from the fryer. She said: “Devonshire Fisheries is a brilliant chippy, and I had a great time helping to cook the fish and serving meals to customers in the re-opened restaurant. Pete and the team are a credit to the town; I’d well recommend it to anyone.” The chip shop reopened in May, in line with the easing of the coronavirus restrictions. Owner Pete Yerolemou said: “We are delighted that we can open the doors again to our customers. Our business has had to adapt during Covid but we have always been very keen to get our customers dining in again and getting to speak in person for the first time properly in months.” “Having customers sat in our restaurant makes us feel incredibly proud that not even a pandemic has dented or harmed a service we have been providing Loughborough and the surrounding areas for 25 years. “Our customers are part of our family and we are happy to welcome our extended family back.” Has your MP visited your shop? BUSiness as usual! Dramatic scenes as bus loses control and narrowly misses Wetherby Whaler

O

ne of the UK’s best chip shop chain owners had a shock recently as one of her stores was almost struck by a wayward bus. The eponymously named shop (part of a chain of seven) on marketplace Wetherby had the close shave, as the bus lost control and mounted the pavement and hit the shop next door. The incident caught on CCTV would have been more serious if it had happened later on a busier day of the week, when customers often queue for the popular shop’s award-winning fish and chips. Wetherby Whaler Director Caroline Murphy said, “We have had lots of messages of concern regarding this incident. Thankfully no one was hurt, and all of our staff are fine albeit a little shaken by the incident. If it had been later in the week then things could have been a lot worse. There is much speculation about what happened, but we will let the accident and emergency team find the reasons behind this incident.” Have you had any dramatic moments at your shop? Twin Peaks! We spoke to Steve and Andy Clark twin brothers who run The Kingfisher, Keswick after they chose Mallinson’s for their new range Q1: How long have you owned your shop? We took on the business in 2010. Our father ran a popular and successful butcher’s shop nearby for many years and we still make our famous Cumberland sausage to an age-old secret recipe. Keswick is a popular, busy tourist destination as well as being home to 5,000 hungry residents year-round. We pride ourselves on serving the highest quality food as our reputation is everything. Q2: Why did you change your range? Unfortunately, we had a fire at the shop, so we had no choice! Q3: How many ranges had you owned or worked on before buying your new Mallinson’s range? A: Just the one. After the fire we felt we needed a change. Q4: How did you come across Mallinson’s? Our long-standing independent service engineer recommended Mallinson’s and we trust his judgement given that he works on all kinds of ranges every day. Hooray for Henry’s Henry Nuttall is the oldest and original range manufacturer, with a 155-year association with Fish and Chips. However, despite the longevity, the last 4 years have been our busiest yet under our ownership since 2004, exceeding the number of frying range orders year on year. Second Angel of the North! Angel Fisheries branched out to a second site during lockdown

W

hat trip to Whitby would be complete without fish and chips? A popular eatery in the town branched out during the pandemic and is now ready to welcome customers inside its second site. Angel Fisheries Harbourside, located at St Anne’s Staith, finally opened its doors in May. “We’ve been running for about four years now; we took the second one over last August then got locked down with it all.” said owner Ben Laws “We renovated it all over winter, getting a new floor put down new tables, chairs and everything put into place for the opening”. The Whitby family have always worked

in the catering industry, and their original Angel Fisheries at Angel Yard, Baxtergate, is popular among locals and tourists alike. After a difficult year impacted by covid-19, Ben and the team are glad to welcome customers back for seated meals, as well as opening the doors on their latest venture. “It’s an informal restaurant with takeaway packaging, there’s no table service as such,” Ben said. But customers can be guaranteed fresh fish daily, something not all chip shops in Whitby offer. “We do all sorts; everything is all fresh Whitby fish.” “You can get everything with us, we do all sorts of specials from calamari, white bait, tiger prawn lollipops, monkfish and chorizo kebabs.” “We try and keep it changing all the time,” Ben said. The pandemic has massively impacted the business, but the easing of lockdown restrictions is a step in the right direction to getting them back on track. “It’s been start and stop, start and stop. Little bit of trade to no trade, it’s been a nightmare for everyone. Hopefully we’ll try and get it back to normal,” Ben said. But their loyal customers have supported them throughout and the team were excited to welcome them back inside for fresh fish and chips in a relaxed atmosphere. Churchill’s Award-winning multi-chain Fish & Chip Operator The Chesterford Group (TCG) added to its popular Churchill’s Fish & Chips brand portfolio this summer; opening at the Langney Shopping Centre in Eastbourne. The new 2,000 sq ft East Sussex venue, which opened in July, recently saw a £500,000 investment and created 30 new jobs in the local area.

BayCation! MSC launches digital map locating the UK and Ireland’s certified sustainable fisheries

T

he Bay fish and chip shop in Scotland has joined with sustainable seafood champions Mitch Tonks and James Strawbridge to urge British staycationers to try out the local seafood at their holidays spots this year and support the growing sustainable seafood movement. The Marine Stewardship Council, global standard setter for sustainable seafood, has today launched an online map which showcases sustainable fisheries in the UK and Ireland, along with information about the different species, history and fishing methods. Brits have a great range of sustainable seafood available in the UK, from cockles fished in the Burry Inlet when in South Wales and the Dee Estuary in north Wales, to sardines and hake in Cornwall, clams from Poole Harbour in Dorset, herring and mussels in Ireland and haddock, crab, scallops and mussels in Scotland. There are 17 brand new pages, with information about each MSC certified sustainable fishery from across the UK and Ireland. Calum Richardson, owner of the Bay fish and chip shop in Stonehaven, Scotland, the first chippy to serve MSC certified Scottish haddock, said: “We wanted to offer our customers Scottish haddock and the fishery’s MSC certification reassured us that in doing so, we would be helping to protect fish stocks and the long-term livelihoods of Scottish fishing communities. Our customers are looking for sustainable, local fish and chips and

Three is the Magic Number! £1 fish and chips at Leicestershire chippy John Dory’s to mark third birthday

F

ish and chip fans were in for a treat as a Leicestershire chippy served fish and chips for just £1. John Dory’s of Quorn celebrated its third birthday recently, and the owners decided to mark the occasion by dishing up this great deal - for one day only. Drosos Joannou, who owns and runs the business with his brothers, said:” The reason we served the £1 fish and chips was to celebrate our third year since opening John Dory’s, plus that week was also National Fish and Chip Day so it was a double whammy.” The £1 cod and chips, which were in a

promotional portion size, were offered for the entire service on June 1, from 4pm until 8.30pm. There was a steady queue for the whole evening. To make it easier and quicker only fish and chips were served that day - with the option to get your favourite sauces. Other menu items and the click and collect service were not available on the day. You could only get one portion per person, so you couldn’t buy for others, and they were for takeaway only. t isn’t everyday you get to meet a gentleman who is rated consistently as one of the best fish and chip shop operators in the UK. I had the chance recently as I visited Bournemouth and took in the award winning Chez Fred. Fred Capel and team were on hand to greet us (I was with family including our very own Chippy Pat). After a tour of the place and some pictures with Fred, we chatted about his shop, a little history some of his famous visitors and how they had all coped through the pandemic. Run by three generations of the Capel family since opening in 1989, Fred’s has always offered a warm welcome and the simple pleasures of great fish and chips. Cooked with care and served with a smile, fish and chips at Fred’s is the ultimate comfort food. With responsibly sourced fish, potatoes fresh from the farm and Fred’s homemade mushy peas, everything is prepared on site with the pride and care that befits our national dish. It was 32 years ago, they set out to offer great food and friendly service in a relaxed and informal setting - whilst always promising honest value for money. Much has changed in the world since then, but that simple notion remains at the heart of everything they do. Today their aims remain much the same as they were back in ‘89 simply to keep serving great fish and chips, the way they should be, served with a smile, in comfortable surroundings. Get Your Klaws By Dennison Wee

F

inally, it comes the time for me to share with you my favourite seafood place or shack in Dublin Ireland. Here comes the renowned Klaw by Niall Sabongi. I would call it more of a seafood shack rather than a restaurant. Happening, hyped and cosy, these are the terms that I would use on Klaw! Located right in the Temple Bar area, this little cosy restaurant or shack serve up the freshest lobster rolls, oysters, chowders & crab of all kinds. They are a group of funny passionate people that strives to serve up the best sustainable seafood in town. Even the name is a playful twist from the crab claw! This place have constantly been named as the best place in Dublin. Super popular among the locals, whether you are able dine here depends on your luck! On my very first try, the place is absolutely packed to the brim, after all there is only seats for 21 people in the restaurant. It is a super small place! We could not even get on the waiting list since there is about an hour of wait and then the restaurant close after that. They do have a sister restaurant on the next street, The Seafood Cafe, which

is full as well. This has got to be Dublin tiniest seafood restaurant. Thankfully on my next visit, I had better luck and got a table in the afternoon. Located right in Temple Bar area the shack had equally good vibes as well. Simple rustic decor with yellow lamps and wooden high tables it is very comfortable to dine here with the view of the open kitchen as well. There are no menu at this place with options simply chalked on the wall right in the restaurant. While Klaw have a couple of specialties such as their Klaw Oysters, Crab Mac’N’Cheese, Grilled Prawns or the Famous Lobster Roll. Dishes changes everyday depending on market conditions. Here is the dishes available when I was here. The Grilled Fish of The Day was mackerel The prices are right beside there as well. I will not say that this place is super affordable but rather the pricing is fair for the quality of seafood. Staff are super polite and everything is made to order. We are super famished and ordered lots of food. We got the Grilled Fish of the Day, Klaw Chowder, Lobster Roll, Grilled Whole Calamari as

Into this! well as a side of Irish Potatoes. There was a little wait for the food since everything is made from scratch. First up was the Grilled Mackerel which cost 16 Euros. It came with a Salsa Dressing and a side of toasted bruschetta. I love how delicious it is even though it is prep simply. The fish was fresh and tasted divine with just a simple squeeze of lemon. Next up was the Klaw Chowder which is one of my favourite from all the dishes that I tried here. It was thick and packed with ingredients. I love that it is not overly creamy as well. Expect mouthful of crab in very spoon, inside you can also find huge chunk of white fish as well as salmon or trout. Dip the crispy bruschetta in the chowder. Coming at 10 Euros, I find it to be one of the more worth it dishes. Seeing that the Lobster Roll were high raved online and, on their website, we also gave it a try. Costing 20 Euros it is one of the more expensive items on the menu. Chunks of lobster were mixed with mayonnaise before generously sandwiched in the buttered roll. It came with a side of tortilla chips. The lobster

was fresh, roll were soft and buttered. However, it doesn’t taste like 20 Euros. The last dish that we got was the Grilled Calamari.The squid was super fresh and tasty. It was simply grilled to perfection. You get the briny taste of the sea, the char from the grill as well as a hint of citrus from the squeeze of lemon. Literally the best squid that I ever had in my life. Similar to the Lobster Roll this also cost 20 Euros. You know how good it is when we didn’t even take a picture before finishing it. Everything is well executed; dishes are done with simple cooking and pride on the freshness of the ingredients instead. My favourite and the must order here would be the Klaw Chowder as well as the Grilled Calamari! We spend a total of 72 Euros for the 3 of us and left satisfied. While not the cheapest lunch I will recommend everyone to come here for a try especially if you are a seafood fan. You should be Appy! Why your restaurant should not be using a third-party delivery service

T

he popularity of third-party delivery platforms, such as Just Eat, Deliveroo and Uber Eats has been steadily on the rise in recent years but has had significant growth during the pandemic. According to a study carried out by Buyer’s Edge Platform carried out following restrictions being eased, demand for takeout or delivery at home stood at 42.3% of consumers. Whilst these third-party platforms can provide a convenience to restaurants providing orders and taking care of delivery, with reported excessive charges that can be as high as 48% of cost, it raises the question: Should Your Restaurant Use Third-Party Food Delivery Services? The drawbacks of third-party platforms The first and arguably most significant for restaurant owners is that using a third-party platform means paying the high fees that the company will charge. The three most popular platforms in the UK will charge commission per transaction. With commissions usually starting at 20% per transaction up to a max of 48%, can your business really afford to lose this level of income per sale? It should come as no surprise that order errors and problems are another downside to using a third-party platform, with consumers reporting 9% more issues with missing items at restaurants using third party platforms to direct ordering according to a recent report by the service management group. The same report indicates that customers are far more likely to blame the restaurant for errors that occur, potentially resulting in lost future sales. For restaurants to succeed it is essential for them to build a strong and loyal customer base. However, users of third-party platforms are the customers of the platform, not the restaurant they may repeatedly order from on the platform. The result is that the restaurant cannot directly market to it’s customers without going through the platform and incurring additional charges for the privilege.

Benefits of bringing your online ordering in-house… Currently only 27% of online orders are made directly to restaurants, however 63% of consumers would prefer ordering direct. Where there’s a Wil! The Wiltshire Times crowns its champion chippy

ver the last few months, fish and chip shops have been nominated in their droves by loyal customers, and Wiltshire Times readers then voted for their favourite as the nominations were narrowed down. Now, after hundreds of votes, the winner of the Wiltshire Times Best Chip Shop has been revealed Ocean’s Traditional Fish & Chips, at Unit 5 Verbena Court in Melksham. Owner Carlos Serrao said he was really happy to have been nominated, let alone to win, and it reflected the good relations with customers. Carlos moved from Madeira to England in 1993 and was educated in Oxfordshire. When he was 14, he picked up his first job at a chip shop and worked shifts between schooling. Years of mastering his trade followed and five years ago Carlos, who also runs a building

company, decided to take the plunge and launch his own shop. He said: “Everyone works really hard here to maintain standards and customer service, that really matters to us. We have people come in every week, every month again and again. “We look at everything we make and I tell the staff, if you wouldn’t eat it, don’t give it to customers. Even if the colour seems a little different, if you are in any doubt, make another portion. That’s what I was taught” Ocean’s also does dedicated gluten free fish suppers every Monday and Tuesday, and sticks to the highest of food hygiene regulations. Carlos said: “I have spent lots of years working really hard to make sure our fish and chips are really, really good so I am really happy to be first. sle of Ely Produce have been promoting a new Chip Ambassador role to promote the great British Chip in association with Agrico. The aim will be to carry on the good work promoting chipping potatoes at their hugely successful open days, and through the ‘Field to Frier’ award. The Chip Ambassadors will become part of an UK wide group of shop owners and fryers who will promote best practice for potato buying, storing, and of course frying. The chain will also include key growers too like PJ Lee & Sons, and A. L. Lee Farming Company, as IOE looks to nurture the relationships they have grown across the whole supply chain during the last twenty years. Agrico have partnered with Isle of Ely Produce to bring new varieties into the trade initially via our Chip Ambassadors. The first one Babylon has been sampled at some of these ambassadors to back up the results of

the early trial successes. We have travelled (keeping to covid restrictions) to many great shops in the last few months trialling Babylon The overwhelming result of all of this testing is Babylon as a variety is looking like a star of the future. This month we went to the Grosvenor Fish Bar in Norwich. A fantastic shop ran by Duane Dibartolomeo & Christian Motta. We met them at their shop with JFK director (fish producer all the way from the Faroe Islands) Jogvan Hansen & Friars Pride MD Rebecca Lord. Our visit was to see how well Babylon would fry alongside JFK’s best seller Gadus (cod). The Grosvenor Fish Bar is a long-standing fish & chip shop, having spent 90 years serving up the usual chip shop fare. They also serve up a selection of wraps, sandwiches, sea bass, mackerel, tuna, squid and rock salmon. They have seating downstairs for up to 70 people too (one of

Norwich! the quirkiest places ive eaten fish and chips). So what did they think of Babylon? Christian said. “We loved Babylon, they fried well, held up well in the box, and tasted great too. We are excited to add them to the list of our chosen varieties.” Both Rebecca and Jogvan were impressed too, both finishing off a lovely portion of Gadus and Babylon chips.
